남자 중.고등 학생에 있어서 피부두겹 법에 의한 총지방량 측정 (Total Body Fat Measurement by Means of Skinfolds in The Secondary School Boys)

  • Total body fat measurement by means of skinfold thickness was performed in 94 secondary school boys. Hydrostatic weighing was made on the same subject and corrected for residual volume in lung. Skinfold thicknesses at four sites, namely, back, waist, arm and abdomen, were compared with total body fat calculated from the equation given by Keys and Brozek and regression equation were computated. In 48 middle school boys aged between 13 and 16 years and 46 high school boys aged between 16 and 19 years, skinfold thicknesses increased at all 4 sites as age increased. The body density, however, showed different pattern. In middle school ages, body density showed little variation. Density in 13-14 years was 1.0608, in 14-15 years 1.0578 and in 15-16 years 1.0546. In high school ages density in-creased abruptly to 1.0703 (16 yr.), 1.0730 (17 yr.) and 1.0740 (18 yr.). Subsequently 15 years was a boundary for density change and total body fat change. In middle school boys as a group of 48 the observed values were: density: 1.0562, total body fat: 15.9%, mean skinfold thickness at four sites: 6.02 mm. The coefficient of correlation between mean skinfold thickness and density were r=-0.759 and r=0.781 with %fat. The regression equations were : Body $density=-0.00527{\times}Mean$ skinfold thickness (mm)+1.0879, %Fat=$1.933{\times}Mean$ skinfold thickness (mm)+4.26 In high school boys the values were: density: 1.0723, body fat: 10.4%, and mean skinfold thickness: 7.89 mm. Coefficients of correlation between mean skinfold thickness and density were r=-0.868 and r=0.855 with % fat. Thus, Body density=$-0.00365{\times}Mean$ skinfold thickness (mm)+1.1008, and %Fat=$1.326{\times}Mean$ skinfold thickness (mm)-0.064, were obtained. Although skinfold thicknesses at 4 sites showed a continuous increase in absolute value as age increased, relative growth of skinfold at specific site differed. On arm the growth of skinfold showed a decrease and on waist it showed an increase as compared to the mean thickness.

Identification of genetic polymorphisms in FABP3 and FABP4 and putative association with back fat thickness in Korean native cattle

  • The aim of this study was to determine whether single nucleotide polymorphisms (SNP) in the beef cattle adipocyte fatty-acid binding protein 3 and 4 (FABP3 and FABP4) genes are associated with carcass weight (CW) and back fat thickness (BF) of beef cattle. By direct DNA sequencing in 24 unrelated Korean native cattle, we identified 20 SNPs in FABP3 and FABP4. Among them, 10 polymorphic sites were selected for genotyping in our beef cattle. We performed SNP, haplotype and linkage disequilibrium studies on 419 Korean native cattle with the 10 SNPs in the FABP genes. Statistical analysis revealed that 220A>G (I74V) and 348+303T>C polymorphisms in FABP4 showed putative associations with BF traits (P=0.02 and 0.01, respectively). Our findings suggest that the polymorphisms in FABP4 may play a role in determining one of the important genetic factors that influence BF in beef cattle.

Differences in toughness and aging potential of longissimus lumborum muscles between Hanwoo cow, bull and steer

  • Thirty Hanwoo cattle including bulls, cows, and steers (n = 10 each) were slaughtered and investigated for carcass traits (weight, meat color, fat color, yield index, maturity, marbling score, back-fat thickness, and firmness) and meat quality. The meat quality such as: pH, color, cooking loss, fatty acid, thiobarbituric acid reactive substance, warner-bratzler shear force, tensile tests, and texture profiles were analyzed on longissimus lumborum (LL) muscles of the carcasses at different aging times (3 d and 21 d). The results showed that steers and cows had higher back-fat thickness and marbling score, and a lower firmness (p < 0.001) than bulls. Bulls exhibited a lower meat quality indicating by higher cooking loss, thiobarbituric acid reactive substance content, warner-bratzler shear force and tensile test values (p < 0.01). Regarding the sensory property, the bull meat also had higher hardness, and lower tenderness, juiciness and flavor scores than the cow or steer meat (p < 0.01). Additionally, the bull meat had a higher polyunsaturated fatty acid and a lower monounsaturated fatty acid contents (p < 0.01). With increased aging time, the meat tenderness was improved in all the genders. Taken together, the present study demonstrated that the gender and aging time affected the carcass traits, fatty acid and sensory quality of beef. Postmortem aging could improve the meat tenderness of all genders especially bulls.

