Analyzing Price Interactions between Wild Caught Fish and Farmed Fish on the Korean Seafood Market (자연산 어류와 양식산 어류 간의 가격 경합성 분석)

  • This study is aimed to estimate price interactions between wild caught fish and farmed fish on the Korean seafood market, using multivariate cointegration analysis. Major commercially important four wild caught fish (chub mackerel, hairtail, yellow croaker and spanish mackerel) and two farmed fish(oliver flounder and black rockfish) are selected as analytical target fish species. Between 2000 and 2013, monthly production and price data are used in this study. The results of cointegration test showed that there would be a long-term equilibrium relationship among 4 wild caught fish and 2 farmed fish. However, the results of exclusion test indicated that farmed fish might not contribute significantly to the long-run relationship, suggesting that farmed fish might be only a weak substitute for wild caught fish, but no significant interaction could be found.

Effect of Storage Conditions on Biogenic Amine Levels in Dark-Fleshed Fishes (적색어류의 biogenic amine 생성에 따른 저장온도의 영향)

  • Biogenic amines are naturally occurring anti-nutrition factors. They are causative agents in food poising episodes and act as catalysts to allergic reactions. The most commonly occurring biogenic amines in foods are: Histamine, tyramine, putrescine, cadaverine, tryptamine, ${\beta}$-phenylethylamine, spermine, spermidine and agmatine. The objective of this study was to identify changes and content levels of specific biogenic amines at selected storage temperatures $20{^{\circ}C}$, $4{^{\circ}C}$, and $-25{^{\circ}C}$, respectively. This study will focus on histamine, cadaverine, and putrescine concentrations in the following dark-fleshed fishes: Mackerel (Scomber japonicus), Horse Mackerel (Trachurus japonicus), Mackerel Pike (Cololabis saira), and Spanish Mackerel (Scomberomorus niphonius). Biogenic amines were determined using a method based on an extraction procedure described in the derivatisation and HPLC(High Performance Liquid Chromatography). The the recovery rate of individual amines was higher than those found in ion exchange chromatography. The results from the dark fleshed fish stability trial showed that high content of histamine (cadaverine and putrescine) were produced within a short period of time at $20{^{\circ}C}$. Fish stored at lower temperatures $4{^{\circ}C}$, showed lower content of biogenic amines. At $-25{^{\circ}C}$ the production of histamine, cadaverine and putrescine did not initiate until after day 100. All fish recorded the content of histamine below 1 mg/kg with the exception of the Horse Mackerel.

  • In this study, we evaluated the physicochemical and sensory quality of Glazed Spanish Mackerel in Teriyaki sauce containing added lemon juice and ginger juice using a Sous vide Cook-Chill method. The products were stored at below $3^{\circ}C$ and then its physicochemical and sensory quality was estimated after varous storage periods(0, 5, 10, 15 days). Measured extent of 40.91~52.04% in extent and reheating after of 42.35~54.40% when moisture content and did not significant by storage period in all sample are until save 15 days. The VBN was increased as the storage period increased. A similar trend was observed after reheating, and while lemon juice additions was significantly low on 15 days(p<0.01). Based on the results of the sensory evaluation, the Teriyaki sauces containing the added lemon juice additions were evaluated that had a better sensory quality is excellent in external appearance, flavor, taste, texture, and acceptability than the control group, and while were the evaluated excellently in overall flavor and taste in occasion of were found to be excellent after the addition of ginger juice.

Development of a Trawl Escapement Net using net material (망지를 이용한 트롤 탈출장치 개발)

  • Sea experiment for this study was carried out to develop a Trawl Escapement Net(TEN) using net material to improve the survival rate of undersized fishes that escaped from trawls in the Korean southern sea in May and November, 2005. Three kinds of Trawl Escapement Net(TEN) were examined to increase the escapement rate for fishes escaped from the TEN, and total catches in the codend and cover-net were investigated. The main catch species in the experimental fishing trials using a V shape TEN(A type) in May were Korean pomfret(Pampus echinogaster), slimy(Leiognathus nuchalis), gizzard shad(Konosirus punctatus), white croaker(Pennahia argentata) and smelt(Sillago sihama). In the experimental fishing trials using a V shape TEN with a protector for undersized fishes(B type) and a panel shape TEN with a protector(C type) in November, the main catch species were horse mackerel(Trachurus japonicus), sea pike (Sphyraena japonica), large-head hairtail(Trichiurus lepturus), kammal thryssa(Thryssa kammalensis), white croaker(Pennahia argentata), butterfish(Psenopsis anomala) and red gurnard(Lepidotrigla microptera). Most of large-sized fish species like Korean pomfret and Spanish mackerel could not escape through the TEN in the B type and C type. Catches of horse mackerel were highest in the experimental fishing of November and escapement rates for most fish species including horse mackerel were higher in the C type compared with B type.

  • The objectives of this study is to analyze the competitiveness of fisheries trade between Korea and China, and to estimate strategic seafood export products for Korea-China FTA in fisheries sector. The results of analyses indicate that Korea has comparative advantages in export items such as spanish mackerel, flatfish, cod, roe in frozen fish(0303), and squid, sea cucumber, oyster in molluscs(0307). In addition, tuna in prepared or preserved fish(1604), sea cucumber in crustacean, molluscs and other aquatic invertebrates(1605) have comparative advantage in exporting to China.

