Quality Characteristics of Cookies Added with Lentinus edodes Water Extract (표고버섯 물 추출물을 첨가한 쿠키의 품질 특성)

  • This study evaluated the characteristics and antioxidant properties of cookies prepared with different amounts (0%, 1%, 3%, 5%, and 7%) of Lentinus edodes water extract (LEWE). The baking loss rate of cookies increased as the amount of LEWE increased (p<0.05). The pH of cookies significantly decreased when amounts of LEWE increased (p<0.05), but spread factor, leavening rate, and moisture content showed no significant difference among the samples. L value and b value of cookies significantly decreased when amounts of LEWE increased (p<0.05), but a value of cookies significantly increased when amounts of LEWE increased (p<0.05). Hardness was higher in the 7% LEWE cookies. Chewiness and brittleness increased with increasing LEWE concentration, but cohesiveness and springiness showed no significant differences among the samples. Total polyphenol content and DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging activity significantly increased upon the addition of LEWE (p<0.05). In a sensory evaluation, the appearance, color, and taste of the cookies were rated higher in groups containing 0% LEWE, but the flavor, texture, and overall acceptability scores were highest for cookies with 1% LEWE added. These results suggest that cookies prepared by adding 1-3% LEWE achieve the best sensory evaluation and antioxidant activity.

Influence of Clinical Nurses' Personality and Resilience on Happiness Index (임상간호사의 인성, 회복탄력성이 행복지수에 미치는 영향)

  • This study was conducted to identify correlations in clinical nurses' personality, resilience and happiness index to provide basic resources for nurses' happiness at work. Methods: From May 1 to 15, 2019, self-report questionnaires were distributed and collected from 307 of clinical nurses in 10 hospitals located in P-metropolitan city and K-province. Analyses included descriptive statistics, t-test, Analysis of Variance, Pearson's correlation coefficient, and multiple regression, conducted using IBM SPSS/WIN 24.0. Mean scores were nurses' personality 3.67, resilience 3.28, and happiness index 3.28. There were significant differences on the happiness index for: clinical experience, type of work, and leisure activities and a positive correlation between personality and resilience, between personality and happiness index and between happiness index and resilience. Happiness index was influenced by clinical experience 'Less than 1-5' (${\beta}=-.41$), '${\geq}10$' ${\beta}=-.39$), 'Less than 5-10' (${\beta}=-.34$), resilience (${\beta}=.35$), personality (${\beta}=.29$), type of work '3 shifts' (${\beta}=.12$), leisure activities (${\beta}=.10$). Explanatory power of these variables was 41%. Conclusion: Based on the findings of this study, so it is necessary to operated the career management, work management, personality training, support for resilience promotion program and leisure activities in order to increase the happiness index of hospital nurses.

Effects of virtual reality training on upper extremity function and activities of daily living in patients with sub-acute stroke (가상현실 훈련이 아급성 뇌졸중 환자의 상지기능과 일상생활활동에 미치는 효과)

  • The aim of this study was to investigate the effects of virtual reality training on upper extremity function and activities of daily living in patients with sub-acute stroke. The present study enrolled 18 patients with sub-acute stroke. All subjects were assigned into either the experimental group (n=9) or control group (n=9). Both groups received conventional occupational therapy for 30 minutes/day, 5 times a week, for 4 weeks. Additionally, the experimental group performed virtual reality training in each session for 30 minutes/day, and the control group conducted conventional occupational therapy in each session for 30 minutes/day. The outcome measures were performed through the Fugl-Meyer Assessment (FMA) and the Korean-modified Barthel Index (K-MBI) before and after intervention. In results, the experimental group showed significant improvements in the scores of FMA and K-MBI after intervention (p<.05). The control group showed significant improvements in the shoulder/elbow/forearm, wrist, and hand sub-domains of the FMA and K-MBI (p<.05). After intervention, the experimental group showed significantly greater improvements in the total score and in the wrist and hand sub-domains of the FMA than control group (p<.05). These findings suggest that virtual reality training may have positive effects on the improvements of upper extremity function in patients with sub-acute stroke.

The Role of Double Inversion Recovery Imaging in Acute Ischemic Stroke

  • Purpose: The purpose of this study was to investigate if double inversion recovery (DIR) imaging can have a role in the evaluation of brain ischemia, compared with diffusion-weighted imaging (DWI) and fluid-attenuated inversion recovery (FLAIR) imaging. Materials and Methods: Sixty-seven patients within 48 hours of onset, underwent MRI scans with FLAIR, DWI with b-value of 0 (B0) and $1000s/mm^2$, and DIR sequences. Patients were categorized into four groups: within three hours, three to six hours, six to 24 hours, and 24 to 48 hours after onset. Lesion-to-normal ratio (LNR) value was calculated and compared among all sequences within each group, by the Friedman test and conducted among all groups, for each sequence by the Kruskal-Wallis test. In qualitative assessment, signal intensity changes of DIR, B0, and FLAIR based on similarity with DWI and image quality of each sequence, were graded on a 3-point scale, respectively. Scores for detectability of lesions were compared by the McNemar's test. Results: LNR values from DWI were higher than DIR, but not statistically significant in all groups (P > 0.05). LNR values of DIR were significantly higher than FLAIR within 24 hours of onset (P < 0.05). LNR values were significantly different between, before, and after six hours onset time for DIR (P = 0.016), B0 (P = 0.008), and FLAIR (P = 0.018) but not for DWI (P = 0.051). Qualitative analysis demonstrated that detectability of DIR was higher, compared to that of FLAIR within 4.5 hours and six hours of onset (P < 0.05). Also, the DWI quality score was lower than that of DIR, particularly relative to infratentorial lesions. Conclusion: DIR provides higher detectability of hyperacute brain ischemia than B0 and FLAIR, and does not suffer from susceptibility artifact, unlike DWI. So, DIR can be used to replace evaluation of the FLAIR-DWI mismatch.

