  • Barley flakes were developed by extrusion cooking using broken kernels, by-products of the barley pearling process. Broken kernels from both non-waxy and waxy barley broken kernels were sufficiently gelatinized at the barrel temperature of over $100^{\circ}C$ and the moisture content of broken kernels of over 35%. Cutting and flaking roll separating properties of pellets prepared from non-waxy barley broken kernels were better than those of waxy barley broken kernels. Characteristics of pellets prepared by extrusion cooking in different mixing ratios of non-waxy and waxy barley broken kernels were investigated. As the mixing ratio of waxy barley broken kernels increased, RVA peak viscosity, apparent viscosity, and yield stress of prepared pellets decreased, while flow behavior index increased. As the mixing ratio of waxy barley broken kernels increased, compressive strength and bulk density of deep-fat fried flakes drastically decreased, and the size of air cells on cross-section increased, and thickness of cell-constituting bodies decreased. Sensory evaluation results showed that acceptability for texture and taste of flakes inclosed as the mixing ratio of waxy barley broken kernels increased, and optimum mixing level of waxy barley broken kernels appeared to be 30-40%.

  • Cephalanthera erecta (Thunb. ex, Murray) is an herbaceous and a member of the genus Cephalanthera in the family Orchidaceae. The species is an herbaceous and has reputed Chinese medicinal value. It has been investigated the population density and spatial distribution of this species at Mt. Ahop in Korea during 2015. The spatial pattern of C. erecta was analyzed according to several patchiness indexes, population uniformity or aggregation under different sizes of plots by dispersion indices, and spatial autocorrelation. The mean crowding (M*) and patchiness index (PAI) showed positive values except one small plot (2 m × 2 m). Most natural individuals of C. erecta for plots were not uniformly distributed in the forest community. The small plots (2 m × 2 m, to 8 m × 16 m) of C. erecta were uniformly distributed in the forest community and large plots (16 m × 16 m and 16 m × 32 m) were aggregately distributed. Significant aggregations by Moran's I of C. erecta were partially observed within IV classes (12 m). Dissimilarity among pairs of individuals could found by more than 18.0 m. In conclusion, the geographic distribution of C. erecta is not even with varying degrees of size of plots and human activities give rise to density effects in the plots at Mt. Ahop in Korea.

  • This study was conducted to investigate the ratio and number of the Rhus javanica gall formed by chinese sumac aphid, Scheleechtendalia chinensis, in several different conditions in which R. javanica lives. The density of 11 to 15-year-old R. javanica was more higher and the number of galls was also higher than 1 to 5- or over 16-year-old one at these sites. The formed gall according to four directions such as the East, West, South and North was founded the highest at the East and followed South, North, and West order. The formative rate of R. javanica gall did not differ in the mixture forest, and in the habitat having a heap of a little stone and mosses near a valley was better than in the site of road perimeter. Through an index of the gall diameter and the number of chinese sumac aphid, we evaluated the gall processing and development formed by the aphid. As the density of aphids increase, the size of the gall was also more plumped. The part of phyllotaxy of R. javanica gall in leaf and pinnate of was increased in the middle and upper part of terminal leaflet and leaflet was more occupied than wing. R. javanica which did not form a gall in natural environmental, formed gall by a artificial inoculation of S. chinensis. Some gall disappeared during a gall development from various environmental conditions.

  • An investigation on the soft-bottom macrobenthic community in the inner Kyeonggi Bay was conducted in July, October of 1987 and February, May of 1988. The benthic fauna comprised a total of 87 species and showed mean density of 550 indiv./$m^2$. Major faunal groups are polychaetes, molluks, and crustaceans, corresponding to 64.7%, 17.4%, and 15.2% in total abundance respectively. The most abundant species was Tharyx sp. (10.9%), and followed by Mactra veneriformis (10.5%), Mediomastus sp. (8.6%), and Glycinde sp. (8.0%) etc.. The important species in the intertidal zone were Mactra veneriformis, Hinia festiva, and Nephtys californiensis, whereas those in subtidal channel region were Tharyx sp., mediomastus sp., Sternaspis scutata, and Nephtys polybranchia. The study area could be divided into 4 station groups based on the species composition; two groups within interidal flat and two in channel regions. Each station group sustained its specific benthic faunal assemblage; Mactra-Hinia, Aricidea-Haploscoloplos assemblages in the intertidal flat and Harpiniopsis-Urothoe, Mediomastus-Sternaspis assemblages in the subtidal channel region. The Mediomastus-Sternaspis assemblage showed the highest species number and population density, and also did the highest diversity and evenness indices. The Harpiniopsis-Urothoe assemblage showed the poor species composition and abundance, and so recorded the highest dominance index. Two assemblages in the intertidal flat had the intermediate values in all the biological parameters. The northern channel region of zone S-2 showed the high abundance in species composition, which seems to be caused by the heterogeneous sediment and the organic enrichment from the Han River and the Incheon industrial complex.

