Bacterial Quality of Fish Meat Paste Products and Isolation of Thermoduric Bacteria (어육연제품의 세균학적 품질 및 내열성세균의 특성에 관한 연구)

  • This study has been carried out in order to investigate the bacterial quality of fish meat paste products and the characteristics of isolated thermodurics from the products. Twenty samples of crab-flavored fish stick (Kematsal), 23 samples of plate fish meat paste (Panomuk, Kamaboko), 5 samples of fried fish meat paste (Tigimomuk), 2 samples of roasted fish meat paste (Puduromuk, Chikuwa), 20 samples of fish sausage were collected from processing plants and supermarkets in Pusan, Korea during the period from May to October in 1984. The results obtained are as follows. Amont the samples collected from supermarkets, roasted fish meat paste and fried fish meat paste marked hish counts in coliforms and fungi while very low in the samples of crab-flavored fish stick and plate fish meat paste. Salmonella was not detected in all the samples examined and Staphylococcus aureus was detected only in fried fish meat paste, Thermoduric bacteria were detected less than 10$^2$/g in the samples of crab-flavored fish stick and plate fish meat paste, which might come from subsidiary materials such as starch and seasonings. Among the isolated bacteria, distribution of the proteolytics were more than 87% and the lipolytics were less than 20%. Gram positive bacteria was more than 70% in crab-flavored fish stick and plate fish meat paste, 47.3% in fried fish meat paste. And rod in shape was almost more than 90% in all the samples. The most heat resistant bacterium isolated from the samples was identified as a Bacillus licheniformis(named B. licheniformis CR-11). The strain showed strong proteolytic activity and also grew well at above 2$0^{\circ}C$. The growth rate and generation time of CR-11 strain were 0.31 hr$^{-1}$ , 2.24 hr at 2$0^{\circ}C$, 0.64 hr$^{-1}$ , 1.09 hr at 3$0^{\circ}C$ and 0.78 hr$^{-1}$ , 0.89 hr at 35$^{\circ}C$. Heat resistance value of the spores of CR-11 strain suspended in phosphate buffer solution was D$_{85}$ $^{\circ}C$=41.9 min, D$_{90}$ $^{\circ}C$=27.9 min, D$_{95}$ $^{\circ}C$=10.2 min, D$_{100}$ $^{\circ}C$=4.3 min (Z=13.8$^{\circ}C$)

Effect of Oil Extraction Methods on Sterol Composition of Sesame Oil (채유방법(採油方法)이 참기름의 Sterol조성(組成)에 미치는 영향(影響))

  • In order to examine the effect of oil extraction methods on the characteristics of sesame oil, the unsaponifiable matters, fractionation sterol pattern and sterol compositions of the each fraction of the oil were compared in the oil extracted by the three different extraction methods, that is, pressure extraction of roasted seed (RTP), acetone extraction of roasted seed(RTE) and acetone extraction of raw seed(RWE). The amount of unsaponifiable in RWE oil was silghly higher as 31.8mg per 1mg drying oil than that in RTP oil of 26.1mg. Sesame oils from three different extraction methods were found to contain $0.26{\sim}0.32%$ free, $0.23{\sim}0.42%$ bound, and $0.49{\sim}0.64%$ total sterol. The content of free sterol in RWE oil was higher as 0.32% than that in RTE and RTP oil of 0.26%, and that of sterylglycoside in RTE oil was lower as 0.12% than that in RTP and RWE oil of 0.23%, but that of sterylester was a little difference. The unsaponifiable matter from fractionation sterol in sesame oil by three different extraction methods was fractionated into less polor compounds, 4,4-dimethyl-, 4-monomethyl-, 4-desmethylsterol fraction by thinlayer chromatography, and sterol composition of 4-desmethylsterol fraction was analyzed by gas liquid chromatography. The major sterols were campe-, stigma-, sito-, and ${\Delta}^5-avenasterol$, but, specially, unknown sterol(RRT:1.35) was found as $23.5{\sim}26.4%$ in total sterols, The content of sitosterol, ${\Delta}^5-avenasterol$, campesterol and stigmasterol were $59.9{\sim}60.3%,\;8.1{\sim}11%,\;16.1{\sim}18.4%,\;11.6{\sim}12.8%$ of the total sterol in free sterol fraction, $37.3{\sim}46.9,\;11.6{\sim}14.2,\;6.6{\sim}9.0$, and $6.1{\sim}8.0%$ of the total sterol in sterylglycoside fraction, $55.9{\sim}59.9,\;9.2{\sim}11.4,\;17.1{\sim}18.9$, and $11.8{\sim}13.7%$ of the total sterol in sterylester fraction, and $39.3{\sim}42.9,\;13.0{\sim}17.2,\;9.1{\sim}11.0$ and $7.4{\sim}11.5%$ of the total sterol in total sterol fraction. But the effect of oil extraction methods on sterol composition in sesame oil were hardly found.

