A Study on Traditional Kimchi made with Heating (가열하여 담그는 전통 김치)

  • During the Joseon period, kimchi was mostly made by heating the ingredients. Since salt was pricey at the time, in order to save salt and time, people used a method that involved destroying the cell wall by heating the vegetables. However, this method is no longer passed down. Thus, in this paper, we re-discovered how kimchi was made through heating while analyzing the recipes for kimchi during the Joseon period. There were 27 kinds of kimchi made through blanching. To keep the vegetables from becoming soggy, 2 kinds of kimchi were made by putting the ingredients in potassium aluminum sulfate water and 3 kinds were made through blanching the ingredients in limewater. There were 7 kinds of kimchi made by heating in vinegar, 5 kinds by boiling the ingredients, 6 kinds by stir-frying the ingredients, 2 kinds by stir-frying the ingredients with salt, and 3 kinds by steaming the ingredients. In order to eradicate unwanted germs, leaving only Lactobacillus, 25 kinds of kimchi were made by draining the boiled mixture. A total of 17 kinds of kimchi were made by heating the kimchi pot with compost including that of horses. For elders with weak teeth and poor digestion, 7 kinds of kimchi were made after heating, including 3 kinds of sukkkakdugi (cubed radish kimchi made with boiled radish). 3 kinds of chaekimchi (julienned kimchi) and 3 kinds of chaekkakdugi (kimchi with julienned radish) for elders existed as well.

Isolation and Characterization of Plant Growth Promoting Rhizobacterium Bacillus subtilis YK-5 from Soil (토양에서 식물생육촉진 활성을 가진 균주 Bacillus subtilis YK-5의 분리 및 특성)

  • For the isolation of a plant growth-promoting rhizobacteria, strain YK-5 was selected from approximately 400 thermostable strains isolated from special soil samples. Strain YK-5 produced an antifungal compound, and optimum carbon and nitrogen sources for the production of the antifungal compound were investigated against Aspergillus flavus as a test strain. Modified LB medium containing 1% peptone, 1% yeast extract and 5% black sugar was determined to be the optimal medium for growth and antifungal compound production. Culture broth of strain YK-5 potently inhibited growth of the phytopathogenic fungus Fusarium oxysporum KACC 40052 for 7 days. The plant growth-promotion function of strain YK-5 was tested against radish and rice in pot trials. Leaf number, plant height and root length in YK-5-treated radish markedly exceeded (> 60%) those of untreated radish. Leaf length and white rootlet development were markedly more prominent than in commercially-treated rice plants. Strain YK-5 was determined to be Bacillus subtilis YK-5 by physiological, chemotaxonomical, and phylogenetical analyses.

Post Harvest Cropping Impacts on Soil Properties in Continuous Watermelon (Citrullus lanatus Thunb.) Cultivation Plots (시설수박 연작지 토양특성에 대한 후작물 재배의 영향)

  • Most of plastic film house plots in Korea have salinity problems caused by salt accumulations associated with continuous cropping including the heavy applications of chemical fertilizers, and high evapotranspiration. The objective of this study was to investigate soil properties and watermelon (Citrullus lanatus Thunb.) productivity in plastic film houses as influenced by the short-term crop rotation in the continuous watermelon-cultivated soils. The short-term rotational crops selected were corn, Chinese cabbage, radish, young radish, lettuce, spinach, and onion. Soil pH increased in most plots where a short-term crop was added to the crop rotation, except where radish was added. The content of soil organic matter significantly decreased in the lettuce-cultivated plot. The available phosphorus content in the soils increased with the cultivations of spinach and onion. Exchangeable Ca and Mg tended to increase in most of plots where a short-term rotational crop was grown, whereas the exchangeable K was clearly reduced by more than 50% in the same plots. Cultivation of rotational crops during the post-harvest season significantly decreased the electrical conductivity (EC) and the concentrations of soluble anions, such as chloride ($Cl^-$), nitrate ($NO_3{^-}$), and sulfate ($SO{_4}^{2-}$) in the soils. In particular, the EC decrease was related with the decrease in soil $K^+$ to $Ca^{2+}$ and $Mg^{2+}$ ratio. In all plots cultivated with the shot-term rotational crops, the ratios of bacteria to fungi (B/F) increased. However, the improvement in soil properties after adding a rotational crop did not result in a clear improvement in watermelon quantity or quality as measured by fruit weight and sugar content. Therefore, the addition of short-term rotational crops to a continuous watermelon cropping system would be beneficial to improve target soil properties in plastic film house plots studied.

