The chemical components of Korean rice germ were analyzed. Proximate compositions of rice germ were as follows; crude lipid 21.18%, crude protein 16.50%, crude fiber 2.95%, crude ash 6.23% and carbohydrate 44.45%. Free sugar compositions were as follows; fructose 50.20mg/100g, glucose 68.80mg/100g, maltose 569.00mg/100g. Major amino acids of rice germ are glutamic acid (1920.9mg/100g), arginine (1503.7mg/100g), aspartic acid(1208.7mg/100g) and leucine (1039.7mg/100g). Fatty acid compositions of rice germ lipid extracted by chloroform-methanol (2:1) were palmitic (22.2%), linoleic acid (38.9%), oleic acid (24.7%) and palmitic acid (22.2%). Mineral elements were phosphorus (1766.22mg/100g) and potassium (1217.80mg/100g). Vitamins were composed of Vit E (11.96mg/100g) Vit B1 (5.69mg/100g) and niacin (2.96mg/100g). 16 flavonoids and 9 phenolic acids in rice germ were not detected. Above the chemical components of rice germ were compared with that of rice endosperm and wheat germ.
Background: The advantages of Rapid Arc plans versus Intensity modulated radiotherapy plans for Carcinoma left breast were analyzed. Materials and Methods: In this study 20 Post mastectomy carcinoma left breast patients were analyzed. Both Intensity modulated Radiotherapy and Rapid Arc plans were generated for these patients. IMRT plans with 7 beams in an arc fashion and VMAT plans with two semi arcs were made to achieve 95% dose coverage to 100% volume. The plans were evaluated using Dose volume Histograms. Results: The mean Conformity and Homogeneity index in VMAT is found to be 1.05 and 0.065 respectively whereas in IMRT it was 1.07 and 0.069. The 20% volume of Heart received a mean dose of 960cGy in VMAT and 1300cGy in IMRT. The mean dose was 1236cGy in VMAT and 1870cGy in IMRT. The ipsilateral Lung received 3395cGy to 5% volume and 1840cGy to 20% volume on an average and the mean dose was 1205cGy in VMAT, while the same were found to be 3525cGy, 2012cGy and 1435cGy respectively in IMRT. The Contralateral Lung received a mean dose of 505cGy in VMAT and 553cGy in IMRT. The mean Monitor units in VMAT were 512MU and 1170MU in IMRT. The NTID in VMAT is $108.8{\times}10^5Gycm^3$ and $110.1{\times}10^5Gycm^3$ in IMRT. Conclusions: The target coverage, homogeneity and Conformity index were better in VMAT plans. The Ipsilateral Lung and heart dose were very less in VMAT plans. The Contralateral Lung dose and the Normal Tissue Integral Dose were also lesser in VMAT plans however the difference is not very appreciable. The MU in VMAT plans is almost 50% that of the IMRT plans which results in the reduction of treatment time. On the whole VMAT proves to be a better modality for treating Ca. Left Breast Patients.
In this study, three kinds of Saccharomyces cerevisiae strains (KCTC 7106, 7238, 7904) were tested with respect to the ability of alcohol fermentation at $20^{\circ}C$ for 3 weeks, and S. cerevisiae KCTC 7106 was the most effective strain in alcohol fermentation with sweet persimmon. To increase the utility of sweet persimmon, the fruits stored for 1 year were used to make an alcohol beverage. It was adjusted 25% of total sugar content and allowed alcohol fermentation with shaking at 120 rpm and $30^{\circ}C$. The alcohol content of 11.6% showed at 15 days and it did not change until 25 days. The initial pH of the fermentation was near 5 then decreased to 4 within 5 days and the initial vitamin C content, 5.04 ${\mu}g/ml$, gradually decreased with fermentation periods. In the other study, the alcohol fermentation from fresh harvested persimmons showed 13% alcohol content at $20^{\circ}C$ for 30 days without agitation, while the alcohol content of the fermentation at $30^{\circ}C$ was 11.8% at 25 days and 13.4% at 35 days.

In recent, Kimchi is produced in the scale of industry, Consumers show increased demand of safety and high quality and hygienic process control. So, sun drying, hot air drying and cold air drying methods were investigated to compare the demand Sun drying took 96 hrs, hot air drying took 4 hrs at $70^{\circ}$ and cold air drying took 102 hrs at $10^{\circ}C$ in removing water to $90\%$ from radish. Brownness of radish was expressed as absorbance. Absorbance were 0.20, 2.04 and 1.87 and also Vit-C contents were 0.14 mg/g, 0.12 mg/g and 0.096 mg/g in dried radish according to cold air drying, hot air drying and sun drying, respectively. From overall experimental results, cold air drying method was found as superior drying method to other drying methods.
