향토음식점 방문객의 향토음식 인식과 향토메뉴 개발 (Awareness of Local Foods among the Visitors of Local Foods Restaurants and Development of Local Menu)

  • This study is focused on developing traditional folk products by utilizing the representative crops and indigenous products of Wanju area on the basis of surveys on the visitors to the native local restaurants. The study examined 110 visitors of thirty native local foods restaurants in Wanju area from December 5, 2007 to January 5, 2008. The result of this study is as follows. First, the restaurant visitors presented different opinions about the competitiveness of Wanju foods and gender-wise differences in their food competitiveness, food information and food choice. This can be translated as men and women had different preferences in how much they spend for eating out and choosing foods. Second, their different age, incomes and jobs also indicated their different preferences. Third, they point out broth, cooked rice, and dessert as the native local menu that must be developed in Wanju area. Among the local menu to be developed were Wanju style mushroom rice, chicken stew, oriental herb duck soup and fruit dessert. The effort to exploit the native local menu of Wanju should contribute to activating the sales of restaurants and further to the economic development of the region.

Consumer behavior of diners at Korean restaurants in Danang city, Vietnam

  • In recent years, the trend of Korean cuisine has been more popular and quickly become the favorite flavor of Vietnamese youth. Restaurants serving Korean food are growing strongly in Danang market and are known by many classes of society. To better understand the taste and preferences of Danang people about Korean food, this study determined the behavior and assessment of diners who have used food and beverage services at Korean restaurants in Danang city. In addition, the study also identifies diners' desire to change the tastes of Korean dishes. The results show that Korean restaurants are attractive to young diners, from 18 - 25 years olds with income of $220 - $440, who appreciate Korean foods (especially grilled dishes) and most people intend to return to Korean restaurants in the next consumption. The study used a combination of qualitative and quantitative methods. Qualitative methods are used through analysis, evaluation and synthesis of previous studies to formulate survey contents, conduct surveys and propose solutions based on the collected results. Quantitative method applied SPSS 25.0 for descriptive statistics analysis. These findings will help Korean restaurant managers to identify target customers, improve the restaurant's dishes to increase sales and develop Korean dishes in Danang.

A Study on Increase of Consumption of Seaweeds of Marine Product Distributors: Focused on Increase of Consumption of Seaweeds

  • Purpose - The purpose of the study was to investigate restaurants increasing seaweed of marine products and to let consumers live healthy and happy lives and to discuss increase of seaweeds consumption. The purpose of the study was to give consumers good food and to live healthy and happy life and to elevate life quality and to produce added value by increase of consumption of seaweeds such as laver, brown seaweed, tangle and gracilaria and others and to give economic advantage. The seaweed could be produced in large quantity without spending of much money in accordance with demand to make use of it at restaurants. Research design, data, and Methodology - The author visited restaurant businessmen at Suwon, Anyang, Hwaseong and Yongin to investigate low sales by in-depth interview. The study investigated Kodari-jorim restaurants that made use of laver ssam for side dish. The subject was HS distributors to let restaurant keepers think of seaweeds and replacement of vegetable by seaweed. Results - Women customers who thought of health and diet usually selected menu at the restaurants not to appeal. Conclusions - Menu with high quality seaweeds (low calory, satiety and health) can satisfy women customers thinking much of health and diet to increase consumption of seaweeds. The study was exploratory to investigate in qualitative and quantitative way in the future.

The Impact of COVID-19 Regional Cash Subsidies on the Sales of Local Businesses in South Korea

  • This paper examines the impact of the regional cash subsidies which were granted in some districts in addition to the national universal stimulus payment in South Korea related to the COVID-19 pandemic. We evaluate the effects of the cash distribution per resident on aggregate credit and debit card sales and sales by industry using the difference-in-difference method. The increment in card spending due to the cash subsidy is about 1.58%p in total, and this effect is concentrated within a single month. The consumption stimulating effect is prominent among (semi)-durable goods that do not require close interactions between customers and sellers. In contrast, the effect is relatively small in the high-contact face-to-face service sectors and restaurants, areas the COVID-19 pandemic hit directly. On the other hand, some service sectors where customers could wear face masks, such as education and fitness, experienced a substantial sales boost due to the cash subsidy.

