Impacts of post-mortem ageing prior to freezing on technological and oxidative properties of coarse ground lamb sausage in a model system

  • Objective: The objective of this study was to evaluate the effects of ageing time of lamb loins prior to freezing on technological characteristics and oxidation stability of coarse ground lamb loin sausage using in a model system. Methods: Lamb loins (M. longissimus lumborum, n = 25) were aged at $-1.5^{\circ}C$ for 0, 1, 2, 3, and 8 wk and then frozen for the remaining days (a total of 30 wk). The aged/frozen/thawed lamb loins were ground, and model sausages were formulated with 75% aged/frozen/thawed lamb loin, 25% water, 1.5% sodium chloride (NaCl) and 0.3% sodium tripolyphosphate. The pH and thaw/purge loss of aged/frozen/thawed lamb loins were evaluated, and protein functionality (protein solubility and emulsifying capacity), water-holding capacity and textural properties of model sausages were determined. Cooked model sausages were vacuum-packaged in a plastic bag and displayed under continuous fluorescent natural white light ($3^{\circ}C{\pm}1^{\circ}C$). Colour and lipid oxidation of the cooked model sausages were evaluated on 0 and 21 d of display storage. Results: Ageing prior to freezing had no impact on pH and purge/thaw loss of lamb loins and the colour of cooked sausages (p>0.05) made from the loins. Lamb loins aged for at least 3 wk prior to freezing numerically improved total and myofibrillar protein solubilities (p>0.05) and emulsion activity index (p = 0.009) of meat batter, but decreased cooking loss (p = 0.003) and lipid oxidation (p<0.05) of model sausages. Conclusion: This study suggests that post-mortem ageing of raw meat prior to freezing could improve water-holding capacity and lipid oxidative stability of sausage made from the meat.

Entrepreneurial Orientation of Technology Spin-offs Created by University Faculties and Institute Researchers in Korea

  • This research focuses on entrepreneurial orientation(EO) of technology spin-offs as they are expected to reduce the gap between their technology and the market. Entrepreneurial orientation is an organizational activity or process that redistributes or combines resources in an innovative way and takes risk to create new values. It helps improve the level of organizational innovation to deal with uncertainty. An empirical study was performed to analyze the EO of spin-offs established by members of university faculties and research institutes in Korea. Antecedent variables to EO are hypothesized to include public policy for university faculty members and researchers at research institutes, the relationship with incubating organizations, and the level of social networking with other firms. The EO and technological performance relationships are also hypothesized. Data from a total of 121 spin-off organizations were collected and a series of multiple regressions were performed. The performance variable included both technological performance, such as the number of newly marketed products and new technology and subjective performance, such as the level of satisfaction with sales amount and profitability. Several important conclusions were drawn from this study. First, while government policy is not related to EO, the policy of a university or a research institute has a significant effect on the level of innovativeness. Second, a high percentage of human resources applied at the incubating organization results in a negative effect on risk taking. The level of cooperation with the incubating organization too is not related to Entrepreneurial Orientation. Third, the intensity of cooperative networking with other firms has a significant effect on risk-taking. Network relationship with government related organizations is not related to Entrepreneurial Orientation. This study analyzes the importance and role of policy of the university and research institute and networking with other firms to improve EO. It also suggests that a high composition of human resources at the incubating organization has a negative relationship with EO.

중소기업 기술혁신이 국가 및 지역경제에 미치는 영향에 대한 선행연구 고찰 (A Review of Studies on the Influence of SME's Technological Innovation on National and Regional Economies)

  • 중소기업의 기술혁신역량은 국가 및 지역경제에 중요한 요소로 여겨진다. 하지만 이와 관련된 연구가 부족할 뿐 아니라, 중소기업 혁신활동이 경제와 산업에 미친 공헌(예를 들면, 일자리 창출 및 국내총생산 기여도) 역시 학계와 정책입안자들에게 상대적으로 과소평가 받고 있음을 선행연구를 통해 확인할 수 있다. 또한, 일반적 인식으로는 중소기업보다 규모가 큰 대기업에서 혁신활동이 더 활발하게 발생할거라는 편견을 갖고 있지만, 몇몇 사례연구를 살펴본 결과 실질적으로는 중소기업이 혁신활동에 더욱 유리한 조직을 갖췄을 뿐 아니라 첨단산업 집적지 형성에도 상당한 기여를 해왔음을 알 수 있다. 이에 본 연구는 선행연구 고찰과 함께 지난 시간 중소기업의 혁신활동이 국가 및 지역경제에 미친 공헌을 살펴보고, 그러한 성과들을 바탕으로 정책적, 이론적 시사점을 도출하였다.