A Study on the Children's Eating Habits and Food Preference according to Their Parents' Economic Status (I) - Seoul & Gyeonggi (Incheon) Area - (부모의 경제수준에 따른 자녀의 식습관과 식품기호도에 관한 연구 (I) -서울.경기 (인천)지역을 중심으로-)

  • This research was carried out a to investigate the food habit and preference of parents' social and economic level with 681 children (145 of Kindergarten, 300 of Children, 236 of Adolescences) in Seoul and Gyeonggi area using question naires. The parents' income level divided into 2 groups, less than 4 million won and equal or greater than 4 million won. Most of the middle years were over-weighing but kindergarten and adolescences had standard weights. The majority of parents had Bachelor degrees, most of father were office workers, majority of mothers of kindergarten with parents' income level less than 4 million won were professional women and mothers of the rest of the groups were mostly house wives. The middle years with parents income level less than 4 million son were skipping meals most frequently, but other groups didn't show much differences in their eating habits. All age groups showed that they like meats the most and dislike vegetables the worst. All age groups also showed that they mostly eat out 1-2 times a week and the next was 3-4 times a week. All age groups preferred ice creams, fruits, juices and snacks for their desserts. The middle years with parents' income equal or greater than 4 million won also showed high preference on strawberry and chocolate flavored milk, burgers and pizzas. The food s that preferred to eat when dining out were Chinese foods (Ja-jang-myeon and sweet and sour pork) for kindergarten group, Korean foods (kalbi and bulgogi) for the middle years with parents' income level less than 4 million won, family restaurant food (steak and rib) for the middle years with parents' income level equal or greater than 4 million won and Korean foods (kalbi and bulgogi) for the adolescences. The preferred cooking methods were roast (fish and sea weeds) for the kindergarten, roasted meat for the middle years, Kimchi and bean paste pot stew for the adolescences with parents' income level less than 4 million won and roasted meats for the adolescences with parents' income level equal or greater than 4 million won. The results showed that the adolescences with higher parental income lever preferred meats.

The Influence of Auxiliary Goods and Tooth Brushing for the Reduction of Oral Malodor (잇솔질과 구취감소보조용품제가 구취감소효과에 미치는 영향)

  • This study was carried out to see the effect of dental auxiliary product groups being used in case of not being able to brush teeth. This study was executed for 70 students in the Dept. of Dental Hygiene of S Health College, and it was divided into the group which used brushing teeth, the one which used only dental auxiliary products, the one which did onion juice gargle, etc, and measured the effect on the reduction of oral malodor. The experimental results of the study were as below. 1) After onion juice gargle, in the experimental group A which brushed teeth, it showed lasting decrease of oral malodor until 20min since the experiment, and after 30min, the degree of oral malodor started to increase again. 2) After onion juice gargle, the result of the experimental group B which took only supplementary products such as garglin, chewing gum, intaking green tea with roasted rice & brushing a tongue and so on, was as follows. First, in case of experimental group BG which used garglin, until 30 min has passed since the experiment, it showed the lasting reduction of oral malodor as the same trend with the experimental group BG. Second, in chewing gum (experimental group BC), intaking green tea with roasted rice (experimental group BT), and brushing a tongue (experimental group BO), continuous reduction of oral malodor was shown until 10minutes has passed since the experiment, but, after 20minutes, we could see the degree of oral malodor started to increase again. 3) After onion juice gargle, in the experimental group C which only the degree of oral malodor was measured with the passage of time, neither brushing teeth nor using auxiliary goods, until 30min since the experiment, it showed the similar trend of the reduction of oral malodor with other experimental groups, but, it showed high degree of oral malodor, as compared with other experimental groups A and B.