  • The changes of amino acids in the cotyledons of spring - and winter radishes were analysed during the abscisic acid (ABA). ABA plus cycloheximide (CH) and ABA plus polyamine (PA) treatment. The total contents of amino acids were increased in spring radishes, and decreased in winter radishes by ABA. The contents of hydrophilic amino acids, proline, glycine, serine and cysteine in spring radishes (expecially proline), and of cysteine, leucine and phenylalanine in winter radishes (expecially cysteine and leucine)were increased, CH treatment resulted in the accumulation of amino acids by the inhibition of new synthesized protein, which synthesized against ABA induced dehydration both of radishes. On the contrary, the contents of amino acids were decreased in spring radishes, and increased in winter radishes during PA treatment. These results indicated that the accumulated hydrophilic amino acids and new synthesized proteins induced the adaptation of dehydration against stress and the role of ABA in accelerating of stress adaptation was mediated by polyamines.

Application of UAV-based RGB Images for the Growth Estimation of Vegetable Crops

  • On-site monitoring of vegetable growth parameters, such as leaf length, leaf area, and fresh weight, in an agricultural field can provide useful information for farmers to establish farm management strategies suitable for optimum production of vegetables. Unmanned Aerial Vehicles (UAVs) are currently gaining a growing interest for agricultural applications. This study reports on validation testing of previously developed vegetable growth estimation models based on UAV-based RGB images for white radish and Chinese cabbage. Specific objective was to investigate the potential of the UAV-based RGB camera system for effectively quantifying temporal and spatial variability in the growth status of white radish and Chinese cabbage in a field. RGB images were acquired based on an automated flight mission with a multi-rotor UAV equipped with a low-cost RGB camera while automatically tracking on a predefined path. The acquired images were initially geo-located based on the log data of flight information saved into the UAV, and then mosaicked using a commerical image processing software. Otsu threshold-based crop coverage and DSM-based crop height were used as two predictor variables of the previously developed multiple linear regression models to estimate growth parameters of vegetables. The predictive capabilities of the UAV sensing system for estimating the growth parameters of the two vegetables were evaluated quantitatively by comparing to ground truth data. There were highly linear relationships between the actual and estimated leaf lengths, widths, and fresh weights, showing coefficients of determination up to 0.7. However, there were differences in slope between the ground truth and estimated values lower than 0.5, thereby requiring the use of a site-specific normalization method.

Regional Differences in Taste and Food Preferences of College Students Attending Nutritional Education via Internet I. Main and Side Dishes (인터넷 영양교육 참여 대학생의 지역별 식품의 맛과 기호도에 관한 연구 I. 주식 및 부식)

  • The purpose of this study was to investigate the regional differences in food preference among college students participating in a nutrition education program via internet. The subjects were 1672 college students (male: 762, female: 910) and divided into 4 regional groups. A survey using a self-administered questionnaire was conducted using a self-administered questionnaire on taste and food preferences. Data was collected via internet or by mail. Prevalence of the food preferences among regional groups was examined using SPSS statistical package. Food preferences were significantly associated with sex and region. Female students in Chungcheong and Kyungsang areas showed significantly higher preference of the hot taste compared to Seoul and Kyunggi areas. Female students in Seoul, Kyunggi and Chungcheong areas showed significantly higher preference of the boiled bean rice compared to the Kyungsang area. The preference for Kimchi stew of female students in Seoul and Kyunggi was significantly higher than those in Chungcheong and Kyngsang areas. Male students in the Chungcheong area showed significantly higher Preferences of the Young radish kimchi, while female students in this area showed significantly higher preference of the Radish kimchi compared to other areas. The preference for roasted laver of female students in Seoul, Kyunggi and Kyungsang areas was significantly higher compared to the Chungcheong area. The preference for fried chicken of male students in Seoul was significantly higher than that in other areas. The preference for bean sprouts and season bonnet bellflower of male students in Seoul, Chungcheong and Kyungsang areas were significantly higher compared to the Kyunggi area. Microspore-derived Embryo Formation in Response to Cold Pretreatment, Washing Medium, and Medium Composition of Radish (Raphanus sativus L.)

