  • This study was designed to investigate the effect of silkworm (Bombyx mori L.) powder on lipofuscin, acetylcholine (ACh) and its related enzyme activities in brain of rats. Sprague-Dawley (SD) male rats ($160{\pm}10g$) were fed basic diet (control group), and experimental diets (SWP-200 and SWP-400 groups) added 200 and 400 mg/kg BW/day for 6 weeks. In case of liver membranes, lipofuscin (LF) levels resulted in a slight decreases (4.6% and 11.5%, respectively) in SWP-200 and SWP-400 groups compared with control group. But in case of barin as the most sensitive organ, LF levels were remarkably inhibited about 16.7% and 20.0% in SWP-200 and SWP-400 groups compared with control group. There were no significant differences in acetylcholine (ACh) syntheses as a very important neurotransmitter, and choline acetyltransferase (ChAT) activities as a synthesis enzyme of ACh, and acetylcholinesterase (AChE) activities as a hydrolysis enzyme, which were concerned in transmission of neuron through synapses in brain of SWP-200 and SWP-400 groups compared with control group. Monoamine oxidase-B (MAO-B) activities were significantly inhibited (about 10.2%) in brain of SWP-400 groups compared with control group. These results suggest that inhibiting effects of LF accumulation and MAO-B activity of silkworm powder (SWP) may play a pivotal role in attenuating a various age-related changes for improvement of brain function.

  • This study was designed to investigate the effects of mulberry (Morus alba L.) leaf extract (MLE) on oxygen radicals and their scavenger enzymes in brain membranes of rats. Sprague-Dawley (SD) male rats (160$\pm$10 g) were fed basic diet (control group), and experimental diets (MLE-100 and MLE-300 groups) added 100 and 300 mg/kg BW/day for 6 weeks. Hydroxyl radical (.OH) lecels resulted in significant decreases (13.4% and 21.1%, 12.0% and 13.4%, respectively) in brain mitochondria and microsome of MLE-100 and MLE-300 groups compared with control group. Superoxide radical ($O_2$) levels were significantly decreased about 12% in brain cytosol of MLE-300 group compared with control group. Lipid peroxide (LPO) levels were effectively inhibited (18.1% and 12.3%, respectively) in brain mitochondria and microsomes of MLE-300 groups compared with control group. Oxidized protein (OP) levels were significantly decreased (14.2%, and 10.9%, respectively) in brain mitochondria and microsomes of MLE-300 groups compared with control group. Mn-SOD activities in brain mitochondria were significantly increased (13.5% and 18.6%, respectively) in MLE-100 and MLE-300 groups, and Cu/Zn-SOD activities in brain cytosol were also effectively increased (about 17.7%) in MLE-300 groups compared with control group. GSHPx activities in brain cytosol were remarkably increased (17.2% and 23.9%, respectively) in MLE-100 and MLE-300 groups compared with control group. These results suggest that anti-aging effect of mulberry leaf extract (MLE) may play a pivotal role in attenuating a various age-related changes in brain.

  • This study was designed to investigate the effects of silk fibroin (Mw 500) powder (SFP) on lipofuscin, acetylcholine (ACh) and its related enzyme activities in brain of rats. Sprague-Dawley (SD) male rats (160$\pm$10 g) were fed basic diet (control group), and experimental diets (SFP-2.5 and SFp-5.0 groups) added 2.5 and 5.0 g/kg BW/day for 6 weeks. In case of liver membranes, lipofuscin (LF) levels resulted in a considerable decreases (11.5% and 13.8%, respectively) in SFP-2.5 and SFP-5.0 groups compared with control group. But in case of brain as the most sensitive organ, LF levels were remarkably inhibited about 18.3% and 21.7% in SFP-2.5 and SFP-5.0 groups compared with control group. Acetylcholine (ACh) levels were considerable decrease (3.0% and 9.2%, respectively) in brain membranes of SFP-2.5 and SFP-5.0 groups compared with control group. choine acetyltranferase (ChAT) activities as a synthesis enzyme of ACh, and acetylcholinesterase (AChE) activities as a hydrolysis enzyme resulted in a slight increases (2.4% and 3.0%, 4.6% and 6.3%, respectively), but significance difference between ChAT and AChE activities by SFP administration could be not obtained. Monoamine oxidase-B (MAO-B) activities were significantly inhibited (9.5% and 12.6%, respectively) in brain of SEP-2.5 and SFP-5.0 groups compared with control group. These results suggest that inhibiting effects of LF accumulation and MAO-B activity of silk fibroin(SFP) may play a pivotal role in protecting learning memory impairments by attenuating a various age-related changes for improvement of brain function.

  • The purpose of this study was to compare the degree of understanding about school foodservice management and environmentally friendly agricultural products between urban and rural elementary school children's mothers. The subjects were 280 elementary school children's mothers who lived in Gunsan city and the nearby countryside. The results are summarized as follows. The mothers in urban schools were higher on the degree of participation (p < 0.01) and interest (p < 0.01), but were lower on the degree of satisfaction (p < 0.001) for school foodservice than rural ones. The best improvement of school foodservice management was improving food tastes and qualities of the foodstuffs in urban schools and sanitation at the service area in the rural schools (p < 0.001). The school foodservice program contributed to cure the unbalanced diets and developing of bodies and minds; there was no difference of urban and rural schools. But eating habits in rural schools were more improved than urban schools (p < 0.001). The primary reason for using environmentally friendly agricultural products was to improve their health and in securing safe foods, there was no difference of urban and rural schools, but generating the farmer's income from the products in rural schools was higher than urban schools (p < 0.001). There are conflicting views between urban and rural schools for the additional costs brought by using the environmentally friendly agricultural products (p < 0.001). The order of preference on using environmentally friendly agricultural products was rice and various grains, vegetables, fruits, livestock, seasoning, etc. In conclusion, our central and local governments should change their roles in financially positive ways and reflect the issues in making the policy effective. Responsible administrators of school food suppliers run the system more faithfully with the above government support.

