Chlorella첨가가 가공치즈 품질에 미치는 영향 (Effect of Chlorella Addition on the Quality of Processed Cheese)

  • 구형 단세포 녹조류이며 건강식품인 chlorella를 첨가하여 일반가공치즈의 기호도와 유사한 chlorella가공치즈를 제조한 후 품질특성을 살펴보았다. 일반성분 및 pH는 전통적인 일반가공치즈의 정상적인 데이터로 안정성이 있는 품질특성을 나타내었다. 미생물은 모든 실험구에서 검출되지 않아 건강에 유해한 영향을 유발하지 않았다. 지방분리는 실험구간 품질차이가 발생하지 않았고 용융성은 chlorella 첨가량이 증가할수록 점진적으로 감소하였으나(p<0.05) 모두 품질에 큰 영향을 미치지 않았다. 물성학적 특성은 hardness와 springiness가 유의적인(p<0.05) 증가로 조직감 개선의 효과가 나타났다. 색도는 chlorella 고유의 색상인 녹황색으로 인해 모든 실험구가 대조구와 극히 유의하였다(p<0.05). 관능검사 중 color 및 mouth feel은 대조구와 모든 실험구가 유의성(p<0.05)이 있었으나 상품성 측면에서 CPC1이 적합하였다. 결과적으로 본 연구는 실험구 중 CPC1이 전통적인 일반가공치즈의 품질특성을 유지하며 기호성 상품성 시장성이 우수한 건강지향적인 chlorella가공치즈의 개발 가능성을 제시하였다.

혼합영양 배양에서 Chlorella protothecoides의 GABA를 포함한 아미노산 함량 분석 (The Content Analysis of Amino Acids Including GABA of Chlorella protothecoides under Mixtrophic Culture)

  • Chlorella is quantitatively and qualitatively high in protein with balanced essential amino acid profiles, vitamins and minerals. ${\gamma}-Aminobutyric$ acid (GABA) is broadly distributed in nature and fulfills multi-physiological functions including effect such as a health-promoting functional compound. To improve the GABA production, Chlorella protothecoides were grown through the modified mixtrophic culture medium containing 2L of sterilized bristol medium with 0.01% urea and 4.0% glucose in a 5L fermenter. The results showed that nineteen kinds of amino acid including GABA at C. protothecoides sample were analyzed using high performance liquid chromatography (HPLC). Glutamic acid in total concentration (%) of amino acid is the most abundant amino acid (33.10%), followed by alanine (20.48%) and GABA (17.48%). Three amino acids including GABA were responsible for more than 70% total concentration in C. protothecoides sample including eight essential and nine non-essential amino acids: aspartic acid, asparagine, serine, glutamine, histidine, glycine, threonine, arginine, tyrosine, valine, methionine, tryptophan, phenylalanine, isoleucine, leucine, lysine. As a result of this experiment, it is expected that Chlorella will be developed to a critical product having high value as, GABA, functional food materials.

Enhancement of Nutritional Quality of Italian Ryegrass Mediated Silage by Supplemented with Lactic Acid Bacteria and Chlorella

  • The aim of present study was to improve the quality of silage using lactic acid bacteria (LAB) and chlorella as a supplement. Italian ryegrass (IRG) mediated silage was prepared with lactic acid bacteria (L. plantarum) and different concentration of chlorella. We analyzed the nutritional profiles such as crude protein (CP), acid detergent fiber (ADF) neutral detergent fiber (NDF), total digestible nutrient (TDN) and in-vitro dry matter digestibility (IVDMD), microbial counts and fermentative acids such as lactic acid, acetic acid and butyric acid in the control and experimental silage after three months. It shows increased crude protein content and also maintains the rest of nutritional values as compared with control silage. LAB inoculation with chlorella as supplementation slightly reduced the pH of the silage. In addition, it increased the fermentative acids production as compared with control silage and inhibits the undesired microbial growth especially fungi in the silage. Therefore, we suggest that LAB inoculation and chlorella supplementation to the IRG mediated silage could be improved the nutritional quality of the silage which is an intrinsic feature for the application in the preparation of animal feeds and functional foods.