Quality characteristic of Omija (Schizandra chinensis Baillon) seed oils by roasting conditions and extraction methods (볶음 조건 및 추출 방법에 따른 오미자씨유의 품질 특성)

  • The influence of different roasting temperatures, times and extraction methods on the quality characteristics of Omija (Schizandra chinensis) seed oils was investigated. Roasted Omija seeds were divided into five groups based on roasting temperature-time conditions: no roasting (Raw) and roasting [R11: $150^{\circ}C$, 10 min, R12: $150^{\circ}C$, 20 min, R21: $250^{\circ}C$, 10 min, R22: $250^{\circ}C$, 20 min (R22)]. Oils from each of the raw and roasted Omija seeds were obtained by solvent (n-hexane) and press (machine) extraction. The $L^*$ values decreased, but the $a^*$ and $b^*$ values increased with increasing the roasting temperature and time. The $L^*$ values were lower in the press-extracted oils than in the solvent-extracted oils. The peroxide value (POV) of Omija seed oils decreased with increasing the roasting temperature-time values. The POV value was higher in the press-extracted oils than in the solvent-extracted oils. ABTS (2, 2'-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid)) radical inhibition of Omija seed oils was higher in the solvent-extracted oils than in the press-extracted oils, but there were no significant differences between the two oils. The four major kinds of fatty acid methyl esters detected in Omija seed oils were methyl butyrate, methyl hexanoate, methyl arachidate, and methyl eicosanoate. In conclusion, Omija seed oils obtained by solvent extraction and at higher roasting temperature-time values were more effective antioxidants.

Changes in Microbial Contents and Volatile Basic Nitrogen of Pheasant Meat Products during Storage (꿩고기 가공제품의 저장중 미생물과 휘발성 염기태질소의 변화)

  • To evaluate the storage characteristics of pheasant meat products, contents of aerobic, anaerobic and food poisoning bacteria as well as VBN were measured during storage at various temperatures. 1. During the storage Escherichia coli and food poisoning bacteria including Salmonella, Shigella and Staphylococcus were not detected from any of the pheasant meat products. 2. Total plate counts of aerobic and anaerobic bacteria increased with storage temperature, showing more than $10^6CFU/g$ of most pheasant meat products within 5~10 days of storage at $20^{\circ}C$ and $30^{\circ}C$. However, frank sausage, loin ham, pressed ham and salad showed less than $10^5CFU/g$ in 20~30 days of storage at $20^{\circ}C$. 3. When stored at $10^{\circ}C$, smoked product, electric roasted product and pressed ham showed the bacterial counts of more than $10^4CFU/g$ within 10 days of storage. Frank sausage, loin ham and salad, however, showed less than $10^3CFU/g$ in 10 days of storage at $10^{\circ}C$. 4. VBN contents of smoked product, electric roasted product and frank sausage exceeded edible limit of 20 mg%, showing more than 40 mg% and 80 mg% within 5 days and 10 days, respectively, of storage at $10^{\circ}C$. In contrast, loin ham, pressed ham and salad had the VBN of less than 20 mg% in 10 days of storage at $10^{\circ}C$. In summary, while pheasant meat products in general appear to be prone to microbial growth, loin ham and salad are thought to have a longer storage period than others, showing about 10 days of preservation at $10^{\circ}C$. Products other than loin ham and salad are suggested to be stored frozen or refrigerated at below $10^{\circ}C$.

Effect of the Cooking Condition on Enzyme-resistant Starch Content and in vitro Starch and Protein Digestibility of Tarakjuk (Milk-rice Porridge) (타락죽의 효소저항전분 함량과 in vitro 전분 및 단백질 분해율에 대한 가열조건의 영향)

  • Cooking condition of Tarakjuk (milk-rice porridge) was established based on gelatinization temperature using differential scanning calorimetry (DSC) of roasted Ilpum rice flour, which has highest enzyme-resistant starch (RS) content. Effect of cooking temperature and time on DSC characteristics, crystallity with X ray diffractogram, RS content, in vitro starch digestibility (IVSD), amino acid composition, and in vitro protein digestibility (IVPD) of Tarakjuk were determined. Tarakjuk was cooked at 50, 56.5, 64, and $69^{\circ}C$ for various durations. Rice flour ingredient used was Ilpum, previously roasted at $185^{\circ}C$ for 25 min. Tarakjuk cooked at 50 and $56.5^{\circ}C$ showed two thermal transitions between $63.7-125.2^{\circ}C$ as determined by DSC, corresponding to endotherms of starch gelatinization $(63.7-73.8^{\circ}C)$ and melting of amylose-lipid complex (AM-lipid complex, $97.7-125.2^{\circ}C$), whereas that cooked at 64 and $69^{\circ}C$ showed only AM-lipid complex melting transition between $96.9-127.6^{\circ}C$. As cooking temperature increased, RS content of Tarakjuk decreased, whereas IVSD increased. Total amino acid content was between 11,558-15,601mg/100g, depending on cooking condition used. Compared with conventionally made control, contents of essential amino acids, such as lysine and tryptophane, were higher at 50 and $56.5^{\circ}C$, and IVPD showed higher increase. Results reveal degree of gelatinization in Tarakjuk with high RS content as well as low IVSD and high IVPD, which are important from physiological and nutritional point of view, can be produced by controlling cooking condition.

