Quality Characteristics and Antioxidant Activity of Aronia (Aronia melanocarpa) Makgeolli prepared with the Additive Methods (첨가 방법을 달리하여 제조한 아로니아 막걸리의 이화학적 특성 및 항산화 활성)

  • Aronia melanocarpa (Rosaceae family), black chokeberry, has significantly higher anthocyanin, phenolic compounds, and antioxidant activity than other berries. The aim of this study is to characterize the content of aronia makgeolli prepared with the additive method such as fresh-type and crushed-type and to investigate the effect of aronia on the quality of makgeolli at $25^{\circ}C$ for 8 days. The changes in pH, total acidity, ethanol content, color, antioxidant activity, total polyphenol content, and sensory testing were determined. The pH values were 3.9~4.2 in fresh aronia makgeolli (the fresh group), and 3.6~3.9 in crushed aronia makgeolli (the crushed group). The total acidity of all samples gradually increased during the fermentation period. The ethanol content was 10~15% after the second stage of fermentation, and was reduced followed by an increase in the addition rate of aronia, showing the lowest values in 50% crushed aronia makgeolli. As the aronia content increased, both the antioxidant activity and the total polyphenol content significantly increased. In the fresh group, low values were seen in early fermentation, which significantly increased according to the progress of fermentation, while the crushed group showed high values for 6 days. In the sensory evaluation, the color, flavor, bitterness, and overall acceptance of the makgeolli with 30% fresh aronia showed higher values than the control and other samples. In conclusion, the present study suggests that fresh aronia without undergoing the breaking process is a more suitable additive method than the crushed type for antioxidant activity and palatability of aronia makgeolli.

Effects of Seasonal Wiring Treatments on Fruit Quality, Carbohydrates, and Mineral Nutrients of 'Niitaka' (Pyrus pyrifolia Nakai) Pear Trees (시기별 Wiring 처리가 '신고' 배의 과실품질 및 수체 내 탄수화물과 무기성분에 미치는 영향)

  • This study was initiated to find possibility of substitute of gibberellin acid and to prevent negative girdling effect such as slow growth of 'Niitaka' (Pyrus pyrifolia Nakai) trees, a major pear cultivar, at harvest and at 60-, 90-, and 120-d after storage. Seasonal wiring with 3.0-mm-diameter were applied on the main branch at 70, 80, 90, 110, and 130 days after full bloom (DAF) to compare the fruit quality and storability. Fruit weight and sugar contents were the greatly increased by the wiring treatment at 110 DAF, with the lowest values observed for the wiring at 70 DAF. All the wiring treatments reduced fruit acidity but did not affect fruit firmness. a-value on fruit skin was the highest for wiring at 110 DAF and 130 DAF, advancing fruit ripening. The lowest fruit weight loss was occurred at wiring at 110 DAF. a-value on fruit skin was the highest for wiring at 90 DAF and 110 DAF. Wiring at 80 DAF the most increased floral bud diameter, resulting in the lowest L:D ratio of 1.74 observed. As for the mineral nutrients concentrations of floral buds, the concentration of K (0.63%) and Mg (0.31%) were the highest after 80 DAF wiring treatment, whereas Ca and P concentrations did not differ among treatment plots. The leaf K concentrations was the highest in the 130-day wiring treatment (0.76%) and in the control plot (0.78%), whereas there was no significant difference in the concentrations of either Ca or P among treatment plots. Short periods of wiring increased foliar Mg concentrations. In floral buds, carbohydrates showed a tendency for accumulating at a lower concentrations (7.75%) after 70 DAF wiring treatment, which was a relatively short treatment period. On the other hand, the carbohydrate concentrations in leaves showed a tendency for accumulating at lower concentrations after 130 DAF wiring treatment (2.51%), which is a long treatment period, and in the control plot (2.43%). Wiring increased the size and sugar content of fruits, and influenced fruit storability. For the wiring treatment period was delayed, the carbohydrate concentration in flower buds showed curvilinear correlation and the negative correlation with the carbohydrate in leaf tissue.

