떡국 떡의 품질유지에 미치는 변형기체포장(MAP) 효과 (Effect of Modified Atmosphere Packaging on Quality Preservation of Rice Cake (Ddukgukdduk))

  • Packages of different atmospheres (air (control), 100% CO2, vacuum, and vacuum + O2 absorber) were prepared for 0.4 kg rice cake (ddukgukdduk) using gas-barrier plastic film and stored at 10℃ for 11 days. The stored products were evaluated in their packages atmosphere, total aerobic bacteria, yeast and molds, texture and sensory quality during storage period. In the air package, the O2 concentration decreased from initial 21% to 16% on storage 4 days and the CO2 concentration increased to 23% on storage of 11 days, which resulted from the growth of microorganisms. CO2 concentration decreased from initial 98% to 36% on storage 11 days in the 100% CO2 package. It is reasoned that CO2 was dissolved into the product reducing the volume of the package. Vacuum and vacuum +O2 absorber package maintained shrunk vacuum condition until 11 days of storage. Total aerobic bacteria count increased significantly in the control package (6.41 log (cfu/g) after 11 days) compared to the 100% CO2 package (4.96 log (cfu/g) after 11 days). Yeast and molds were 6.66 in control package, 3.43 in 100% CO2 package, 4.66 in vacuum package, and 3.78 in vacuum + O2 absorber package after 11 days. There was no significant difference between control and the other treatments for the texture of the stored products. Sensory quality was the worst in control package on the storage of 8 days. All treatment groups except control improved the quality preservation, but vacuum and vacuum + O2 absorber packages suffered from cracking of the product. Thus 100% CO2 flushing is suggested as a desired packaging condition.

동일비료장기연용 논에서 토양유기탄소의 변동 (Long-term Impact of Single Rice Cropping System on SOC Dynamics)

  • 이산화탄소 등 온실가스의 농도 증가로 인한 지구온난화 에 따른 기후의 변화 및 환경적 영향이 증가하고 있으며 토양내 유기탄소의 축적을 통해 대기 중 이산화탄소등 온실 가스의 감축을 효과적으로 제어할 수 있는 방법들이 연구되어 보고되고 있으나, 우리나라의 논의 경우에는 토양유기탄소의 토양 축적에 관한 연구가 매우 적게 보고되고 있다. 따라서 우리나라 주요 경지 이용형태인 논에 대해서도 토양중 탄소를 축적할 수 있는 토양관리 방법의 연구가 매우 필요하게 되었다. 본 연구는 농촌진흥청 농업과학기술원 동일비료 및 개량제 처리 장기시험 포장에서 퇴비, NPK 비료, 석회, 및 규산등의 처리구별 토양유기탄소의 동태를 분석하였다. 연구결과 인산, 칼리 및 석회의 시용은 장기간 시용한 이후에 처리한 구에서 미처리구에서 보다 토양유기탄소의 함량이 높게 나타났다. 한편 퇴비 시용구의 경우 퇴비 미시용구에서 보다 퇴비 시용구에서 토양유기탄소의 함량이 지속적으로 증가하는 것으로 나타났으며 시간이 지날수록 유기탄소축적비율도 증가하는 것으로 나타났다. 결론적으로 단일 논 작부체계하에서 장기간 지속적인 퇴비의 시용 결과 토양 중 유기탄소의 효과적인 축적이 이루어 졌다. 따라서 우리나라 논에서 중 유기탄소의 축적을 위하여 퇴비의 지속적인 시용을 제안하고자 한다.

고온 황화반응에 의한 FeTiO3로부터 Fe의 분리성과 분배거동에 미치는 환원/황화 분위기 및 온도의 영향 (Influence of Reduction Atmosphere and Temperature on the Separability and Distribution Behavior of Fe from FeTiO3 via Sulfurization)

  • 티타늄 생산 원료로서 $TiO_2$는 천연 일메나이트 광석을 1823 K 이상에서 탄소와 함께 환원 및 산 침출을 통해 티타늄이 풍부한 슬래그로부터 생산할 수 있으나, 공정상 매우 높은 에너지 소비 및 다량의 침출 잔류물을 발생한다. 본 연구에서는 1573 K 이하 온도에서 $Na_2SO_4$에 의해 $FeTiO_3$의 황화 처리를 통해서 철 자원은 FeS 황화물 상으로써 티타늄 자원은 $TiO_2-Na_2O$계 산화물 상으로 분리할 수 있는 반응을 제안한다. 본 연구는 $FeTiO_3$의 황화 처리의 기초 연구로서, FeS 황화물 상과 $TiO_2$계 슬래그 상의 분리성에 미치는 환원 분위기의 영향과 대기 분위기 속에서 반응온도와 Sulfur 비에 따른 Fe, Ti, Na 등의 거동을 조사하였다. 1573 K 및 탄소 포화 조건에서 $FeTiO_3$의 Fe는 Fe-C-S 금속과 일부 FeS로 분리 가능하며, 산화물 내 농도는 4 mass% 정도로 감소하였다. 또한, Sulfur/Fe 비가 높아질수록 자성 분리 후 회수된 산화물의 Fe 농도가 증가하며, 회수된 금속상 내 Fe 농도는 감소하였다.

