National Genetic Evaluation (System) of Hanwoo (Korean Native Cattle)

  • Hanwoo (Also known as Korean native cattle; Bos taurus coreanae) have been used for transportation and farming for a long time in South Korea. It has been about 30 yrs since Hanwoo improvement began in earnest as beef cattle for meat yield. The purpose of this study was to determine the trend of improvement as well as to estimate genetic parameters of the traits being used for seedstock selection based on the data collected from the past. Hanwoo proven bulls in South Korea are currently selected through performance and progeny tests. National Hanwoo genetic evaluations are implemented with yearling weight (YW), carcass weight (CW), eye muscle area (EMA), backfat thickness (BF) and marbling score (MS). Yearling weights and MS are used for selecting young bulls, and EMA, BF, and MS are used for selecting proven bulls. One individual per testing room was used for performance tests, and five individuals per room for progeny tests. Individuals tested were not allowed to graze pasture, but there was enough space for them to move around in the testing room. Feeds including roughages and minerals were fed ad libitum, and concentrates were provided at the rate of about 1.8% of individual weight. Overall means of the traits were $352.8{\pm}38.56$ kg, $335.09{\pm}44.61$ kg, $77.85{\pm}8.838\;cm^2$, $8.6{\pm}3.7$ mm and $3.293{\pm}1.648$ for YW, CW, EMA, BF and MS. Heritabilities estimated in this study were 0.30, 0.30, 0.42, 0.50 and 0.63 in YW, CW, EMA, BF and MS, respectively, which are similar to results from previous research. Yearling weight was 315.54 kg in 1998, and had increased to 355.06 kg in 2011, resulting in about 40 kg of improvement over 13 yrs. YW and CW have improved remarkably over the past 15 yrs. Breeding values between 1996 and 2000 decreased or did not change much, but have moved in a desirable direction since 2001. These improvements correspond with the substantial increase in use of animal models since the late 1990s in Korea. Hanwoo testing programs have practically contributed to the improvement in aspects of quality and quantity. In sum, the current selection system is good enough to accommodate circumstances where fewer sires are used on many more cows. Although progeny tests take longer and cost more, they seem to be appropriate under the circumstances of the domestic market with its higher requirement for better meat quality. Consequently, accumulative data collection, genetic evaluation model development, revision of selection indices, as well as cooperation among farms, associations, National Agricultural Cooperative Federation, universities, research institutes, and government agencies must be applied to the Hanwoo selection program. All these efforts will assist the domestic market to secure a competitive position against imported beef under Free Trade Agreement trade system and will provide farmers with higher profits as well as the public with a higher quality of beef.

Processing Effects of Feeds in Swine - Review -

  • Processing is generally employed to alter the physical and chemical properties of feeds used in pig diets, using hammer/roller mills, pellet mills and extruders/expanders. The reported optimum particle sizes of corn are approximately $500{\mu}m$, $500-700{\mu}m$, $400-600{\mu}m$, for nursery, growing-finishing, and breeder pigs respectively. Optimum particle size of grains are affected by diet complexity. There was a trend towards reducing particle size in order to increase ADG in pigs fed a simple diet, though such was not the case for pigs fed a complex diet. Uniformity of particle size also affects the nutritional values of swine feeds. Uniform particle sizes would consistently give greater nutrient digestibilities. In terms of pellet quality, it is reported that a higher incidence of fmes in pelleted feeds has a direct correlation with poorer feed conversion ratio in pigs. Particle and pellet sizes are also very important for pelleting in terms of grinding, digestibility, stomach ulceration and pellet durability. A particle size of $600{\mu}m$, or slightly less, seemed optimal for com in fmishing pigs, and the 5/32 in. diameter pellets supported the best efficiencies of gain during nursery and finishing phases. Extruder and/or expander processes would allow the feed industry an increased flexibility to utilize a wider spectrum of feed ingredients, and improve pellet quality of finished feeds. It would appear that extruded or expanded diets containing highly digestible ingredients have little effect on the growth performance of pigs, and the feeding values of the feeds over pelleted diets were not improved as pigs grew. The extruder or expander is much more effective than a pelletizer in salmonella control. Gastric ulcerations and/or keratinizations were consistently reported in pigs fed mash and processed diets containing finely ground grains, whereas carcass quality was not affected by diet processing methods such as pelleting, extruding or expanding. In corn- or sorghum-based diets, the electrical energy consumption is 4-5 times higher in the expanding than in the pelleting process. But the expander's processing cost was half of that shown by an extruder. Finally, the decision of which feed processing technology to adopt would depend on the processing cost, and any potential improvement in growth performance and digestibilities of nutrients should offset the increased operating and capital costs related to the extruder/expander technology over mash or pelleting processes in pigs.

