Recent Research and Development of Minor Active Components Derived from Milk (우유 유래 미량 기능성 소재 최근 연구 개발 동향)

  • Milk components and their derivatives are a rich source of bioactive substances and play a central role in the development of functional foods. Many scientific evidences have shown that milk proteins have a biological health-promoting functionality. However, in recent times, dairy calcium and growth factors derived from milk have been misunderstood to cause diseases such as osteoporosis or cancer. This review focuses on the importance of milk-derived growth factors and some minor active components and briefly considers the emerging trends of personalized nutrition in future dairy research and development.

Composition, Structure, and Bioactive Components in Milk Fat Globule Membrane

  • A unique biophysical membrane which surrounds the milk fat globules is called the milk fat globule membrane (MFGM). Various researches were studied about origin, composition, structure and bioactive components of MFGM. Bioactive protein components of MFGM play an important beneficiary function such as defense mechanism in new born. Among the bioactive lipid components from MFGM phospholipids showed health enhancing functions. The phospholipids also help in the production of certain dairy product from deterioration. MFGM phospholipids also showed antioxidant activity in some dairy products such as butter and ghee produced from milk of buffalo. Based on the beneficial effects, researchers developed MFGM as functional ingredients in various food products. This current review focuses on health enhancing function of MFGM and its components in various dairy products.

Effects of Dandelion (Taraxzcum coreanum) Supplementation on Milk Yield, Milk Compositions and Blood Characteristics in Lactating Dairy Cows

  • This study aimed to investigate the effects of Dandelion (Taraxzcum coreanum) supplementation on milk yield, milk composition and blood characteristics in lactating dairy cows. Eight lactating dairy cows were divided into two groups (control: TMR supplementation, treatment: TMR with Dandelion supplementation). The milk yield, milk fat, lactose, solids not fat (SNF) and somatic cells counts (SCC) were not significantly different between the control group and the treatment group, whereas milk protein, milk urea nitrogen (MUN) and free fat acid (FFA) were significantly higher in the treatment group compared to the control (p<0.05). The blood components of the treatment group were compared with those of the control group and only aspartate aminotransferase (AST) appeared significantly high (p<0.05). The other blood components were not significantly different in the two groups. Blood corpuscle components in the groups were not significantly different. Especially, all blood corpuscle components in the treatment group were within the normal range. However, the white blood cells (WBC), lymphocytes (LYM) and hematocrits (HCT) in the control group exceeded the normal range. Based on the above results, the addition of Dandelion to feed increased milk protein, MUN and FFA, but did not significantly affect the composition of the blood and corpuscle in Holstein milking cows.

  • Many countries divide infant formula into special nutrient food and they are in control of thorn very carefully. CODEX prescribes that the components which can be added to infant formula must be exist in the breast milk and the additives must be scientifically proved to be safe. Therefore infant formula manufacturers make efforts to develop infant formula to be similar to human milk based on research of human and bovine milk components. Domestic infant formulas are rich with functional components in comparison with foreign formulas ; such as immunity, anti-allergy, growth factor, developments of brain and digestion organs etc. At this point, progress of bioscience technology and introduction of various new technologies lead micro components in human and bovine milk to be separated and purified. Therefore many functional components are commercialized and infant formula companies use these. Various functional components are added to infant formula ; DHA and arachidonic acid as brain growth components, nucleotide and lactoferrin as immunity increment and oligosaccharides fur digestion. And new infant formula is being developed by using bone growth factor and dehydration components f3r atopy and allergy decrement.

Herd Management and Control of Dairy Cows by Milk Components in Gyeong-nam (경남지역 유우의 산유능력 검정)

  • The purpose of this study was to herd management and control of dairy cows by milk components analysis in Gyeongsangnamdo. Milk components analysis were carried out milk yield (MY), milk fat (MF), milk protein (MP), milk urea nitrogen (MUN) and somatic cell count (SCC) but, milk solid (MS), day of non-pregnant condition (DNPC), and days of primipara (DPRI) involved in report. Dairy farms were divided high group, middle group, low group according to the standard records for milk components. Examination records were divided by farm, parity, year, season and month, the number of samples were 28,957. Feeding management practice and the prediction for the risk possibility of productive disease such as reproductive and metabolic disorders by evaluating fat, protein, solids. Determination of MY, MF, MP, MS were Milkoscan 4,000~5,000 Serier (FOSS Electric Co., Copenhagen, Denmark). Correlation coefficient of milk protein (MP) and milk solid (MS) was ascertain r=0.759. SCC was ascertain 372.8$\pm$11.34 (thousand unit) and DNPC was ascertain 155.3$\pm$5.15 (days) in seven parity.

