Methods: The participants in this study were 141 people with prehypertension who were seen at a public health center. Data collection was done from March 11 to November 11, 2005 using interview with questionnaires. The participants took part in the diet health education program for 8 weeks. In order to evaluate the effectiveness of health education program, the variables of the diet such as hypertension, law salt diet and DASH diet were measured before and after the health education. The blood pressure was measured three times during the education. The collected data were analyzed with paired t-test and repeated ANOVA using SPSS 12.0 for Windows. Results: The diet habit variables after the education showed that their diet habit tend to the low salt diet and the DASH diet. The participants improved in their knowledge of hypertension and law salt diet, and they improved in the behavioral level of law salt diet and DASH diet after the health education for 8 weeks. Systolic and diastolic pressure were significantly decreased in prehypertension group after 8 weeks [10mmHg/6mmHg(p<0.001)]. Conclusion: These result suggest that the improvement in the level of behavior might be related with the change in blood pressure among the people having prehypertension in Korea.

  • This study attempted to evaluate the effectiveness of nutrition education especially high nutrient density diet, which promotes low carbohydrate, high protein and fiber. Sixty nine college students participated in the 8 week weight management program with nutrition education. After the program, forty six experienced a small amount of weight loss (WL group, 1.3 kg), but twenty three did not (WG group). The WL group's dietary habits and diet quality improved significantly. The INQ of nutrients and MAR significantly increased only in the WL group. The total DQI-I score significantly increased from 71.1 to 75.3 in the WL group, but it did not in the WG group. The total dietary habit scores significantly increased in both groups, but the changes in the dietary habit scores were greater than the WG group in the WL group. After the program, total cholesterol and triglyceride level decreased significantly in the WL group (p < 0.05). These results show that nutrition education which focuses on a nutrient density diet could help improve dietary habits, diet quality, total cholesterol, and the triglyceride level in college women.

  • This study investigated the general information, unbalanced diet, and dietary habits of 86 children in Daegu. The research was undertaken to analyze the current state of diet and dietary habits of children, and to provide basic data for nutrition education. The results reveal that younger children have a more unbalanced diet. Children dislike side-dishes the most. Furthermore, due to the longer time taken to consume food, parents persuade children to eat quickly. Children were also determined to have a high intake of foods and drinks containing sugar; beverages containing sugar are consumed 1-2 times a week by 5-year-olds, and once daily by 6- and 7-year-olds. The results of this study can be applied to provide basic data for nutritional education, and assist in the development of dietary programs for young children.

  • This study was conducted to investigate the dietary habits and assess the dietary intake of preschool children. Food habit, preference and nutritional supplement status were investigated using a questionnaire answered by the mothers of 453 subjects aged 3 to 6 years old. Also, a dietary intake survey using a 24-hour recall method was performed by mothers of the children. It was found that 81.2% of subjects had milk, dairy products, cookies, fruit and bread between meals once or twice per day. As well, 60.3% of subjects had an unbalanced diet and 20.7% had an overeating habit. Thus, unbalanced diet was a serious problem for many of the subjects. Due to weight controls, digestion problems and allergies, 11.7% of subjects had special dietary consideration. And 26.4% of subjects were using nutritional supplements. From the 24-recall survey, it was found that all nutrient intakes were higher than the Korean RDA except calcium and vitamin A. Nutrient intakes for protein, calcium, phosphorus and vitamin B2 were significantly different by sex, and also increased with age but not significantly. Children received 35% of daily energy, 44% of daily fat and 52% of daily calcium from snacks, so snacks clearly play an important role in dietary intake. The average number of foods consumed per day by subjects was 17.6 and that dishes was 11.0. Most children consumed 4 or 5 food groups per day. In conclusion, the dietary intake of children aged 3 to 6 were deemed adequate judging from nutrient intake and dietary diversity.
