라이프스타일에 의한 한식전문점 고객의 추가마케팅만족의 차이 - 강원지역 외국인 유학생을 대상으로 - (Difference in Additional Marketing Satisfaction by Lifestyle of Korean Restaurant Customers - Focus on Foreign Students at University in Gangwon Province -)

  • The purpose of this article was to research the difference in additional marketing satisfaction by lifestyle of Korean restaurant customers (focus on foreign students at university in Gangwon province). In this research, factor analysis, cluster analysis, and ANOVA were carried out. Lifestyle was divided into seven factors and six clusters. Additional marketing satisfaction was divided into three factors. Additional marketing satisfaction showed a significant difference by lifestyle of foreign students. First, 'employee' had a highest point at C3 'convenience internet searching pursuit' but lowest point at C4 'brand preference pursuit' (p<0.001). 'Service process' had a highest point at C1 'safety health pursuit' but lowest point at C5 'effort pursuit' (p<0.001). 'Tangible clue' had a highest point at C3 'convenience internet searching pursuit' but lowest point at C5 'effort pursuit' (p<0.001). Additional marketing can reduce customer uncertainty, ambiguities, and wavering about eating at restaurants by intangibility of service. As a result, food-service corporations need to manage additional marketing as well as increase satisfaction and loyalty of customers.

외식업체 통합주방의 효율적인 운영관리에 관한 연구 -통합주방의 중앙공급에 따른 효율화 사례중심으로- (A Study on Efficient Integrated Kitchen Management of Restaurant)

  • This study aims at efficiency of kitchen management by adoption of a systematic central kitchen and conversion of conventional kitchen to convenience kitchen at ' H ' restaurant. First, integrated menu control of banquet buffet functions became more competitive with quality menu and eventually brought about guests satisfaction. Second, systematic central kitchen made possible standardization and mass production through simplified production line. Efficiency through quick service and shortened preparation time was realized, and food materials were recycled effectively at the same time. Integrated ordering lowered purchasing price and built an efficient cost control system. Third, conversion of conventional kitchen to convenience kitchen and strengthened central kitchen system facilitated agreeable work conditions and optimal work flow with butcher's and even sauce making utensils. Fourth, integrated supply system of buffet menu and sauce from western restaurants saved about 520 million won of labor costs. Last, one integrated kitchen out of two was easier in sanitation control with pleasant restaurant space. Sharing kitchen facilities and equipments also saved about 30% of maintenance fee. Power, water, and gas were also saved and eventually curtailed overall expenses.

편의식품 이용 실태에 관한 연구 (A Survey of the Behaviors on Fast Food Restaurants)

  • This study understands the actual conditions and problems for making traditional Korean food into the fast food. 1. Convenience to eat and nice atmosphere with friends (25%) are the best motive of visiting fast food restaurant. 2. The frequency of eating fast food is one to three times a month and the result of analysis on interrelation of human being in social anthropology represents that the fast food represents negative (-) interrelation by increasing of the age. The opinion about the fast food's nutrition is that the fast food lacks the nutrition (23.3%) and has excessive fat (40%). 3. The consumers were satisfied with the atmosphere of the fast food restaurant and unsatisfied with it's high prices. 4. The consumers' opinion on making the traditional food into a fast food was 66.4%. The consumers' opinions on traditional food to be improved are the sanitation (37.9%), the cookery (25%), the taste (11.7%), the nutrition (10.7%) and the opinions about inheritance of the traditional food is that 87.5% of people gave positive responses.

체인 패밀리 레스토랑의 고객 만족 및 고객 충성도에 미치는 요인 분석 (Analysis of the Factors Affecting Customer Satisfaction and Customer Loyalty in a Family Restaurant Chain)

  • Purpose - When it comes to first impressions of family restaurants, people basically think of the following factors: cozy, a refreshing space, indoor lighting, atmospheric music, the best-quality service through mutual interactions with employees, birthday events, follow-up customer management, brand image, and many others. Focusing on such family restaurants characteristics, with consumption experience and customer satisfaction determined as mediator variables, this study looks into the selection factors that affect customer loyalty when choosing a family restaurant. Subsequently, the study conducts an empirical analysis of these selection factors with the greatest influence. Research design, data, and methodology - This study analyzed 200 total surveys of family restaurant customers including college students, workers, housewives, and others. The survey was conducted over two weeks in May 2014. For statistical processing, SPSS 21 was used for factor analysis and reliability analysis as well as AMOS for structural equation analysis. In terms of a variable that would influence either consumption experience or customer satisfaction at the restaurants, the study introduced the concept of customer equity. The study designed a model based on a hypothesis developed using the following factors: customer encounter service value, customer convenience value, brand equity, relationship equity, and other factors defined as components of customer equity by Rust et al. (2000) determined as independent variables as well as with customer experience and customer satisfaction set as mediator variables. The hypothesis, after all, assumed that customer loyalty would be positively (+) influenced. Results - The analysis results from the study reported that brand value, customer encounter service value, and relationship value have positive (+) effects on consumption experience and customer satisfaction. However, as for customer convenience value, this turned out not to have a statistically significant influence on consumption experience and customer satisfaction. In regard to a relation between consumption experience and customer satisfaction, the results showed that the former affects the latter, and in terms of intervening variables, both of these appeared to have a positive (+) effect on customer loyalty. Conclusions - This study suggests that family restaurants should look for strategies that focus on how to promote customer relationships. For example, restaurants could try birthday events or discount events to achieve this goal. Since the study ended up realizing relatively low levels of suitability and statistical significance, the path of the study changed. After all, in order to increase suitability and statistical significance, the study had to eliminate factors such as service quality and others and for this reason the study was unable to conduct the analysis as initially planned. In addition, the data samples of the research were mainly gathered from students, which made it hard to say that the analysis was carried out on samples from every different group. Future research should analyze the characteristics of each group of customers for factors affecting customer satisfaction and customer loyalty in the family restaurant chain.

