In view of the nationel health, the health of women during their childbearing age is important. In Korean, several studies reported that incidence of anemic case was high among these group. The present study was conducted to investigate the dietetic life and dietetic problems among college women during their child-earing age. One hundred thirty seven college women (Age ranges 18.5 to 21.8) who lived in Gwangju area were randomly selected and were practiced dietary survey by three day records in November 1979. Also, hemoglobin level was determined. The result are summarized as follows; their diets were found to be lacking I total amounts of food it takes (878.6$\pm$266.9 gm) and in such foods as cereals, potatoes, beans, green and yellow vegetables, oils and fats and small fishes. but animal food intakes were sufficient in such foods as fishes, meats and eggs. The average calorie intake (1729.3$\pm$437.0kcal) was insufficient against R.D.A (2000kcal) and the daily energy expenditure (2024.7kcal). Lacking nutrients were Fe and Vitamin A these percentages of R.D.A. were 75.61% and 80.14% The mean body height (16.1$\pm$8.1cm) was higher tendency compared to other studies, but the mean body weight (49.8$\pm$4.1kg) was lighter. The average Hb level was 12.75$\pm$2.94gm%, and 13.64% of the subjects was anemic (12gm% below) The differences of each nutrient intake between the anemic and the healthy group not noted statistically significant.
The purpose of this study was to investigate the effects of nine times repetitive steaming and drying process Sunsik diets on antioxidant activity in obese mice fed high fat diets to prevent oxidative stress, using drying materials comprising 23 kinds of cereals (61.5%), beans (30.0%), sweet potato and potato (3.0%), fruits (2.0%), vegetables (3.0%), and stevioside, a natural sweetener (0.5%). We produced three samples: the experimental group was classified into the normal diet group (control), the high fat diet group (HF), and the high fat diet group + the Sunsik group (3HFS, 7HFS, 9HFS) fed to the mice for eight weeks. As a result, the serum, liver lipid peroxide, and nitric oxide levels were significantly higher in the HF group than in the C group at p<0.05 level, and the NO level was lower in the Sunsik supplemented groups. The antioxidant enzyme catalase activity significantly decreased in the HF group at the p<0.05 level compared to the C group. The total antioxidant activity of the C group was significantly higher in serum, liver, and kidney tissues than the HF group (p<0.05). The anthocyanin level in liver and spleen tissue was significantly higher in the group fed Sunsik than in the HF group.
The purpose of this study was to investigate the dietary intakes of preschool children in rural areas and to develop programs of nutrition education, offering the mothers an appropriate advice for the improvement of the dietary practices corresponding to the modernization of the agriculture. The daily food intakes of 118 preschool children, randomly selected from the farm household, were studied by means of three-day records during summer season of 1972. The results showed that the dietary intakes of food groups such as meats and fishes, beans and the products, milks and small fishes, fruits, fats and oils were below 50 per cent of the recommended level-especially in that of milk. Therefore, the diet was generally below the recommended dietary allowances for protein with good quality, fat, calcium, vitamin A, thiamine, reboflavin and ascorbic acid. The dietary data revealed that most of preschool children in rural areas consumed rice and barley, almost every day. Other foods eaten less frequently were soybean paste, gimchi, potatoes, flour, and summer squash. The use of cereals should be curtailed some what and the use of milks, fishes, poultry, meats and protein extenders should be increased.
A review was made about the foods for korean festival days through such literature as kyongdojapji ( 京都雜誌 ), youlyangsesiki ( 洌陽歲時記 ) and Dongkooksesiki ( 東國歲時記 ). The focus was on the 'gala foods' in Kangweon province. A survey was made on two separate areas; urban and rural district, The result showed that there was no difference in celebrating gala days between two separate area. Those festival days which are celebrating are seolnal (New Year's day) (98.5%), chusok (mid-autumn festival) (97.7%), Sangwonnal (the 15th day of January) (95.1%), and dongjee (one of 24 seasons by lunar calender) (83.1%) in the order of higher percentages. Only less than 10% of the subjects for this survey are keeping on celebrating napyong (3.5%), baikjong (the 15th day of July) (5.4%), jungyang (the 9th days of September) (6.7%) samjinnal (8.6%) and yoodooil (the 15th day of June) (9.2%). Gala foods, such as dduggook, mandoogook, injulmi (glutinous rice cake) and sikhe (sweet rice beverage) on Seolnal, ogokbab (the rice made of five kinds of cereals), jinchas (various kinds of boiled vegetables) and buryum (chestnut, pinenut and walnut) on sangwonnal, songpyun (rice cake of chusok) on chusok, patjook (rice-gruel mixed with red beans) on dongjii were being enjoyed by most people. Gala foods on seolnal and chusok had a greater variety, compared with those enjoyed on other festival days. I think it is a pity that other gala foods except those just mentioned are enjoyed in a lower percentage or almost forgotten.