  • The purpose of this study was to investigate the relation among mineral intakes, blood pressure, and blood lipids for health management of Korean adults over 20 years old. Subjects were recruited from the district where they lived, which included rural (Yoju, n = 137) , coastal (Taean, n = 100) , and urban district (Suwon, n : 117) . hnthropornekical measurement, blood pressure measurement, dietary intake assessment using 24-hour recall method, and blood collection and analysis of blood lipids were conducted. The average age, height, weight, and BMI were 54.1 years, 168.5 cm, 67.3 kg, and 24.5 kg/$m^{2}$ for men and 53.9 years,153.8 cm,59.2 kg, and 25.0 kg/$m^{2}$ for women, respectively. The mean daily intakes of total food and energy were 1219.1 g and 1740.9 kcal for men and 1071.3 g and 1432.6 kcal for women. The mineral intakes of men and women were 448.5 mg and 400.4 mg for calcium,955.3 mg and 803.7 mg for phosphorus, 13.3 mg and 11.1 mg for iron, 4302.8 mg and 3393.3 mg for sodium,2588.0 mg and 2264.9 mg for potassium, and 8.9 mg and 7.3 mg for zinc. The daily intakes of energy, calcium, zinc, vitamin $B_{2}$, and vitamin I were $76.1\%$, $60.1\%$, $73.1\%$, $68.6\%$, and $80.4\%$ of RDAs, respectively. The intakes of energy, calcium, zinc, vitamin $B_{2}$ and I were not meet Korean RDAs. Especially, calcium, zinc, and vitamin $B_{2}$ were less than $75\%$ of RDAs. Blood pressure of the subjects was 128.3/75.5 mmHg for men and 124.1/73.7 mmHg for women. Serum lipids of men and women were 180.2 mg/dL and 184.9 mg/dL for total cholesterol, 160.8 mg/dL and 137.6 mg/dL for triglyceride,41.5 mg/dL and 44.7 mg/dL for HDL-cholesterol,106.6 mg/dL and 112.7 mg/dL for LDL-cholesterol, and 3.5 and 3.3 for atherogenic index. While serum triglyceride and AI of men was significantly higher, HDL-cholesterol was lower than those of women. In the relation among mineral intakes, blood pressure, and serum lipids, we found a significantly negative correlation of intakes of calcium, calcium/phosphorus, calcium density with systolic blood pressure. There were significantly negative correlation between intake of calcium/phosphorus and serum cholesterol, calcium density and serum cholesterol, sodium intake and serum HDL-cholesterol. Based on these results, we concluded that high intakes of calcium, calcium/phosphorus and low sodium intake were associated with favorable blood pressure and serum lipid profiles in adult men and women. • Proximate composition of whole hemp seed, paste viscosity of whole hemp seed pellets, bulk density, color, compression force, water solubility and absorption index and bowl life of whole hemp seed flakes manufactured by extrusion process were determined to evaluate whole hemp seed as flake additive. Extrusion process conditions were 35% of moisture content and 90, 100 and 110$^{\circ}C$ of barrel temperature. Content of moisture content, crude protein, crude fat, crude ash from whole hemp seed were 5.67${\pm}$0.02%, 25.93${\pm}$0.16%, 28.21${\pm}$0.56% and 7.70${\pm}$0.08%, respectively. The pellets hemp seed at 100 or 110$^{\circ}C$ had higher paste viscosity as compared to those pellet at 90$^{\circ}C$. The bulk density values of all hemp seed flakes were between 0.24 to 0.43 g/mL, depending on the barrel temperatures. The hardness of flake increased with decreasing percentage of hemp seed in flakes. An increase in barrel temperature from 90$^{\circ}C$ to 110$^{\circ}C$ resulted in increase of WSI and decrease of WAI. The bowl life of hemp seed flakes was increased from 5.8 to 15.5 min with the decrease in percentage of hemp seed. The highest overall quality was showed in flake added with 20% of hemp seed.

