The purpose of this study was to investigate the factors influencing body mass index of 618 university students located in the Gwangju area, from Nov. 20th to 30th, 2002. The subjects included 301 males(48.7%) and 317 females(51.3%). This survey was conducted using a self-administered questionnaire. The percentage of students who were underweight, normal and overweight based on their body mass index(BMI) was 3.7, 88.0 and 8.3 for the males, and 29, 71 and 0 for the females, respectively. Most students (73.8%) skipped breakfast. This was because of lack of time(65.1%) of the cases. Self-reported eating habit problems were eating irregular meal(52.4%), overeating(21%), prejudiced meal(12.4%) and skipping meal(7.4%). The type of favorite snack was biscuit(31.9%) and cup Ramyon(31.9%). The type of favorite beverage was juice(23.3%). The coffee intake was higher in males compared to females. The rates of alcohol drinking in male and female students were 88.0% and 85.8% respectively, and the rates of smoking were 35.9% and 2.8% respectively. Percentages of weight control experience were 30.2 and 51.4 in the male and female, respectively. The BMI of students living in home and eating breakfast was higher than that of the other students. The BMI of students eating cup Ramyon and water increased. The BMI of students taking regular exercise and weight control tended to be higher than that of subjects not doing so. When the amount of pocket money available and the rates of coffee intake, alchol drinking and smoking increased, the BMI was increased. Therefore, nutritional education for university students is needed so as to improve their health and to modify life habits and nutritional education program should be developed to meet the various needs of these students.
This study investigated the effect of salt preference on dietary habits and the body composition of university students. The subjects were divided into two groups: 85 students who dislike salt (salt-dislike (SD) group) and 104 students who like salt (salt-like (SL) group). We found that the SL group showed a higher preference for sweet, sour, spicy, and bitter flavors compared to the SD group. There was no significant difference in the frequency of eating breakfast according to the salt taste preference. The meal speed of the SL group was significantly higher than the SD group (p<0.01) and the body mass index of the SL group ($22.59kg/m^2$) was higher than SD group ($21.04kg/m^2$). The fat mass of the SL group (15.30 kg) was higher than the SD group (12.80 kg) (p<0.01). Salt preference and snack intake frequency had a significant and positive correlation with fat mass. The frequency of eating breakfast, and meal speed also showed a significant and positive correlation with subcutaneous fat. In conclusion, the SL group eats relatively more, speedily and frequently intakes snacks and carbonated drinks, likely resulting in higher body and subcutaneous fat. These results suggest salt preference is related to food choice, influences unreasonable eating habits, and possibly changes body composition. Taste preferences should therefore be considered for dietary consulting and nutritional education.
The purpose of this study was to evaluate the dietary attitude and food behavior of elementary, middle and high school students in Korea. The subjects in this study were 7,698 boys and girls in large cities in Korea. The questionnaire was made and distributed to the students to answer the questions. Followings are the results of this study : 1) Father and mother's average ages were 45 and 41 years old, respectively. 2) Most students thought dietary life was more important than clothing or residentary life. Dietary habits such as irregularity of meal, frequencies of skipping meal and of eating out increased in higher grade than in lower grade, and in girls than in boys. 3) Most students, especially in elementary school, recognized that their own bad dietary habbit was unbalanced diet. Irregular meal time and eating too much were also pointed out as problems by middle and high school students. 4) Most students thought that the most effective meal for health was breakfast, but they replied the tartest meal as dinner. 5) Students tended to prefer Korean style food. Cooked rice and kimchi, ramyun, and pizza were ranked the most preferred food when they were hungry. 6) Elementary school students ate meals more regularly than higher grade students, and girls ate meals more regularly than boys. 7) Skipping rate of breakfast was higher than that of lunch or dinner, and the percentage of meal skipping students was increasing with grade elevation. No time to eat or eating between meals was the reasons of irregular meal time. 8) Frequency of dining with family was decreased, but frequency of eating out with friends was increased with increasing grade. The gravity of dining out is increasing rapidly in Korean adolescents. Therefore, nationwide nutrition education policy is necessary to constitute a right dietary environment and a desirable dietary altitude.
This study is conducted to compare the problems affecting dietary habits and health status between a long-term exercise group and non-exercise group of males older than 50 years. Most subjects of the two groups consider regular exercise to be the most important factor for maintaining health, and recognize hypertension as the number one concern. The most common nutritional supplement among subjects is multiple vitamins, and sleeping time range from 6~8 hours. Breakfast fasting rate was 15.9% among non-exercise group (NEG), where overeating and eating out rates were higher among exercise group (EG) when comparing to NEG. Fasting rates of breakfast, and consumption rates of milk and dairy products, vegetables such as kimchi, and fruits and fruit juices are higher among the EG. Overeating and eating out rates are lower among NEG, whereas eating rates of proteins like meat, fish, eggs, beans, fried foods, high-fat meats carbonated drinks, ice cream, and salt intakes are higher. Rates of health, dietary habits, and nutrient intakes are higher among EG. Energy intakes among the two groups were below the standard level, Vitamin $B_2$ intake is low in EG, and folic acid and calcium intakes were higher in NEG. The exercising group care more about health, eating habits and nutrient intakes, and low smoking rates are being observed. Thus, specific dietary improvement programs for adult men, are required, and it is necessary to consider the practice of nutrition education.
