Quality Characteristic of Hwangki(Astragalus membranaceus) Chungkukjang during Fermentation (황기청국장의 발효 중 품질특성)

  • This study investigated the effects of a Hwangki (Astragalus membranaceus) extract on the quality of Chungkukjang fermented by Bacillus subtilis KCCM 12148, at 30, 40, and $50^{\circ}C$, for 4 days. Changes in moisture contents, protein levels, pH values, ammonia-type nitrogen levels, color, angiotensin-converting-enzyme (ACE) inhibition rates, and fibrinolytic activities, were all determined. For both control and test, the moisture contents decreased gradually with time and the protein levels increased slightly. The pH values fell at the beginning of fermentation and then rose. The content of ammonia-type nitrogen was higher in Hwangki with Chungkukjang than in control, until 24 hr after fermentation commenced. After that time, the content of ammonia-type nitrogen control was higher in the control than in the Hwangki with Chungkukjang sample. Color features, such as lightness, redness, and yellowness, all decreased during fermentation, in both control and test. The highest ACE inhibition rates during fermentation at $40^{\circ}C$ were 90.9% in the control (48 hr after fermentation commenced) and 95.3% in Hwangki with Chungkukjang(24 hr). Fibrinolytic activities of Chungkukjang and Hwangki Chungkukjang were 100.7 and 74.4% respectively. The content of 2,6-dimethyl pyrazine in the control was higher than that in Hwangki with Chungkukjang. Sensory evaluationtests showed that the addition of Hwangki significantly improved the overall palatability of Chungkukjang.

Quality Characteristics and Antioxidant Activities of Cookies Added with Pleurotus eryngii Powder (새송이버섯 분말을 첨가한 쿠키의 품질 및 항산화활성)

  • This study examined the quality characteristics and antioxidant activities of cookies added Pleurotus eryngii powder. There were no significant differences in bulk density or water content between the doughs. Spread factors and leavening rates of cookies decreased with increasing Pleurotus eryngii powder content. However, the loss rates of cookies showed no significant differences. L values decreased with increasing Pleurotus eryngii powder content while a values were gradually increased. b values showed no significant differences among the samples. Hardness, total phenol compound content, ferric reducing antioxidant power (FRAP) and DPPH radical scavenging activity of cookies were significantly increased with increasing Pleurotus eryngii powder content. In a descriptive test, the color, flavor, palatability, hardness and graininess were all increased with increasing Pleurotus eryngii powder content. In a preference test, color and flavor were the highest in the 10% group without significant differences. Texture was preferred in the control-20% groups without significant differences. However, taste and overall acceptability were the highest in the 10% group.

The Design of Wireless Underwater Telephone -Analysis of Underwater Background Noise for Wireless Underwater Telephone Design - (수중 무선 전화기의 설계 - 수중무선전화기 설계를 위한 수중소음분석을 중심으로-)

  • The underwater background noise measured in Geoje and Tongyoung diving fishing ground from May to December, 2000 and analyzed to get optimum carrier frequency and transmitter power level for underwater wireless telephone design. The results obtained are summarized as follows: 1. At the Geoje and Tongyoung diving fishing ground, the lowest ambient noise band was 25~30kHz with 57dB and 52dB re 1$\mu$Pa, respectively. 2. At the Geoje and Tongyoung diving fishing ground, the lowest noise band during fishing activity was 67dB and 62dB re 1$\mu$Pa, respectively. 3. At the Geoje diving fishing ground, the noise of water jetter which is a digging machine for subbottom shells was 102dB re 1$\mu$Pa. 4. Considering the design parameters of underwater wireless telephone, it is found that the optimum carrier frequency band is around 30kHz and the transmitter source level should be at least 131dB re 1$\mu$Pa for 500m range telephone.