The objective of this study was to characterize and determine contents of vitamin E isomers (alpha-, beta-, gamma-, delta-tocopherols and tocotrienols) in different steamed rice dishes, with or without other grains. Five different rice dishes were evaluated for the vitamin E nutritional value as major Korean staple foods. They were plain steamed rice (SR) and steamed rice mixed with barley (SRBa), red bean (SRRB), black bean (SRBB), or multi-grains (SRMG) containing a mixture of black rice, barley, red beans, and black beans. Vitamin E isomers were extracted from five grams of freeze-dried samples with hexane after saponification. An analytical method, using a normal-phase HPLC with a UV detector, was developed and used to determine the amount of each vitamin E component. The results showed that SR contained three vitamin E isomers (alpha-tocopherol, alpha-tocotrienol, and gamma-tocotrienol). Alpha-tocopherol and gamma-tocotrienol were de-tected from all samples while only SRBB contained beta-tocopherol and beta-tocotrienol. SRMG showed the highest (3.9$\mu$g/g dry wt) and SRRB showed the lowest alpha-tocopherol (1.3$\mu$g/g dry wt) contents. SRBB contained about 5 to 16 times more gamma-tocopherol (19.7$\mu$g/g dry wt) than othe.5. These results suggested that adding black bean or multi-grains can dramatically improve the vitamin E nutritional values compared to the plain steamed rice (SR). Information obtained from this study can be directly related to the amount of vitamin E intake and can be used to balance the diet for Koreans.
The aim of this study was to investigate the effects of food behavior and life-style behavior on the health-status of male industrial workers in the Masan region. The average age of the 173 male subjects was 42.9 years and 59% of the subjects were labor workers, 25% office workers, and 70% of them earned 1 - 1.5 million won monthly. The subjects were categorized into one of three groups : normal group, health-concerned group, and disease-suspected group classified by the criteria of the data (blood pressure, blood glucose, blood hemoglobin, serum total cholesterol, and serum triglyceride) obtained from a health examination. Forty seven belonged to the normal group, 71 to the health-concerned group, and 55 to the disease-suspected group. The health-concerned group, and disease-suspected group had significantly higher systolic and diastolic blood pressure, blood glucose, and serum total cholesterol than the normal group, and the disease-suspected group showed a significantly higher serum triglyceride level than the normal and health-concerned groups. The disease-suspected group consumed carbohydrate foods, such as cereals more frequently and protein foods such as beans and eggs less frequently than the normal group and health-concerned group. However, there was no difference in nutrient intakes among the three groups. The disease-suspected group and health-concerned group smoked more cigarettes and drank more frequently than the normal group, and the disease-suspected group exercised less as compared to the normal group. The kinds of diseases diagnosed in the disease-suspected group were hypertension, hyperlipidemia, liver disease, and neurological disease. The results of this study indicate that nutrition education and monitoring should be implemented for industrial workers to prevent chronic diseases and to reduce medical cost for the treatment of disease.
This study surveyed food intake and preferences for breakfast among 167 male and 152 female middle school students in Incheon. Most students were in a normal range with respect to body mass index (BMI; 18~22.9). Most of the students spent 10~20 minutes to finish their breakfast, and female students skipped breakfast more frequently than male students, with major reasons of not being able to spend enough time for breakfast and low appetite. Steamed rice(bap) was the most frequently consumed food for breakfast. Students ate vegetables and fruits for breakfast the most frequently, followed by milk and milk products, meat, fish, egg and beans, and cereals. The most frequently consumed food among protein sources was eggs. Male students had foods except vegetables and fruits more frequently than female students for their breakfast. Female students were more highly aware of the importance of breakfast on their health than male students. Preference on different food groups was significantly higher in male students than female students except vegetable salad and fruit juices. The results suggest that breakfast skipping of middle school students can be reduced by aggressively reflecting food preferences of the students to breakfast menu and appropriate nutritional education for students and their mothers.