  • The article discusses the use of smart technologies in the training of future specialists. Today, learning using smart technologies is becoming a new educational standard, where information is presented in a logical sequence, computer training systems have powerful functions for the educational process. The functions of smart technologies are highlighted. It is noted that smart technologies are successfully used in the field of education and professional training. The concept of "smart education" is characterized. Smart education is an educational paradigm that underlies a new type of education system. The implementation of the smart education paradigm is aimed at the process of obtaining competencies and competencies for flexible and adapted interaction with the social, economic and technological environment. Smart education should ensure that the benefits of the global information society can be used to meet educational needs and interests. A special place is occupied by computer-based educational multimedia systems that allow you to deepen your knowledge, reduce the duration of training, and increase the number of students per teacher. The main principles of smart education are highlighted. Improving the efficiency of training in a modern higher education institution is impossible without the introduction of smart technologies in the organization of the educational process.

인공 수초재배섬에서 세균의 활성과 세균 군집 구조 (The Activity and Structure of Bacterial Community within Artificial Vegetation Island (AVI))

  • The bacterial number, extracellular enzyme activities and structure of bacterial community which are major constituent of aquatic ecosystem within the artificial vegetation island (AVI) were compared to those of the nearby pelagic lake waters in order to evaluate the possibility of the AVI as a eco-technological measure for water quality improvement and restoration of littoral zone in man-made reservoirs. There was not a significant difference in the total number of bacteria, but the number of active (viable) bacteria within the AVI was about 0.7 to 4.1 times higher than nearby pelagic lake water. The ratio of the number of active bacteria versus the total number of bacteria was also higher in the AVI than nearby pelagic lake water. The activities of ${\beta}$-glucosidase and phosphatase were 1.0 to 13.1 and 0.8 to 7.3 times higher respectively in the AVI than nearby pelagic lake water, showing that microorganisms were more active within the AVI. The bacterial communities of the two waters, examined by FISH method, did not indicate a clear difference in the springtime when the growth of macrophytes was immature, but during summer and fall it showed a clear difference indicating the formation of distinct bacterial community within the AVI compared to nearby lake water. From the results of this study, we conclude that AVI can contribute to make up the littoral ecosystem which show rapid cycling of matters through active detritus food chain in the dam reservoirs which have unstable aquatic ecosystem due to short hydraulic residence time and to strengthen the self-purification capacity of the lake.

시스템반도체산업의 기술혁신패턴의 진화에 대한 연구 (Study on the Evolution of Technological Innovative Pattern in System Semiconductor Industry)

  • 본 연구는 시스템반도체의 기술혁신패턴의 진화를 지식의 생성방식의 진화와 이에 따른 기업간 관계의 진화라는 관점에서 분석하였다. 특히 설계도구인 EDA의 등장 이후에 지식의 생성방식이 변화하였고 이를 기반으로 기업유형의 진화, 기업간 관계의 진화 풍 기술혁신패턴이 진화하였음을 문헌자료에 대한 검토와 주요 기업에 대한 인터뷰를 통해 분석하였다. 분석결과는 다음과 같다. 첫째, 시스템반도체의 혁신활동은 과거 지식의 축적을 통한 설계활동 중심의 기술개발에서 지식 및 기술활용을 위한 탐색활동 중심의 혁신활동으로 진화하고 있다. 즉, 특정 기능의 구현을 통한 제품개발이 아니라 IP를 활용한 시스템 구축으로 제품개발이 이루어지는 설계활동의 분업화로 지식과 기술의 탐색활동이 중요해지고 있다. 둘째, 지식의 가치가 높아짐에 따라서 지식을 통한 신시장의 창출과 기업간 관계를 통한 신산업, 신기술의 개발이 일어나고 있다. 동시에 기존의 설계활동보다 설계비용 절감과 설계기간이 단축되면서 시장과 기술의 진화에 더욱 효과적으로 대응할 수 있는 기업유형으로 전문적 분업화가 일어나고 있다. 셋째, 지식의 활용측면이 점차적으로 강조됨에 따라 기업간 네트워크는 다른 기업과의 상호보완적인 기술개발구조를 구축하기 위해 다양하게 형성되고 있다. 이러한 논의는 국내외 기업간 네트워크를 전략적으로 활용하고, 시장창출과 지식활용 등 탐색활동을 위한 제반 전략이 강구되어야 함을 시사한다.