  • Haiami is a new Japonica rice variety developed from a cross between 'Jinmibyeo' TR treated with ethyl methane sulfonate (EMS) EMS and 5-methytryptophan, and 'Gyehwabyeo' in order to develop a new premium quality rice variety by a rice breeding team of National Institute of Crop Science, Rural Development Administration in 2008. This variety has about 138 days of growth duration from transplanting to harvesting in central plain area of Korea. The heading date of this vareity was on $15^{th}$, August. The 'Haiami' has good semi-elect plant type and resistant to lodging with strong culm. The number of panicles/hill of 'Haiami' is more than that of 'Hwaseongbyeo'. This variety shows slow leaf senescence and considerable tolerance to viviparous germination. It is susceptible to leaf blast, bacterial blight, and insect pests, but resistance to rice stripe virus. The milled rice of this variety exhibited translucent, clear non-glutinous endosperm and short grain shape. The essential amino acid properties of 'Haiami' have more than 31% that of 'Hwaseongbyeo' in polished rice. This variety has premium palatability of cooked rice. The yield performance of this rice cultivar was about 5.38 MT/ha in milled rice in local adaptability test for three years from 2006 to 2008. 'Haiami' is adaptable to central and southern plain areas of Korea.

Optimum Milling Degree for Improving Sensory Quality of Cooked Rice (식미 증진을 위한 최적 도정도 구명)

  • We conducted this study to identify the optimal milling degree for improving sensory quality of cooked rice and minimizing yield loss. The samples were analyzed for their physicochemical properties and sensory qualities using five different degree of milling(5.5~13.5%, based on brown rice). With increasing of milling degree, amylose content, breakdown, adhesiveness of cooked rice increased, whereas protein content, Mg/K equivalence ratio, fat content, setback and hardness of cooked rice decreased. In sensory quality test, the preference was significantly higher in the 9.5% and 11.5% milling degree. However, considering the yield of milled rice, the optimal milling degree for improving sensory quality of cooked rice was 9.5%.

Physiochemical Characteristics and Sensory Evaluation of Greenhouse Satsuma Mandarin (시설온주밀감의 이화학적 특성과 관능평가)

  • To assess the physiochemical characteristics of greenhouse Satsuma mandarin (Citrus unshiu Marc. var, miyakawa) produced in Cheju, were analyzed chemical compositions for fruits, external and internal factors influencing the edible quality. Changes in organoleptic value according to brix and acid content were also evaluated. The ratios of sucrose : glucose : fructose in citrus juice were 2 : 2 : 1.5. Citric acid as the main acid in the juice represented about 70% of total organic acid. Most of the amino acids were found to be nonessential amino acids. Deep yellow color of the citrus peel showed a significant relationship(r=0.563) with brix/acid ratio of the citrus juice, indicating the ripeness of the fruit. Since the acid content showed highly negative statistical relationship(r= -0.882) with the pH value of the juice, the pH value appears to be a simple indicator for the sourness of the fruit in the field test. The fruits were divided into 9 groups based on the brix/acid contents for sensory evaluation. The palatability patterns of each group changed depending on the acid content. The optimal ranges of brix/acid content for acceptable taste were 11 and $0.5{\sim}1.0$, respectively.

Comparative Feeding Values of Soybean Hulls and Wheat Bran for Growing and Finishing Swine

  • Feeding values of soybean hulls (SH) were compared to those of wheat bran (WB) for swine diets by chemical compositions, a digestion trial, a preference test by self-selection, and two feeding trials. The SH and the WB appeared to have, on airdry basis, 11.1 vs. 15.4% CP, 32.5 vs. 8.7% crude fiber (CF), 36.8 vs. 10.7% ADF, 0.6 vs. 0.1% Ca, and 492 vs. 92 ppm Fe, respectively. Lysine and total sulfur-containing amino acids in the SH were 0.66 vs. 0.37%, respectively. Apparent digestibility values of the SH were 71% for dry matter, 50% for CP, and 74% for CF. Apparent digestible energy and MEn values of the SH were 2,420 and 2,370 kcal kg$^-1$, respectively, which were comparable to those of the WB, 2,420 and 2,275 kcal kg$^-1$ (NRC, 1998), respectively. The first feeding trial was conducted with 72 crossbred growing pigs with an average weight of 29.6 kg. The pigs when fed the diets containing 0, 6 and 10% SH by replacing the WB on a weight basis for 42 days did not show significant differences in body weight gain and feed/gain ratio among the treatments. The same trends were observed in the second trial with 60 crossbred finishing pigs with an average weight of 64.5 kg when fed the diets containing 12% SH or WB for 41 days. Back-fat thickness and adjusted loin eye muscle area of the finisher pigs were also not significantly different between the two groups. When allowed to self-select from two different feed troughs containing 10% SH or WB for two weeks, two groups of 80 pigs with 10 pigs per pen consumed the two diets exactly in equal proportion. In conclusion, the soybean hulls can be included up to 10 and 12% for growing or finishing pig diets, respectively, replacing the wheat bran on a weight basis without any adverse effects on palatability of diets and animal performances.

