초고온 살균유의 저장 중 겔 형성 거동 (Gelation Behavior of Ultra High Temperature Pasteurized Milk during Storage)

  • In order to examine physicochemical gelation behavior of ultra high temperature(UHT) pasteurized milk during storage at 4$^{\circ}C$ and 25$^{\circ}C$, pH, electrophoresis, alcohol test, sialic acid contents and free amino groups contents were biweekly determined. The pH of UHT pasteurized milk decreased with increasing storage time. Gelation of the UHT milk occured faster at 25$^{\circ}C$ than at 4$^{\circ}C$ with larger decreasing rate of pH. The alcohol test showed positive results at lower pH than 6.5, which could indicate the casein instability and beginning of gelation. The electrophoretic patterns showed a decrease in the concentrations of all caseins. Degradation of k-casein was faster in all cases, while $\alpha$-casein and $\beta$-casein were also extensively degraded later. The sialic acid contents of the samples increased gradually during storage, and the increasing rate was higher before gel formation. The free amino groups of the samples increased gradually during storage. The increasing rate of free amino groups was faster at 25$^{\circ}C$ than at 4$^{\circ}C$. The samples stored at 25$^{\circ}C$ gelled earlier than those stored at 25$^{\circ}C$, with corresponding increase of free amino groups. The residual proteolytic enzymes, which survived during the UHT heat treatments and were reactivated during storage, could be responsible for UHT pasteurized milk gelation during storage. It is assumed that proteolytic degradation of caseins followed by aggregation would be attributable to complicated reaction mechanism.

  • In HDD industry, many technologies have been developed and investigated as means to increase the areal density of drives. Especially, heat assisted magnetic recording (HAMR) system has been considered as the next generation storage device. Most of the HAMR systems use near field optics as heating mechanism. Therefore, light delivery system is indispensable. We considered the light delivery system with laser diode (LD) mount and optical fiber. Mass and stiffness of the HAMR system using these LD mount and optical fiber are changed. The mass and stiffness of the HAMR system affects the slider dynamic behavior. It is necessary to analyze touch down (TD) and take off (TO). And, we performed the TD-TO experiment with HAMR suspension. Finally, we analyzed the result of TD-TO experiments. And we suggested the design of HAMR suspension to improve TD-TO performance.

  • Within recent years attention has been focused on the method of hydrogen storage using metal hydride reactor due to its high energy density, durability, safety and low operating pressure. In this paper, a numerical study is carried out to investigate the coupled heat and mass transfer process for absorption in a cylindrical metal hydride hydrogen storage reactor using a newly developed model. The simulation results demonstrate the evolution of temperature, equilibrium pressure, H/M atomic ratio and velocity distribution as time goes by. Initially, hydrogen is absorbed earlier from near the wall which sets the cooling boundary condition owing to that absorption process is exothermic reaction. Temperature increases rapidly in entire region at the beginning stage due to the initial low temperature and enough metal surface for hydrogen absorption. As time goes by, temperature decreases slowly from the wall region due to the better heat removal. Equilibrium pressure distribution appears similarly with temperature distribution for reasons of the function of temperature. This work provides a detailed insight into the mechanism and corresponding physicochemical phenomena in the reactor during the hydrogen absorption process.

  • In the present paper, KLN crystals have been grown along <001>, <100> and <110> directions by the top seeded solution growth (TSSG) method from Li-richer melts with different compositions. The morphologies of KLN crystals grown along different directions have been studied, and the well-developed facets have been unambiguously indexed using X-ray goniometer and stereographic projection analysis. The growth mechanism and defects such as cracks and inclusions were discussed on the basis of observations of facets on the crystal-melt interfaces. The crystal compositions were determined by chemical analysis method. The structure and lattice constants of KLN crystals were determined and calculated on the basis of XRD data by using TREOR90 and PIRUM programs. The Curie temperature and optical absorption were determined by dielectric constant peak and spectrum measurements, respectively. The blue SHG characteristics of a KLN sample were also investigated using a pulsed dye laser. PACS: 42.70.M;81.10;81.10A;42.65.K.