산업별 혁신시스템과 R&D 지원서비스 : 엔유씨전자 사례를 중심으로 (Sectoral System of Innovation and R&D Support Service: Focused on the Case of NUC Electronics)

  • 본 논문에서는 기술혁신에 영향을 미치는 요인 중 산업별 혁신시스템과 R&D 지원서비스의 요인이 엔유씨전자의 사례에서 어떻게 작용하는지 살펴보았다. 엔유씨전자는 투입구 변경과 착즙률 개선의 기술혁신을 통해 높은 혁신성과를 달성하였다. 이는 산업별 혁신시스템의 각 구성요소가 엔유씨전자의 기술혁신과 부합하는 측면이 있었기 때문이다. 엔유씨전자의 성과향상은 자체적인 혁신노력과 함께 정부출연연구소의 R&D 지원서비스가 있었기 때문에 가능했다. 기술혁신 과정에서 제품설계와 가상실험 등 기업 스스로 해결할 수 없는 영역의 고차원적인 서비스를 받을 수 있었다. 중소기업에게 부족한 부분을 보완해주는 정부와 공공기관의 지원 역할이 중요했다고 할 수 있다. 산업별 혁신시스템의 각 구성요소별로 보면 새로운 기술기회가 많은 만큼 지속성이 낮다, 모방이 쉽고 전유성이 낮지만 복합적인 측면도 있다, 기술축적의 누적성은 비교적 높은 편이다, 외부지식의 활용 가능성이 높다, 주체와 네트워크 모두 중요한 역할을 하였다, 시장여건이 매우 유리하였다 등으로 요약될 수 있다. R&D 지원서비스의 측면에서는 직접적인 효과로서 스크류의 재질과 형상에 대한 가상실험을 통해 엄청난 시간과 비용의 절약이 이루어졌다는 점을 들 수 있다. 간접적인 효과로서는 외부지원에 의한 기술개발을 계기로 엔유씨전자의 자체적인 핵심역량이 크게 강화되었고 혁신의 선순환구조가 정착되었다는 점을 들 수 있다.

Structural Components Of The Digital Competence Of The Master Of Production Training Of The Agricultural Profile

  • With the rapid development and introduction of digital technologies, both everyday human life and technological processes of any production are changing, which stimulates the transformation of the economy and education. Digital technologies are not only a tool, but also a living environment of modern human, which opens up new opportunities: learning at any convenient time, continuing education, the ability to form individual educational learning trajectories and more. However, the digital environment requires teachers to take a modern approach to the organization of the educational process, the formation of new skills and abilities to work in the digital educational environment. As a result of the study, it was found that the system of vocational education should provide training for masters of industrial training who have a high level of digital competence. The purpose of the article is to single out, theoretically substantiate and determine the level of formation of structural components of digital competence of future masters of agricultural training. The structure of digital competence of agricultural master was analyzed on the basis of domestic and foreign scientists researches. Systematized research results indicate that digital competence consists of four components: motivational-value (combination of internal and external motives for the use of digital technologies in future professional activities), cognitive (a set of theoretical knowledge, skills and abilities of future master of industrial training to effectively build educational process with the use of digital technologies), activity-professional (expansion and deepening of knowledge, skills, necessary skills for effective implementation of digital technologies in the educational process) and evaluative-reflexive (ability to analyze and self-analyze own activities and its results taking into account professional characteristics, self-realization in professional activities through the use of digital technologies). These components are comparable with the indicators that describe the knowledge, skills and abilities needed by the future master of industrial training to organize the modern educational process. A questionnaire was conducted to determine the levels of this competence formation, which allows us to conclude that it is necessary to increase the level of formation of all components of digital competence of future masters of industrial training in agriculture. The results of the study can be used as a basis for the development of disciplines that form the special competencies of masters of industrial training in agriculture and programs of advanced training of teachers.