The purpose of this study was to determine the prevalence of obesity and to examine the eating habits of elementary school students in Kwangju. The study was carried out on 931 students(male : 454, female : 477) in September and October of 1996. The results are summarized as follows ; Obesity was defined as body mass index(BMI) that exceeds 20. The rate of obesity was 10.0%(male 4.7$\%$, female 5.3$\%$) in subjects. Subjects were divided into 3 groups : normal group(BMI〈20), mildly obese group(20〈BMI〈25), and moderatly obese group(25〈BMI〈30), respectively. With regard to frequency of skipping breakfast, 9.1$\%$ of normal children and 17.5$\%$ of mildly obese children and 33.3$\%$ of moderately obese children had skipping every morning(p$\ll$0.001). With regard to the regularity of meal time, 62.1$\%$ of normal children had ‘regular meals’but 58.0$\%$ of mild obese children and 50.0$\%$ of moderate obese children had‘irregular meals’(p$\ll$0.05). With regard to meal volume, obese children consumed much more meal volume than normal children(breakfast p$\ll$0.001, lunch p〈0.005, dinner p$\ll$0.001). With regard to try to lose weight, 22.9$\%$ of normal children and 55.6$\%$ of mild obese children and 83.3$\%$ of moderated obese children indicated they had attempted(p$\ll$0.001). The results of this study showed that the prevalence of obesity in elementary school students in Kwangju has a tendency to be increased. Obese children need to correct their eating habits. This reasserts the importance of nutrition education in children through teachers, parents and dietitians. The aim of this study is to survey the eating habits and nutritional knowledge of children in Pusan, with a view to uncovering problems and their underlying causes and cultivating desirable dietary habit and nutrition for children. Three hundred and fifty six elementary school students were asked questions about their eating habits and nutritional knowledge as well as general information about their personal characteristics. The results showed: 1. Only 53.5% of the subjects had breakfast every day. Seventy-six percent of the subjects had dinner every day. Only 40% of the children took meals and talked with family at both breakfast and dinner. Thus there was little opportunity for dietary guidance by parents. 2. About half of the subjects answered that their appetite decreased after eating snack foods between meals. A third of the subjects liked the baked goods as snacks. Because of their high sugar and fat content, they can damage children's health, resulting in child diabetes and tooth decay. For this reason, careful education is necessary to allow children to be able to select snack foods that are appropriate in kind and quantity. 3. About 85% of the subjects had an unbalanced diet. Therefore systematic nutrition education at school is necessary to instill in children the value of balanced diet. 4. Children preferred rice to other cereals as a staple food. They disliked kimchi, seasoned and blanched foods and salads as subsidiary foods. It is therefore necessary to teach children systematically the nutritional advantage of cereals and vegetables and to heighten their awareness of Korean food culture. 5. Children had a low level of nutritional knowledge. The knowledge of specific nutrients was lower than that of foods. In conclusion, systematical educational programs need to be developed at elementary school. These should include information about achieving a balanced diet, good eating habit, meal management and Korean dietary culture. Nutritional education at home must be emphasized.
Objectives: College is an important time for students to establish their identity as an independent subjects and develop a foundation to maintain a healthy adulthood. However, after female students become college students, their eating habits are likely to become more irregular and they may experience various health problems because of excessive weight control. Therefore, this study was conducted to investigate the dietary behaviors and blood clinical indices of female college students by residence types. Methods: A total of 374 subjects were classified as home group, self-boarding group or boarding group according to residence type. Dietary habits, frequency of food intake, and eating attitudes were examined through questionnaires and anthropometric measurements and blood clinical indices were analyzed. Results: The meal most frequently skipped by female college students was breakfast, and the frequency of skipping breakfast was significantly lower in the home group than other groups. Most college students recognized that their eating habits had worsened since becoming college students, with the self-boarding group in particular feeling that their eating habits changed negatively. The consumption frequencies of protein foods, fruits, dairy products, seaweed, and fatty meats were significantly lower in the self-boarding group than other groups. The home group ate food cut into smaller pieces, while the self-boarding group tried new and rich foods. Residence types did not affect blood clinical indices. Conclusions: The self-boarding group had inadequate dietary habits compared to the home group. Although residence type did not affect the blood clinical indices, the students still had poor dietary habits. Therefore, proper nutrition education is needed to improve the nutritional status of college students, especially those that self-board.
