Controlled electrodeposition of dendritic nano-structured gold-platinum (AuPt) alloy onto an electrochemically pretreated carbon paper substrate was conducted in an attempt to improve catalyst utilization and to secure an electronic percolation network toward formic acid (FA) fuel cell application. The AuPt catalysts were obtained by potentiostatic deposition. AuPt catalysts synthesized as bimetallic alloys with 60% Au content exhibited the highest catalytic activity towards formic acid electro-oxidation. The origin of this high activity and the role of Au were evaluated, in particular, by XPS analysis. Polarization and stability measurements with 1 mg $cm^{-2}$ AuPt catalyst (only 0.4 mg $cm^{-2}$ Pt) showed 52 mW $cm^{-2}$ and sustainable performance using 3M formic acid and dry air at $40^{\circ}C$.
Recently, as people pay attention to the environmental pollution, the emission of diesel engine has become a serious problem. Diesel Oxidation Catalysts(DOC) were experimentally investigated for the purification of pollutants exhaust emission from the diesel engine. In this study, the conversion efficiency of exhaust gas was investigated with various washcoat materials of the DOC. It was formed that CO conversion efficiency depended on temperature, but THC conversion was dominated by temperature and space velocity. Conversion efficiency of THC and CO increased with the addition of ZSM-5 in the washcoat, whereas these conversion efficiency decreased by adding Nd and Ba additives. $V_2O_5$ additive had the thermal stability for high temperature. Thermal durability of the catalyst was improved as increase of $V_2O_5$ additive.
This study was conducted to investigate the effects of herbs (dill weed, fennel seed and rosemary) on color stability and lipid oxidation of ground pork patties during storage at $2^{\circ}C$ and $-20^{\circ}C$. Lipid oxidation was determined by the thiobarbituric acid reactive substances (TBARS) method. Fennel seed was identified as being the most effective ingredient in terms of meat redness (Hunter a-values) during storage at $2^{\circ}C$ (p<0.05). Patties treated with rosemary had lower Hunter a-values than control, and dill weed was the least beneficial in influencing meat redness, having significantly lower a-values than control patties. During frozen storage at $-20^{\circ}C$, no significant differences in a-values were observed between the control patties and those treated with fennel seed. Patties treated with rosemary had lower a-values than control and patties with dill weed had negative a-values throughout storage. The cooking process increased Hunter L-values and decreased a-values in all patty samples. TBARS values increased during storage. Rosemary displayed excellent antioxidative activity as evidenced by the completely inhibition of TBARS formation of cooked pork patties. Dill weed and fennel seed also exerted an intermediate but significant antioxidant effect during storage (p<0.05).
Biodiesel was produced by "transesterification" of vegetable oils and animal fats as an alternative to petroleum diesel. The research analysed the fuel characteristics of biodiesel, the yield of by-products and biodiesel, using several vegetable oils - rapeseed oil, camellia oil, peanut oil, sesame oil, perilla oil, palm oil, olive oil, soybean oil, sunflower oil and animal fats such as lard, tallow, and chicken fat. The results showed the yields of biodiesel made from the vegetable oils and animal fats were $90.8{\pm}1.4{\sim}96.4{\pm}0.9%$ and $84.9{\pm}1.1{\sim}89.6{\pm}1.5%$ respectively. Production rates and oxidation characteristics were different depending on the fats applied.

PEC (photoelectrochemical) water splitting for $O_2/H_2$ production is one of the promising but difficult way to utilize solar energy. Among photocatalytic materials for PEC water oxidation, $BiVO_4$ (Eg = 2.4 eV) has been recently intensively studied since it has various advantageous properties. But its maximum efficiency has not been realized owing to kinetic factors - slow water oxidation at surface & insufficient stability. These problems can be simultaneously solved by application of oxygen evolution catalyst (OEC) such as $CoO_x$, Co-Pi, $IrO_x$ etc. Herein we report the first successful application of $NiFeO_x$ OEC on $BiVO_4$, showing good performance compared to other effective OEC applied on $BiVO_4$ under basic conditions. The enhanced activity of OEC loaded $BiVO_4$ has been supported by the surface charge separation efficiency and electrochemical impedance studies.
In the previous work(Kim et al, 1973), the quality of sun-dried Alaska pollack, Theragra chalch-ogramma, was discussed in the aspect of non-enzymatic discoloration as a function of relative humidity during storage at room temperature($20^{\circ}C$). In this paper, sun-dried squid, Ommastrephes steam pacificus was investigated at the same aspect mentioned above. Fresh squid from the whole sale market was dressed, filleted, dried for 48 hours in the open air and finally stored in the humidistat chamber. Lipid oxidation ana development of non-enzymatic browning were tested by the same methods described in the previous paper. The TBA value showed a maximum peak on 30 day storage, hereafter tended to decrease gradually. The rate of browning, however, in water soluble fraction as well as in chloroform-methanol fraction was lower at 0.34 to 0.45 water activity than at any other case, and propagation of lipid oxidation was also diminished at the above level of water activity. From the results, it is recognized that storage at Aw=0.34 to 0.45 provides higher quality stability for sun-dried squid.