Korean green tea leaves which were harvested three times(May, June, August) were treated with anaerobic conditions and were measured changes of ${\gamma}-aminobutyric$ acid(GABA) and other constituents. In anaerobically treated green tea leaves, the content of ${\gamma}-aminobutyric$ acid(GABA) and alanine increased while glutamic acid decreased. Whereas theanine, arginine, caffeine and tannin showed little change and the content of vitamine C slightly decreased with the passing of the anaerobic treatment time. Formation of GABA, a hypotensive constituents, was proportioned to the content of glutamic acid and the optimum time of the anaerobic treatment was about 12 hours. In the anaerobic treatment of green tea leaves, effect of nitrogen gas and vacuum condition was no difference between two.
Clinical experience on 16 cases of open heart surgery under the extracorporeal circulation with mild or moderate hypothermia and partial hemodilution technique at the National Medical Center during the period from June 1976 to October 1977. Nine of sixteen were congenital heart disease and seven were acquired heart disease. The age of the patient ranged between 6 and 48 years. The body weight varied from 18.5kg to 60kg and body surface area 0. 79-1.70m2. The average priming volume of pump oxygenator was 2080 ml, which was consisted fresh ACD blood, buffered Hartmann`s solution, Mannitol, 50% dextrose in water and Vit. C. The average hemodilution rate was 27%. The average flow 2.3 L/min/m2 or 80 ml/min and the duration of perfusion varied from 31 min to 270 min with average of 107 min. The perfusion was carried out under the mild or moderate hypothermia using core cooling alone in 10 cases, core cooling and local myocardial cooling with $0-4^{\circ}C$ physiologic saline in 2 cases. From a hemodynamic point of view, the blood pressure dropped down around 80 mmHg after the initiation of perfusion follwed by increase to safety level and stable during the perfusion. The central venous pressure remained within normal limits. In most cases, hemoglobin and hematocrit decreased during and after the perfusion. Hemogiobin level was decreased, average of 20.6 %, hematocrit 18.6%, pletelets 55% postoperatively. Plasma hemoglobin increased moderately, from preperfusion average valve of 7.79 mg % to post-perfusion value of 54.7 mg %. Electrolytes changes during cardiopulmonary bypass showed definite hypokalemia but changes of Na, Ca were not definite. Arterial blood gas analysis during cardiopulmonary bypass suggested that the metabolic acidosis which was accompanied by respiratory alkalosis which was corrected postoperatively. As the opera tive complication, transient hemoglobinuria in 4 cases and neurological signs in 2 cases were all cured. There were 2 death cases and operative mortality rate was 12.5%.

This study was conducted to analyze the chemical composition, nutritional contents, and saponin in the xylem sap of Acer mono Max. From Feb 25 to Mar 4, 1994, spring sap was collected by making holes with 1.7cm diameter on the trunk of trees in Mt. Baekwoon and Mt. Jiri. Sugars were quantified by HPIC, amino acids by amino acid analyzer, saponins by TLC, HPLC, and $^1H$ & $^{13}C$ NMR. Major component of the sap was sucrose at a concentration range of 0.68 to 2.01%. Following minor components were found: glucose at 0.03-0.11%, and fructose at 0.01-0.03% as sugars, lipid at 0.03%, threonine at 0.152%, lysine at 0.038%, arginine at 0.068% as amino acids, ash at 0.1%, Ca at 175ppm, Fe at 2ppm, P at 19ppm, K at 16ppm, Na at 31ppm as minerals, vitamin $B_1$ at 0.6ppm, vit. $B_2$ at 0.1ppm, and vit. C at 19ppm. A trace of phenolic compounds was found by TLC, while saponin commonly reported in high-quality ginseng roots was not found in maple sap. It is concluded that sap of Acer mono contains a good variety of natural compounds such as sugars, amino acids, Ca, Fe, and vitamins to serve as an excellent source of very natural and health-promoting drink.