저수준의 Lysine 사료에서 L-leucine 첨가수준이 비육후기 Duroc 품종 돼지의 성장 및 육질특성에 미치는 영향 (Effects of Dietary L-leucine Levels in Low-lysine Diets on Growth Performance and Meat Quality Parameters in Finishing Duroc Pigs)

  • 본 연구에서는 비육후기 Duroc 품종 돼지를 대상으로 저수준의 lysine 사료에 합성 L-leucine 첨가수준이 생산성, 도체 및 육질 특성에 미치는 영향을 평가하였다. 시험동물은 평균 74±1kg의 Duroc 품종 54두를 각 처리 당 6반복, 반복 당 3두씩 공시하였다. 시험사료는 lysine 0.45%의 기초사료에 합성 L-leucine을 각각 0% (CON), 1.5% (LEU 1.5) 및 3.0% (LEU 3.0) 첨가한 후 30일간 급여하였다.일당증체량, 사료섭취량 및 사료요구율은 처리구간에 유의적인 차이를 보이지 않았다. 도체특성에 있어서는 도체율 및 등지방두께는 처리구 간 유의적인 차이를 보이지 않았으나, 등심단면적은 L-leucine의 첨가수준이 높아짐에 따라 증가하는 경향을 나타내었다. 근내지방도는 L-leucine 첨가구가 대조구에 비하여 유의적으로 높았다(P<0.05). 육질 특성에서 조지방 함량이 유의적인 차이는 없었지만 L-leucine 첨가에 따라 증가하는 경향을 나타내었으며, CIE L*는 유의적으로 증가하였다(P<0.05).

고에너지 사양이 육종가 배치별 거세한우의 성장, 도체, 및 혈액성상에 미치는 영향 (Effects of high energy diet on growth performance, carcass characteristics, and blood constituents of Hanwoo steers distributed by estimated breeding value for meat quality)

  • 본 연구는 육종가를 이용하여 배치한 거세한우에 고에너지 사료를 급여하여 성장, 도체성적 및 혈액성분의 변화에 대하여 분석을 해보았다. 육종가의 적용은 소고기 고급육이 가능한 개체를 선발하는 방법으로 사용되어져 왔다. 본 연구는 육종가에 의해 고, 저로 나누어진 한우그룹에 고에너지 사료를 급여효과를 알아보기 위해 수행되었다. 고육종가 그룹에서 고에너지 사료를 급여할 경우 도체성적이 높아진다는 가정을 하였다. 연구를 수행하기 위해 26마리의 거세한우를 이용하여 $2{\times}2$ 완전임의배치를 하였다(고에너지, 일반사양 과 고육종가, 저육종가로 배치). 체중, 일당증체량, 건물섭취량, 사료요구율의 결과로 고 육종가 그룹에서 수치적으로 높게 나타났다. 혈청성분분석 결과로 비육후기(20 - 27개월령)의 혈청성분중 포도당과 중성지방 농도가 고육종가 그룹에서 유의적으로 높게 나타났고 이는 도체성적에도 긍정적인 효과를 가져오는 것으로 나타났다. 하지만 선행연구에서 나타났던 혈중 알부민과 인의 성분은 도체등급에 영향을 미치지 않는 것으로 보인다. 도체중 분석에서는 근내지방도가 고육종가 그룹이 수치적으로 높게 나타났으나 유의적인 차이는 없었다. 본 연구의 결과로 특정 혈중대사 성분들 중 포도당과 중성지방과 같은 지방대사에 관여하는 성분들은 비육후기 육종가가 높을수록 높은 농도로 나타났고 이는 혈중 대사성분이 유전적인 영향에 의해서 변화가 된다는 것을 알 수 있었다.

  • In this study, the effect of probiotic supplementation on growth performance, blood metabolites, and meat quality of Hanwoo steer was investigated. A total of 32 Hanwoo steers (15-17 months, average body weight $462{\pm}37.9kg$) were randomly allotted to 4 dietary treatments (0, 0.5, 1.0, and 1.5% mixed probiotics), with four Hanwoo steers per pen (two replicates per treatments), and reared for 12 months. There were no differences among treatments in growth performance of Hanwoo steer (P>0.05); however, feed intake decreased linearly with increasing levels of mixed probiotics. Growth hormone and Blood Urea Nitrogen (BUN) levels responded linearly with increasing levels of dietary mixed probiotics (P<0.05), but not insulin and blood glucose did not. In particular, total cholesterol was significantly lower for the 1% mixed probiotic treatment in comparison with that of the other treatments (P<0.05). The pH, Thiobarbituric Acid Reactive Substances (TBARS), cooking loss, and meat color were influenced by increasing levels of mixed probiotics (P<0.05), but the carcass characteristics and shear force were not. Regarding sensory evaluation, the addition of mixed probiotics resulted in significant difference in meat color, tenderness, aroma, off-flavor, juiciness, and marbling score, but not in overall acceptability. In addition, fatty acid profiles indicated no differences between control and mixed probiotic treatments. In conclusion, mixed probiotic treatment at 1% levels can enhance consumer preferences possibly by reducing cholesterol and TBARS.