레스토랑에서 소비자가 지각하는 가격인지차원의 타당성 검증 (An Examination of the Multiple Dimensions of Price Perception Among Restaurant Customers)

  • This study focuses on testing the validity of dimensions of restaurants' menu prices. In addition, the effect of demographic variables on the perception of each price dimension was investigated. The subjects were people living in the capital region who have, at least on occasion, gone to family restaurants. The data were collected by self-administered questionnaires and analyzed by factor analysis, reliability analysis, confirmatory factor analysis, and the ANOVA t-test. The results were that consumers' perception of restaurant menu prices is not uni-dimensional, but has six dimensions: price-price schema, pricequality schema, value consciousness, low price proneness, price mavenism, sales proneness. Demographic variables partially affect the consumers' perception of each menu price dimension. The result of the t-test examining dimensions of price according to the demographic characteristic was that females have a higher sales proneness than males. The t-test result according to marriage indicated that married people were higher in price-price schema and quality proneness than unmarrieds. ANOVA according to age indicated that people between ages of 20 to 29 have a higher quality proneness than those of other ages.

한국어 텍스트 마이닝의 특성과 2011 한국 경제총조사 자료에의 응용 (Text Mining for Korean: Characteristics and Application to 2011 Korean Economic Census Data)

  • 한국 전체 사업체 대한 최초의 전수조사인 2011 경제총조사 중 한식 음식점업 사업체 자료는 취급 메뉴에 대한 텍스트 자료와 영업 지역, 창립연월, 매출액 등 사업체의 특성을 나타내는 구조화 자료로 구성되어 있는 빅데이터이다. 본 연구에서는 취급 메뉴 자료에 텍스트 마이닝을 실시하는 과정에서 발생하는 통계 및 기술적 문제점들을 살펴보고, 이를 통해 한국어 텍스트 마이닝의 특징을 고찰하였다. 또한 텍스트 마이닝의 결과를 사업체 특성 자료와 결합하여 한식 메뉴와 이를 취급하는 사업체 특성 간의 연관성을 탐색하였다. 2010년 기준 가장 많은 사업체가 취급하는 인기 메뉴는 삼겹살구이로 특히 강원도와 대전광역시에 인구 대비 취급 사업체가 많았다. 신생 사업체의 인기 메뉴는 육회와 돈가스였고, 닭백숙과 매운탕 등이 장수 사업체가 많이 취급하는 메뉴였다. 이러한 결과들은 한식 음식점 창업시 메뉴 선정 가이드라인으로 활용될 수 있으며 관련 정부 부처가 영세 사업체들의 메뉴 변경 유도를 통한 폐업 방지등의 정책을 마련하는데 도움이 될 것이다.

입지요인이 음식업 업종별 매출액에 미치는 영향 비교연구 (A Comparative Study on the Effects of Location Factors on Sales by Restaurant Type)

  • 이 연구에서는 서울시 6개구(종로구, 중구, 영등포구, 강남구, 서초구, 송파구)의 14개 세부 음식업종의 집계구 매출액을 대상으로 공간회귀분석을 적용하여 입지요인의 영향을 분석한다. 세부 음식업종 매출액의 유동인구 탄력성과 주변 사업체 종사자수 탄력성을 측정하고 자치구별 매출액 차이와 공간승수효과를 비교한다. 세부 음식업종 중 4개 업종(분식전문, 찌개/찜/탕, 회 전문, 제과/떡/한과)에서는 공간자기상관이 검정되지 않아 OLS 회귀분석이 적용되며, 해산물 전문 업종은 공간래그모형(SLM)이, 나머지 9개 업종들에서는 공간오차모형(SEM)이 적용된다. 유동인구와 주변 사업체 종사자수는 세부 음식업종의 매출액에 대체로 정의 영향을 미치는 것으로 나타났다. 매출액의 유동인구 탄력성은 동양식 전문, 주점, 서양식 전문, 전통음식 순으로 나타났으며 주변 사업체 종사자수 탄력성은 제과/떡/한과, 동양식 전문, 서양식 전문 순으로 나타났다. 공간자기상관에 따른 공간승수효과는 동양식 전문, 주점, 서양식 전문, 전통음식 순으로 나타났다. 전통음식, 찌개/찜/탕, 해산물 전문 등의 업종은 강남구와 다른 자치구들 간에 매출액 차이가 거의 없는 반면에 육류구이, 주점, 제과/떡/한과 등은 매출액에서 유의한 차이를 보였다. 본 연구는 음식업종의 업종별 입지 적합도를 평가함으로써 음식점 입지 선택에 도움을 줄 수 있다.