An Effect of Dietary Chlorella on Bone Mineral Density in Postmenopausal Women

  • Age-related osteopenia and osteoporosis are common in postmenopausal women due to decrease in bone mass and ovarian function. A therapy for osteoporosis would depend on only drugs to inhibit bone loss, hormonal replacement therapy, exercise and dietary supplementation and it is very hard to fad an ideal therapy for osteoporosis as yet. Chlorella which is rich in minerals such as calcium magnesium fatty acids, vitamins and sterol, could be applicable for prevention and co-treatment of osteoporosis, but it has yet to be studied. The purpose of this study was to assess the relationship between the effect of dietary chlorella on bone mineral density (BMD) and nutritional improvement. BMD was measured in the femural neck and lumber spine portion. Nutritional and bone turnover markers from blood samples were assessed serum lkaline phosphatase, hemoglobin, number of erythrocytes and total protein. Studies for the femur neck measurement showed that normal BMD increased 2.1% for the group fed chlorella supplemented diet for four month and increased 6.6% fur group treated for one year when compared to the control group, and for the lumber spine measurements the few month group showed an increase of 9.1% over the control group, the one year group showed an increase of 64.2% over the control group. Hemoglobin content, number of erythrocytes and total protein showed similar increased patterns with BMD measurement, meanwhile, serum alkaline phosphatase increased 3% for the four month group and decrease 16% for the one year group compare to the control group. In conclusion, the postmenopausal women fed chlorella supplemented diet results in an increase in BMD. This is a marked increment in lumber spine, enhancement of nutritional state and stable bone turnover. This data showed a positive relationship between BMD and nutritional change with chlorella treatment, and suggested that chlorella dietary may lead to improving and preventing rapid loss of BMD in postmenopausal women.

흰점박이꽃무지와 장수풍뎅이 유충에 대한 사료 첨가제로서 클로렐라의 효과 (Effect of Chlorella Supplementation on Survival and Larval Growth of the Edible Beetles, Protaetia brevitarsis and Allomyrina dichotoma)

  • 국제연합식량농업기구(FAO)의 보고에 따르면, 미래의 식량문제 해결 방안으로 식용곤충을 지목하였다. 식용곤충은 단백질을 비롯한 무기질과 비타민 등의 함량이 풍부하여 영양학적 가치가 높은 것으로 평가된다. 따라서 국내 곤충산업의 확대를 위해서는 안정적인 대량사육 시스템의 개발과 안전한 식용곤충 전용 사료의 개발 등에 대한 연구가 요구된다. 본 연구에서는 액상과 분말 클로렐라를 식용곤충종인 흰점박이꽃무지와 장수풍뎅이의 사료 첨가제로 이용하여 각 유충의 생육에 미치는 효과를 분석하였다. 두 곤충 모두에서 클로렐라 액상과 분말을 첨가했을 때 유충의 생존율이 대조구보다 높았다(흰점박이꽃무지; p>0.05, 장수풍뎅이; p<0.05). 클로렐라 분말을 첨가한 사료를 급여했을 때 흰점박이꽃무지와 장수풍뎅이 유충의 3령 기간이 각각 최대 24일(p<0.05)과 19일(p<0.05) 단축되어 곤충 사육농가의 노동력 절감 효과를 기대할 수 있을 것으로 생각된다. 또한, 장수풍뎅이는 주로 학습애완용으로 판매되는 것에 비해 식용 소재로 활발히 활용되고 있는 흰점박이꽃무지 실험구에 대하여 영양 성분 분석을 실시하였다. 그 결과, 클로렐라 액상 및 분말 첨가 처리구에서 수분, 조단백질, 조섬유 및 구리, 아연, 마그네슘과 같은 무기질의 함량이 높았고, 납과 카드뮴, 수은 및 비소 등 중금속은 모든 실험구에서 검출되지 않았다. 이러한 연구결과를 바탕으로 흰점박이꽃무지와 장수풍뎅이 사육 시 사료 첨가제로서 클로렐라가 활용될 수 있을 것으로 기대된다.