스파크 점화기관에서 이차 공기 분사가 냉시동시 THC 배출량에 미치는 영향에 관한 실험적 연구 (Experimental Study of the Effect of Secondary Air Injection on the Cold Start Total Hydrocarbon Emissions in a Spark Ignition Engine)

  • Engine emission regulations are becoming more stringent nowadays. In cold transient regime, about 80% THC is exhausted to the atmosphere in the first 200s (US FTP cycles). Accordingly, reducing emission levels in the cold period immediately after the engine start before the catalysts reach their working temperature will be an especially critical factor in meeting more stringent regulations in the future. In this study, the total hydrocarbon quantities are measured using a Fast FID with gasoline fuel for a 4-cylinde. Sl engine, including Secondary Air Injection (SAI) system. Commercial SAI device's direction is reverse to the exhaust flow. In this study, a swirl flow type SAI system which is positioned between the exhaust manifold and exhaust port, was developed. We compared the swirl type secondary air injection with a commercial secondary air injection of .everse flow. The swirl type SAI showed better results in reducing HC by 26% than the commercial flow type SAI of reverse flow which was caused by the better mixing between the exhaust gas and the secondary air.

인천지역 대학생의 식행동과 대학급식소 이용실태 (A Study on the Dietary Behavior of Students and Utilization of University Foodservice in Incheon Area)

  • This study was conducted to investigate the dietary behavior and utilization of university foodservice in Incheon area. Self administered questionnaires were collected from 305 students. Statistical data analysis was completed using a SPSS v. 10.0 program. The results are summarized as follows: Most students had poor dietary behavior, such as skipping meals. Only 21.4% of male students and 30% of female students responded to have breakfast regularly. About 60% of students were utilizing for lunch at the university foodservice and 3.9% of them for dinner, which mainly caused by the reasons “low price”, “time saving”, “near place”. In particular, only 21% of students used the university foodservice daily. More than 80% of students responded to have lunch at restaurants around campus when they did not have meals at the university foodservice. Reasons for not utilizing the university foodservice were responed as simple menus and tasteless, etc. Recommendations for the improvements of the university foodservice can be summarized as menu variation, emphasis on taste, reducing of noise, expending opening time, reducing waiting time, sanitation, change of old utensils and comfortable atmosphere of dining hall.

수삼저장중 이화학적 및 기생물학적 변화 (Physico-Chemical and Microbiological Changes during Storage of Fresh Ginseng)

  • Physical, chemical and microbiological changes were periodically studied during six-month storage of fresh ginseng under N2, CO2 gas or subatmospheric pressure condition. The results were summarized as follows. 1. The moisture contents of fresh ginseng gradually decreased during the first 2-month storage and thereafter generally reached at equillibrium. 2. There was no significant change in the reducing sugar content in 1-month storage, followed by$.$a decrease in between 2-and 3-month storage. Thereafter, the reducing sugar content increased at the end of 4-month storage. 3. The total sugar content increased significantly during the first 3-month storage. Under CO2 and Nr gas storage, the total sugar content gradually decreased after 3-month storage, while no significant change was observed in the samples stored under subatmospheric Pressure. Amylase activity gradually decreased as storage period increased 4. The content of saponin decreased as storage period increased, but ginsengoide Rf, Rd, Rc and Rb2 increased significantly in 1-month storage. 5. Regardless of storage methods, sprouting of ginseng and growth of microorganisms were inhibited in all samples during the first 4-month storage. However, growth of microorganisms was observed in the rhizome and injured areas of ginseng after 5-month storage in the N2 and CO2 gas atmosphere.