국내.외 외식업체의 브랜드 개성 (Brand Personalities in Restaurant Business -Korean and Foreign Brand Restaurants-)

  • 고객들이 인지하는 국내 외 외식업체에 대한 브랜드 개성을 파악하고, 기업의 매출액과 직결되는 선호도와 재방문에 어떤 영향을 미치는지 파악함으로써 지속적으로 핵심고객의 유인 및 유지하기 위한 기초자료를 제시하고자 한다. 본 연구의 결과는 국내 브랜드에서 '성공적인', '건전한', '부지런한'의 순으로 중요하게 인지하고 있고, 친근성 요인(호의적이고 정직하면서 다정함)을 강하게 인지할수록 선호도와 재방문과 밀접한 관련이 있는 것으로 나타났다. 해외 브랜드에서 '서구적인', '호의적인', '젊은'의 순으로 높게 인지하고 있고, 특히 유쾌함 요인과 성공 요인에 대해 선호도와 재방문 의도가 높은 것으로 나타났다. 이에 대한 시사점으로는 국내 브랜드는 핵심고객의 취향과 일치되는 레스토랑의 정확한 컨셉을 설정해야 한다. 해외 브랜드는 톡톡 튀는 분위기의 엔터테인먼트 요소를 강화해야 한다.

일식레스토랑 메뉴품질에 대한 중요도와 만족도에 관한 연구 (A Study on the Importance and Satisfaction for the Menu Quality of Japanese Restaurant)

  • This study aimed to analyze the impact of importance and fulfillment(satisfaction) factors of menu quality on customers' intent of revisit of Japanese restaurants, so that it could provide information helpful to build up detailed marketing strategy and present considerations for management's higher sales amount and more efficient business results as well. Importance on menu quality scored higher level than fulfillment on the whole in Japanese restaurants. Notably, in regard to attributes of menu quality, it was found that respondents put higher stress on flavor, nutrition, cleanliness and freshness than anything else. In terms of IPA analysis on Japanese cuisine menu quality, it was noteworthy that the items with high importance but low fulfillment included menu price as an attribute for menu quality, although it was not shown in menu-specific items. In the survey on the associations between fulfillment(customer satisfaction) and intent of revisit, it was found that factors of customer satisfaction included 'trimness of dishes', 'information', 'appropriateness' and 'economic affordable' Out of these factors, it was noted that both 'trimness' and 'economic affordable' had significant effects on customer satisfaction at the significance level ranging from p<0.05 to p<0.001.

패밀리 레스토랑에서의 브랜드 증거가 감정, 브랜드 만족 및 고객애호도에 미치는 영향 (Effects of Brand Evidence on Emotion, Brand Satisfaction and Customer Loyalty in Family Restaurants)

  • The study assessed the relationship between brand evidence (e.g., brand name, price/value for money, servicescape, core service, employee service and self-image congruence) and positive/negative emotion and brand satisfaction, and between positive/negative emotion and brand satisfaction in the family restaurant setting. Also, the relationship of positive/negative emotion and brand satisfaction with customer loyalty were assessed. Customers who used five brands of family restaurant in Daegu and Pusan during October of 2008 were surveyed by questionnaires. Brand evidence was positively related to positive emotion and brand satisfaction, and was negatively related to negative emotion. Positive emotion was positively related to brand satisfaction and negative emotion was negatively related to brand satisfaction. Brand satisfaction was positively relatively to customer loyalty. The results indicate that management of family restaurants should focus on brand evidence as a means of increasing profits and sales volume.