  • 중간류 유출, 지표표화지역, 흙수분저류량들의 동적 반응을 Richards 방정식을 이용한 수치실험을 통하여 유도하였다. 그리고 수치실험에서 경사면 모양, 토양종류, 경계조건 등을 변화시켜서 지표포화지역-중간류유출 동적 관계 및 지표포화지역-흙수분저류량 동적 관계를 결정하였다. 모의결과에 의하면, 지표포화지역-중간류유출 동적 관계 및 지표포화지역-흙수분 저류량 동적 관계는 각 관계들의 정상류 관계에 의해 근사적으로 설명될 수 있다. 그리고 강우양상이 단순한 펄스입력일지라도 중간류유출 및 지표포화지역의 동적 반응은 중복첨두치에 의해 특징지어지며, 중복첨두치의 발생에 대한 물리적 메케니즘은 "variable source area"의 개념을 이용하여 설명하였다.용하여 설명하였다.

생수의 저장기간에 따른 이·취미 및 미생물학적 변화에 관한 연구 (A Study on Odor-Savor and Microbiological Changes of Mineral Water Depending on the Storage Period)

  • As people seek a healthy, wealthy, and quality life more than before, interests in mineral water are picking up and the consumption continues to increase accordingly. In an experiment to examine changes in the water quality after mineral water on the market was kept indoor and outdoor for four weeks, there seemed to be no problem in external appearance. Water kept in an outdoor storage contained more odor-savor than water kept in an indoor storage. Odor was not detected in 90% of the sample, and savor not in 80% of it. As for the mechanism of odor-savor generation, the elution of chemical substances from a container may be taken into consideration. In general, odor and savor have turned out to be in close correlation to each other. The average number of bacteria in the sample mineral water was $200{\pm}10CFU/mL$, and such factors as area of storage and ozone post-treatment did not cause significant effects on the reproduction of common microbes. Hence, it is thought that strict regulations on a production process and reduction of the period of circulation will contribute to customers consumption rates.

  • In this paper, a thermo-piezoelectric mechanism with integrated heaters and piezoelectric sensors has been studied for low power probe-based data storage. Silicon nitride cantilever integrated with silicon heater and piezoelectric sensor has been developed to improve the uniformity of cantilevers. Data bits of 40 nm in diameter were recorded on PMMA film. The sensitivity of the piezoelectric sensor was 0.615 fC/nm after poling the PZT layer. And, the $34\times34$ probe array integrated with CMOS circuits has been successfully developed by simple one-step bonding process. The process can simplify the process step and reduce tip wear using silicon nitride tip.

A Pattern Matching Extended Compression Algorithm for DNA Sequences

  • DNA sequencing provides fundamental data in genomics, bioinformatics, biology and many other research areas. With the emergent evolution in DNA sequencing technology, a massive amount of genomic data is produced every day, mainly DNA sequences, craving for more storage and bandwidth. Unfortunately, managing, analyzing and specifically storing these large amounts of data become a major scientific challenge for bioinformatics. Those large volumes of data also require a fast transmission, effective storage, superior functionality and provision of quick access to any record. Data storage costs have a considerable proportion of total cost in the formation and analysis of DNA sequences. In particular, there is a need of highly control of disk storage capacity of DNA sequences but the standard compression techniques unsuccessful to compress these sequences. Several specialized techniques were introduced for this purpose. Therefore, to overcome all these above challenges, lossless compression techniques have become necessary. In this paper, it is described a new DNA compression mechanism of pattern matching extended Compression algorithm that read the input sequence as segments and find the matching pattern and store it in a permanent or temporary table based on number of bases. The remaining unmatched sequence is been converted into the binary form and then it is been grouped into binary bits i.e. of seven bits and gain these bits are been converted into an ASCII form. Finally, the proposed algorithm dynamically calculates the compression ratio. Thus the results show that pattern matching extended Compression algorithm outperforms cutting-edge compressors and proves its efficiency in terms of compression ratio regardless of the file size of the data.

Study on meat metabolites analysis during the oxidation process

  • This study was conducted to investigate the mechanism of the oxidation process of meat. In the instrumental color, redness, yellowness, and chroma showed significant differences during storage period (P<0.05), whereas hue angle increased (P<0.05), but no significant difference in lightness(P>0.05). The results of TBARS increased significantly during storage period (P<0.05). The thiol and carbonyl contents increased significantly during storage period(P<0.05). Metabolites analysis showed that lactic acid, proline, phenylalanine, mannose, talose, lysine, and tyrosine were significantly different with the storage periods (P<0.05). All the samples used in the experiment were able to confirm that sample went through normal oxidation process with indicators and components were increased or decreased. Further research is needed to study the correlation between metabolite materials.
