The Effects of Online Home Learning in Connection with Extracurricular Activities for Lifelong Education for the Disabled at University on Cafeterias Cooking Assistance Skills of Job Search Persons with Developmental Disabilities

  • The purpose of this study is to analyze the effects of online home learning in connection with extracurricular activities for lifelong education for the disabled in university on the cooking aids skills of cafeterias for the job search persons with developmental disabilities. Three people with job search developmental disabilities who have been in a state of unemployment for three years after graduating from a special high school course participated in the experiment. In order to verify the meaningful functional relationship between independent variables and dependent variables, multiple probe design across subjects, one of the main techniques of a single object study, was used. The experimental conditions according to the research design consisted of the steps of baseline, intervention, maintenance, and generalization. The dependent variable of this study is the restaurant cooking aid skills in the cafeteria, and three subskills such as side dish arrangement, sink arrangement, and dish washing were combined by task analysis. And the independent variable of this study was composed of procedures and methods to teach the environment, tools and materials related to the performance of dependent variables to the developmental disabled people at home by using real-time image technique through zoom service, and the contents of the performance by stages of task analysis. In addition, independent variables were applied to the subjects in the course of the extracurricular activities with the theme and contents of lifelong education for the disabled at university. Students who completed the above extracurricular activities practiced the intervention scene of the researcher through the screen sharing of zoom service. As a result, the subjects with developmental disabilities effectively acquired and maintained the positive response performance of dependent variables through independent variables. The subjects also showed high positive responses to generalization tests conducted in kitchens in cafeterias located elsewhere in the same university.

  • The consciousness and food preference of Korean foods by high school girls in Kwangju city and Chonnam area was surveryed by questionnaire. The results were as follows; 1. Although the cooking methods of Korean foods were scientific(63.8%), they have to be improved because of complication and difficulty. The point of improvement in the urban area was cooing method but that in the rural area was nutrition and hygiene 2. The motives of hav8ing interest in korean tradition foods were through home life and school education, mass communication and etc. As the subjects live in more urban area and have high income level, they were affected by school education and mass communication. 3. They are used to eat both traditional and nontraditional foods on the korean festive days and annual functions. There is tendency to decrease the use of traditional foods gradually because of complicated their cooking methods and long cooking time. 4. Most household responded that Korean traditional food are must to succession development (52.9%), because of succeed to korean diet culture and suit one’s taste. The more pride of traditional food are kimchi, rice cake, sweet rice drink, persimmon punch, sweet waxy rice cooked potherbs. 5. The preference about the korean foods were high in this order of chopsuey, mandu, laver, shikhae, cooked waxy rice. And they were low in salted anchovies salted yellow convina liver cheon, oyster cheon.

레시피 개발을 적용한 요리활동이 유아의 창의성 및 영양지식에 미치는 영향 (The Effects of Creating a Cooking Activity by Applying Recipe Development on Young Children's Creativity and Nutrition Knowledge)

  • 본 연구의 목적은 레시피 개발을 적용한 요리활동이 유아의 창의성 및 영양지식에 미치는 영향을 분석해 보고자 하였다. 개발절차는 요리활동 개발의 필요성 진단, 레시피 개발을 적용한 요리활동의 기본방향 설정, 요리 재료 및 주제 선정, 레시피 개발을 적용한 요리활동 모형 개발, 레시피 개발을 적용한 요리활동 개발, 최종 레시피 개발을 적용한 요리활동 완성의 총 7단계를 거쳤다. 본 요리활동의 모형은 '요리재료 탐색단계-레시피 개발단계-요리활동 실행단계-요리활동 표상단계-요리활동 평가단계'의 5단계로 개발하였으며, 총 11개를 개발하였다. 본 요리활동의 효과검증을 위해 부산 시소재의 K 어린이집에 다니는 만 4, 5세 유아 총 36명을 대상으로 하였다. 연구결과, 레시피 개발을 적용한 요리활동을 적용한 실험집단이 비교집단보다 유의한 차이로 창의성과 영양지식이 더 높게 나타났다. 따라서, 레시피 개발을 적용한 요리활동은 유아의 창의성 계발 및 영양지식의 습득에 긍정적인 영향을 미친다는 것을 시사한다.

당, 나트륨, 트랜스 지방 교재의 교사용 지도서 지문의 난이도 평가 (Evaluation of the Readability of Teacher's Guide Book for Nutrition Education-Sugar, Na, Trans Fat)

  • This study is attempted to propose a quality evaluation method of the materials for nutrition education by applying readability test of printed materials for nutrition education. It is significantly important for the teaching class with nutrition education materials to consider students understanding level and education materials topics or choosing words in developed printed materials. This study performed an evaluation of the readability of text in teachers' guidebook, which is devised for elementary school students' education material about sugar, sodium and trans-fat and attempted to estimate the developing materials through analyzing difficulty level of the text. We utilized "The Teacher's Guidebook for Cooking Activity" that had been developed for elementary school by Ministry Education Science and Technology, as the readability evaluation standard. Compared with the average score of readability about "The Teacher's Guidebook for Cooking Activity", $72.94{\pm}6.85$, "Sugar Guidebook" was 70.94{\pm}7.46, "Sodium Guidebook" was $68.76{\pm}14.50$, and "Trans-fat Guidebook" was $58.87{\pm}10.79$. Considering the subjects careers or ages, "The Teacher's Guidebook for Cooking Activity" has little deviation by the subjects careers or ages and was "intermediate" or "easy" level; however, "Sugar Guidebook", "Sodium Guidebook", "Trans-fat Guidebook" was "intermediate" or "difficult" level (p < 0.05). Readability score was especially low when the contents of some particular subjects were too professionalized or scientific terms were frequently used, and thes results were definitely seen in the "Sodium Guidebook" and "Trans-fat Guidebook". With Cloze test score, the readability evaluation will be using as an evaluation tool for the nutrition education materials.

