  • The aim of this study was to analyze an association between milk consumption and serum lipid profiles in postmenopausal women in Korea. The dietary data by the Food Frequency Questionnaire were evaluated among 208 postmenopausal women who did not receive hormone therapy and their serum concentrations of triglyceride (TG), total, HDL-, and LDL-cholesterol, and alkaline phosphatase were analyzed. When the relationship between milk consumption and serum lipid profiles were analysed by linear regression, we found a negative relationship of milk consumption with ALP and a positive relationship with HDL-cholesterol. Animal calcium intake was significantly correlated with ALP and HDL-cholesterol. In addition, the serum level of HDL-cholesterol of the upper quartile (UQ) subjects who took animal calcium over 313 mg/day was significantly higher than the lower quartile (LQ) subjects who consumed milk below 101 mg/day when we compared the UQ and LQ subjects. The HDL-cholesterol level of the UQ subjects who consumed 235 ml of milk tended to be higher than the that of the LQ who consumed 53 ml. As for serum concentrations of TG, total cholesterol, and LDL-cholesterol, there was no significant difference between the UQ and LQ groups of milk consumption. Based on our study, we concluded that continual consumption of approximately one cup of milk per day was associated with low cardiovascular risks with favorable lipid profiles and ALP in postmenopausal women. • The aim of this study was to examine the effect of polycan-calcium gluconate complex on the levels of immune and inflammatory mediators in gingival crevicular fluid and serum from patients with periodontitis. A total of 39 patients with periodontitis took placebo (placebo group) or polycan-calcium gluconate complex (treatment group) twice a day for 4 weeks. At baseline and 4 weeks, gingival crevicular fluid (GCF) and blood was collected from each subjects. The secretion level of interleukin $(IL)-1{\beta}$ in GCF was measured by enzyme-linked immunosorbent assay (ELISA). Western blot analysis was conducted to determine the expression of matrix metalloproteinase (MMP)-8 and tumor necrosis factor $(TNF)-{\alpha}$ in GCF. Serum samples were analysed for MMP-8 by ELISA and C-reactive protein (CRP) by turbidimetric immuno assay. MMP-8 and $TNF-{\alpha}$ were significantly decreased in the treatment group at 4 weeks. The level of $IL-1{\beta}$ in the treatment group was significantly lower than those of the placebo group. No differences were observed in CRP levels. Taken together, these data indicate that taking of polycan-calcium gluconate complex led to reduction of inflammatory biomarkers in serum and GCF of periodontitis patients.

  • This study was designed to investigate the effect of dietary calcium and phosphate levels on calcium and bone metabolism in rats. The rats were divided into six groups and each of the groups was fed diets with different Ca/P ratios. The experimental periods were 5 weeks . There was no significant different difference in dietary intake, body weight gain, and organ weight among the groups with different calcium and phosphate intake levels. Fecal calcium excretion was not significantly different among the groups, but urinary calcium excretion was increased by the increase in Ca/P ratio. Fecal phosphate excretion was not different but urinary phosphate excretion was increased by the increase in dietary phosphate intake. There was no significant difference in serum alkaline phophatase activity and urinary hydroxyproline levels were not significantly different among the groups. The low calcium-high phosphate(0.25Ca-1.2% P) group showed the lowest total calcium content in femur and scapula. This may be due to it having the lowest Ca/P ratio among groups. The low calcium-high phosphate(0.2%Ca-1.2%P) group showed that mandible is almost lost and osteolyzed Harversian canal was expanded in femur. Results suggest that phosphate intake affects calcium and bone metabolism more with inadequate calcium nutrition that with adequate calcium intake. Thus , for normal bone growth and metabolism , adequate calcium intake and/or high Ca/P ratio are important.

  • In other to investigate the hypolipidemic effect of dry edible leaves on serum lipids, four kinds of powdered leaves(persimmom, mulberry, perilla, and soy bean) were added to experimental diets at the levels of 5%(w/w). The diets were fed to 30 male Sprague-Dawley rats, aged 4 weeks and weighing 60$\pm$5g, for 3 weeks. Food intake was the largest in Group 1(control), with 5% of cellulose powder, while food efficiency was the highest in Group 2(persimmon). Total cholesterol level in serum was lower in Group 5(soybean) and Group 4(perilla) than the other groups. In comparison with Group 1, HDL-cholesterol level was very high in Group 4 and atherogenic index was low in Groups 4 and 5. Free cholesterol level was the highest in Group 2, and was the lowest in Group 1. Both LDL and LDL-cholesterol levels were the lowest in Group 1, while they were very high in Groups 2 and 3(mulberry). Triglyceride level was the lowest in Group 4, and the highest in Group 1. Except Group 3, all groups had lower phospholipid level than Group 1. Compared with Group 1, calcium level in serum was low in Groups 3, 4 and 5, magenesium level was low in Groups 2, 3 and 5, phosphate level was high in Group 4, and iron level was exceptionally low in Groups 4 and 5. In conclusion, Group 4(perilla) and Group 5 (soybean) showed a favorable effect in atherogenic index and serum levels of various lipids.

