This study was conducted to evaluate growth, behavior and carcass traits of fattening Hanwoo (Korean native cattle) steers managed in different group sizes. A total of 48 animals, 6 months of age, were allocated to one of three group sizes and the experiment was conducted from 12 to 30 months of age. Groups were balanced for weight and the group sizes consisted of 4, 8, or 12 steers which were named 4sG, 8sG and 12sG, respectively. When animals were 12 months of age, initial fasted body weight (BW, $304.51{\pm}12.40\;kg$) was measured. All animals were housed at a constant space allowance of $8.82\;m^2$ per animal, and a feeder and drinker were provided per 4 animals. The whole fattening stage was divided into three phases: phase I (from 12 to 18 month of age), phase II (from 19 to 24 month of age), and phase III (from 25 to 30 month of age). Steers managed in 12sG showed low (p<0.05) growth rate and feed conversion rate (FCR) in phase I and phase II when compared to other treatment groups. However, this difference was not observed for the whole fattening phase (p>0.05). Steers managed in 4sG had a thick (p<0.05) ultrasound back fat thickness at 15 and 18 months of age. However, group size had no effect on meat yield and quality traits of area and marbling score. Animals managed in 8sG yielded a better meat grade of "A" than the "B" grade in other treatment group sizes. Lean color, fat color, firmness and maturity scores did not differ among group sizes. Hanwoo steers housed under 12sG spent less time on eating concentrate, relevant higher eating rate, less frequency of allogrooming, and more time on walking (p<0.05). It could be concluded that a large group size retarded growth rate and back fat thickness in the fattening stage, which was mainly focused on 15 and 18 months of age.
In order to invertigate penicillin acylase produced by a strain of Genus Escherichia, 47 strains of Genus Escherichia were isolated and examined to the extend of the inactivation of penicillins and the ability of 6-amino penicillanic acid (6-APA) production. Among them, 12 strains were found to produce penicillin acylase and to form 6-APA. The strain No. 11 of the isolates was selected to be the most excellent one producing the acylase. Optimum culture conditions for the production of the acylase of the strain were found as follows : pH at 7.6~8.0, time on 18 hrs, temperature at 34 to 38$^{\circ}C$. And effective levels of the medium were found to be contained 0.3% phenylacetic acid, 1.0% yeast extract, 1.0% peptone and 0.3% L-glutamate. And, the production of the acylase by the isolate was strongly inhibited by 1% glycerol and the growth was remarkably retarded by the addition of 1.0% n-butylacetate. The acylase was extracted from the isolate and the crude enzyme of the acylase was prepared and the characteristies of the enzyme were primary examined in optimum pH, temperature, stabilities and reaction time.
The nutritional status is important for the physical and mental development of children. Children should have sufficient nutrient intake, specially for the developmentally disabled children. In spite of the importance not much research has been done for their food habit and nutritional status. In this study, nutritional status of the disabled children were examined, the number of children studied is 50 children in Seoul between 5 to 6 years old, of whom 11 were austism, 5 were mentally retarded children and 8 were down\\`s syndrome. In order to get the data questionnaires about the food habit and other related factors, and two days food records were used. Their mean height was 108.8$\pm$21.0cm and their average weight was 19.5$\pm$4.6kg. The proportion of study subject with problems of the food habits was 36%, without keeping the regular meal time was 16%, and having snacks 2-4 time daily was 56%. They chose confectionery and fruits as their favorite snacks. The proportion of study subject with the sensitivity to the food colors and smells when they ate was 54%, unskilled using spoon and fork was 58%, and having medications was 20%. When we asked them whether their parents used the food as compensation means or not, 32% of them said that they did it often or sometimes. For the nutrient intake, energy was 1,703 $\pm$ 511kcal, carbohydrate was 242.5 $\pm$ 69.3g, protein was 61.3 $\pm$ 17.5g, lipid was 50.0 $\pm$ 24.4g. As the nutrient intake, it was compared with RDA. The intake of vitamin A and calcium were below RDA. Intake of protein was more than 150% of RDA. The proportion of subject with more than 125% of RDA was 72% for the phosphorus, 62% for the protein, 60% for the Vitamin A and calcium were below 0.75 and that of the others was above 0.75. The mean adequacy ratio(MAR) was 0.88. As we sum up the results of the research, the developmentally disabled children were shorter and lighter than the reference, were having medications, had excessive appetites, and had unbalanced diets. Also they had the bad food habit. As for the nutritional intake, vitamin A and calcium intake were a little less than RDA, and protein and phosphorus intake were too much. With the results of the above research for the disabled children, we can conclude that there are need to take some necessary measures for those children. To establish some programs measures for their better food environment, it is thought that much more research should be done in the future. (Korean J Nutrition 34(2) : 188-197, 2001)
