Effects of Steeping and Washing on Physicochemical Properties of Acorn Flour (수침과 수세가 도토리 묵가루의 이화학적 특성에 미치는 영향)

  • The effects of steeping and washing were investigated in the physicochemical properties of acorn flour. The contents of crude protein, ash and total phenol of acm flour were gradually decreased with the steeping days and washing times. However, the contents of crude fat and dietary fiber were little different. The more steeping days and/or washing times became large, the more the color of acorn flour became light. Swelling power was enhanced by increasing of steeping days and washing times but solubility was some decreased Water binding capacity was decreased and intrinsic viscosity was increased with the increased steeping days and washing times. Washing times were more influential than steeping days to those changes.

Optimization of the Acetic Acid Fermentation Condition for Preparation of Strawberry Vinegar (딸기식초 제조를 위한 초산발효 조건 최적화)

  • In the first stage, strawberry wine was manufactured in 14$^{\circ}$Brix initial sugar content, for 50 hr at 28$^{\circ}C$ using Saccharomyces kluyeri DJ97. In the second stage, the acetic acid fermentation conditions for maximun acidity (4.60%) were 1.48% initial acidity and 195.76 rpm in agitation rate for 7.34 day. The fermentation conditions for maximun Hunter color a value were 1.78% initial acidity and 117.63 rpm in agitation rate for 7.35 day. Therefore, optimum acetic acid fermentation conditions were 1.5% initial acidity and 196 rpm in agitation rate for 176 hr using Acetobacter sp. PA97.

  • Effect of dry-heat treatment $(130{\sim}220^{\circ}C)$ on properties of corn starch was investigated. No significant changes of surface color and swelling power were observed. Blue value, water-binding capacity, solubility and degree of hydrolysis by acid or glucoamylase were increased; however, intrinsic viscosity and crystallinity were decreased as heating temperature was raised. Noticeable changes occurred between $170{\sim}190^{\circ}C$.

Quality Characteristics of Sesame Dasiks According to amount and the kind of Sweetener (당의 종류 및 첨가량을 달리한 깨다식의 품질특성)

  • This study was carried out to investigate the effects of the addition of sweeteners to Sesame Dasiks. Sesame Dasiks were prepared by adding various sweeteners to sesame seeds powder, at 40, 50, 60 and 70%, and their quality characteristics were measured. In the chewiness and hardness analyses of Sesame Dasiks, the 50% group (the same ratio and mixture of honey and rice jelly) eave the highest results. For the sweetness, taste and overall acceptability of the Sesame Dasiks, the 50% group was also the better The texture profile analyses found the optimal chewiness and hardness of the Sesame Dasik to be 0.28∼0.30 and 27.22∼27.44, respectively.

  • To obtain basic data for utilizing Yuzu(Citrus junos) as row materials to industrial products, enzyme treatments conditions for removing bitter substances was investigated. The amount of nuringin and hesperidin weve 61.94 and 9.98 mg% in Yuzu juice. When 3% Amorepacific enzyme and Japanese naringinase were treated with the juice for 120 minutes, naringin and hesperidin were decreased to 6.85 and 1.11 mg% ; 8.43 and 0.06 mg%, respectively. The changes in Hunter color value of the juice were negligible by enzyme treatments. However, the redness was increased and lightness was decreased by the enzymes. When Yuzu-juice was treated with the enzymes, sensory scores were increased. The optimum amount of Amorepacific for reducing bitter taste was determined to 3%.

Quality Characteristics of Jeolpyeon by Different Ratios of Green Laver Powder (파래가루를 첨가한 절편의 품질특성)

  • This study was conducted to aerermine the sensory evaluation and the texture characteristics after making Jeolpyeon added to Laver powder(0~8%) in according to concentration which has nutritive value and medical effect of Jeolpyeon traditional dduk. As the result of the values of Hunter color system, the L-values of the laver powder Jeolpyeon significantly decreased, and the a-values also significantly increased(p<0.05). The b-values Jeolpyeon added with laver powder higher than the control group. As the amoung of laver powder added has increased, the b-values has dropped showing a green color. In case of texture analysis hardness, cohesiveness and gumminess of laver powder Jeolpyeon increased(p<0.05). Also, the results of the sensory evaluateion showed that the 4% laver powder Jeolpyeon had the highest scores.