  • This study investigated the interactions of bone health with several variables such as outdoor activity hours, nutritional status including habitual intake of calcium andvitamin D status in 72 high school girls aged 16-17 yearsattending day classes or night classes. The subjects consisted of 39 day-class students and 33 night-class students. Dietaty nutrient intakes were estimated using the 24-hour recall method. The daily activities of each subject were assessed using an activity questionnaire. Urinary calcium and creatinine excretion were assayed from subjects' 24-hoururine, while 25-OH-vitamin D[25-(OH)-D] and osteocalcin were measured from the subjects' fasting blood. Intake of energy, iron, vitamin A and vitamin C were worse in the night-class students. There was no significant difference in dietary calcium between the subjects in the different class types. Time spent on outdoor activities was significantly less in subjects attending night classes. Urinary calcium excretion of the night-class subjects was significantly higher than that of the day-class subjects (p<0.05). There was no significant difference in serum 25-(OH)-D level according to class type. Serum osteocalcin for night-class subjects was significantly higher than that for day-class subjects (p<0.01). It appeared that the night-class students had poorer dietary habits as well as fewer outdoor activities. Even though the estimated bone health of both groups of subjects appeared to be normal, the overall nutritional intake and duration of outdoor activities appeared to be important for maintaining bone health and lowering the future risk of osteoporosis.

  • Calcium is the most abundant stored mineral in the human body and is especially vital for bone health; thus, calcium deficiency can cause bone-related diseases, such as osteopenia and osteoporosis. However, a high concentration of serum calcium, which is commonly known as hypercalcemia, can also lead to weakened bones and, in severe cases, osteosarcoma. Therefore, it is necessary to maintain the concentration of calcium that is appropriate for bone biology. In the present study, we aimed to elucidate the effects of high concentration of calcium, approximately 2 folds the normal calcium level, on osteoblast differentiation. The CaCl2 treatment showed dose-dependent suppression of the alkaline phosphatase activity and mineralized nodule formation. Calcium showed cytotoxicity at an extremely high concentration, but a moderately high concentration of calcium that results in inhibitory effects to osteoblast differentiation showed no signs of cytotoxicity. We also confirmed that the CaCl2 treatment repressed the mRNA expression and protein abundance of various osteogenic genes and transcriptional factors. Considered together, these results indicate that a high concentration of calcium negatively regulates the osteoblast differentiation of C2C12 cells.

  • The purpose of this study was to investigate the distribution patterns of serum triglyceride and cholesterol levels and the influence of environmental and dietary factors in 201 healthy male subjects. The subjects were found to be 53.7% for the normal, 15.4% for the TC, 17.4% for TG and 13.5% for TC.TG group, respectively. Among general characteristics, smoking significantly affected serum lipid levels of subjects (p < 0.05). Among anthropometric factors, body weight, BMI and PIBW significantly influenced the blood lipid patterns. Body weight of TG group was significantly higher than that of normal group (p < 0.05). BMI and PIBW of TG group and TC.TG group were significantly higher than those of normal group (p < 0.05) . In addition, diastolic blood pressure of TG group was significantly higher than that of normal group (p < 0.05). For the food intake, average intake of fruit was significantly higher in normal group than that of TG group (p < 0.05). For nutrient intake, calcium intake was significantly higher in TC group than those of normal and TC.TG group (p <0.05). Intakes of vitamin $B_2$ and C were significantly higher in TC group than those of in TG group (p < 0.05). Serum HDL-cholesterol level was negatively related to meat, poultry, and their products (p <0.05), but serum total cholesterol level positively related to animal lipids (p < 0.05). The results of this study suggest that it is crucial for maintaining adequate serum lipid levels to reduce smoking, blood pressure and to lose body weight. As far as food intake concerned, fruit intake was important in maintaining serum triglyceride level normal, while animal food intake affected serum total cholesterol level adversely. • Selenium is a strong antioxidant trace mineral, scavenging free radicals. The prevalence of chronic degenerative diseases is increasing in Korean adults with increasing age. The increased cell damage from free radicals has been implicated in the etiology of these diseases, and evidence is accumulating that the low selenium status that comes with advanced aged is involved in the prevalence of age-associated diseases. However, little is known about the selenium status of Koreans, its age-related change and its relationship to dietary nutrient intake. In this study, the serum selenium levels of healthy adult females according to life cycle and its association with blood albumin levels and nutrient intake were examined. Serum selenium level was measured with the Huwo research reactor using the neutron activation analysis method (NAA). The overall proportion of women with selenium deficiency, serum selenium concentrations below 7.0 $\mu\textrm{g}$/dl, was 9.4%. The average serum selenium levels were 12.39 $\mu\textrm{g}$/dl, 9.45 $\mu\textrm{g}$/dl and 9.16 $\mu\textrm{g}$/dl in the young adult, middle-aged and elderly groups, respectively, showing a reduction of selenium status with advancing age. Selenium deficiency was seen only in the elderly group. Generally, serum selenium levels positively or negatively correlated with nutrient intake, but these association patterns differed depending on the age. The nutrients that showed positive correlations with selenium levels were proteins and phosphate in the young adult group (p < 0.05, p < 0.05), and total calcium, potassium and vegetable-origin calcium in the middle-aged group. Vitamin C and fiber were the negative correlated nutrients with serum selenium levels in the elderly group (p < 0.05, p < 0.05). Multiple stepwise regression analysis of the determining factors responsible for selenium status showed that age and serum albumin levels were important factors which explained up to 26.9% variances in serum selenium levels. The average selenium concentrations of Korean adult female subjects were above the deficiency levels in all three age groups. There was a tendency toward decreasing selenium levels as the age of the subjects increased. The factors with the strongest in-fluence on selenium status in healthy adult Korean females were age and serum protein status. (Korean J Nutrition 36(5): 491~499, 2003)