Processing of collagen from yellowfin tuna (Thunnus albacares) abdominal skins was optimized by response surface methodology and central composite design. The values of independent variables at optimal conditions were NaOH concentration: 0.5 N, NaOH treatment time: 36.2 hr, pepsin concentration: 1:4.9 ratio (0.245%, w/v), and digestion time: 48.1 hr, respectively. The collagen content estimated under optimal conditions was 33.1%, and the actual experimental collagen content was 32.3%. Physicochemical properties of collagen from yellowfin tuna abdominal skin were investigated by amino acids analysis, SDS-PAGE, FT-IR, viscosity and denaturation temperature. Amino acids content of the collagen was 21.0%. SDS-PAGE pattern of the collagen showed two different $\alpha$-chain (${\alpha}_1$- and ${\alpha}_2$- chain), $\beta$-component and $\gamma$-component. The spectrum of FT-IR of the collagen showed wavenumber at 3,434, 1,650, 1,542 and $1,235\;cm^{-1}$ representing the regions of amide A, I, II and III, respectively. Relative viscosity of the collagen decreased continuously on heating up to $32^{\circ}C$, and the rate of decrease was retarded in the temperature range of $35-50^{\circ}C$. Denaturation temperature (Td) of the collagen solution (0.06%, w/v) was $31^{\circ}C$ and was lower than calf skin collagen ($35^{\circ}C$).

Zinc fluosilicate ($ZnSiF_6$, 15% aqueous solution) was prepared using zinc oxide (ZnO) and fluosilicic acid ($H_2SiF_6$) by soluiton synthetic method. The fluidity and hydration properties of cement which was added $ZnSiF_6$ (aq.) as an additive for cement were studied. At water to cement ratio (W/C) equals to 0.45, the initial fluidity and slump loss of cement paste which the addition of $ZnSiF_6$ (aq.) was increased from 1.0% to 4.0% based on cement weight were investigated. Initial fluidity of cement paste was measured by mini-slump test and slump loss was examined by measuring the fluidity variation of cement paste with time elapsed from 0 min to 120 min at intervals 30 min. Also, the effect of $ZnSiF_6$ addition on the setting and hydration of cement paste when $ZnSiF_6$ increased in the addition range 1.0% to 3.0% were investigated. The fluidity of cement paste which was added 2.1% $ZnSiF_6$ (aq.) presented the highest value among all addition ranges. The setting time of cement paste was retarded gradually and the heat evolution of hydrated cement was reduced with the increasing of $ZnSiF_6$ addition.
Benzyladenine(BA) and Diphenylurea(DPU) at 10ppm level were foliar-applied one to three times at an interval of 10 days from heading stage of rice variety, Dongjinbyeo. One time treatment of both cytokinins did not delayed leaf senescence substantially, but consecutive treatments of two to three times markedly retarded leaf senescence. Leaf senescence retarding effects were greater in BA than DPU. Ripened grain ratio, grain weight and grain yield were not improved by the treatments. BA treatments increased the percentage of green and white belly kernels with no effects on opaque and white core kernels. BA and DPU treatments did not altered amylose content, but BA treatments significantly decreased protein content of polished rice. Consecutive treatments of BA and DPU twice or three times at an interval of 10 days from heading increased oil content by 30 to 78% as compared to non-treated control, but one time treatment at any stage did not enhance it of polished rice. Fatty acid composition was slightly altered in favor of unsaturated fatty acid by BA and DPU treatments.
Hydrothermal synthesis of 1.13nm tobermorite was performed to obtain the mixing ratio of raw materials, the optimum reaction time and the effect of aluminum in two systems, $CaO-SiO_2-H_2O$ and cement sludge-$SiO_2-H_2O$. 1.13nm tobermorite($5CaO{\cdot}6SiO_2{\cdot}5H_2O:C_5S_6H_5$) was synthesized excellently from $CaO-SiO_2-H_2O$ system on each mole ratio (0.4, 0.8) of $CaO/SiO_2$ at $180^{\circ}C$. But a tobermorite crystals had a sign of crystal conversion after 6 hours of reaction times in the case of $CaO/SiO_2=0.4$ and 4 hours of reaction time in the case of $CaO/SiO_2=0.8$. However, a tobermorite synthesized from cement sludge wastes did not show the crystal conversion on each mole ratio(0.4, 0.8) of $CaO/SiO_2$ within 10 hours of reaction times. It is considered that aluminum ions dissolved from cement sludge wastes retarded the recrystallization of tobermorite. This role of aluminum ion was confirmed in $CaO-SiO_2-H_2O+Al$ powder system. According as added amount of Al powder was increased from 0.8% to 3.0%, the crystal had a highly flatter and larger shape. Recrvstallization was not detected within the same reaction times when aluminum was added.