Determination of Color Value (L, a, b) in Green Tea Using Near-Infrared Reflectance Spectroscopy (근적외 분광분석법을 이용한 녹차의 색도 분석)

  • Near infrared spectroscopy (NIRS) is a rapid and accurate analytical method for determining the composition of agricultural products and feeds. The applicability of near infrared reflectance spectroscopic method was tested to determine the color value (L, a, b) of green tea. A total of 162 green tea calibration samples and 82 validation samples were used for NIRS equation development and validation, respectively. In the developed NIRS equation for analysis of the color value (L, a, b), the most accurate equation for L value was obtained at 2, 8, 6, 1 (2nd derivative, 8 nm gap, 6 points smoothing, and 1pointsecond smoothing), and for a, and b value were obtained at 1, 4, 4, 1 (1st derivative, 4 nm gap, 4points smoothing, and 1 point second smoothing) math treatment condition with SNVD (Standard Normal Variate and Detrend) scatter correction method and entire spectrum ($400{\sim}2,500\;nm$) by using MPLS (Modified Partial Least Squares) regression. Validation results of these NIRS equations showed very low bias (L: 0.005%, a: 0.003%, b: -0.013%) and standard error of prediction (SEP, L: 0.361%, a: 0.141%, b: 0.306%) as well as high coefficient of determination ($R^2$, L: 0.905, a: 0.986, b: 0.931). Therefore, these NIRS equations can be applicable and reliable for determination of color value (L, a, b) of green tea, and NIRS method could be used as a mass screening technique for breeding programs and quality control in the green tea industry.

Quality characteristics of sponge cake with buckwheat powder (메밀가루를 첨가한 스펀지 케이크의 품질특성)

  • This study investigated the quality characteristics of sponge cake by introduction of buckwheat powder (BP). Cake batter was prepared by substituting wheat flour with an equivalent amount of BP based on weight. Sponge cakes were prepared with different amounts of BP (0, 10, 20, and 30%, respectively). Their physicochemical and sensory properties were tested. The specific gravity was not affected by the addition of BP (10~30%) (p<0.05). The lightness (L value) and yellowness (b value) of the crumb significantly decreased with the increase in the BP contents (p<0.05), whereas the redness (a value) increased (p<0.05). As the increase in the amount of BP addition, the hardness, cake volume (mL), baking loss rate (%), and specific volume (mL/g) significantly decreased (p<0.05). On the contrary, the cake weight increased. In the sensory evaluation, no significant differences in terms of color, taste, texture, flavor, and overall acceptance were observed among the different amout of BP addition (0~20%) (p<0.05). Overall, the sponge cake prepared with the addition of 20% BP was recommended to use due to its advantages in functional property.

Quality Characteristics and Mineral, Oxalate and Phytate Contents of Tofu Manufactured by Recommended Soybean Cultivars in Korea (국산 장려콩으로 만든 두부의 Mineral, Oxalate 및 Phytate 함량과 품질특성)

  • This study was conducted to investigate the changes of mineral, oxalate and phytate during tofu processing with Korean recommended soybean cultivars. Fourteen cultivars were selected by distribution of calcium, oxalate and phytate contents. Tofu was manufactured and analyzed for quality characteristics, mineral, oxalate and phytate contents. The yield and moisture contents of tofu ranged from 137.77% in Anpyeongkong to 201.91% of Geomjeongkong 4, and 74.42 (Bongeuikong)~80.01% (Hojangkong), respectively. The lightness (L-value), redness (a-value) and yellowness (b-value) ranged from 53.05 (Dawonkong) to 86.16 (Jipumkong 2), -2.04~5.85, and from 3.28 in Geomjeongkong 4 to 16.17 of Cheongjakong, respectively. The hardness of tofu with selected soybean cultivar ranged from 537.36 g (Dongpuktae) to 1696.05 g (Jinpumkong 2). The highest calcium content was 1.488 mg/g in Dawonkong, oxalate and phytate in tofu were high at 0.40 mg/g in Geomjeongkong 4 and 0.41 mg/g in Dawonkong, respectively. The transfer ratios of oxalate and phytate from soybean to tofu were ranged from 0.31~19.70 and 0.41~19.70%, respectively.

Effect of Adding Amaranth Powder on Noodle Quality (아마란스 분말 첨가가 국수 품질에 미치는 영향)

  • Wet noodles with different percentages of amaranth powder were prepared and their cooking characteristics were evaluated. The cooking quality, mechanical textural properties, and a sensory evaluation was conducted with the prepared noodles. Cooked noodle properties, weight, and volume decreased as amaranth content of the wheat flour increased, whereas turbidity and water absorption of the soup increased, except for cooked noodles with 30% amaranth. The L-value of the raw and cooked noodles decreased significantly with increasing amaranth powder content. The a- and b-values increased with increasing amounts of added amaranth powder. The L-value of the raw and cooked noodles with amaranth was significantly lower than that of the control, and the a-value was lower than that of the control, whereas the b-value was higher than that of the control for both raw and cooked noodles. A texture profile analysis of the raw noodles showed significantly higher levels of hardness, cohesiveness, gumminess, chewiness, and springiness in the amaranth noodles compared to those in the control; the values for adhesiveness were not significantly different. The hardness, gumminess, springiness, and chewiness of the cooked noodles decreased in proportion to the quantity of added amaranth. The springiness, adhesiveness, and cohesiveness of cooked noodles with amaranth decreased slightly. Overall, the results of a sensory evaluation revealed that the cooked noodles with amaranth had higher values than those of the control, except for overall acceptability. Amaranth added at a concentration of up to 30% increased brown color and the peculiar amaranth odor. In a sensory evaluation, cooked noodles with 20% amaranth powder were preferred more than the other noodles for overall acceptability.