Objectives : JianTeng-Yuan(交藤圓) is said to be a prescription for preservation of health in ${\ulcorner}$HuaTuo ZhongZangJing(華陀 中藏經)${\lrcorner}$. It is known to have the effect of Bu-Shen(補腎: strengthening kidney) and Yi-Shou(益壽: prolonging the span of one's life). This study investigates whether JTY is effective on inhibition of oxidation stress. Methods : Sprague-Dawley Rats(12-week-old, weight $300{\pm}20g$) were divided into 3 groups. Normal group(n=8) was injected PBS(1ml/body, s.c) at the back neck's skin. Control group(n=8) was injected D-galactose(50mg/kg, 1ml PBS/body, s.c) to induce pathological animals. JTY group was injected the same treatment for the Control group, and fed containing JTY(10%). The whole groups were treated 1 time per day for 6 weeks. After rats were sacrificed and anti-oxidant enzyme(SOD, CAT, G-px) activity, GSH quantity of RBC and tissue(heart, liver and kidney), plasma Vit-C quantity were examined. Besides, the MDA levels of liver and kidney, lipofuscin of heart and endurance of erythrocyte membrane were measured. Results : In the JTY group, RBC's SOD activity decline was halted by 21% of the normal level, compared to the control group ; G-px activity(unit/g of Hb) increased significantly, compared to the normal group ; and the level of Vit-C in plasma increased by 16%. Heart's SOD activity was kept at the same level as that of the normal group ; and CAT activity decline was halted by 26%. Kidney's CAT and G-px activities were kept at the same level as that shown in the normal group, implying the existence of halting effect. Liver also showed a slight halting effect against the decline of anti-oxidant ability, but the effect was not significant(a=0.05). A comparison between the levels of peroxide in SD rats showed that the level of TBARS in plasma increased significantly in the control group and that it was normal in the JTY group. The livers in the JTY group, compared to those in the control group, showed 36% halting effect of the normal level while their kidney's indicated the level significantly lower than the normal level. Heart's lipofuscin increased significantly in the control group, but was alike in both the JTY and the normal groups. Endurance of erythrocyte membrane(%) decreased significantly in the control group while it was kept at the similar level in both the JTY and the normal groups, indicating the halting effect. Conclusions : This study suggests that JTY is effective to defend oxidation stress caused by D-galactose in the animals. It showed that the anti-oxidant ability was maintained and strengthened. On the other hand, it reduced the level of peroxide in animals. In sum, JTY appeared to have the equilibrium normal physiological function in SD rat.

For the elucidation of the nutritional status of residences of apartments located in various areas in Seoul city, the food and nutrition survey was undertaken by the graduate students from Department of Food & Nutrition, Ewha Womans University in 1973. The socioeconomic stratification was mainly considered for the selection of sample apartments included in this study. Hangang Mansion, KIST, Munwhachon & Bukahyun apts were selected in this respect. A. Common living circumstances. Through the questionaries, author concluded nutritional concept on everyday food life as follows; 1. Higher income seems less effective in everyday food life on the nutritional view point than higher education does. 2. It needs to be urgently improved to be accustomed to use exact measuring concept of foods when they cook. 3. It needs to be improved to serve meals for individual portion at meal table, because the portion control at meal table will effect to national food policy. B. Nutrition Survey. Average daily calroie intake was the highest in Hangang Mansion and lowest in Bukahyun apt., in accordance with their economic living standard, but most of their calorie intakes were lower than the R.D.A. (3000ca1 for male, 2200 Cal for female). But the composition ratio of the total calorie intake was near to the ideal, carbohydrate 60%, protein 15%, fat 25%. Although there were differences in their economic living situations in urban area, most people ingested relatively good quality and large amounts of protein and fat. Vitamin A and Niacine intake exceeded the R.D.A., but the intake of Ca, Thiamine, Riboflavin, Ascorbic Acid were far less than that of R.D.A. C. food Intake. Amounts of total daily food intake were highest in Bukahyun apt. and lowest in Hangang Mansion. These showed adverse aspects to the total calorie intakes and their income levels. The ratio of cereals, $40%{\sim}50%$ of the total food intake, was higher than any other kinds of foods in all apartments. Among the other foods except cereals, there represented the highest level of meats in Hangang Mansion and KIST apt., while intake of Kimchies were highest in Munwhachon and Bukahyun apt. In the case of vegetables and fruits intake, the ratio of them in Hangang Mansion and KIST apt. were high, on the other hand the ratio of starchy roots appeared lowest in Hangang Mansion. For the main sources of protein, meats were ingested in Hangang Mansion and KIST apt., meats and fishery were used in Munwhachon apt., and beans were eaten highly in their meals in Bukahyun apt. These food contents and distributions showed the significant differences not only their economic classes but also regional characteristics.
The purpose of this study was to investigate the chemical and sensory properties of Kimchi added apple Juice. Kimchi added amount of 0, 5 and 10% of apple juice was fermented at 4$^{\circ}C$ for 20 days. During the fermentation, pH was lowered in all Kimchi samples and pH of Kimchi added apple juice was a little lower than that of Kimchi without apple juice. Acidity was increased continuously and saltiness was maintained at 1.6~2.3% levels during fermentation. Although reducing sugar was increased in the early stage of fermentation, it was decreased subsequently as fermentation proceeded. Also the reducing sugar of Kimchi added apple juice was relatively higher than the other sample. Total vitamin C(Vit C) of Kimchi added apple juice was reduced in the early stage of fermentation and increased gradually after 10 days. As a result of the sensory evaluation, Kimchi added 5% of apple juice, was showed high scores in taste, flavor, texture and overall acceptability in the early stage of fermentation.