Influence of Viviparous Germination on Quality and Yield in Rice (벼 수발아가 품질과 수량에 미치는 영향)

  • This study was conducted to analyze the rice yield and grain quality of viviparous germinated seeds caused by long period rainy days. In the yield characteristics, the milled/brown rice rates in two cultivars, Unkwangbyeo and Gopumbyeo were 86.0 and 80.9%, respectively, in viviparous germinated seeds, showing the decreased rates by 3.2 and 6.2%, respectively, as compared to 89.2 and 87.1% in normal seeds. Rice yield in Unkwangbyeo and Gopumbyeo also decreased by 5 and 7%, respectively, in viviparous germinated seeds as compared to normal seeds. Peak viscosity and set back of viviparous germinated seeds were decreased, and the hardness of them was increased compared to normal seeds. Color value (a) of viviparous germinated seeds was 0.90, showing lower value than that (1.65) of normal seeds of Gopumbyeo. The results demonstrated that as the viviparous germinating rate was increased, the grain quality was deteriorated.

Quality characteristics of dumpling shell added with dropwort powder (미나리 분말을 첨가한 만두피의 품질특성)

  • We investigated quality changes in dumpling shells by addition of various concentrations of dropwort powder. Dumpling shells were added with 0, 1, 3, 5, and 7%. dropwort powder respectively. Their water-binding capacity, weight, volume, and turbidity increased after cooking. As the added dropwort powder increased, their DPPH radical scavenging activity significantly increased (p<0.001). In addition, their L and a values decreased whereas their b value increased. In terms of the textural characteristics, the hardness and springiness increased and the cohesiveness and brittleness of the cooked dumpling shells significantly increased with an increasing content of dropwort powder. The savory taste, moisture, and chewiness of the dumpling shells prepared with the addition of 3% dropwort powder were preferred. Overall, the sensory evaluation showed that the sensory characteristics of the dumpling shells were best with the addition of 3% dropwort powder.

The Effect of Mugwort and Storage on Quality Characteristics of Ssookgaedduck (쑥의 첨가량, 저장기간에 따른 쑥개떡의 품질특성)

  • The objectives of this study were to investigate quality characteristics of Ssookgaedduck which containing 0, 5, 10, 15, 20% of mugwort. The result of sensory evaluation showed that the Ssookgaedduck containing 10-15% mugwort had the high overall acceptability, color and flavor preference. By increasing the level of mugwort, Hunter color L value of Ssookgaedduck decreased. The hardness of Ssookgaedduck increased by the addition of mugwort. However, during 3 days of storage, the hardness of 10-20% mugwort containing Ssookgaedduk increased slowly. For 3 days of storage, 20% mugwort containing Ssookgaedduk showed the lowest total bacterial count than others.

Quality Chatacteristics of Vinegar using Wasabi japonica Matsum Leaves (고추냉이 잎으로 제조한 식초의 품질 특성 연구)

  • This study was conducted to test the fermenting of high quality vinegar using Wasabi japonica Matsum leaves. Alcohol fermentation with Wasabi japonica Matsum leaves resulted in the reduction of sugar and sugar alcohol content during fermentation, which decreased sharply over 3 days. The alcohol content was maximized (15.4%) after 8-days of alcohol fermentation at $27^{\circ}C$ by adjusting the initial sugar concentration to $27^{\circ}Brix$, and vinegar with an acidity of 5.1% was obtained after 21-days of acetic acid fermentation at $30^{\circ}C$. The pH was shown to be 3.5 after 21-days of acetic acid fermentation at $30^{\circ}C$. Regarding the color of Wasabi japonica Matsum leaves vinegar, the L and b values increased according to fermentation time, whereas a color values decreased. In conclusion, based on the above results, it is determined that the use of Wasabi japonica Matsum leaves allows for the production of high-quality vinegar.