Effects of Blanching Conditions by Various Salt Contents on the Quality Properties of Cirsium setidens Nakai (소금함량을 달리한 데치기 조건이 곤드레의 품질특성에 미치는 영향)

  • This study was carried out to investigate the change of the quality of wild edible plants, Cirsium setidens Nakai, blanched at various conditions. Samples were blanched under blanching conditions of $90^{\circ}C/25min$, $95^{\circ}C/15min$, and $100^{\circ}C/5min$, with salt concentrations of 0%, 1%, 2%, 3%, 4% and 5%. The color, texture (hardness), chlorophyll and total polyphenols were analyzed. The contents of polyphenol and hardness in Cirsium setidens Nakai were found to be decreased in relation to blanching time. With respect to sensory evaluation, the 3% treatment had a higher overall acceptability than other treatments. The optimal blanching condition was found to be $100^{\circ}C/5min$ and 3% salt.

Quality Characteristics of Sulgidduk Added with Turmeric Powder (울금 분말을 첨가한 설기떡의 품질 특성)

  • This study was conducted to evaluate the quality characteristics of sulgidduck with addition of 0, 1, 3, 5 and 7% turmeric powder. The moisture content of sulgidduck ranged from 33.71% to 37.75. The addition of turmeric powder to sulgidduck tended to decrease the pH value, whereas it did not change $brix^{\circ}$ values of the samples. For Hunter color values, addition of turmeric powder to sulgidduck tended to decrease lightness (L) and increase redness (a) and yellowness (b). For textural characteristics, addition of turmeric powder decreased hardness, whereas adhesiveness and springiness of the samples were unaffected. The addition of turmeric powder to sulgidduk tended to increase gumminess. The addition of turmeric powder to sulgidduk tended to decrease chewiness. In the sensory evaluation, addition of 3% turmeric powder resulted in the best score in terms of taste and overall preference. Therefore, these results suggest that addition of 3% turmeric powder could be applied for making turmeric powder sulgidduk.

Physicochemical characteristics of onion with cold tolerance cultivated in Kangwon (강내한성 강원양파의 이화학적 특성)

  • This study was performed to provide the basic data for the prediction of the usefulness of onion with cold tolerance cultivated in Kangwon. The physicochemical properties and antioxidant activity of freeze-dried and hot-air-dried (40 and $60^{\circ}C$) onions were investigated. The moisture content of the raw onion was 90.55%. The crude protein and crude fat contents of the freeze-dried onions were slightly higher than those of the hot-air-dried onions ($40^{\circ}C$ and $60^{\circ}C$). As for the color values, the freeze-dried onion powder was highest in lightness (77.19), and the $60^{\circ}C$ hot air-dried onion was highest in redness (6.09) and yellowness (24.60). Moreover, the color difference (${\Delta}E$) between the freeze-dried and hot-air-dried ($40^{\circ}C$ and $60^{\circ}C$) onion powders was significant. The brown index was lower in the freeze-dried onion than in both hot-air-dried onions. The total phenol content and the 2,2-diphenyl-1-picrylhydrazyl radical (DPPH) scavenging activity of both hot-air-dried onions were higher than those of the freeze-dried onion. These results indicate that the freeze-drying methods protected the physicochemical properties of the onion powder, whereas the hot-air-drying method enhanced the antioxidant activity and the total phenol content of the onion powder.

Color and Chlorophyll of Blanched Vegetable Soybean by NaCl (열처리 시 소금첨가에 의한 풋콩의 색과 Chlorophyll 함량 변화)

  • Vegetable soybeans were blanched at 80, 90 and $100^{\circ}C$ for 30, 20 and 10min, respectively. NaCl(3%) was also used to measure the protective effect of soybean color. The color of vegetable soybeans was measured by colorimeter, -a value (greenness) was highest at $100^{\circ}C$-10min. However, the chlorophyll contents was highest at $80^{\circ}C$-30min. NaCl (3%) decreased the loss of chlorophyll in blanched vegetable soybeans. The reaction rate constant for the thermal degradation of chlorophyll and greenness doubled per $10^{\circ}C$. The activation energy chlorophyll a of pod for thermal degradation of chlorophyll a in pods were 138.02 (unsalted), 146.63 (salted) Kcal/mol, respectively.
