The Assessment of Management Practices on Foodservice , Clinical Nutrition Service in Hospital Foodservice Operations (병원 급식소의 급식 및 임상영양 서비스 업무 실태 조사)

  • The aim of this research was to examine the management practices related to foodservice.clinical nutrition service provided by hospital foodservice operations. A survey of 30 hospital food nutrition service departments was undertaken and detailed information was collected from each, including surveys of 176 dietitians and 30 foodservice managers. Statistical data analysis was completed using the SAS/win 6.11 package for descriptive analysis and t-test. The results of this study can be summarized as follows : Out of 30 hospitals, 73.3%(22) were directly operated and 26.7%(8) were under contract foodservice management. Licensed number of beds were 768.7, with an average length of 11.4 days. The general characteristics of the dietitians were that 49.4% were aged between 25-29, and 60.8% were ordinary dietitians. 76.7% had bachelor's degree, 15.9% with master's degree and 7.4% were college graduates. Most hospital dietitians had internship training and 35.2% took a training course of 6 to 12 months. The average space of kitchen was 452.52 $m^2$, with 133.63$m^2$ for modified diet space and 18.13$m^2$ for nutrition counselling room space. The total number of normal meals was 1,255.47, with 502.93 of modified meals. The average calorie of normal meals was 2,145.04kcal, with 91.9g of protein contained in normal meal. The total food waste was 351.40kg. An average monthly cost for disposing food waste was 745,171.67 won. 83.3% of the kitchens were on the 1st basement and only 66.7%(20) of 30 hospitals had its own nutrition counselling room. 80% used dishwashers and 66.7% had an exclusive elevator for delivering meals. 80.0% of hospitals used centralized delivery service. 90% had established an area for hygiene division, 70% used dry zone within the dishwashers for sterilization, 66.7% provided spoon and chopstick, and 100% used dish cover. As means of food waste treatment, most hospitals(56.7%) used animal feed by contracters, followed by means of collection by contracters(30%) and in-house high speed fermentation machines(13.3%). It was found that only 33.3% hospitals regularly checked temperatures of the meals given to patients. Total productivity index was 3.72(meals/hour) in average, with an average productivity index for normal diet of 5.41. Average productivity index for modified diet was 4.62. Productivity indices for patient meals and clinical nutrition were 5.01(meals/hour) and 1.12(cases/hour) respectively and hospitals under self-operated foodservice management received higher points on clinical nutrition productivity index(P<0.01) than hospitals under contract foodservice management.

  • In the construction industry, IT based information system has been diversely applied to increase productivity. Although IT device such as PDA, RFID, Barcode, wireless network and web camera has been introduced to gather information in construction site, the effect of the IT device is limited, because of bringing about additional works of engineer. In this paper, we proposed a defect management system which is based on handwritten document digitalization framework for introducing applicability of new IT device, digital pen. By the proposed system, we can effectively gather and input defect information to defect management system by using digital pen and paper like conventional way. Applying the data gathering device, digital pen to defect management, it is able to increase productivity by improving work process, building up and utilizing defect information database of good quality.

  • Domestic semiconductor industry grew rapidly enough to draw a close attention in a short period less than twenty years. Korea grew to be the third largest semiconductor manufacturing country in the world during the period and has maintained the proud of Koreans even in technological competitiveness. Accordingly, In this study, it was introduced and analyzed 6 sigma method using profits making analysis for increasing Productivity in the semiconductor manufacturing process.

  • Technical innovation is very important in the small and medium enterprises. All successful innovation stars from a creative ideas, it be a new application for a technology, the satisfaction of a new identified need or of an old need in a new way, or the manufacture of a product by a different method. The purpose of this study is to investigate into the implementation effect of IMS(information management system) for information in small and medium enterprises. This research analysis was done as to small and medium enterprises of 24. The Results for this research analysis was as follows. First, the satisfaction scored 4.10 in information level up of the small and medium enterprises. Second, increased effect productivity scored 3.37 in samples of 17. Thrid, increased management efficiency productivity scored 3.14 in samples of 17.

  • The importance of information technology (IT) has been emphasized in developing countries recently. Despite the importance of the topic area of the productivity of IT in developing countries, the literature to date is relatively sparse. The findings of almost all these studies are based on data collected in developed countries. Few studies have been conducted to validate these results and to see if they are still applicable in developing countries. This study tries to investigate the effects of IT investment on productivity in the electronics industry of China, which is a representative developing country, with production function model. The results show that there is a positive impact of IT investment on productivity in China similar to previous studies in developed countries.

  • The container port industry has been variously studied by many researchers, because the contemporary container transportation and container port industries play a pivotal role in globalization of the world economy. For container terminals, the productivity, affected by many factors, is an important target in measuring container terminal performance. Under this background, finding the critical factors affecting the productivity is necessary. Regression analysis can be used to identify which independent variables are related to the dependent variable, and explore the relationships of them. The aim of paper is to evaluate the factors affecting the productivity of Chinese major terminals by using a regression statistical analysis modeling approach, which is to establish the variable preprocessing model (VPM) and regression analysis model (RAM), by means of collecting the major Chinese container terminals data in the year of 2008.

  • The paradigm of the global logistics network has been rapidly changing from traditional concept of productivity in cost terms, toward the new characteristics of innovative productivity in terms of economies of scale, economies of scope, and economies of network. As the ship or airplane becomes larger and speedier, the less logistics hub required. The more diverse logistics parties integrate each other horizontally or vertically, the higher synergy effects they get. The more systematic concurrent engineering available for global supply chain management such as Korean manufacturers in China, the higher productivity they get. The paper analyzes these three paradigms of logistics into the application for the Korean manufacturers in China and concludes that the Korean government, the companies in China should be more focused on the governance of the logistics and the intermediary such as the 4th party logistics(4PL) is definitely developed its role and functions based on three paradigms above mentioned.

  • The productivity increase by technological advance is the biggest driving force of economic growth. In this paper, we investigate the inputs and outputs of the manufacturing and service industries in Korea. We also estimate the total and partial factor productivities of both industries using the Solow model and the Kendrick model. Finally, we analyze the contribution of each input factor to industrial growth.

  • KORAIL continuously drives practical reforms of change and originality both internally and externally for the purpose of adapting to rapidly changing circumstance and promote productivity of the organization. Various management strategies are needed to increase its productivity, yet the fist thing to be considered is to select talented human resources. A selection of the human resource should be conducted based on 3R(Right People, Right Place, Right Time). This study empirically analyzes through actual study how the method of new employment introduced on January 1, 2005 positively affects capability and productivity of each member of KORAIL. The area of this study is defined centering on the standard of new employment, capability of personnel, and productivity of the organization. Also, the improvement of new employment standard of KORAIL is suggested as significance of the standard was verified through survey of the standard, the capability and the productivity conducted to KORAIL working personnel.

  • Process management of reinforced concrete construction that many labor quantity and cost is put at a construction site is very important and gives a lot of influence on the subsequent process.