대학생들의 음식배달대행서비스 인식에 관한 주관성 연구 (A Study on the Subjectivity of University Students' Recognition of Food Delivery Service)

  • 본 연구는 음식점에 직접 고용되지 않은 직원이 제공하는 음식배달대행서비스 행태에 관한 대학생들의 주관적인 의견과 인식의 구조를 유형별로 도출하기 위해 Q-방법을 사용하였다. 이를 위해 설문지를 작성하여 P샘플을 선정하고 분류작업을 거치는 Q-sort를 PC QUANL프로그램을 이용하여 Q요인 분석을 실시하였다. 분석 결과 총 3가지의 유형으로 분류되었다. 제 1유형(N= 7): 효율 추구형, 제 2유형(N= 19): 편익 추구형,〕제3유형〔(N= 6): 가성비 추구형으로 각 각의 유형별로 다른 특징에 기인하여 요인을 명명하였다. 각 유형별 특징은 제 1유형: 소비자와 외식업소 모두에게 효율적인 측면을 인식하는 유형, 제 2유형; 신속, 편리, 유익함의 편익을 제공받는 측면을 인식하는 유형, 제3유형; 인건비 절약에는 기여 하지만 소비자에게 부담가중의 초기 시장에서 가격과 품질 측면을 인식하는 유형으로 나타났다. 분류된 3가지 유형에 따른 음식배달대행서비스 사업의 문제점을 도출하여 발전 방향과 개선방안에 대하여 전략적 시사점을 제공하고자 한다.

패밀리 레스토랑의 소비자-브랜드 관계의 질이 브랜드 충성도에 미치는 영향 : 마산지역 대학생을 대상으로 (Effect of Consumer-Brand Relationship Quality on Brand Loyalty in Family Restaurants)

  • 본 연구에서는 패밀리 레스토랑에 있어서 소비자-브랜드 관계의 질이 고객의 브랜드 충성도에 영향 미치는 지를 알아보고자 마산 지역에 위치한 K 대학의 대학생들을 대상으로 설문조사를 실시하였다. 설문조사내용으로는 인구통계학적 자료, 패밀리 레스토랑 이용실태, 소비자-브랜드 관계의 질 그리고 브랜드 충성도에 관한 문항으로 구성하였다. 2005년 11월 20일부터 24일까지 총 320부의 설문지를 배포하여 272부가 회수되어 85.0%의 회수율을 보였다. 본 조사를 위한 측정도구의 신뢰도 검증 결과 Cronbach's alpha 계수가 0.7이상으로 높은 신뢰도를 나타내었으며 타당도 검증 결과 60%이상의 설명력을 나타내 높은 타당성을 나타내었다. 패밀리 레스토랑의 소비자-브랜드 관계의 질(독립변수)이 브랜드 충성도(종속변수)에 영향 미치는 지분석하기 위하여 다중회귀분석을 실시한 결과 독립변수가 종속변수에 미치는 영향력은 36.1%의 설명력을 보였으며, 소비자-브랜드 관계의 질의 5개 구성 요소(자아연계적 애착, 만족도, 신뢰, 몰입, 친밀감) 중에서 만족도와 친밀감의 2개 구성요소가 유의수준 p<0.01에서 유의적으로 브랜드 충성도에 정(+)의 영향을 미치는 것을 알 수 있었다. 결론적으로 소비자-브랜드 관계의 질이 강하게 형성될수록 소비자의 브랜드 충성도가 높아지는 것임이 입증되었다 따라서 향후 패밀리레스토랑 운영자들은 궁극적으로 소비자의 브랜드 충성도 형성을 통한 꾸준한 매출과 성장을 위하여서는 기존의 브랜드에 대한 홍보보다는 소비자-브랜드 관계의 질을 강하게 형성할 수 있는 마케팅 전략을 강화하도록 하여야 할 것이다.