Application of Gamma Irradiation for the Reduction of Residual Nitrite and Nitrosamine in Meat Products

  • Nitrite, a curing agent of meat products, is precursors of carcinogenic N-nitrosamines during processing of meat products or under human stomach conditions as well as having its own toxicity. Some researches have been conducted to evaluate the effects of ionizing radiation on the reduction of residual nitrite and N-nitrosamines in an aqueous model system and cured meat products with different packaging methods during storage. These results showed that the gamma irradiation was effective in reducing the residual nitrite and N-nitrosamines in an aqueous model system as well as meat products. Especially, irradiation combined with vacuum or modified atmosphere packaging was more effective in nitrite and N-nitrosamines reduction than aerobic packaging during storage. The objective of this review is to introduce the irradiation technology for the application of reducing the residual nitrite and N-nitrosamine contents in meat products.

$(Sr_{1-x}.Ca_x)TiO_3$입계층 세라믹의 유전 및 전기전도특성에 관한 연구 (A study on the dielectric and electrical conduction properties of$(Sr_{1-x}.Ca_x)TiO_3$ grain boundary layer ceramics)

  • The (Sr$_{1-x}$ .Ca$_{x}$)TiO$_{3}$+0.6[mol%]Nb$_{2}$O$_{5}$ (0.05.leq.x.leq.0.2) ceramics were fabricated to form semiconducting ceramics by sintering at about 1350[.deg. C] in a reducing atmosphere(N$_{2}$ gas). Metal oxides, CuO, was painted on the both surface of the specimens to diffuse to the grain boundary. They were annealed at 1100 [.deg. C] for 2 hours. The 2nd phase formed by thermal diffusing from the surface lead to a very high apparent dielectric constant. According to increase of the frequency as a functional of temperature, all specimens used in this study showed the dielectric relaxation, and the relaxation frequency was above 106 [Hz], it move to low frequency with increasing resistivity of grain. The specimens showed three kinds of conduction mechanisms in the temperature range 25-125 [.deg. C] as the current increased: the region I below 200 [V/cm] shows the ohmic conduction. The region rt between 200 [V/cm] and 2000 [V/cm] can be explained by the Poole-Frenkel emission theory, and the region III above 2000 [V/cm] is dominated by the tunneling effect.fect.

MA포장재 이용한 지역별 사과의 품질 안전성에 관한 연구 (A Study on the Quality Safety of Apples by Region Using MA Packaging Materials)

  • Apples are one of the most produced fruits in Korea, with 2,423,000 tons of fruits produced in Korea in 2018, of which 365,000 tons (MAF, 2018) account for about 15% of the total production. For quality safety after harvesting apples, the application of MA(modified atmosphere) packaging technology (Mostofi et. al., 2008) is being actively studied. In addition, the effects of functional packaging materials that have added functions such as fireproof, antibacterial, high-blocking, degradability, and far-infrared radiation have been studied (Chung et al., 2009). In addition, there are reports of the effects of quality changes (Park et al., 2007) and MA storage methods on the quality of apples by packing apples with functional MA films((Park et al., 2004). But there are only few reports on quality safety by analyzing the correlation between the change of reducing sugar and total sugar and preference during storage by packing Geochang, Yeongju, and Yesan apples in functional MA film. Therefore, this study aims to propose a method to secure the quality safety of apples by investigating the effect of sugar change on the preference of apples during storage by packing apples in three regions in functional MA films.

공기 조절 포장과 전자선 조사의 병용이 분쇄돈육의 저장 중 산화와 미생물적 안정성에 미치는 영향 (Combination Effect of Modified Atmosphere Packaging and Electron Beam Irradiation on the Oxidative and Microbiological Stability of Ground Pork during Storage)

  • 분쇄 돈육을 $N_2$$CO_2$ 가스로 공기 조절 포장한 후 전자선으로 조사하여(0, 1.5, 3.0 kGy) 돈육을 저장하면서 미생물의 변화와 함께 공기 조절 포장이 전자선 처리에 의한 지방 산화를 억제하는지 관찰하였다. 분쇄 돈육은 공기 조절 포장과 전자선 처리(1.5와 3.0 kGy)후 4$^{\circ}C$에서 6일간 그리고 -15$^{\circ}C$ 에서 3달 동안 저장하면서 주기적으로 미생물 검사와 지방의 산패치를 측정하였다. 일반세균과 중온균의 경우 1.5와 3.0 kGy의 전자선 조사량으로 처리하였을 경우 대조구에 비해 그 증식이 현저히 억제되었음을 관찰하였다. 질소와 이산화탄소를 주입한 포장은 그 자체로도 대조구와 비교하였을 때 저장 중 지방의 산화를 억제하는 데에 큰 효과가 있었으며 또한 공기 조절 포장과 전자선 처리의 병용은 저장 중 분쇄 돈육의 미생물 증식과 지방의 산화를 억제하는데 효과적이었다.