클로렐라를 첨가한 식빵의 품질특성 (Quality Characteristics of White Bread Added with Chlorella powder)

  • 클로렐라를 새로운 기능성 식품의 재료로 사용하기 위하여 클로렐라 분말의 화학성분 분석 및 클로렐라 분말을 첨가한 식빵을 제조하여 품질특성을 조사하였다. 클로렐라의 화학성분을 분석한 결과 단백질이 61.45%로 가장 많은 함량을 나타내었으며, 조섬유, 가용성 무질소물 및 회분순으로 나타났다. 무기성분을 분석한 결과 주된 무기성분은 P, K Ca 및 Na로 나타났으며, 그 중 P이 1,478.94 mg%로 가장 많은 함량을 나타났다. 유리당을 분석한 결과 클로렐라에는 sucrose, glucose, fructose 및 maltose 등 총 4종류의 유리당이 함유되어 있었으며, 그 중 maltose가 0.12%로 가장 높게 나타났다. 아미노산을 분석한 결과 총 17종의 아미노산이 분리, 동정되었으며, 총 아미노산은 37,425.11 mg%로 나타났고, 그 중 aspartic acid, glutamic acid, proline, methionine 및 histidine이 주요 아미노산으로 나타났으며, glutamic acid가 4,009.20 mg%로 가장 높게 나타났다. 지방산 조성을 분석한 결과 불포화지방산이 전체지방산의 68.87%를 차지하였으며, 그 중 linoleic acid가 34.27%로 가장 높게 나타났다. 클로렐라를 첨가하여 제조한 반죽을 발효시간 경과에 따른 부피 변화를 측정한 결과 발효시간이 경과함에 따라 반죽의 부피가 증가하는 경향을 나타내었으나 대조구와 비교하여 클로렐라 분말의 첨가량이 증가함에 따라 부피가 증가하는 경향을 나타내었다. 식빵의 crust와 crumb의 색도는 클로렐라의 첨가량이 증가함에 따라 밝기를 나타내는 L값과 적색도를 나타내는 a값은 crust와 crumb 모두 감소하는 경향을 나타내었으며, 황색도를 나타내는 b값의 경우 crust는 감소하였고, crumb는 증가하는 것으로 나타났다. 클로렐라 분말을 첨가한 식빵의 조직감은 유의적인 차이를 보이지 않았으며, 관능검사를 실시한 결과 전체적인 기호도에서 클로렐라 분말을 0.2% 첨가한 시료에서 가장 좋은 기호도를 나타내었다.

자외선 조사에 의한 지질 고생산성 Chlorella vulgaris 변이주 분리 (Isolation of Lipid High-yielding Chlorella vulgaris Mutants by UV Irradiation)

  • Chlorella vulgaris, a genus of single-cell green algae, is considered to be a very essential resource for the higher value-added business including functional food and biodiesel, due to its high contents of protein, carbohydrate and lipid. In this study, ultraviolet rays were irradiated in order to induce the mutation of C. vulgaris. After inducing the mutation, UV1-20 mutant, high in lipid was selected and its cell growth rate, dry weight, pigment content and lipid content were measured. The growth rate of the UV1-20 mutant was increased almost 1.5 times than the wild type, but pigment contents of chlorophyll and carotinoid were decreased. In addition, the lipid content of UV1-20 was increased 1.8 times than the wild type. Therefore, C. vulgaris mutant, isolated in this study, is considered to have sufficient potential to be used as a material for the higher value-added business.

클로로필 고생산성 Chlorella vulgaris 변이주의 특성 분석 (Characterization of Chlorella vulgaris Mutants Producing High Chlorophyll)

  • 본 연구는 Chlorella vulgaris에 자외선을 조사하여 획득한 변이주 중 색소함량이 높은 변이주 2종(UBM1-2, UBM2-57)의 특성을 분석하였다. 2종의 변이주의 생장속도는 WT와 비교했을 때 20% 가량 더딘 생장율을 보였고, 세포건조 중량 및 단백질 함량 또한 세포생장과 비슷한 패턴을 보였다. 지질 함량은 UBM1-2 변이주에서 WT와 비교 시 21% 높은 지질 함량을 확인하였지만, UBM2-57 변이주는 WT보다 39% 낮은 지질함량을 축적하고 있음을 확인하였다. 하지만, 색소함량(클로로필, 카로티노이드)의 경우 WT와 비교 시 유의적으로 높은 함량을 축적하고 있음을 확인하였다. 클로로필함량은 UBM1-2, UBM2-57 변이주가 WT보다 각각 37%, 89% 높았고, 카로티노이드 함량은 WT보다 각각 27%, 70% 높음을 확인하였다. 본 연구를 통해 선별한 미세조류 변이주는 야생균주와 비교 시 세포 생장에 큰 차이를 보이지 않으며, 유용성분을 다량 함유하고 있어 화장품 및 의약품, 건강 기능식품의 중요한 소재로써 이용이 가능할 것으로 판단된다.

