Evaluation of Physicochemical Properties of Jeungpyun Prepared with Membrane-filtered Tofu Whey Concentrates

  • This study examined the quality characteristics of Jeungpyun prepared with different additions of nano-filtered (NF) tofu whey concentrates. The initial pH values of the Jeungpyun batters ranged from 5.64 to 5.78, and decreased to 4.77-4.98 after 4 hours of fermentation at $35^{\circ}C$. The volume and specific volume values of the control Jeungpyun were lower than those of Jeungpyun samples prepared with 1%, 2%, and 3% NF powder. The color of the Jeungpyun became increasingly greenish-yellow as the NF powder level increased. Hardness and brittleness decreased with increasing NF powder content, while cohesiveness and springiness were not significantly different. Sensory evaluations revealed that as the level of NF powder increased, takju smell and sourness increased, but no significant differences were observed for sweetness and moistness between the control and NF powder groups. In terms of overall acceptability, the results revealed that Jeungpyun can be prepared with up to 1% NF powder in place of rice powder and be deemed as acceptable as a control Jeungpyun product.

홍삼 추출물 첨가 연두부의 저장 중 항산화 활성 변화 (Changes of Antioxidant Activities of Soft Tofu Manufactured with Red Ginseng Extract during Storage)

  • 생리적 기능성을 함유하는 두부를 제조하기 위하여 홍삼 추출물을 첨가하여 압착 성형 공정 없는 연두부의 형태로 제조하였으며, 홍삼 추출물 첨가 연두부의 저장기간에 따른 항산화 성분 및 항산화 활성 변화를 측정하였다. 홍삼 추출물을 첨가하지 않은 대조군의 polyphenol 화합물의 함량은 $605.25{\mu}g/mL$이었으며, 홍삼 추출물을 첨가군의 함량은 $598.51{\sim}681.65{\mu}g/mL$이었으며, 홍삼 추출물 함량에 비례하였다. 대조군의 ascorbic acid의 함량은 6.42 mg%이었으며, 홍삼 추출물 첨가군은 5.74~7.67 mg%로 대조군보다는 높은 함량을 나타내었다. 저장기간에 따른 polyphenol 화합물 및 ascorbic acid의 변화를 보면 저장기간 내내 대체적으로 대조군보다는 홍삼 추출물 첨가군이 높은 함량을 보였다. 환원력의 경우, 대조군은 O.D.값이 0.2781로 나타났으며, 홍삼 추출물 첨가군은 O.D.값이 각각 0.3260~0.3477로 대조군에 비하여 높은 값을 나타내어 홍삼 첨가가 항산화 활성이 증가하는 것으로 나타났으며, 저장기간 내내 높은 항산화 활성을 유지하였다. ABTS radical cation decolorization은 대조군은 20.54 AEAC이었으나, 홍삼추출물 첨가군은 20.63~20.86 AEAC로 홍삼 추출물의 첨가농도가 높을수록 높은 값을 나타내어 항산화 활성이 있는 것으로 나타났다.

중립 내병 다수성 장류·두부용 콩 '늘찬' ('Neulchan', a Middle-seed, Disease-resistant, and High-yield Soybean Cultivar for Soy-paste and Tofu)