This study aimed to find the differences in weight control status and eating behavior of satisfied and dissatisfied female high school students regarding their own body shape. The participants consisted of 238 students at two female high schools in Nonsan-si, Chungnam-do in May of 2008. Self-assessment evaluated present body shape and ideal body shape they would like to have by providing silhouette drawings. The subjects were divided into two groups, 'satisfied' and 'dissatisfied', according to the differences between present body shape and ideal body shape. In the distribution of subjects according to body mass index, 100% of overweight, 97.0% of normal weight and 48.7% of underweight belonged to the dissatisfied group. There were significant differences in weight control and eating behavior between dissatisfied and satisfied groups in terms of frequency and reasons of conducting weight control behavior, body weight return after weight reduction, skipping breakfast and consuming fast food. The satisfied group was two times more likely to not conduct weight control behaviors compared to the dissatisfied group. The main reason for trying to control weight differed according to the group; the reason was feeling fat in the dissatisfied group and desiring to be healthy in the satisfied group. The percentage of subjects that returned to their original weights after weight reduction was 5 times higher in the dissatisfied group. The percentages of subjects that regularly skip breakfast and consume fast food were both higher in the dissatisfied group than in the satisfied group. The dissatisfied group responded 'eating alone' more frequently among nine binge eating behaviors compared to the satisfied group. Both groups, however, did not show any difference in overeating of meals, eating speed, intake frequency of regular meals, food preference, preferred cooking method, carbonated beverage intake and snack eating behavior. In summary, the dissatisfied group tried more unnecessary body weight reduction and had poor eating behavior. Accordingly, to correct the biased perception of body shape by the majority of female high school students, the values of our society should change toward the pursuit of beauty of health.
The aim of the present study was to assess the effects of skipping breakfast on diet quality and metabolic disease risk factors in healthy Korean adults. Subjects included 415 employees (118 men, 297 women; 30-50 years old) of Jaesang Hospital in Korea and their acquaintances. Data collected from each subject included anthropometric measurements, 3-day dietary intake, blood pressure, and blood analyses. The subjects were classified into three groups based on the number of days they skipped breakfast: 'Regular breakfast eater', 'Often breakfast eater', or 'Rare breakfast eater'. Participants in the 'Rare breakfast eater' group consumed less rice, potatoes, kimchi, vegetables, fish and shellfish, milk and dairy products, and sweets than did participants in the other two groups (P for trend <0.05) and ate more cookies, cakes, and meat for dinner (P for trend <0.05). Participants in the 'Rare breakfast eater' group consumed less daily energy, fat, dietary fiber, calcium, and potassium than did participants in the other groups (P for trend <0.05). The percent energy from carbohydrates was lower and fat intake was higher in the 'Rare breakfast eater' group than in the other groups (P for trend <0.01). When diets were compared using the Acceptable Macronutrient Distribution Range for Koreans, 59.1% of subjects in the 'Rare breakfast eater' group consumed more energy from fat compared with the other two groups (P <0.005). According to the Estimated Average Requirements for Koreans, intake of selected nutrients was lower in the 'Rare breakfast eater' group than in the other two groups (P <0.05). The risk of elevated serum triglycerides was decreased in the 'Rare breakfast eater' group (OR, 0.3 [0.1-1.0], P for trend=0.0232). We conclude that eating breakfast regularly enhances diet quality, but may increase the risk of elevated serum triglycerides.
This study was intended to investigate food habits, dietary variety and the effects of nutrient intake of female college students. Food habits such as regularity of meal time, repast of breakfast, lunch, and supper, and duration of meal were assessed via a self reporting questionnaire, 24 hrs recall method for nutrient intake was obtained from 155 female college students in Yangju-si. Dietary variety was assessed by dietary diversity score(DDS). The mean height and weight of the subjects were $161.25{\pm}3.52cm$ and $52.26{\pm}4.52kg$, respectively. The dietary habits of female college students was generally inadequate. In the survey of dietary habits, the ratio of skipping breakfast 3~6 days a week in total subjects was 87.09%, showing a rather higher ratio of skipping breakfast. In the evaluation of nutrient intakes by DDS, subjects who had higher DDS had significantly higher nutrient intakes of energy, protein, carbohydrate, fiber, calcium, phosphate, iron, vitamin A, vitamin C, and cholesterol(p<0.05). There was a great difference in nutrient intakes, suggesting the risk of nutritional imbalance. These findings suggest that nutritional education based on female college students' eating variety and dietary habits(regularity of meal time, skipping breakfast and night snacks per week, and duration of meal) may be required to improve dietary variety. it is considered that the improvement in dietary habits will contribute to the improvement of nutrition.