한국 Chlorella에 대한 연구 (Studies on the chlorella in Korea)

  • According to the experiment on pure-isolation and the related contaminants of Chlorella, the phenomena of the ecological distributions of Chlorella in Korea have been manifested in several areas and also the aim that in going to do culture, biological and physiological study of Chlorella is carried out. Contaminants very oftenly occupied on the colony of the strains taken in order to fulfil pure-isolation of Chlorella, but in accordance with being piled up the minute research on this subject, I can obtain the desirable results as follows: 1. For the pure-isolation, the duration chose the time from May to September 1957 so that may easily isolate from contaminant water with utilizing the antibiotic substances. 2. To take long time, 36-48 hours until growth of nascent through the non-sporulated, it originates from the difference of the cultured media. In addition to the above mention, the mechanism of growth until nascent through the sporulated must not always require the ligh. However the supply of metabolic energy depend upon its nutritional conditions per phase. 3. The culture of Chlorella should be based on the lower culturing except adding especial conditions such as reagent concentration of media, artifical shake of media and other facts due to the natural conditions. And also these strains grew not only in distilled water but 2% NaCl solution without any abnormality in cell it self. I, therefore, guess it is possible to culture in sea-water under phasic environment. 4. In the experiment of ammonia detection, it is caused by the sampling surroundings to contain the minute quantity of ammonia in strain No. M 918; that is the place to be plenty of Carbohydrate on behalf of protein. 5. To compare the absorption curve of chlorophyll of higher plant with that of Chlorella, the absorption zone made mostly the Same ones each other but a little absorption grade dose not clearly appear. The colony which formed giant type grows with intensive colour and green band on surrounding of the colony and after that it was changed into all the green colour and developed up to end. 6. At first phase for a week, the development of Chlorella suspends the normal condition as in vivo but after a few days, the colour of chlorophyll gradually changed into blue-yellow which secrete the mucous substances on the agar media. The cell was flew out the contained substances itself on leaving the cell wall only, or the various micro-organism diffused on the outer-region of the cell.

A Protective Effect of Chlorella Supplementation on Cadmium-induced Nephrotoxicity in the Rats

  • The uptake of cadmium in animals is mainly accumulated in and affected to the liver and kidney by binding with red blood cells and serum albumin. The process accounts for more than 50% of the total accumulated cadmium in the body. The kidneys may be damaged without regarding the pathway uptake of cadmium. In a group of rats on supplements of 1% chlorella and 40 ppm cadmium, the concentration of cadmium in urine greatly decreased by 66% compared to control group, and the total synthesis of metallothionein decreased by 48.6% compared to control group. However, no previous study has assessed the protective effect on kidney damage induced by cadmium uptake through supplementation with chlorella. This study analyzed the biochemical marker for kidney damage in the rats after uptake of 40 ppm $CdCl_2$ and supplementation of the diet of Sprague Dawley (SD) rats with 1%, 5%, and 10% chlorella during 4 weeks. In a group of SD rats on supplementation with 1% chlorella and uptake of 40 ppm $CdCl_2,\;\beta_2$ microglobulin in the urine was found to be $3.1\pm0.6\;{\mu}g/L$, a decrease of 58% compared to a group of Sp rats on uptake of $CdCl_2$ only, in which the $\beta_2$ microglobulin was found to be $4.9\pm0.7\;{\mu}g/L$. According to the results of histopathological observation, the accumulation of mild and localized chronic inflammatory cells in kidney tissues was observed in 50% of the SD rats on uptake of cadmium only. In contrast, only 30% of the SD rats on supplementation with 1% chlorella and uptake of 40ppm $CdCl_2$, representing a histopathological abnormality, and there were no histopathological abnormalities at all in groups of SD rats on supplementation with 5% or 10% chlorella and uptake of 40 ppm $CdCl_2$. In conclusion, protein, calcium, and iron, which account for more than 50% of the total dried chlorella composition, may contribute to the reduction nephrotoxicity by stimulating both inhibited absorption of cadium and increased excretion of accumulated cadmium in kidneys.