  • '늘찬'은 '석량풋콩'과 '장엽콩'의 후대인 SS91501-9-1-1를 모본으로 '목포17호'와 '신팔달콩2호'의 교배후대인 SS96205을 부본으로 1998년에 인공교배하여 계통육종법에 의하여 선발된 품종이다. 2006~2008년 생산력검정시험에서 중립으로 병에 강하여 재배안정성이 높고 다수성으로 유망시되어 '밀양206호'의 계통명을 부여한 후 '09년에서 '11년까지 3년간 9개소에서 지역적응시험을 실시한 결과 중립 내병 내재해 우량계통으로 평가되어 품종보호출원 및 국가품종목록으로 등재하였다. '늘찬'은 유한신육형, 화색이 백색, 협색이 담갈색, 종실은 종피와 제색이 황색이면서 모양이 구형인 장류 및 두부용 콩품종이다. 개화기가 7월 30일, 성숙기가 10월 9일로 중만생종이며 경장은 '대원콩' 보다 4 cm 짧으며 주경절수가 14개로 같고, 백립중이 21.7 g으로 가벼운 특성을 지니고 있다. 검은뿌리썩음병은 다소 약하지만 불마름병과 콩모자이크바이러스에 저항성 품종이다. 두부가공특성은 '대원콩' 대비 밝기가 비슷한 정도였으며 경도도 '대원콩'과 비슷한 특성을 나타냈다. 메주 풍취와 청국장 풍취는 '대원콩'보다 약간 못하였으며 메주수율과 청국장 γ-PGA 함량이 '대원콩' 보다 우수하였다. 수량성은 지역적응시험 결과 전국 평균 2.95 ton/ha, 적응지역인 이모작 지대에서 3.07 ton/ha로 '대원콩'보다 약간 많은 다수성 품종이다.

두부 전문 음식점의 서비스 품질이 고객 만족과 충성도에 미치는 영향에 관한 연구 - 서울.경기 지역을 중심으로 - (A Study on the Effects of Service Quality of Korean Tofu Restaurants on Customer Satisfaction and Loyalty - Focused on Seoul and Gyeonggi Area-)

  • Quality is recognized as one of the key components of business strategies. In this respect, this study aims to investigate quality factors that influence customer satisfaction and loyalty in Korean Tofu restaurants and promote the quality improvement in their service operations. The experimental data were collected from the questionnaire answered by 130 customers in Seoul and Kyonggi area. They were statistically analyzed using SPSS Win.12.0. For statistical analysis, frequency, factor analysis, reliability analysis, and regression analyses were conducted. The results of the analyses show that two dimensions such as "empathy" and "IT use" influence the satisfaction of customers. "Empathy", "tangibles", "well-being food", and "customer satisfaction" were identified as critical factors influencing the loyalty of customers.

Tepary Bean과 Soy Bean 혼합두부의 제조 및 품질 특성에 관한 연구 (A Study of Tepary Bean and Soybean Combination Curds and Their Textural Characteristics)

  • Tepary bean (phaseolus acutifolius var latifolius)은 반사막성기후 즉 미국의 서남부나 멕시코에서 자라는 콩으로 이 콩의 curd 생산에 있어서의 acceptability를 조사하는데 목적을 두었다. Curd는 100% Tepary bean(TB)과 soybean(SB)의 여러 가지 비율의 혼합물을 University Arizona와 Unicon Valleage Company와의 Cooperative Extension work에서 연구된 방법을 적용하여 만들었다. 완성된 Curd는 무게와 충고성분의 양(Yield)을 측정하였고 관능검사결과를 통계처리하여 특성 및 acceptability를 조사하였다. TB:SB가 50:50 그리고 25:75의 비율일 때, curd 제품의 관능검사와 acceptability에서 만족할 수 있었다. 따라서 50% 이상의 Tepary Bean Tofu는 좋은 질의 curd로서의 생산 이용 가능성이 없는 것으로 판단되어 50% 미만의 Tepary Bean과 Soy bean의 curd는 서로 제한 아미노산을 보충해주어서 보다 좋은 질의 TOFU를 생산할 수 있는 가능성을 가졌다고 보여진다.

뽕잎 분말 첨가 두부가 충남 일부지역 저칼슘 섭취 여대생의 손목 골밀도, 생화학적 골대사지표 및 지질성상에 미친 영향 (Effects of Mulberry-Leaf Powder Tofu on Carpus Mineral Density, Biochemical Markers of Bone Turnover and Lipid Profiles in Female University Students from Choongnam Consuming Low Calcium Diet)