Some amount of cements can be added into the soil with high water content to improve the engineering properties. In such a case, it is difficult to predict and figure out the phase changes of the soil-cement mixture which is closely associated with workability of the soil-cement mixture. Changes in heat of hydration and hardness of the cement pastes are known to provide the useful information about the phase changes of the soil-cement mixtures. In this study, heat of hydration and cone penetration depth were measured from the specimens of cement paste and 3 soil-cement mixtures. From the experimental results, it was found that the phase changes of the soil-cement mixtures are the same as those of cement paste, and that shear strength of the mixtures abruptly increases when the heat of hydration is minimum. Initial setting time of the mixtures coincides with the state when fall cone penetration depth was 1.0 mm and it is defined as plastic limit of the mixtures. Initial setting time of the mixtures is retarded as soil/cement ratio is increased. Measurements of heat of hydration and fall cone apparatus could be the useful tools to predict the phase changes of tile soil-cement mixtures.
This experiment was carried out to investigate the effects of limited nutrient supply during 21 days before and after pollination stage on the growth, fruit quality and nutrient uptake of muskmelon in rockwool culture. Muskmelon, cv. Earl's Favorite seeds sowed on rockwool cube and transplanted on rockwool slab($90\times15\times7.5cm$) when 2 to 3 true leaf appeared on Sep. 6, 1991. Three kinds of nutrient composition recommended by Shizuoka university, combinated with the composition of Otsuka house A and composition Shizuoka III. One half of calcium nitrate(Ca(NO$_3$)$_2$.4$H_2O$) for limiting nitrogen supply during 21 days was treated and then fertigated the nutrient composition recommended by Shizuoka university up to harvest time. Trickling nozzles(Netafim Co. Israel) were used for fertigation of nutrient solution and noncirculating system was employed. Temperature was maintained $18^{\circ}C$ in night but 23 to $25^{\circ}C$ for 10 days after pollination for softening the fruit. The drainage ratio of nutrient solution was adjusted 20 to 30 percent. Fertigated and drained amount, and the pH and EC of nutrient solution were recorded. The concentrations of mineral elements including N, P, K, Ca, and Mg were analyzed and compared among treatments. In both autumn and winter cultivation, the limitation of nutrient supply by adjustment of nutrient composition(NO$_3$-N : 8meㆍ$\ell^{-1}$) caused the nutrient deficiency in muskmelon plant due to the limited nutrient supply. After pollination nutrient limitation by the lowering the nitrate retarded the over thickening of upper leaves of muskmelon but plant height and fresh weight of fruit were higher in the plot of nonlimited nutrient supply. The phenomena were attributed to the differences of the amount of nutrient uptake due to the limited time of nutrient solution, duration of nutrient supply and concentration of nutrient solution. These results suggested that increasing nutrient supply in the pollination stage was favorable for better appearance of fruit and improving fruit quality. Further trials would be required for the incre-ment of sugar degree of muskmelon grown in rockwool.
The method for the measurement of texture hardening phenomena, which is the limiting factor of shelf-life of Yaksik in the market, was established. The changes in the hardening rate by the processing conditions and the storage temperature and time were examined. The standard sample made by traditional method could be kept at room temperature$(20{\circ}C)$ for 3 days and the multipuncture force measured at the end of marketable quality was 700g. The hardening rate increased rapidly by storing at $5^{\circ}C$ and the ratio of hardening rate constants between room temperature and $5^{\circ}C$ storage reached to $1.3{\sim}3.3$ depending on the processing condition. The largest ratio was observed by the sample made from pressure cooker. The addition of corn syrup retarded the hardening rate. The pressure cooking resulted in making too soft product, which diminished the panel preference, but it extend the shelf-life when products were stored at $5^{\circ}C$ microwave cooking resulted in making too hard texture which was not acceptable. The overall quality preference of Yaksik was decided by the textural preference and the latter showed significant inverse correlation with the maximum force of multipuncture test. Therefore, it was concluded that multipuncture test was useful for the measurement of the quality of Yaksik.