This study was conducted to evaluating the antioxidative activities of waffle by natural antioxidants combination (tocopherol, rosemary extract and tea polyphenol) and packaging. Waffle stored at $25^{\circ}C$ and 35$^{\circ}C$ for 70 days were evaluated for acid value, peroxide value and Q$_{10}$ value. Tocopherol, either alone or with rosemary and tea polyphenol, was highly effective in inhibiting lipid oxidation of waffle at $25^{\circ}C$ and 35$^{\circ}C$. Especially among them, rosemary extract exhibited the best synergistic effect, as determined by peroxide value measurement. Waffle was then packaged under the following packing materials (OPP/DL/VMCPP, PET/DL/VMCCP). As the temperature condition, the modified atmosphere decrease in waffle package and increase peroxide value. This result indicated that the PET package was more effective in reducing oxidation than the OPP package.
Objective: This study evaluated the effect of acid whey and freeze-dried cranberries on the physicochemical characteristics, lipid oxidation and fatty acid composition of nitrite-free fermented sausage made from deer meat and pork fat. Antioxidant interactions between acid whey and cranberry compounds were also explored. Methods: Four formulations of fermented venison sausage were prepared: F1 (control), F2 (with 5% liquid acid whey), F3 (with 0.06% of freeze-dried cranberries), and F4 (with 5% liquid acid whey and 0.06% of freeze-dried cranberries). Each sample was analyzed for pH, water activity ($a_w$), heme iron content, 2-thiobarbituric acid reactive substances (TBARS) value and conjugated dienes at the end of the manufacturing process and at 30 and 90 days of refrigerated storage. Fatty acid composition was measured once at the end of the manufacturing process. Results: At the end of ripening, all samples presented statistically different values for a pH range of 4.47 to pH 4.59. The sum of the unsaturated fatty acids was higher, while the conjugated diene and the TBARS values were lower in sausages with freeze-dried cranberries as compared to the control sausage. The highest content of heme iron (21.52 mg/kg) at day 90 was found in the sausage formulation with the addition of freeze-dried cranberries, which suggests that the addition of cranberries stabilized the porphyrin ring of the heme molecule during storage and thereby reduced the release of iron. The use of liquid acid whey in combination with cranberries appears to not be justified in view of the oxidative stability of the obtained products. This study was performed to assess the antioxidant activity of Allium hookeri root extract (AHE) on lipid oxidation of raw sulfur-fed pork patties for 14 d of refrigerated storage. Different concentration of ethanol (0-100%) and time (1-12 h) were applied to determine the extraction condition. Water (0% ethanol) extraction for 1 h was selected as an optimal extraction condition of AHE for the following study showing the highest total phenolic content and total flavonoid content, as well as the strongest antioxidant activity. The 1% AHE (SP1), 3% AHE (SP2), and 0.05% ascorbic acid (SP3) were added into sulfur-fed pork patties against controls; SP0 (sulfur-fed pork patties with no AHE) and P0 (normal pork patties with no AHE). The pH values of P0 and SP0 significantly increased (p<0.05) than others on 14 d and redness of P0 showed the largest decrement during storage. P0 and SP0 showed higher production of conjugated dienes on d 7 than others (p<0.05). Thiobarbituric acid reactive substances (TBARS) values were decreased in proportion to the increased level of AHE on 14 d (p<0.05) resulting in higher TBARS values on P0 and SP0 (p<0.05) and the negative correlation between AHE level and TBARS were also demonstrated (r=-0.910, p=0.001). Therefore, the results suggest that AHE effectively retarded the lipid oxidation rate of sulfur-fed pork patties indicating the potential usage of AHE as a natural preservative.
Marine fish skin peptides (FSP) have been widely studied due to their antioxidant and antimicrobial properties. We aimed to use a natural antioxidant, FSP, to replacing synthetic preservatives in a pork patty model, which is safer for human body. Moreover, nano-liposome technology can be applied for masking the fishy smell and improving the stability of this peptide. Therefore, in this study, the effects of FSP and FSP-loaded liposomes (FSPL) on pork patty were evaluated through the tests of thiobarbituric acid reactive substances (TBARS), color, cooking loss, texture, volatile basic nitrogen (VBN), and the pH value, during 14 d of refrigerated ($4^{\circ}C$) storage. The results showed that all FSP-treated patties had lower TBARS values than control patties, which indicated an inhibitory effect of FSP on lipid oxidation. This effect in the patties depended on the FSP concentration. However, FSPL-treated patties showed significantly higher and undesirable TBARS values compared to the control, and this effect depended on the FSPL concentration. None of the physicochemical results showed remarkable changes except the pH and VBN values. Therefore, this study provides evidence that FSP has great potential to inhibit the lipid oxidation of pork patties and is capable of maintaining the quality and extending the shelf life. However, it is necessary to study the application of FSP treatments greater than 3% to improve the antioxidant effect on pork patties and search for other coating materials and technology to reduce the drawbacks of FSP.