  • Aloe(Aloe vera LINNE) has been used as a home medicine for the past several thousand in the world, and has been studied on various chronic degenerative diseases such as atherosclerosis, myocardiac infarction and hypertension. SMAP8, learning and memory impairment animal mode, were fed basic or experimental diets with 1.0% of freeze dried(FD)-Aloe powder for 8 months. This study was designed to investigate the effects of Aloe on body weight gain, grading score of senescence(GSS), triglyceride, total and LDL-cholesterol levels, and atherogenic index in serum of SAMP8, and also designed to investigate the effects of Aloe on cholesterol accumultions in mitochondria and microsome fractions of SAMP8 brain. Body weight gain was consistently lower in aloe group than in control group, but no significantly differences between them. Grading score of senescence resulted ina marked decreases pf 20% in 1.0% Aloe group compared with control group. Administrations of 1.0% aloe resulted ina marked decreases in 15% and 20% of triglyceride and cholesterol levels, respectively, and also significantly decreased in 15% of LDL-cholesterol levels and atherogenic index in serum of SAMP8 compared with control group. Cholesterol accumulations were significantly inhibited in 20% and 10% of mitochondria and microsome fractions of SAMP8 brain, respectively, by administration of 1.0% Aloe. These results suggest that administration of Aloe mau not only effectively inhibit chronic degenerative diseases in serum of SAMP8, but may also improve learning and memory impairments of SAMP8 brain.

  • This study was performed to investigate the influence of dietary mulberry leaf on the intestinal microflora in rats. Rats were fed each experimental diets containing 1%, 10% of mulberry leaf powder for 4 weeks. Total viable counts and the numbers of Bifidobacterium, Lactobacillus, Clostridium, E. coli and Staphylococcus were determined by nonselective media and various selective media. A decrease in the intestinal population of Clostridium was shown in dietary mulberry leaf group. The E. coli and Staphylococcus populations decreased in dietary mulberry leaf group compared with control group. Methanol extract and fractions of mulberry leaf were subjected to an in vitro screening test for their growth-inhibitory activity. Methanol extract and Water fraction of Mulberry leaves showed weak growth-inhibition of Clostridium perfringens. These results indicate that the composition of gastrointestinal microflora was improved by treatment of mulberry leaves in SD rats and was very effective for growth inhibition of the intestinal harmful bacteria in intestine. Therefore, the mulberry leaves as a newly bio-material can be a useful material for physiologically functional food.

  • The aim of this study was to compare the dietary patterns and behaviors of university students according to their type of residence. The subjects consisted of two thousand two hundred fifty students from Wonkwang University. They were divided into three groups : those who live in their family homes (393 men, 392 women) ; those who live in university dormitories (371 men, 401 women) : and those who live in houses with cooking facilities (345 men, 348 women). This cross-sectional survey was conducted using a self-administered questionnaire. The nutrient intake data collected from a three-day recall were analyzed using the Computer Aided Nutritional Analysis Program and the diet quality was estimated using the Nutrient Adequacy Ratio, Mean Adequacy Ratio and Index of Nutritional Quality. The results showed that the mean daily intakes of calcium were lower than the Korean Recommended Daily Allowance (RDA) in all groups. There was a significant difference in the nutrient intake, dietary quality and dietary behaviors of the three groups. The nutrients intake and dietary quality of the men were poorer than those of the women in all three groups. The subjects living in dormitories and houses with cooking facilities seemed to have lower levels of nutrient intake and dietary quality. However, the concern about nutrition and interest in health information was higher among those living in dormitories and houses with cooking facilities than among those living in their family homes. Male students living in houses with cooking facilities had more dietary problems than students living in their family homes or in dormitories possibly because they might have had a lower ability in meal management. These results suggest that the type of residence affects the nutrient intake levels, and dietary quality of university students in Iksan. Nutritional education is essential if university students are to practice optimal nutritional habits, including the eating of well-balanced diets and selecting of foods of high quality. Therefore, nutritional education for university students is needed so as to improve their health and a nutritional education program should be developed to meet the various needs of these students.

  • A 6-week feeding trial was conducted to determine the nutritional value of various dietary animal protein sources in juvenile Koran rockfish. White fish meal (WFM), flounder muscle meal (FMM), blood meal (BM), casein & gelain (CG), egg white albumin (EWA) and squid liver powder (SLP) were used as the animal protein sources, Crude protein content and available energy of the experimental diets were 50% and 15.9 kJ/g, respectively. There were significant differences among all dietary groups in weight gain (WG), feed efficiency (FE), and protein effiency ratio (PER). WFM and FFM were the best animal protein sources among the dietary groups. FMM diet had significantly higher (P<0.05) WG, FE, and PER values than those of fish fed the WFM diet. WG, FE, PER, and specific growth rate (SGR) values of fish fed BM diet were significantly higher (P<0.05) than those of fish fed EWA diet. Significant differences were found in whole body composition, hemoglobin (Hb), hepatosomatic index (HSI), and hematocrit (Ht). These results showed that low-temperature processing of lyophilized flounder muscle meal resulted in superior performance of rockfish relative to the other evaluated animal protein sources.