  • Objectives: The purpose of this study was to investigate the food, nutrient intake, and diet quality of postmenopausal women at high risk of osteoporosis (OP) and cardiovascular disease (CVD) compared with those of control subjects. Methods: A total of 1,131 post-menopausal women aged over 45 years, who took the 2010-2011 Korean National Health and Nutrition Examination Survey (KNHANES), were included for analysis. These participants were classified into the following groups: the OP group, with a risk of OP (n=135); the CVD group, with a risk of CVD (n=373); the OP+CVD group, with a risk of OP and CVD concurrently (n=218); and the control group (n=405) according to bone mineral density (BMD) and CVD risk. Anthropometric measurements, blood profiles, dietary intake, and dietary quality indices were measured and compared among the four groups. Results: Waist circumference, total body fat percentage, blood pressure, fasting plasma glucose, total cholesterol, triglyceride, and LDL-cholesterol were higher, and HDL-cholesterol and BMD were lower in the OP+CVD group than in the control group. In the food frequency questionnaire, the OP+CVD group had significantly higher frequencies of grain (except for multi-grain) and lower frequencies of fruit and dairy product. The frequency of consumption of red meat, processed meat, and carbonated beverages was higher in OP+CVD group. In nutrient density analysis, proteins and vitamin $B_2$ levels were significantly lower in the OP+CVD group than in the control group. The nutritional quality index (INQ) values of calcium were in the order of 0.63, 0.58, 0.56, and 0.55 in each group, and it was urgent to improve the dietary intake for calcium in postmenopausal women. In addition, vitamin $B_2$ was inadequately consumed by all groups. Conclusions: These results suggest that it is necessary to increase the intake of vitamin $B_2$ and calcium and decrease the frequency of intake of red meat, processed meat, and carbonated beverages in postmenopausal women with the risk of OP and CVD.

  • Objectives: Non-alcoholic fatty liver disease (NAFLD) is an increasingly prevalent metabolic disease. Muscle is known to influence NAFLD development. Therefore, this study aimed to determine the relationships among low muscle mass, NAFLD, and hepatic fibrosis using various definitions of low muscle mass and NAFLD diagnostic methods, including magnetic resonance imaging-based proton density fat fraction (MRI-PDFF). Methods: This cross-sectional study included 320 participants (107 males, 213 females) from the Korean Genome and Epidemiology Study on Atherosclerosis Risk of Rural Areas in the Korean General Population cohort. Muscle mass was assessed using whole-body dual-energy X-ray absorptiometry and adjusted for the height squared, body weight, and body mass index (BMI). NAFLD was diagnosed using ultrasonography (US), MRI-PDFF, and the comprehensive NAFLD score (CNS). Hepatic fibrosis was assessed using magnetic resonance elastography. Multivariable logistic and linear regression analyses were performed to determine the aforementioned associations. Results: According to US, 183 participants (57.2%) had NAFLD. Muscle mass adjusted for body weight was associated with NAFLD diagnosed using US (odds ratio [OR], 3.00; 95% confidence interval [CI], 1.70 to 5.31), MRI-PDFF (OR, 2.00; 95% CI, 1.13 to 3.53), and CNS (OR, 3.39; 95% CI, 1.73 to 6.65) and hepatic fibrosis (males: β=-0.070, p<0.01; females: β=-0.037, p<0.04). Muscle mass adjusted for BMI was associated with NAFLD diagnosed by US (OR, 1.71; 95% CI, 1.02 to 2.86) and CNS (OR, 1.95; 95% CI, 1.04 to 3.65), whereas muscle mass adjusted for height was not associated with NAFLD. Conclusions: Low muscle mass was associated with NAFLD and liver fibrosis; therefore, maintaining sufficient muscle mass is important to prevent NAFLD. A prospective study and additional consideration of muscle quality are needed to strengthen the findings regarding this association.

  • The single jet of decane/methylcyclohexane mixed fuel that is surrogate for kerosene was injected into supercritical environment and visualized using shadowgraph technique. The injection pressure drop of the fuel jet of Tr = 0.484 was kept constant at 0.5 MPa and the experiment was conducted above the critical point of the mixed fuel, and the reduced temperatures of the chamber was changed from 1.00 to 1.23, and the reduced pressures was 1.00 and 1.38. As an index for reducing the density of jets sprayed into the supercritical environment, the brightness intensity of the post-processed jet image was observed with the internal temperature and pressure of the chamber. It was confirmed that the decrease in the brightness intensity of the jet when the temperature inside the chamber increased, and when the pressure inside the chamber was higher at the same temperature, the decrease in the brightness intensity of the jet was delayed. When the pressure inside the chamber is high, it is thought that the change in brightness intensity is delayed due to the increase in the pseudo-critical temperature of the fuel and the increase in the temperature required to reduce the density of the fuel jet.