Rancid Rice Bran Affects Growth Performance and Pork Quality in Finishing Pigs

  • Two experiments were conducted to evaluate the feeding value of rancid rice bran in finishing pigs. In exp. 1, fresh (FRB), rancid (RRB), pelleted and extruded rice bran were used to determine stability and nutrient digestibility. The free fatty acid (FFA) values of FRB and RRB were 8.2 and 15.3%, respectively. Some of the FRB was pelleted ($70^{\circ}C$) or extruded ($110^{\circ}C$). In exp. 2, a total of 48 pigs ($Landrace{\times}Yorkshire{\times}Duroc$, $51.12{\times}0.5kg$) were employed for a 56-d feeding trial with 3 treatments: Control (defatted rice bran+animal fat), 20% FRB (8.2% FFA), and 20% RRB (15.6% FFA). There was a significant difference (p<0.05) in FFA% between raw and pelleted, and extruded rice bran on d 10 after storage. On d 30 the extruded rice bran showed lower (p<0.05) FFA% than the pelleted one. Dry matter digestibility was higher (p<0.05) in processed rice brans (pelleted or extruded) than raw rice bran (FRB or RRB). Energy and protein digestibilities in extruded rice bran were higher (p<0.05) than those in raw rice brans. The digestibilities of isoleucine, leucine and phenylalanine were lower (p<0.05) in RRB than FRB. Pigs fed diets containing FRB grew faster (p<0.05) and showed better feed conversion ratio (p<0.05) than those fed diets containing defatted rice bran or RRB. Carcass characteristics including dressing percentage and backfat thickness were not affected (p>0.05) by dietary treatments. With increasing storage time, the raw pork from RRB showed higher (p<0.05) thiobarbituric acid reactive substance (TBARS) and peroxide value (POV) than those from FRB when stored at $1^{\circ}C$ for 3 weeks. Cooked pork showed rapid increase in TBARS and POV as compared to raw pork regardless of rice bran rancidity. As the storage time passed, Lightness (L) was lower (p<0.05) in RRB than FRB. Redness (a) was higher (p<0.05) in control than rice bran groups when stored 2-3 weeks. However, there was no difference (p>0.05) in redness (a) between the two rice bran groups. In conclusion, feeding rancid rice bran gave negative effects on growth performance and pork quality in finishing pigs.

소의 CSRP3, APOBEC2, Caveolin 유전자들의 단일염기다형 분석 (Analysis of SNPs in Bovine CSRP3, APOBEC2 and Caveolin Gene Family)

  • CSRP3, APOBEC2, CAV1, CAV2 및 CAV3 유전자들은 포유동물에서 도체와 육질 형질에 중요한 역할을 하는 것으로 보고되고 있다. 따라서, 이 유전자들의 단일염기다형(Single nucleotide poly- morphism; SNP)을 8개의 다른 소의 품종에서 확인한 결과 coding region에서 caveolin family 유전자에서 9개의 SNP, CSRP3유전자에서 1개의 SNP 및 APOBEC2 유전자에서 3개의 SNP가 존재함을 확인하였다. 이 coding region의 SNP들은 PCR-RFLP 방법에 의해 재확인하였으며 이들 유전자의 intronic region에서도 9개의 SNP가 존재함을 확인할 수 있었다. 8개의 다른 품종 소에 각 유전자들의 SNP들을 이용하여 유전자 빈도를 확인한 결과 CAV2, CAV3, CSRP3 및 APOBEC2 유전자의 SNP 중에서 5개가 품종간에서 유의적으로 차이가 있음을 확인할 수 있었다. 이 SNP들은 차후 검증작업을 통하여 육질관련 형질 마커로 이용될 수 있을 것으로 사료된다.