가정과 연계된 요리활동이 유아의 기초과학개념 및 수학능력에 미치는 영향 (The Effects of Family Related Cooking Programs on Young Children's Basic Science Concepts and Mathematics Abilities)

  • This study investigated the effects of family related cooking programs on young children's basic science concepts and mathematics abilities. Subjects were 24 five-year-old children, 12 each for the experimental and the control group. Examinations of basic science concepts and mathematics abilities were applied to determine the homogeneity of the two groups. The 23 cooking activities, 12 for kindergarten and 11 for each child's home, were applied to the experimental group for six-week periods. The results of this study were that the family related cooking programs were effective in the formation of children's basic science concepts and children's mathematics abilities.

구성주의 접근의 요리 활동에 기초한 동시활동이 유아의 언어능력에 미치는 효과 (Enhancing Young Children's Language by Poetry Activities Related to Constructivist Cooking Experiences)

  • In an experiment to determine the relative effectiveness of poetry activities through constructivist cooking experiences 95 children in three kindergarten classes were assigned to experimental, comparative, and control groups. The experimental group participated in 12-week units of writing poetry after cooking experiences, while the comparative group participated in writing poetry after listening to poetry. Analysis of covariance revealed differences between the mean scores of the three groups on posttests of receptive and expressive language, indicating that the children in the experimental group performed better on the tests than the children in the comparative and control groups. These results suggest that incorporating constructivist cooking into poetry instruction is an effective means of fostering the language development of young children.

  • The purpose of this study is to illuminate the influence happened by the process of acquirement of professional cooking skills related to satisfaction with duty of hotel cooks according to the development and expansion of the food service industry. First, interaction with colleagues, working environment, accomplishment of duty, satisfaction of duty etc. have a big effect on improvement of cooking skills, that is, acquirement and accumulation of cooking skill. Therefore, it's confirmed that improvement of skill can be promoted if we focus on this kind of factors and meet more positively. Second, field education training should be operated professionally with systematic education training. Third, duty rotation has an effect on skill advancement. It can be interpreted that oppressive feelings caused by ability, skill, knowledge, human relations etc. which is required in new business related to frequent change of the business in one's charge can have an effect on duty satisfaction. It's considered that comprehensive and in-depth study should be accomplished in future concerning duty rotation, field training.

남녀 중학생들의 전통 음식에 대한 의식과 기호도 조사연구 (A Study on the Preception and Preferance of Korean Traditional Food of Middle School Boys and Girls in Seoul and Jeonju)

  • The purpose of this study is to investigate understanding and preferance in 28 kinds of traditional korean food of middle school boys and girls. The data for this study were collected in a survey conducted from 25th August to 8th September in 1993 in Seoul and Jeonju. Questionnaires were completed by 409 students: The results are as follow. The students have preception(75.8%) and favor (82%) about traditional korean food. And they do not take very often without ceremonial and traditional-holyday, because the cooking method and process are sophiscate and difficult(76.5%) However, they want that korean tradtional food should success, keep and develope the cooking apparatus and simplifing cooking method.

어린이집 교사들의 영양지식과 영양교육에 대한 인식 조사연구 (A Survey of Teachers' Recognition on Nutrition Knowledge and Nutrition Education at Day-care Centers)

  • This study was aimed at knowing the recognition of teachers' nutrition knowledge and nutrition education at day-care centers in Seong-nam. Teachers were all female, most of whom were in the 20, and their careers were less than 3 years. And $76.2\%$ of the teachers graduated from high school and junior college. The score of the nutrition knowledge was average $14.3\pm2.2$ (out of 20). It shows that they are lack of general information of nutrition. As the teachers had higher education, they scored higher nutrition knowledge levels (p < 0.01). It also says that there was meaningful interrelationship between the nutrition knowledge and the number of children they had (p < 0.05). $93\%$ of the teachers said that nutrition education should be given when children are three years old, at least and most of the teachers thought that nutrition education is necessary and should be taught in a separate course. $50.4\%$ of the teachers thought that nutrition education for early childhood should be taught by a nutritionist, but $35.2\%$ of them thought that the teachers themselves should be in charge of it. About $60\%$ of the teachers thought that 'Cooking Activity for Early Childhood' course should be established and it is desirable that the nutrition education should be in the area of cooking activity for childhood at day-care centers. The teachers thought that dietary habit is the most important subject in nutrition education and they got more information from the internet rather than in the class related to nutrition. 경북 일부 지역 요리학원 수강생의 교육환경에 따른 학습 만족도 (Association between Educational Environment and Satisfaction with Learning in Students at Local Cooking Institutes -Focused on Pohang and Gyeongju Area-)

  • The purpose of this study was to analyze the association between educational environment (physical environment of cooking institutes and curriculum) and satisfaction with learning of students at local cooking institutes. Self-administered questionnaires were distributed to 300 student enrolled at cooking institutes located in Pohang and Gyeongju, and a total of 265 were usable. Collected data were statistically analyzed using SPSS 12.0 by frequency, factor, reliability, t-test and Duncan's multiple range test. The results can be summarized as follows. Most of the subjects were enrolled at cooking institutes to learn Korean and Western cuisine. There were significant differences in learning according to institution, facility, method and instructor. There were also significant differences in learning according to gender, age, education, and attended classes. Based on the results, the physical environment of cooking institutes contributed to learning in the students, but the operation system also needs to be improved. However, study was limited in sample size and area, the results can-not be generalized.