부산 지역 중.고등학생의 패스트푸드 이용 실태와 영양지식, 식생활 태도와의 관련성에 관한 연구 (A Study on the Relationship between Fast Food Consumption Patterns and Nutrition Knowledge, Dietary Attitude of Middle and High School Students in Busan)

  • This study was carried out to investigate fast food consumption patterns, nutrition knowledge, dietary attitude of middle and high school students in Busan. A questionnaire survey was conducted among 562 students from April 8 to April 22 in 2006. The results are summarized as follows. Convenience to eat is the best motive for visiting fast food restaurants. Nutrition knowledge scores of middle school male students were lower than those of the other groups. The more nutrition knowledge female students have, the lower fast food consumption became. There was no significant difference in nutrition knowledge and fast food consumption in male students. There was a significantly positive correlation between education levels of their parents and dietary attitude of the subjects(p<0.01). Pocket money showed a significantly negative correlation with dietary attitude and with fast food use frequency(p<0.05). There was a significantly positive correlation between nutrition knowledge and dietary attitude of the subjects. The use frequency of fast food showed a negative correlation with dietary attitude(p<0.01) and nutrition knowledge(p<0.05) of the subjects. Therefore, proper nutrition education is required to improve their nutritional status and dietary attitude.

DINESERV를 이용한 전주한식당의 고객 만족, 재방문 의도, 구전 의도 형성과정에 관한 연구 (A Study on the Formation of Customer Satisfaction, Revisit Intention and Word-of-Mouth for the Korean Restaurants in Jeonju City using DINESERV)

  • 본 연구는 DINESERV 품질이 고객 만족, 재방문 의도, 구전 의도에 미치는 각각의 영향 관계를 알아보고자 하였다. 아울러, DINESERV 품질과 재방문 의도간에 고객 만족의 매개효과를 알아보고, DINESERV 품질과 구전 의도 간의 고객 만족의 매개효과를 알아보고자 하였다. 조사는 전주지역의 27개 한식당에 방문한 고객을 대상으로 실시하였고, 총 428부를 분석에 사용하였으며, SPSS와 AMOS 16.0을 사용하여 2단계 분석법을 실시하였다. 분석결과, DINESERV의 잠재요인 중 서비스접점, 분위기 그리고 음식품질이 고객만족에 유의한 영향을 미치는 것으로 나타났고, DINESERV 품질과 재방문 의도간의 영향 관계는 유의하지 않았으며, DINESERV의 잠재요인 중 편리성이 구전의도에 유의한 영향을 미치는 것으로 나타났다. 또한, 고객 만족은 재방문 의도와 구전 의도에 각각 유의한 영향을 미치는 것으로 나타났다. 아울러 서비스 접점, 분위기, 음식 품질은 고객 만족의 매개효과에 의해 재방문 의도와 구전 의도에 간접적으로 영향을 미치는 것으로 나타났다.

조리사의 환경의식과 친환경태도가 식품안전추구행동에 미치는 영향 (Effect of Cook's Environmental Awareness and Eco-friendly Attitude on Food Safety Pursuit Behavior)

  • Rapid economic growth brought material affluence and convenience, but it also has caused a negative issue, such as environmental damage. Therefore, this research holds the purpose of grasping structural influencing relationship of environmental awareness of cook, which is taking an important role in food safety among workers in hotel restaurants with eco-friendly attitude and food safety pursuit behavior. To achieve the purpose, collected materials were tested for the fidelity, organic causation and control effect, using Structural Equation Modeling for frequency analysis, confirmatory factor analysis, credibility analysis and hypothesis testing with SPSS (V23.0) and AMOS (V21.0) programs. Environmental awareness of hotel cook has causation with eco-friendly attitude, and the attitude has meaningful causation with food safety pursuit behavior. That is, it proved that cooks are taking care of their job carefully from the pre-cooking stage while most of people ignore the storing stage. The result shows not only hotel's own training session, cook's level of consciousness on the food safety and they are working with high sense of responsibility. The limitation of this research is that it only conducted with cooks of deluxe hotels in Busan, and it could not include various variables about environmental awareness. Therefore, it is expected that the lacking contents to be dealt by a follow-up study.

패스트푸드 레스토랑의 소비자-브랜드 관계의 질에 대한 고객 인식에 영향 미치는 요인 분석 (A study on the Determinants Affecting Consumer's Perception on Consumer-Brand Relationship Quality in the Fast Food Restaurant)

  • The purpose of this study was to analyze the determinants affecting the consumer-brand relationship quality (CBRQ) in the fast food restaurant. The questionnaires were distributed to 250 students in the K University located in Masan, who were sampled by convenience-sampling method from December, 6 to 14, 2004. The 246 questionnaires were responded, and 12 unusable questionnaires were excluded, then 234 were used for the final analysis (response rate: 93.7%). SPSS (12.0) was used for the statistical analysis. The result of this study showed that the CBRQ of low monthly income group was significantly lower than that of high monthly income group (p < .05), and the CBRQ of more frequent visiting group was significantly higher than that of less frequent visiting group (p < .001). The CBRQ of group who spend less than 30 minutes on their visiting the fast food restaurant was lower than that of group who spend more than 30 minutes (p < .01). As a conclusion, the operators in the fast food restaurant should focus on the concentrated marketing strategy for the frequent-visiting customers who had a strong quality of consumer-brand relationship in order to increase sales volume, and at the same time they should try to make marketing strategy to induce the less frequent-visiting customers who had less strong consumer-brand relationship quality to their restaurants in order to strengthen quality of consumer-brand relationship, which would be resulted to lead them to their restaurant more frequently.