  • Cold pretreatment, washing medium and composition of nutrient media may have marked effects on microspore embryogenesis. When microspores isolated from radish (Raphanus sativus L. cv. Gwanhun) flower buds were washed with Nitsch & Nitsch (NLN) medium liquid medium containing $130g{\cdot}L^{-1}$ sucrose (NLN-13), yields of microspore-derived embryos were greater than when using B5 liquid medium containing $130g{\cdot}L^{-1}$ sucrose. Microspore viability is known to decrease rapidly with storage; however, in this experiment, microspore viability was maintained for 24 h at $4^{\circ}C$ without media. Among the various medium concentrations used ($0.25{\times}$, $0.5{\times}$, $1.0{\times}$, $2.0{\times}$, and $4.0{\times}$ NLN liquid medium), $0.5{\times}$ NLN liquid medium induced the most efficient formation of microspore-derived embryos. In addition, microspore-derived embryos yields were greater when microspores were cultured in $0.5{\times}$ NLN liquid medium supplemented with $0.25{\times}$, $0.5{\times}$, and $1.0{\times}$ NLN microelements, compared to medium not supplemented with microelements. In this study, the highest yield of microspore-derived embryos was observed when the microspores derived from flower buds were washed using NLN-13 liquid medium and then cultured on $0.5{\times}$ NLN liquid medium supplemented with $0.25{\times}$ NLN microelements, followed by incubation at $25^{\circ}C$ for 30 days.

Relationship between Obesity, Threshold of Salty Taste, Optimal Saltiness and Blood Pressure in Middle School Students in Fishing Village (어촌지역 중학생들의 비만, 짠맛의 역치, 최적염미도와 혈압과의 관련성)

  • The purpose of this research was to evaluate the correlation between obesity, threshold of salty taste, optimal saltiness and blood pressure in middle school students in a fishing village. The subjects were 115 boys and 103 girls in middle school in a fishing village. The BMI index and systolic and diastolic blood pressures of subjects were measured, and the subjects were divided into a normal and obese group according to their BMI. The threshold of salty taste and salt preference for a semisolid dish (steamed egg dish), liquid dish (bean sprout soup), and a solid dish (raw radish salad), were estimated by sensory evaluation. Calorie intake was measured using the weighing plate method. The boys in the obese group showed significantly higher systolic and diastolic blood pressures than those in the normal, but girls did not. Furthermore, calorie intakes of the boys in the obese group were significantly higher than those in the normal group, but this was not shown in girls. On the threshold of salty taste, both boys and girls in the obese group needed higher concentration of salt than those in the normal group. The threshold of salty taste were significantly positively correlated with systolic pressure and diastolic pressure in boys. Regarding the salt preference in the steamed egg dish, bean-sprout soup, and raw radish salad, both boys and girls in the obese group preferred higher concentrations. The higher concentration they preferred, the higher the systolic and diastolic pressures were in boys, but only systolic blood pressure was higher in girls. From these results, it is evident that a nutritional education program is needed in school to help restricting middle school students salt consumption and decreasing obesity to prevent hypertension.

Distribution of Pectobacterium Species Isolated in South Korea and Comparison of Temperature Effects on Pathogenicity

  • Pectobacterium, which causes soft rot disease, is divided into 18 species based on the current classification. A total of 225 Pectobacterium strains were isolated from 10 main cultivation regions of potato (Solanum tuberosum), napa cabbage (Brassica rapa subsp. pekinensis), and radish (Raphanus sativus) in South Korea; 202 isolates (90%) were from potato, 18 from napa cabbage, and five from radish. Strains were identified using the Biolog test and phylogenetic analysis. The pathogenicity and swimming motility were tested at four different temperatures. Pectolytic activity and plant cell-wall degrading enzyme (PCWDE) activity were evaluated for six species (P. carotovorum subsp. carotovorum, Pcc; P. odoriferum, Pod; P. brasiliense, Pbr; P. versatile, Pve; P. polaris, Ppo; P. parmentieri, Ppa). Pod, Pcc, Pbr, and Pve were the most prevalent species. Although P. atrosepticum is a widespread pathogen in other countries, it was not found here. This is the first report of Ppo, Ppa, and Pve in South Korea. Pectobacterium species showed stronger activity at 28℃ and 32℃ than at 24℃, and showed weak activity at 37℃. Pectolytic activity decreased with increasing temperature. Activity of pectate lyase was not significantly affected by temperature. Activity of protease, cellulase, and polygalacturonase decreased with increasing temperature. The inability of isolated Pectobacterium to soften host tissues at 37℃ may be a consequence of decreased motility and PCWDE activity. These data suggest that future increases in temperature as a result of climate change may affect the population dynamics of Pectobacterium.
