강황 분말을 첨가하여 제조한 약식의 품질 특성 및 항산화 활성 (Quality Characteristics and Antioxidant Activities of Yaksik Containing Various Amount of Turmeric (Curcuma longa L.) Powder)

  • 본 연구에서는 강황 분말의 첨가 비율을 달리하여 약식을 제조하고 이화학적 품질 특성 및 항산화 활성을 분석하였다. 약식의 수분함량은 41.45~44.93%로 대조군에 비해 실험군이 높게 나타났으며, 강황 함량에 비례하여 수분함량이 증가하는 경향을 나타냈다. 회분과 조지방 함량은 대조군과 실험군 사이의 유의적인 차이는 나타나지 않았다. 조단백질 함량은 대조군과 강황 분말 2.8% 첨가군이 다른 실험군보다 높게 나타났으며, 이는 약식에 첨가한 부재료의 특성 때문으로 생각한다. 강황 분말을 첨가하지 않은 대조군의 pH가 5.83으로 가장 낮았고, 강황 분말 첨가량이 증가함에 따라 pH도 증가하는 경향을 보였다. 당도는 강황 분말 함량이 증가함에 따라 감소하였다. 약식의 색도를 측정한 결과, 강황 분말 함량이 증가함에 따라 L값은 감소하였고, a값과 b값은 증가하였다. 조직감의 경우, 강황 분말의 첨가량에 비례하여 약식의 경도, 탄성, 검성, 탄력성 및 씹힘성은 감소하였으나, 부착성과 응집성은 강황 분말 함량에 따른 통계적인 유의성은 나타나지 않았다. 약식의 총폴리페놀과 총플라보노이드 함량은 약식에 첨가한 강황 분말 함량에 비례하여 증가하는 경향을 나타냈다. DPPH와 ABTS 라디칼 소거능 및 환원력은 강황 분말 첨가군이 대조군에 비해 높게 나타났고, 강황 분말 첨가량이 증가할수록 항산화 활성도 증가하였다. 관능평가에서 맛, 색, 질감 및 전반적인 기호도 평가에서는 대조군과 강황 분말을 1.7% 첨가한 약식이 가장 선호도가 높은 것으로 나타났다. 이상의 결과를 통하여 강황은 항산화 활성이 우수한 소재이며, 강황 분말을 첨가하여 약식을 제조할 때 첨가하는 적정 수준은 전체 중량 대비 1.7% 수준이 가장 적절할 것으로 생각한다.

  • Quality characteristics of Yaksik prepared with glutinuous rice soaked for different time lengths were investigated. Moisture contents increased with the increment of soaking time. In Hunter's color value, the lightness decreased and redness and yellowness increased by the increment of soaking time. Samples prepared with a commercial formula showed increased red and yellow colors due to the addition of caramel sauce. The firmness decreased with the increment of soaking time during storage. However, the samples prepared with 2 hr-soaking were retrograded rapidly. In peroxide value, there were no differences among samples. In microbiological evaluation, samples prepared with a commercial formula had prolonged shelf lives probably due to the preservatives contained. Samples prepared with 6 hr-soaking showed the highest score in sensory evaluation.

약식의 제조방법과 저장온도 및 기간에 따른 조직감의 변화 (Effects of processing method and storage temperature and time on the texture of Yaksik(cooked and seasoned glutinous rice))

  • 약식의 유통기간을 결정하는 중요한 품질요소인 조직감의 경화현상을 측정하는 방법을 수집하고 제조방법과 저장조건에 의한 경화속도의 변화를 조사하였다. 전통적으로 사용되는 표준 제조방법으로 만든 약식은 실온 $(20{\circ}C)$에서 3일간 저장할 수 있었으며 유통 상한점에서의 경도는 multipuncture시험의 700g 하중 수준이었다. 냉장저장$(5^{\circ}C)$에 의하여 약식의 굳는 속도는 급격히 증가하였으며 Avrami식으로 산출한 속도상수비는 $1.3{\sim}3.3$배 증가하였으며 수분함량이 높은 압력솥 처리구가 가장 큰 차이를 나타내었다. 물엿첨가는 약식의 경화속도를 다소 낮추는 효과를 나타내었다. 압력솥 처리에 의하여 약식은 너무 무르게 되어 기호도가 다소 떨어지나 냉장보관시에는 저장기간을 연장할 수 있는 방법으로 사료된다. 전자렌지로 조리한 약식은 대단히 높은 경도를 나타내었다. 약식의 종합적인 기호도는 조직감 기호도와 높은 정의 상관관계를 나타내며, 조직감 기호도는 multipuncture 시험의 최대 하중과 높은 부의 상관관계를 나타내어 multipuncture 시험이 약식의 품질평가 방법으로 사용될 수 있음을 확인하였다.