세계화의 문화 확산과 반세계화에 따른 기술혁신 성장연구 (Growth of Globalization Cultural Spread and Technological Innovation Study with Anti-Globalization)

  • 세계화는 경제적, 기술적, 문화적으로 급속한 변화를 가져왔다. 세계 각국이 소통하고, 세계화들을 잘 인식하고 이해하려면, 창의력이나 기획력이 코딩화되는 능력을 발휘할 수 있다. 본 논문에서는 세계 문제를 풀 수 있는 데이터 분석을 제시하고 방증하고자 한다. 글로벌 시장에서 상품이나 서비스의 가치가 연결성에 따라 높아진다. 이러한 연결성이 문화의 가치를 높여주는 요인 중 하나가 되고 있다. 이를 고려한 변화는 문화적 확산과 혁신성장을 촉진하고, 세계 각 지역에서의 생산성과 경쟁력을 증대시켰다. 본 논문에서는 세계화와 반세계화가 문화적 확산과 혁신성장에 미친 영향에 대해 미국 중상층의 소득을 비교해 다루고 있다. 세계화는 K-문화의 다양한 요소들이 상호 교류하고 확산될 수 있도록 환경을 조성했다. 인터넷, 소셜미디어, 국제여행 등을 통해 세계화는 한국의 혁신성장에도 긍정적인 영향을 끼쳤다. 경제 활동, 기술 혁신, 창조적인 산업 등의 분야에서 세계화는 새로운 기술과 접근법을 촉진하며, 이를 통해 기존의 경제 모델을 변화시키고 새로운 중상층 모델로 K-문화수출에 기여하였다. 그러나 문화 산업에서의 세계화는 지역적인 특성과 개성을 잃어버리는 결과를 초래해서 성장이 감소할 수 있으며, 이는 중상층의 문화적인 단일화와 소외(단절)를 가져와 도태될 수 있다. 미국 중상층소득에 대한 K-수출의 실증분석결과, 반세계화에도 문화적 확산과 혁신을 개발해야 한다. 이러한 산업변화로 한류의 소프트파워가치는 주요 수출국의 중상층에 대한 사용가치를 만들 수 있음을 방증한 연구이다.

Pedagogical Conditions for Formation of Design Competence of Qualified Workers with the Use of Information Technologies

  • Modern production requires production staff who have design competence, experience and skills to work in various types of work integrated into professional activities. Possession of digital design methods significantly expands the opportunities for professional activities of qualified workers. The purpose of our study was to study the impact of pedagogical conditions on the formation of design competence of future qualified workers in a group work. We have identified a set of pedagogical conditions that promote the development of professionally oriented artistic and technical creativity of workers in the conditions of curricular and extracurricular activities, which include motivational-target, procedural-semantic, organizational-technological, and subject-oriented. It is shown that the formation of design competence is determined by motivational, informational-active and reflection criteria, which are aimed at motivational-value, cognitive, operational-active, creative, social and emotional components of this competence. The methodology of the research is highlighted, which includes the use of the following methods: determination of the personality's motivational sphere in order to identify strong and weak motives of students activity; multiple intelligence to identify students talents in the direction of practical intelligence, which is important for design competence; determining the level of creative activity to identify manifestations of students creative abilities; identifying the type of students innovative thinking in order to develop motivation for success; factor-criterion model, developed on the basis of a qualimetric approach, which is used to identify the level of design competence formation in accordance with its components. The results of the study showed that the creation of separate pedagogical conditions in the institution of vocational education and training (VET) had a positive impact on the development of design competence, which shows the potential of artistic and technical design in the development of professional creativity of future qualified workers taking into account the environmental approach.