Utilization of Work-Family Balance Support Policy and Factors Associated with Retention Intention among Married Female Officers with Preschool Children (미취학 자녀를 둔 기혼 여군 장교의 일·가정 양립 지원제도 활용 정도와 재직의도 영향요인)

  • Purpose: This study aimed to identify utilization of the work-family support policy (WFSP) and factors affecting retention intention among Korean female military officers. Methods: This cross-sectional survey recruited 103 married female officers from the Korean Army, Navy, and Air force with preschool-aged children through convenience and snowball sampling. Via online surveys from June to November, 2018, the participants self-reported retention intention, work-family conflict, job satisfaction, and utilization of the WFSP. The data were analyzed using descriptive statistics, independent t-tests, one-way analysis of variance, Pearson's correlation coefficient, and multiple linear regression. Results: Retention intention ($22.29{\pm}5.98$) was reported at the mid-level, lower than scores reported in the literature for female workers. Work-family conflict ($32.51{\pm}5.29$) and job satisfaction ($63.10{\pm}7.45$) were above the midpoint levels. Use of maternity leave (100.0%) and parental leave (92.2%) was high, especially compared to the rates of child-care day off (20.4%) and parenting time (20.4%). 'Noticeable increases in childcare services within the army' (22.8%) was reported as the supportive measure needed the most by female military officers. Job satisfaction (${\beta}=.43$, $p{\leq}.001$), the use of parenting time (${\beta}=-0.29$, p=.002), living type (${\beta}=-.18$, p=.043), and service type (${\beta}=-.16$, p=.035) significantly influenced retention intention. Conclusions: The findings highlight the priority areas of importance within the WFSP and suggest that a family-friendly culture can improve female officers' retention intention. Accordingly, policy changes at the Ministry of National Defense improving the system to enhance a family-friendly culture in the military is expected to strengthen the retention intention of female officers and contribute to excellence in the military workforce.

Influences of the Global Deterioration Scale according to Routine Blood Chemistry Results (통상적 혈액화학 결과에서 전반적 퇴화 척도의 영향성)

  • Neurocognitive testing commonly uses the MMSE (Mini-Mental State Examination) to evaluate the overall cognitive function of patients at outpatient clinics, but the MMSE has recently been extensively used in the SNSB II (Seoul Neuropsychological Screening Battery II) for making diagnoses. We retrospectively investigated the results of routine neurocognitive tests and the results of the blood tests of 120 elderly patients who had been referred to a South Central Medical Center from 2017 to 2018 and who had been examined at a public health center. These subjects' space-time capability was high on the sub-region of the global deterioration scale (GDS). GDS showed a significant increase as the Na decreased on the electrolyte analysis. The subjects' concentration, their language-based orientation for space and time, their memory, and their scores for the frontal lobe function on GDS showed statistically significant reductions (P<0.001) For the normal and abnormal groups according to the ALT and creatinine levels, the frontal/execute function areas showed statistically significant differences (P<0.001) as well as negative correlation between GDS and ALT (P<0.01). In conclusion, this study provides basic information to develop test items that are important for patient screening and diagnosis, and several routine blood chemistry factors provide basic information for diagnosing and assessing the status and progress of cognitively impaired patients.

qEEG Measures of Attentional and Memory Network Functions in Medical Students: Novel Targets for Pharmacopuncture to Improve Cognition and Academic Performance

  • Objectives: Attentional and memory functions are important aspects of neural plasticity that, theoretically, should be amenable to pharmacopuncture treatments. A previous study from our laboratory suggested that quantitative electroencephalographic (qEEG) measurements of theta/beta ratio (TBR), an index of attentional control, may be indicative of academic performance in a first-semester medical school course. The present study expands our prior report by extracting and analyzing data on frontal theta and beta asymmetries. We test the hypothesis that the amount of frontal theta and beta asymmetries (fTA, fBA), are correlated with TBR and academic performance, thereby providing novel targets for pharmacopuncture treatments to improve cognitive performance. Methods: Ten healthy male volunteers were subjected to 5-10 min of qEEG measurements under eyes-closed conditions. The qEEG measurements were performed 3 days before each of first two block examinations in anatomy-physiology, separated by five weeks. Amplitudes of the theta and beta waveforms, expressed in ${\mu}V$, were used to compute TBR, fTA and fBA. Significance of changes in theta and beta EEG wave amplitude was assessed by ANOVA with post-hoc t-testing. Correlations between TBR, fTA, fBA and the raw examination scores were evaluated by Pearson's product-moment coefficients and linear regression analysis. Results: fTA and fBA were found to be negatively correlated with TBR (P<0.03, P<0.05, respectively) and were positively correlated with the second examination score (P<0.03, P=0.1, respectively). Conclusion: Smaller fTA and fBA were associated with lower academic performance in the second of two first-semester medical school anatomy-physiology block examination. Future studies should determine whether these qEEG metrics are useful for monitoring changes associated with the brain's cognitive adaptations to academic challenges, for predicting academic performance and for targeting phamacopuncture treatments to improve cognitive performance.