조선시대 세시음식(歲時飮食)에 대한 문헌적 고찰 (A Literature Review of Traditional Foods in Korean Festivals in the Joseon Dynasty)

  • This paper reviews 14 studies of the Joseon Dynasty(1392~1909) to examine the traditional Korean foods in Korean festivals. A total of 12 studies mentioned Seollal, Daeboreum, Dongji, Nappyeng as festivals involving. Traditional foods 10, Yudu, 9, Sambok and Junggujeol, 8, Chuseok and Seotdalgeummeum, 7, Samjinnal, Chopail, and Dano, 5, Jungwon, and 4, Hansik. In terms of the types of traditional foods, 13 studies mentioned red bean gruel, 12, Yaksik, 11, Tteokguk, 10, sudan and dog meat, 8, the custom of cracking the outer shell of different types of nuts, 7, Guibagisul(an ear-quickening wine), rice cakes(azalea hwajeon, zelkova rice cake, bean and turnip rice cake), 6, a chrysanthemum cakes, 5, Songpyeon, charunbeung(wagon-wheel rice cake), chrysanthemum wine, and sparrow meat, 4, Gangjeong, red bean grue, wine and snack, Jeonyak, 3, rice cakes, the making of soy sauce, Nabyak, roasted hare meat, foods for guests during, New Year festivities and rice cakes. The most frequently recorded festival foods were rice cakes and wine in various forms. This paper's review of ancient documents from the Joseon Dynasty provides a better understanding of Korea's folk customs, particularly traditional foods. In addition, this paper's findings are expected to help sustain Korea's traditional customs and foods and facilitrate the spread of Korea's food culture worldwide.

한국절식(節食)에 대한 초등학교 영양사의 의식조사 -서울과 인천지역을 중심으로- (A Study on Perceptions and Utilities of Korean Festive Food of Dietitians in Elementary School)

  • The purpose of this study was to investigate perceptions and uses of Korean festive foods by dietitians in elementary school food service. Questionnaires were distributed to 217 dietitians in Seoul (117) and Inchon(100), Statistical data analysis was completed by SAS package program Results were as follows ; 1. Most dietitians (89.8%) who answered the inquiry had knowledge about korean festive foods. 2. Most respondents applied Korean festive foods to their menu planning. 3. More than 85% of respondents used festive foods, especially Ddukguk, Mandu, Yaksik, Yukgaejang, Galbiggim, Tangpyungchae, Patjuk, among the 43 kinds considered for their menu planning. 4 The higher the perception of traditional foods, the more the respondents applied them to their menu planning, especially Injulmi, Shikhae, Yaksik, Bamchoe, Jeongpyun, Kalkuksu, Torantang, Hobakgigim, Namul. 5. Respondents got information sources about traditional foods from books, school, home, massmedia, and etc, in the order. 6. Most respondents (88.3%) wanted to simplify festive foods' cooking method or standardize the recipes. 7. On the necessity of education about festive food for children, 81.5% of respondents and festive foods were considered to be cultivated and developed to uphold the Korean traditional dietary life.

인천지역 대학생의 떡의 인지도 및 기호도에 관한 연구 (A Study on University Student's Recognition and Preference of Korean Rice Cake in Incheon Area)

  • The purpose of this study was to investigate the university students' recognition and preference of Korean rice cakes. Self administered questionnaires were collected from 302 students in Incheon area. Statistical data analysis was completed using a SPSS 10.0 program. The recognition of Korean rice cake was generally high: Injeolmi, Garaeddeok, Bakseolgi, Songpyun, Patsirooddeok, Bindaeddeok, Yaksik Julpyun, Gyungdan, Moojigaeddeok were high1y recognized, but Gaesungjooak, Sugyibyung, Seunggeomchopyun poorly recognized by university students. The most common consumption frequency rate of students was once or twice a month (Male 31.9%; Female 41.6%). Most students ate rice cakes as snack with water, Kimchi, fruits, beverage(Cola, Cider) and Korean traditional beverage(Sujunggwa, Sighye). The sales possibility of Korean rice cake at university canteens was dependent on the characteristics different from those of rice cafes itself, for example,. nutritional labelling, mass, atmosphere and package, etc.