  • Secondary amines are known as one of the precursors of nitrosamines which are potent carcinogenic compounds for human being and animals. In this study, trimethylamine and dimethylamine contents of salted, hot-air dried and sun dried samples of two commercial fishes, mackerel pike and seerfish were analyzed and quantitatively compared at three different temperature conditions. The formation of both secondary amines was more rapid at$10^{\circ}C\;and\;15^{\circ}C\;than\;at\;2^{\circ}C$. Residual amounts of trimethylamine oxide of salted samples were relatively higher than those of the other samples. Trimethylamine contents of hot-air dried mackerel pike and sun dried seerfish were relatively higher than those in the other samples, while those of salted samples were comparatively lower than those of others. Dimethylamine contents of hot-air dried samples were higher than those of the other samples, whereas those of salted samples were comparatively lower than those of the other samples.

Mercury Contamination and Risk Evaluation in Commonly Consumed Fishes as Affected by Habitat (서식지에 따른 다소비 어류의 총수은 오염 및 위해 평가)

  • This study investigated the concentration of total mercury in 17 species of commonly consumed fishes and assessed the risk to human health from provisional tolerable weekly intakes PTWI% as affected by migratory characterization, such as migration and vagility. The measured mean concentrations of total mercury in these 17 species of commonly consumed fishes suggest that mean concentrations of total mercury in 10 species of migratory fishes (largehead hairtail, chub mackerel, Pacific saury, skipjack tuna, Pacific cod, anchovy, Alaska pollack, brown croaker, Japanese Spanish mackerel, yellow croaker and Pacific herring) were low compared to those in 7 species of demersal fishes (red stingray, brown sole, bastard halibut, conger eel, blackmouth angler, rockfish and filefish). Based on the mean concentrations, the PTWI% of total mercury among commonly consumed migratory fishes was 3.393%, which was higher than that of commonly consumed demersal fishes (2.710%).

  • This study determined the concentrations of lead and cadmium in 18 species of commonly consumed fish and assessed the risk based on provisional tolerable weekly (monthly) intakes [PTW(M)I] % as affected by behavioral characteristics, such as migration and settlement. In the 18 species, the mean concentrations of lead and cadmium were higher in the 11 species of migratory fish (llargehead hairtail Trichiurus lepturus, chub mackerel Scomber japonicus, Pacific saury Cololabis saira, skipjack tuna Katsuwonus pelamis, Pacific cod Gadus macrocephalus, anchovy Engraulis japonicus, Alaska pollack Theragra chalcogramm, brown croaker Miichthys miiuy, Japanese Spanish mackerel Scomberomorus niphonius, yellow croaker Larimichthys polyactis, and Pacific herring Clupea pallasii) than in the seven demersal species (red stingray Dasyatis akajei, brown sole Pleuronectes herzensteini, bastard halibut Paralichthys olivaceus, conger eel Conger myriaster, blackmouth angler Lophiomus setigerus, rockfish Sebastes schlegelii, and filefish Stephanolepis cirrhifer). Based on the mean concentrations, the PTWI % of lead and cadmium in commonly consumed migratory fish were 1.900 and 2.986%, respectively, which were higher than the values for lead and cadmium in the commonly consumed demersal fishes (0.257 and 0.318%, respectively). The estimation of weekly (monthly) intakes and target hazard quotients for the toxic elements lead and cadmium revealed that the commonly consumed migratory and demersal fish do not pose any health risks for consumers.

Oceanographic Condition and Fishing Condition of the Set Net Fishing Ground in Yeosu Bay (여수연해 정치망어장의 해황과 어황에 관한 연구)

  • The oceanographic condition around the set net fishing ground in Yeosu Bay was investigated by the oceanographic observation in June, July and August, 1988. Also the catch of the set net was analized by daly catch data of the three set net fishing ground from April to September, 1988. The results obtained are as follows: 1) The coastal surface water is high temperature and low salinity through the influence of land, and the off shore water and bottom water are low temperature and high salinity. 2) The eddy current and the sharp thermocline in June appeared in August at the set net fishing ground, and a good catch appeared in June and August. 3) The surface temperature and salinity at the set net fishing ground are 11$^{\circ}C$ to 27$^{\circ}C$ and 31.60$\textperthousand$ to 34.80$\textperthousand$. The surface temperature and salinity of a maximum good catch are 21$^{\circ}C$ and 33.80$\textperthousand$ to 33.99$\textperthousand$ respectively. 4) The dominant species of fish were spanish mackerel, scad, anchovy, sardine, common mackerel, hairtail, crab, yellow tail, in order of catch.

Shape, Volume Prediction Modeling and Identical Weights Cutting for Frozen Fishes (동결생선의 외형과 부피 예측 모델링 및 정중량 절단)

  • This paper suggests a modeling technique for shape and volume prediction of fishes to cut them with identical weights for group meals. The measurement and prediction of frozen fishes for group meals are very difficult because they have a bending deformation occurring at frozen stage and a hollow by eliminating the internals. Besides there exist twinkles problem of surface caused by freeze and variable weights by moisture conditions. Therefore a complex estimation algorithm is necessary to predict the shape and volume prediction of fishes exactly. Hollow prediction, pattern classification and modeling for tails using neural network, integration based volume prediction algorithm are suggested and combined to solve those problems. In order to validate the proposed method, the experiments of 3-dimensional measurement, volume prediction and fish cutting for spanish mackerel, saury, and mackerel are executed. The cutting experiments for real fish are executed.
