Improvement of Kimchi Fermentation by Using Acid-Tolerant Mutant of Leuconostoc mesenteroides and Aromatic Yeast Saccharomyces fermentati as Starters

  • Saccharomyces fermentati and Leuconostoc mesenteroides were isolated from a traditional kimchi, and then the Leu. mesenteroides was mutated to the acid-tolerant mutant Leu. mesenteroides M-l00. In the result of growth properties in MRS broth with various pHs adjusted with HCl and acid solution (latic acid:acetic acid=1:2), an acid-tolerant mutant Leu. mesenteroides M-100 showed more increased ability for growth than its wild strain at various temperatures. The strains were used as starters for the fermentation of kimchi. The experiments were performed with classified experimental groups (Group I, control kimchi; Group II, addition of YK-19 only; Group III, addition of M-100 only; Group IV, addition of mixture of M-100 and YK-19), and their pH, total acidity, reducing sugars content, organic acid productivity, organoleptic tests, and microfloral changes were compared. As a result, in pH and acidity, the optimal ripening period of Group IV was about 13.5 days (i.e. from the 8.5 to 22 days of fermentation). This result indicates that the optimal ripening period of Group IV was about 1.5 times longer than that of Group I. Furthermore, Group IV was edible to 28 days of fermentation. In addition, high contents of succinc acid was observed in Group IV. Group IV was also highly ranked on the organoleptic test. During the fermentation of kimchi, the number of Leuconostoc sp. in group I reduced after 7 days; however, the number of Leuconostoc sp. in Group II, III, and IV decresed after 14 days of fermentation. An especially high number of Leu. sp. was observed in Group IV, and this gave better flavor of kimchi than any other during the whole fermentation period. Citric acid, tartaric acid, succinic acid, fumaric acid, and lactic acid were detected in the kimchi, and a significant increase in the concentration of lactic acid during fermentation was observed in the all experimental groups.

  • Dr Lillehei (1918$\sim$1999) pioneered cardiac surgery with his landmark operations using cross-circulation in 1954 and 1955. With his dedications to open heart surgery, he is generally considered to be the father of open heart surgery by many medical historians. Dr Lillehei expanded his contributions to cardiac surgery with training 134 cardiothoracic surgeons at the University of Minnesota Hospital and he trained an additional 20 surgeons at the Cornell Medical Center. Dr Lillehei's trainees came from all over the world and Dr YK lee (1921$\sim$1994) of Seoul National University was among them. He joined the University of Minnesota Hospital in 1957 as a part of the Minnesota project. During his stay for two years, in addition to experimental research, he learned clinical cardiac surgery as part of Dr Lillehei's team. In 1959, after returning to Korea, Dr Lee began his career as. a full-time cardiac surgeon with establishing the Division of Cardiac Surgery at Seoul National University. Hospital. Yet he encountered many difficult barriers in the process. During that time, Dr Lillehei was willing to share his experience and he provided many valuable resources for cardiac operations. With Dr Lillehei's kind help, the open heart surgery program was gradually and successfully established at Seoul National University Hospital. These two surgical titans from across the Pacific Ocean died in 1994 (Dr Lee) and 1999 (Dr Lillehei). They are gone, yet the proud Korean people have not forgotten them.

An Assessment Study on Stability of Various Coating Treatment of Metallic Artifacts Using V-Flon (불소 수지(V-Flon)를 이용한 금속유물의 코팅 형성에 대한 안전성 평가 연구)

  • One of resins, V-Flon is useful as a coating material because YK-D80, which is a solvent for V-Flon, is not highly volatile. However, it can not completely harden and can flow out when metal artifacts are joined and restored in the process of the treatment. Therefore, after the impregnation process in order to accelerate the hardening speed of a coating material, usually a dry oven was adopted. This study focused on finding the problems on the dry oven which is employed to increase the speed and investigating the most effective solvent and its composition by checking any change occurred depending on the concentration of solvents. Six different types of solvents were selected and samples were prepared in a manner that they were impregnated with solvents in three concentrations respectively (10%, 20%, 30%). To determine the condition of the samples, the stability evaluation was performed by measuring the change of color and the gloss, the thickness of coated layers, the corrosion after coating, the water resistance by contact angles. Through the comparative experiments between the natural drying and the artificial drying using a dry oven, it was found that when the dry oven is used, some problems are identified on the point of forming a uniform and stable layer because of the unstable data collected from the forced artificial dry. The experiments performed using 3 different concentration rates (10%, 20%, 30%) presented that in the case of 10% V-Flon in Xylene (using as a solvent), its layer was thin as well as it showed the high water-barrier property, which allows it to form the stably coated layer with the lower gloss and color change.

These results can be presented to expand the coverage associated with the quality of the tourist academically based.   • This study is were to demonstratehow tourism motivation related to Water leisure influence the effectiveness of tourism value, based on the empirical information provided by Chung-ju visitors. The result of study revealsthat there are some significant motivational differences depending on the level of the visitors' past water leisure experiences. In addition, the tourism motivation impacts partly on the effectiveness of tourism value. These findings enable entrepreneurs to participate in efforts not only to provide separate stimulus elements depending on level of water leisure experiences but also to propose several innovative strategies that could be adopted and applied to water leisure tourism value.

  • This research the impacts of the experiential marketing elements to the festival brand loyalty and the results are as follow. First, the research showed 2 difference parts as the age and income in the experience and cognitive items. Second, it showed all items of sensory experiences of experiential marketing, emotional experience, cognitive experiences positively affect to the festival brand loyalty. Through these results, first, we could suggest a new data for the development of the festival experience marketing for the enhancement of the festival brands in the future. Second, as the new research applying the festival and experiential marketing, we could found the experiential marketing through the intangible goods as like the festival could affect to the reinforcing of the brand loyalty.