수도권 지역의 연령에 따른 전통 떡류에 대한 인지도 및 기호도 (A Study on the Recognition and Preference of Korean Traditional Rice Cake According to Age in Capital area)

  • The purpose of this study was to investigate the perception and preference of the general public about Korean traditional rice cakes. Self-administered questionnaires were collected from 511 residents in Seoul and its vicinities. Data was analysed by t-test and one-way ANOVA. The recognition of Korean traditional rice cake was generally low except for the items that could be easily seen as either seasonable or festive foods. There was a significant difference in the average score of recognition and preference for each kind of Korean traditional rice cake according to gender and age. Injulmi, Yaksik, Songpyun, Baiksulgi and Garaeduk are highly preferred Korean traditional rice cakes, whereas Suktanbyung, Dootupduk, Soemuriduk and Daechoodanja are poorly considered among the general public.

한국 전통 떡류에 대한 대학생들의 인지도 및 기호도에 관한 연구 (A Study on the Recognition and Preference of Korean Traditional Rice Cake among College Students)

  • The Purpose of this study was to investigate the perception and preference of the college student about Korean traditional rice cakes. Self admistered questionnaires were collected from 512 college students in Seoul, Kyungki, Chungchungdo, Kungsangdo, Junlado and Gangwondo area. Data was analysed by t-test, one-way ANOVA and correlation. The recognition of Korean traditional rice cake was generally low except for the items that could be easily seen as either seasonable or festive foods. There was a significant difference in the average score of recognition and preference for each kinds of Korean traditional rice cake according to the major, gender and grade of subjects. Baiksulgi, Injulmi, Yaksik, Bindaeduk, Songpyun and Garaeduk are highly prefered Korean traditional rice cakes when as Gaepiduk, Ssookjulpyun, Kongchalduk and Garaeduk are poorly among college students.

떡 상품의 식사대용을 위한 소비자의 인식도 및 이용 실태 조사 (The Study on the Consumers' Perception and Purchasing Behavior of Rice Cake as a Meal)

  • This research was to investigate the consumers' perception and purchase behavior of Korean rice cake as a meal. The rate of consumers who had eaten rice cake as a meal was 64.7% and that of those who had not was 35.3%.. For breakfast, 49.83% of them ate rice cake and for lunch 21.2% of them did. Reasons for eating rice cake for meal were investigated on 'easy to eat(63.21%), 'the others(13.0%)', 'good taste (12.3%)' and 'healthy food(10.8%)'. Reasons for not eating rice cake for meal were researched on 'snack(40.09%), 'difficult storage(21.9%)' and 'expensive(9.7%)'. After purchasing or making rice cake, 45.4% of consumers ate immediately and 30.9% of them ate within $1{\sim}2\;days$. In thawing methods of frozen rice cake as a meal, 51.3% of consumers used a microwave. Kinds of beverage with which rice cake was eaten were water(35.3%), coffee(14.9%), milk(13.8%) and Kimchi(dongchimi, 13.8%). The complementary points for purchase of rice cake as a meal were 'Small package(23.2%)', 'Good preference'(20.5%), 'Healthy food(15.0%)', 'Affordable price(12.7%)' and 'Low calorie(9.5%). Kinds of rice cake as a meal were Injeolmi(16.0%), Backsulgi(15.4%), Yaksik(9.3%) and Galaetteok(9.0%).

식사대용 떡에 대한 주부들의 이용실태 및 기호도 조사 (A Study on the Housewives' Consumption Pattern and Preference of the Korean Rice Cake as a Substitute for Meal)

  • The purpose of this study was to investigate the housewives’ consumption pattern and preference of the Korean rice cake asa substitute for meal. The rate of housewives who had eaten rice cake as a substitute for meal were 75.30% and those who had not were 20.83%. Usually 62.03% of them ate rice cake for breakfast, and 34.21% did them within one time per a week. Reasons for eating rice cake for meal were investigated on ‘easy to eat(54.51%)’, ‘good taste (24.44%)’ and ‘healthy food(14.29%)’. The older housewives wanted healthy rice cake for meal and ate with tea and Kimchi(Dongchimi). The younger ones ate rice cake for meal with tea and milk. Thawing methods of frozen rice cake for meal were different between the older and the younger, respectively, steaming and using microwave. Kinds of rice cake as a substitute meal were Injeolmi(50.75%), Backsulgi(49.62%), Chaltteok (47.74%) and Yaksik(46.44).