  • This study examined the effects of mulberry-leaf powder Tofu(MPT) on the anthropometric measurements, bone mineral density(BMD), biochemical markers of bone turnover, serum lipid levels of and macrominerals status in 30 female university students living in Choongnam with low dietary Ca intake was low(mean daily $intake=524.66{\pm}21.47$ mg/day). The subjects received the MPT supplemented(100 g/day) for 4 weeks. The nutrient content per 100 g MPT was 84.10 kcal(energy), 8.98 g(protein), 0.53 mg(fiber), 211.33 mg(Ca) and 1.59 g(fat). Anthropometric measurements, 24-hour dietary recall, carpus BMD using DEXA, select BMD biomarckers(serum alkaline phophatase activity, osteocalcin, urinary deoxypyridinoline), serum protein levels, albumin, and glucose levels, lipid profiles(cholesterol, triglyceride, HDL-cholesterol, LDL-cholesterol) and serum macrominerals(Ca, Ca/P ratio, Mg) were analyzed before and after MPT supplementation. Following MPT supplementation, there was no significant differences in anthropometric measurements, nutrient intakes, carpus BMD, serum alkaline phosphatase activity, osteocalcin, and urinary deoxypyridinoline, serum levels of protein, albumin, and glucose or lipid profiles with AI, HTR, LHR and CRF. However, there were significant increases in dietary calcium as well as decreases in serum triglycerides with MPT supplementation. Although further research is needed, these results that regular intake MPT could prevent bone and cardiovascular diseases.

Growth of Seeded Escherichia coli in Rewetted Cattle Waste Compost of Different Stages

  • Compost is used mainly as an organic fertilizer, but it is also used as bedding material for cattle. Dairy cattle have been identified as a main reservoir of pathogenic Escherichia coli O157:H7. Further, E. coli is regarded as an environmental pathogen that causes bovine clinical mastitis. Hence, its growth in compost spread or compost bedding should be avoided. Physical and chemical conditions, available nutrients and microflora in compost change greatly during the composting process. Since pathogen growth in compost seems to be related to these changes, we assessed the possibility of E. coli growth in compost samples collected at 0, 7, 13, 22, 41, 190 and 360 d. Cattle waste composts with and without added tofu residue were collected from static piles and immediately air-dried. Compost samples were inoculated with a pure culture of E. coli, the moisture content was adjusted to 50%, and the samples were incubated for 5 d at $30^{\circ}C$. The numbers of E. coli in compost before and after incubation were determined by direct plating on Chromocult coliform agar. Almost all compost samples supported E. coli growth. Samples collected during or immediately after the thermophilic phase (day 7) showed the highest growth. Growth in samples more than 13 d old were not significantly different from those of aged compost samples. The addition of tofu residue gave a higher growth than its absence in younger samples collected prior to 13 d. To minimize the risk of environmental mastitis, the use of compost in the initial stage of the process is better avoided.

토복령 추출물을 첨가한 소스의 항산화 활성 및 저장 중 품질 특성 (Antioxidant Activity and Quality Characteristics of Stew Sauce Mixed with Smilax china L. Extract During Storage)

  • This study investigates the effects of a China root (Smilax china L.) extract on the chemical and microbiological characteristics and antioxidant activity of the sausage stew sauce and the soft-tofu stew sauce over a 5-week storage period. Commercial sauces were obtained from the market, and samples were prepared using four different concentrations of the China root extract (0% (control), 0.5%, 1.0%, and 1.5%) and stored at $5^{\circ}C$ and $20^{\circ}C$. Over the 5-week storage period, pH and salinity showed slight changes in both the sausage and soft-tofu stew sauces, but there was no significant difference (p<0.05) regardless of the extract amount and temperature. At 5 weeks, there were significant decreases in the total microbial count in groups with the China root extract (p<0.05) for both the sausage and soft-tofu stew sauces at $5^{\circ}C$. Over the whole storage period, no coliform, yeast, and mold were detected in any sample. S. aureus counts were not detected in 1.0% and 1.5% China root groups at $5^{\circ}C$, but 1.00-1.60 log CFU/g was found in the control and 0.5% groups. DPPH radical scavenging activity at 5 weeks showed an increase with an increase in the amount of the China root extract in both sauces. These results indicate that the China root extract inhibited microbial growth during storage as well as scavenging activity and thus that it can be considered to prolong the shelf life of commercial sauces.