남은 음식물을 첨가한 펠렛사료가 오리의 생산성 및 육질에 미치는 영향

  • 남은 음식물을 수분 ·탈취 ·건조하여 0%, 25%, 50% 및 75% 대체한 펠렛사료를 육성오리에 5주 동안 급여한 결과 시험종료 체중이 남은 음식물 25%와 50% 첨가에서 유의적인(p<0.05) 증가를 나타냈다. 일당증체량은 남은 음식물 25%가 다른 처리구보다 유의적(p<0.05)으로 증가함을 나타낸 반면에 75%은 유의적인(p<0.05) 감소함을 나타냈다. 사료섭취량은 남은 음식물을 첨가함에 따라 다소 증가하였으나 유의적인 차이는 없었다. 사료효율은 남은 음식물 25%가 가장 좋은 반면에 75%가 가장 나쁘게 나타났다. 도체중은 75%구가 유의적(P<0.05)으로 감소하였다. 수분함량은 남은 음식물 25%와 50%구는 대조구와 별다른 차이가 없었으나 75%구가 유의적(P<0.05)으로 높았다. 지방과 단백질함량은 남은 음식물의 대체수준의 증가에 따라 유의적(P<0.05)으로 감소함을 나타냈다. 육의 pH은 남은 음식물 대체수준의 증가에 따라 증가하는 경향이였으며, 75%구에서 유의적인 차이를 나타냈다. 육색의 명도와 적색도는 남은 음식물의 대체수준의 증가에 따라 감소하는 경향이였다. 콜레스테롤 함량은 남은 음식물 25%, 50% 및 70%구에 유의적(P<0.05)으로 감소하였다. 관능평가에서는 냄새와 외판이 남은 음식물 대체 급여에 의해 약간 떨어지는 경향이였으나 맛에 있어서는 다소 증가하는 경향을 나타냈다. 따라서 남은 음식물을 이용한 토리 펠렛사료에 있어 50% 까지 대체 이용 가능성을 시사해주고 있다.

한우우사 바닥의 톱밥두께가 도축 후 등심의 육질에 미치는 영향 (Effect of Sawdust-Bedded Thickness in Floors of Hanwoo on Meat Quality of M. Longissimus after Slaughter)

  • 본 연구는 한우우사 바닥면의 톱밥두께가 도축후 등심의 육질에 미치는 영향을 구명하고자 실시하였다. 7개월 령의 비거세 수소 22두를 톱밥이 10, 15 및 20 cm로 깔린 단방우사($3{\times}8\;m^2$)에서 27개월령까지 사육한 후 도축하여 등심(M. longissimus) 부위를 $4{\pm}0.2$에서 9일 동안 저장하였다. 도체성적, pH, 보수력, 드립감량, 가열감량, 전단력, 전자코에 의한 향기패턴 및 관능적 기호도는 톱밥두께에 따른 유의적인 차이가 없었다. 일반성분 함량 및 지방산 조성은 20cm가 가장 높은 조지방 함량과 가장 낮은 n6/n3을 보였다(p<0.05). 저장중 총환원력은 9일째에 10cm가 가장 높았던 반면(p<0.05), TBARS는 가장 낮았다(p<0.05). 표면육색소 함량은 저장기간 동안 10 및 20 cm의 MetMb이 15cm보다 낮았던 반면(p<0.05), OxyMb은 높았다(p<0.05). 표면육색은 저장기간 동안 10 및 20 cm가 15 cm보다 붉은 육색을 나타내었다(p<0.05).

Effects of a Mixture of Eugenol, Thymol and Malate on Growth Performance, Beef Quality and Liver Function in Hanwoo Finishing Steers Fed a High-Concentrate Diet

  • Thirty six Hanwoo steers (average BW, $564.5\;{\pm}\;25.7\;kg$; average age, approximately 23 months) were used to evaluate the effects of a mixture of eugenol (14%), thymol (1%) and malate (85%) on growth performance, beef quality and liver function in Hanwoo finishing steers fed a high-concentrate diet. A feeding trial was conducted for 7 months in National Agricultural Cooperative Federation farm located in Anseong, Korea. Steers were assigned randomly to one of three treatments: control (without additive supplementation), treatment 1 (0.05% additive of concentrate), treatment 2 (0.1% additive of concentrate). The results of this study showed that initial and final BW averaged 564 and 755 kg, respectively, and BW gain was significantly higher (P<0.05) for steers fed the additive mixture than for those fed no mixture (0.78 and 0.79 vs. 0.69 kg/d, respectively). Serum aspartate aminotransferase in the T2 treatment was decreased during the 24 to 31 months of age. Although supplementation of additives resulted in no substantial effect on carcass characteristics, it had a potential effect to improve feed efficiency and AST concentration in Hanwoo finishing steers fed a high-concentrate diet. In conclusion, a mixture of eugenol, thymol and malate has shown promise in improving feed efficiency and liver function in the finishing phase of Hanwoo steers.