Convergence Study on the Influence of Personality and Stress on College Life Adaptation in Nursing College Students (간호대학생의 인성 및 스트레스가 대학생활 적응에 미치는 영향에 관한 융합연구)

  • The purpose of this study is to understand the relationship between personality, stress and college adjustment of nursing college students and to identify the factors influencing college adjustment. The data collected from December 14, 2017 to December 19, 2017, and the questionnaire from 193 nursing students in D City. The data were analyzed by t-test, one-way ANOVA and Scheffe's test, Pearson's correlation and multiple regression analysis. The mean scores of major satisfaction, was $6.32{\pm}2.03$, personality was $3.76{\pm}.43$, stress was $1.57{\pm}.37$, and college adjustment was $3.30{\pm}.65$. There were positive correlations between college adjustment and major satisfaction(r = .41, p <.001), as well as between personality (r = .60, p <.001). The significant factors influencing the college adjustment were number of consultation, major satisfaction and personality, which explained 49% of the variance in the college adjustment. Based on these findings, programs that develop personality are necessary for college nursing students in order to promote college adjustment.

Two-Year Follow Up Study of Change in Satisfaction Level and Mental Health among North Korean Defectors (북한이탈주민의 삶의 만족도와 정신 건강 실태 변화에 대한 2년간 추적 연구)

  • Objective : The purpose of this study was to investigate changes in the satisfaction levels and mental health among North Korean defectors over two years. Methods : At the beginning of the study, the subjects were comprised of 300 North Korean defectors registered with a regional adaptation center (the Hana Center) in South Korea. Participants reported self-questionnaires including socio-demographic variables and self-rating scales for satisfaction levels, depression symptoms, trauma-related symptoms, resilience and alcohol use behavior. In the follow up study after two years, 189 North Korean defectors participated in an online survey, responding to the same questionnaires as at baseline. Results : The self-rated scores for satisfaction with one's overall life (p=0.008), sense of autonomy (p=0.001), sense of physical health (p<0.001), and expected life satisfaction five years later (p<0.001) had all decreased significantly at follow-up after two years. Depression symptoms (p<0.01) and trauma-related symptoms (p<0.001) increased significantly over two years, and the resilience score (p<0.01) decreased significantly during the same period. No significant differences in alcohol use behavior (p=0.059) were observed at follow-up. Conclusion : Satisfaction levels among North Korean defectors gradually decreased over the follow-up period, and this may be due to the difficulties encountered in the process of assimilating to daily life in South Korea. Economic, medical, and psychological support is needed for successful assimilation of North Korean defectors.

Serum 25-hydroxyvitamin D and cognitive function in Korean older adults living in rural area (농촌 지역에 거주하는 한국 노인의 혈청 비타민 D 농도와 인지기능과의 상관성)

  • Purpose: This study examined the association between the serum 25-hydroxyvitamin D concentration and the cognitive functions in Korean elderly. Methods: The subjects were 393 adults aged 60 years or older who participated in the Yangpyeong cohort between July 2009 and August 2010. The subjects were classified into deficiency, insufficiency, or adequacy groups according to the serum 25-hydroxyvitamin D concentration diagnostic criteria suggested by the US Institute of Medicine (IOM). The cognitive function was assessed based on the Korean version of the Mini-Mental State Examination (MMSE-KC). The dietary intake was assessed using the quantitative food frequency questionnaire with 106 food items. Results: The proportions of deficiency, insufficiency, or adequacy in serum 25-hydroxyvitamin D were 6.6%, 44.5%, and 48.9%, respectively. The serum 25-hydroxyvitamin D concentration was significantly higher in men than in women and in outdoor workers than in other occupations. The adequacy group had higher MMSE-KC scores than the other two groups, but not to a significant degree. The proportion of cognitive impairment tended to decrease with increasing serum vitamin D concentration to deficiency, insufficiency, and adequacy (p for trend = 0.029). The deficiency group had a 2.28 times higher risk of cognitive impairment than the adequacy group, but the difference was not statistically significant (OR, 2.28; 95% CI, 0.18 ~ 1.07, p for trend = 0.119). Conclusion: The serum vitamin D concentration tended to be associated with the cognitive function in elderly Koreans living in rural areas. To confirm the associations, further longitudinal studies with large samples were required.