The purpose of this study is to investigate diet quality and changes in nutrient and food intake with increase in age. Subjects were 69 patients(28 males, 41 females) living in Jeon-ju city, over middle-aged, and they were the same patients studied 4-7 years ago in a previous study. Dietary survey with one day 24-hour recall method was used. Energy, calcium, vitamin A and vitamin B$_2$intakes were lower than the RDA and vitamin C was in excessive status in pre-test and post-test. In food groups examrned, the consumption of potatoes, beans, vegetables, seaweeds, beverages, seasonings, oils, fish & shells and milks was increased amount than 4-7 years before but the consumption of cereals(p<0.01), sugars, seeds, fruits, processed food, meats and eggs was decreased. Diet quality was assessed by %RDA, nutrient adequacy ratio(NAR), mean adequacy ratio(MAR), dietary diversity score(DDS), meal balance and food group pattern. In %RDA, those proportion of appropriate intake in post-test in were higher than those in pre-test. For most nutrient except vitamin A, the levels of NAR in post-test were higher than in pretest. The MAR, an index of overall dietary quality, was 0.77 for pre-test and 0.83 for post-test(p<0.05). When we counted the major food groups consumed(KDDS), 62.3% of subjects had a KDDS of 3 in pre-test and 42.0% of subjects had a KDDS of 4 in post-test. Based on these results, in terms of variety and balance, total diet quality was improved with advancing of age.
The purpose of this study was to investigate health-related habits, dietary habits, depression, stress, satisfaction of body weight, mini-dietary assessment (MDA) and dietary behaviors according to self-rated health among 255 university students in Kyungnam province. Statistical analyses were performed using the SPSS software package (version 19.0). The average ages of the subjects were 21.1 years. Participants were asked their self-rated health and 109, 105 and 41 students answered themselves as "healthy", "normal" and "unhealthy", respectively. The pocket money (P<0.05) was related with self-rated health, and meal frequency (P<0.01) of healthy group was higher than that of the unhealthy group. The self-reported depression level (P<0.01) and the score of depression (P<0.05) of the healthy group were lower than those of the unhealthy group. The self-reported stress level of the healthy group (P<0.05) was higher than that of the unhealthy group. The scores of nutritional behavior (P<0.05) and MDA (P<0.01) of the healthy group were higher than those of the unhealthy group. The scores for intakes of meat, fish, egg or beans, cereals and vegetables except kimchi, fruits, balanced diet and various foods were higher in the healthy group than in the unhealthy group. Our results suggest that pocket money, high meal frequency, low depression, satisfaction of present body weight, and good dietary behavior might influence good perception of self-rated health.
Background: Phytic acid (PA) is a polyphosphorylated carbohydrate that can be found in high amounts in most cereals, legumes, nut oil, seeds and soy beans. It has been suggested to play a significant role in inhibition of colorectal cancer. This study was conducted to investigate expression changes of ${\beta}$-catenin and cyclooxygenase-2 (COX-2) and cell proliferation in the adenoma-carcinoma sequence after treatment with rice bran PA by immunocytochemistry. Materials and Methods: Seventy-two male Sprague-Dawley rats were divided into 6 equal groups with 12 rats in each group. For cancer induction two intraperitoneal injections of azoxymethane (AOM) were given at 15 mg/kg bodyweight over a 2-weeks period. During the post initiation phase, two different concentrations of PA, 0.2% (w/v) and 0.5% (w/v) were administered in the diet. Results: Results of ${\beta}$-catenin, COX-2 expressions and cell proliferation of Ki-67 showed a significant contribution in colonic cancer progression. For ${\beta}$-catenin and COX-2 expression, there was a significant difference between groups at p<0.05. With Ki-67, there was a statistically significant lowering the proliferating index as compared to AOM alone (p<0.05). A significant positive correlation (p=0.01) was noted between COX-2 expression and proliferation. Total ${\beta}$-catenin also demonstrated a significant positive linear relationship with total COX-2 (p=0.044). Conclusions: This study indicated potential value of PA extracted from rice bran in reducing colonic cancer risk in rats.