A Study on the Sanitary Status at Various Types of Restaurants in Changwon City (창원시 식품접객업소의 위생실태에 관한 조사연구)

  • The sanitary status of 264 restaurants was investigated to develop a program of sanitary education at restaurants for improving sanitary levels of restaurant and consumers’ food safety. This investigation was performed through direct interviews on general items and sanitations for employees, facilities, equipments and food treatment. The restaurants are grouped into four different types according to the food served: Korean style food, Japanese style raw fish, roasted ribs, and western style food. It is found that sanitary education for employees are conducted at 66.5% of the total restaurants. The highest percentages are obtained by Korean style food restaurants (83.1%) and the lowest by western style food restaurants (55.6%).Washing facilities for employees are equipped at only 66.8% of the total restaurants. In the personal sanitation, 96.6% of the employees wash their hand after touching a dirty stuff, 77.5% after touching money and 57.1% after using telephone. It is also revealed that during food preparation shoes, overgarments, and caps are worn by 58.5%, 55.5%, and 20.6% of the employees, respectively. 73.5% of the restaurants are equipped with dish storages facilities while only 59.2% of restaurants have sterilizers for dishes. Also, chopping boards are sterilized more than once a week by 74.8% of them and knives everyday by 71.6%, 15.4% of restaurants sterilize their knives only once a week. 56.8% of restaurants check temperatures of the refrigerators and 26.2% of restaurants do not even sterilize the refrigerators. 31.8% of restaurants sterilize the kitchens with sodium hopochlorite after cooking. 93.3% of the restaurants store the raw food and the cooked foods separately. 49.8% of the restaurants refroze thawed food and 19.4% of the restaurants reuse leftovers. The frozen foods are thawed at room temperature by 49.4% of the total restaurants and 66.7% of the roasted rib restaurants.

Quality characteristics of ground coffee extracts according to physical and chemical defects (커피빈의 물리화학적 결점에 따른 추출액의 품질특성)

  • To examine the utilization possibility of defective coffee beans, non-defective and defective coffee bean were compared by means of its physiochemical properties and antioxidant capacities measured by DPPH radical scavenging activity, FRAP assay, total phenol contents, functional component (trigonelline, caffeine, chlorogenic acid) contents. After roasting process, pH and soluble solid contents of coffee extracts decreased; $L^*$ value decreased while $a^*$ and $b^*$ values increased. DPPH radical scavenging activities of defective green bean extracts were higher than that of non-defective green bean extracts. Immature green bean extract showed the highest radical scavenging activity. In FRAP assay, green bean extracts ranged from 15.28~21.80 mM TE which was higher than roasted bean extracts which showed 14.81~16.38 mM TE. Total phenol contents of green bean extracts ranged 191.06~256.25 mg% GAE which was higher than that of roasted bean extracts showed 161.91~173.44 mg% GAE. The contents of trigonelline, caffeine, chlorogenic acid in immature green bean extract were the highest, which showed 895.20 mg/L, 825.85 mg/L and 3,836.94 mg/L respectively. Each contents were decreased after roasting process. Results of this study suggest that defective coffee bean can be used as a functional food material.

Extractive Nitrogenous Constituents in the Commercial Marine Seasoned-dried Products and Seasoned-dried and Roasted Products (시판 수산조미건제품의 함질소 엑스성분 조성)

  • The composition of extractive nitrogenous constituents in four species of commercial marine seasoned-dried products (SDP) and five species of seasoned-dried and roasted products (SDRP) were analyzed. The extractive nitrogen contents were $688{\sim}1,124$ and $756{\sim}1,099\;mg/100g$ in SDP and SDRP extracts. Contents of Free amino acids such as glutamic acid, taurine, arginine, proline, alanine, and histidine were high in all samples. The combined amino acid amounted to $662{\sim}2,248$ and $1,146{\sim}1,821\;mg/100g$ in SDP and SDRP, respectively, which corresponded to 34.5 and 42.5% of the total free amino acid level. ATP and related compounds were $3.69{\sim}7.37$ and $2.17{\sim}8.45\;{\mu}mol/g$ in SDP and SDRP, respectively. Five types of betaines were detected in both specimens although in small amounts. TMAO, TMA, creatine, and creatinine were detected in both samples, however they have same variation in each sample. There was no significant difference in the extractive nitrogenous constituents between SDP and SDRP except in moisture, salinity, and contents of glutamic acid and creatinin (p<0.01).