Genetic Analyses of Carcass Characteristics in Crossbred Pigs: Cross between Landrace Sows and Korean Wild Boars

  • Carcass characteristics of 241 crossbred pigs (Korean wild boars ${\times}$ Landrace sows) were analyzed to examine variations in fasted body weight (FASTWT), carcass weight (CARCWT), dressing percentage (DP), back fat thickness (BFT) and longissimus muscle weight (LMW), and to estimate genetic and phenotypic parameters using three different slaughter-end points. Covariates in the least squares full sib model were slaughter age, fasted body weight and back fat thickness of the carcass. Coefficient of variation was highest for BFT followed by LMW, CARCWT, FASTWT and DP in magnitude. Regressions of three covariates on traits were all linear. However, slaughter age was not significant as a linear covariate for five traits while FASTWT was significant for CARCWT and LMW and BFT was significant for all remaining traits. Genetic and phenotypic variation was considerably reduced by regressing FASTWT or BFT in the model. Heritability estimates of FASTWT, CARCWT, DP and BFT were 0.68, 0.61, 0.11 and 0.49, respectively, using slaughter age as covariate (model 1). Those of CARCWT, DP, BFT and LMW were 0.15, 0.15, 0.30 and 0.11, respectively, using FASTWT as covariate (model 2). Heritability estimates of the traits using LMW as covariate (model 3) were similar to the estimates from Model 1 except that the estimate of CARCWT was reduced to 0.39. Genetic or phenotypic correlations among FASTWT, CARCWT and BFT were all positive and moderate to high. Those between BFT and LMW were also positive and low to moderate. However, genetic and phenotypic correlations between DP and CARCWT were positive while those between DP and FASTWT were negative. It was suggested from this study that differences in carcass yield traits be determined using slaughter age or back fat thickness as slaughter-end point and carcass quality traits using fasted body weight as slaughter-end point.

Association of a Pyruvate Kinase M2 (PKM2) Polymorphism with Back Fat Thickness in Berkshire Pigs

  • Pyruvate kinase M2 (PKM2) is a key regulatory enzyme in the glycolytic pathway. It is one of four pyruvate kinase isoenzymes that widely differ in their occurrence according to tissue type. PKM2 is expressed in differentiated tissues, such as fat tissues, lung, as well as normal proliferating cells, embryonic cells, and tumor cells. The objective of this study was to investigate the association of single nucleotide polymorphisms (SNPs) in the PKM2 gene with meat quality traits in Berkshire pigs. We detected a SNP (g.34341 A>G) in the 3'UTR region of the PKM2 gene in 670 Berkshire pigs through DNA sequencing. Three genotypes, AA, AG, and GG, were found for this SNP, but based on an association analysis with meat quality traits, genotype AA was significantly associated with thicker back fat than genotype GG (p=0.027). Therefore, the g.34341 A>G polymorphism in the 3'UTR region of the porcine PKM2 gene could be applied in pig breeding programs to improve back fat thickness.

Characterization of Phosphoinositide-3-kinase, Class 3 (PIK3C3) Gene and Association Tests with Quantitative Traits in Pigs

  • This study deals with the characterization of porcine PIK3C3 and association tests with quantitative traits. PIK3C3 belongs to the class 3 PI3Ks that participate in the regulation of hepatic glucose output, glycogen synthase, and antilipolysis in typical insulin target cells such as those in the such as liver, muscle system, and fat. On the analysis of full-length mRNA sequence, the length of the PIK3C3 CDS was recorded as 2,664 bps. As well, nucleotide and amino acid identities between human and pig subjects were 92% and 99%, respectively. Five SNPs were detected over 5 exons. We performed genotyping by using a SNP C2604T on exon24 for 145 F$_2$ animals (from a cross between Korean native boars and Landrace sows) by PCR-RFLP analysis with Hpy8I used to investigate the relationship between growth and fat depot traits. In the total association analysis, which doesn' consider transmission disequilibrium, the SNP showed a significant effect (p<0.05) on body weight and carcass fat at 30 weeks of age as well as a highly significant effect (p<0.01) on back fat. In an additional sib-pair analysis, C allele still showed positive and significant effects (p<0.05) on back fat thickness and carcass fat. Moreover, the effects of C allele on the means of within-family components for carcass fat and back fat were estimated as 2.76 kg and 5.07 mm, respectively. As a result, the SNP of porcine PIK3C3 discovered in this study could be utilized as a possible genetic marker for the selection of pigs that possess low levels of back fat and carcass fat at the slaughter weight.