  • Fructo-oligosaccharides are found in many plants, such as onion, burdock and wheat. They are not well hydrolyzed by digestive enzymes in animals, but are peculiarly assimilated by Bifidobacterium and some useful bacteria. In our previous experiment (Kobayashi et al., 1987) it was suggested that they were effective in decreasing energy loss in the metabolism of dairy calves. In the present study, the effects of fructo-oligosaccharides on body weight, milk-yield and milk-components (fat, protein and solids-not-fat) were investigated in dairy cows. Lactating cows were fed a standard diet containing fructoligo saccharides at 18.70g, 9.35g and 0.0g (control) per 100kg body weight, day for three weeks. Neither treatments significantly affected any of the parameters examined. The fructo-oligosaccharides were assumed to be hydrolyzed by rumen microorganisms and hardly to affect the bacterium florae in the intestines of the lactating cows.

Effects of Milk Production, Season, Parity and Lactation Period on Variations of Milk Urea Nitrogen Concentration and Milk Components of Holstein Dairy Cows

  • The study was conducted to assess the effect of milk production, parity, stage of lactation, season and individual milk components themselves on milk urea nitrogen (MUN) concentration and other milk components of 3,219 Holstein dairy cows in Korean dairy farms. The MUN concentrations in Korean dairy cows were estimated to 16.68$\pm$5.87 mg/dl. Milk yield was negatively correlated with fat and protein contents and somatic cell counts (SCC) in milk (p<0.01). The increasing MUN concentration has positive correlation with yield and fat content. By increasing somatic cell, milk yield was reduced and MUN level was increased. Cows in spring and winter produced more milk over 1.43 and 0.93 kg/day, respectively, than cows in summer (p<0.01). Milk urea nitrogen concentrations of milk produced in summer and fall were significantly lower (p<0.01) than those in spring and winter. Both MUN concentration and somatic cell counts were highest in winter. Milk yield was lower (p<0.01) in the first calving than other calving time and was tended to increase until the fifth parity and then decrease. Milk urea nitrogen and SCC were not related to parity of cows in this study. Milk yield and SCC were positively related to lactation period while MUN concentrations and milk fat and protein contents were negatively influenced by stage of lactation. In the present study, the relationship between MUN and reproduction of dairy cows was also investigated. Cow produced milk in high MUN concentrations (greater than 18 mg/dl) had more open days than cows in MUN concentrations less than 18 mg/dl. However, no significant difference between MUN concentration levels and frequency of artificial insemination was found in this study. It is suggested that although MUN values for nutritional management and measures of production or reproduction are used, non-nutritional factors should be considered.

Amendment Scheme of Labeling Regulation for Functionality of Dairy Products (한국의 기능성 유제품 표시제도 개선방안)

  • The labeling for functionality of food or food components are recognized globally and are essential for the growth of dairy product industry. To expand the functional claims of dairy product especially fermented milk product, the regulations restricting the labeling of functionality should be amended as soon as possible. The labeling regulations of functionality and efficacy for processed and functional foods in related Acts and subordinated statues such as definition, scope of claims, etc. were reviewed and the problems existed in the system were identified. The definition and classification of efficacy for processed food in Food Sanitation Act were analyzed to revise the labeling regulation of dairy product. A draft of amended labeling regulation for the functionality of dairy product is proposed, which provides consumers with appropriate information of beneficial effects on health purpose for human body structure and function. In order to develop the dairy products and related industries, these contents should be considered when the annexed Table 14 in the Enforcement Rule of the Processing of Livestock Products Act is amended.

Milk-Derived Growth factors as Neutraceuticals

  • Colostrum has lots of bioactive components and many growth factors including insulin-like growth factors, transforming growth factors and epidermal growth factor. Colostrum and milk derived growth factors widely mediate the growth of overall development and could be used as treatment of gastrointestinal disorder, wound repair process, bioacrivity in the neonatal GI tract and induction of oral tolerance. It is possible that milk derived growth factors as potential neutraceuticals for the specific consumers may have a great role in future food industry.

Milk and Health of Elderly People (우유와 노인건강)

  • As the development of medical technology and the elevation of the standard of living, the population rate of elderly people in Korea is increasing gradually. To keep a good lift quality of the elderly, both appropriate exercise and nutrients intake are necessary for them. Dairy products are known for the good source of variable nutrients including functional components and bioactive peptides such as Ig, lactoferrin, MFGM, OPP, CPP, GMP, sialic acid etc that are required especially for elderly people. However, they are classified as the low dairy products consumption group recently. For the promotion of dairy product consumption of elderly people, variable and specialized dairy products for the elderly should be researched and developed with the strengthened publicity activities.