체지방률이 착의량체계에 미친 영향 (The effects of subcutaneos fat on the system of clothing weights)

  • The rates of subcutaneos fat on the system of clothing weights including clothing microclimate subjective sensations were measured to get basic data to develop guideline for healthy clothing life. for this study skinfold thickness the rate of subcutaneos fot clothing microclimate subjective sensations and clothing weights were measured from 85 male and 105 female colligians. The results were as follows: 1. The rate of subcutaneos fat showed negative correlation with the temperature inside clothing in chest but not with the temperatures in back and thigh. The correlation was not significant between the rate of subcutaneos fat and humidity inside clothing 2. The correlation between the rate of subcutaneos fat and thermal sensations was positively significant at 5% level. However no correlation was found between the rate of subcutaneos fat and humid sensations. 3. There was significant correlation between the rate of subcutaneos fat and under clothing weights and total clothing weights.

세가지 도축 종료 시점을 공변량으로 하는 한우 도체형질에 대한 유전능력 분석모형 (Genetic Analysis of Carcass Traits in Hanwoo with Different Slaughter End-points)

  • 한우의 성장과 도체형질에 대한 유전능력 평가모형을 개발하기 위해 4가지 공분산 모형을 적용하여 후대검정에 공시된 수소와 거세 수소의 자료에 대한 표현형 및 유전자형에 대한 분산-공분산을 추정하였다. 4가지 모형은 검정소와 검정차수로 구분한 동기그룹의 고정효과와 임의효과인 종모우 효과로 구성된 부계 반형매 모형을 적용하였다. 도체형질에 대해서는 4가지 공변량을 추가하였는데 모형 1에는 도축일령의 1차식효과를, 모형 2에는 도축연령의 1차와 2차식 효과를 사용하였고, 모형 3에는 절식체중을 모형 4에는 등지방두께를 각기 1차식 공변량으로 사용하였다. 도축일령의 2차식 효과는 유의적이지 않았으나 도축일령에 대한 회귀로 인하여 4개 도체형질에 대한 유전 분산-공분산 성분에 큰 차이를 보였다. 도축 일령을 공변량으로 하였을 때 등지방 두께, 등심단면적, 도체중, 근내지방도와 도체율에 대한 유전력은 각기 0.34, 0.22, 0.24, 0.42, 0.18로 추정되었다. 도체중과 다른 도체형질간에는 정(+)의 유전상관을 보였으나, 등지방 두께와 등심단면적, 그리고 근내지방도와 도체율 간에는 낮은 부(-)의 유전상관을 보였다. 절식체중에 대한 회귀는 도체중에 대한 유전분산과 타 도체형질과의 유전 공분산을 감소시켰으며, 등지방 두께에 대한 회귀는 등심단면적에 대한 유전분산과 등심단면적과 도체중 간의 유전 공분산을 증가시켰다. 절식체중이나 등지방두께를 공변량으로 한 모형으로부터 추정된 분산-공분산 성분은 도축 일령을 공변량으로 했을 때와 상이한 구조를 보였는데, 이들 두 가지 공변량은 골격-근육-지방조직으로 구성되는 신체 부분적 발달 정도와 관련이 있는 것으로 판단된다.

Breeding potential for pork belly to the novel economic trait

  • Pork is known as one of the preferred part of meat worldwide. Especially, the belly, known as 'Samgyeopsal' in South Korea, has been preferred by consumers in South Korea. Pork belly contained various component muscles, intermuscular and subcutaneous fat. The high-fat belly cut (containing 50%-60% fat ratio) has a low preference in South Korea whereas, the standard belly cut (20%-40% fat ratio) of the consumer preference was different. In addition, the evaluation system focused on lean meat production, represented by loin eye area and back fat thickness. In this review, we discussed the pork belly structure, phenotypic correlation with lean meat production ability and meat quality, and genetic potential to confirm to possibility of application to pig breeding. Moreover, the confirmed possibilities considered that could be a base on the evaluation of standard for the pork belly as an economic trait.

비만 체형에 대한 주관적 인식 유형 (Perceived Types of Obese Body Shapes)

  • The purpose of this study is to analyze the perceptions of obesity among appearance-conscious women in their 20s. It is intended to provide data necessary to produce garments for obese body types by identifying adult women's subjective assessments of obese body types and characteristics. The data were analyzed using Q Methodology in the QUANL program for PC. Type 1 was recognized as uniformly fat in the abdomen, with almost the same width and thickness. Type 2 was perceived to have more fat in the upper body and back, broad shoulders, and an inverted body type. Type 3 was perceived as having a fat lower half of the body, hips wider than the chest, and large thighs. Type 4 was identified as having few curves and fat concentrated in the abdomen. Further research of other age groups and regions is needed to ascertain the difference between perceived and actual body types.