A Study on the Use of Seasoning for NAMUL Preparation -in salt concentration-" (나물 조리시 양념사용에 관한 연구 -염분농도를 중심으로-)

  • The Namul is one of the most popular and fundamental foods in the Korean meal. The taste of NAMUL depends mostly on the seasonings put on which the salt concentration is the prevailing element of them. The purpose of this study is to investigate the optimum salt concentration by sensory evaluation. The amount of each seasoning except salt was reviewed and used following many food preparation books published. Four different concentrations of salt were added to make different salt concentrations of Namuls. The results of the study are following: 1. By reviewing the related publishments, the amount of seasoning used in 300g of cooked Namul were 15.5g of welsh onion, 7.9g of garlic, 9.0g of sesame, and 11.5g of welsh onion, 7.0g of garlic, 6.0g of sesame oil, 3.3g of sesame, 13.9g of sugar, 10.6g of vinegar and 5.6g of red pepper were the main seasonings for 300g of raw Namul. 2. The optimum salt concentration of cooked Nanul was 1.412% and that of raw Namul was 1.368%. 3. The salt concentration had no effect on the texture within the salt concentrations ranges of 0.84% through 1.89% in Platycodon Namul, Radish Namul, Soybean sprouts Namul, Pumpkin Namul, Raw Radish Namlll, Raw Cucumber Namu1. 4. The more the amount of soy sauce increases, the more the palatability drops. Platycodon and Cucumber Namuls had preference of color when the amount of soy sauce added was 0.8%∼l.0% of the Namul. On the other hand, Spinach Namul had the preference up to 4.8% of the Namul. 5. The overall taste of cooked Namul was considered to be the test in the salt concentrations 1.223%∼l.513%, while that of raw Namul was considered to be best in 1.183%∼1.373% of salt concentration. 6. According to the sensory evaluation, there was a tendency that the overall taste of Namul is consistent with the preferance of saltiness in Namul.

Preparation and Evaluation of Dried Noodle Products Made from Composite Flours Utilizing Rice and Wheat Flours (쌀가루와 밀가루 복합분(複合粉)의 제면성(製麵性)시험)

  • In an attempt to make dried noodles with composite flours utilizing rice and wheat flours, noodle-making characteristics were improved by the addition of popped rice and wheat flours to rice flour. Their quality was studied in terms of physical properties, noodle-making characteristics, cooking quality test and sensory evaluation. Dried noodle of the composite flour was produced by the conventional method. The results are summerized as follows; 1. In comparing the composite flours, the rice flour containing 30% popped rice flour had a lower maximum viscosity than that with 40% popped rice flour by method of amylograph. The composite flour(20% rice+30% popped rice+50% wheat flour) with added 2% xanthan gum showed the viscosity characteristics which was similar to that of wheat flour. 2. Addition of $1.5{\sim}2.0%$ xanthan gum and $40{\sim}50%$ wheat flour to rice and popped rice flour mixture helped to improve the noodle making properties and the cooking quality, and the noodle making properties and the cooking quality of the mixed flour were almost the same as those of wheat flour alone. 3. The composite flour (rice+popped rice+wheat flour) with xanthan gum showed a higher score in sensory evaluation than that without xanthan gum. The general acceptability scores obtained with the noodle products made of the composite flours with 30% popped rice flour was not significantly different from that of noodle products made of wheat flour alone. However, the noodle products made of the composite flours showed rather higher scores in odor and palatability than the products made of wheat flour alone.

Changes in Riboflavin and Ascorbic Acid Content during Ripening of Kimchi (절임조건별(條件別) 배추에 의한 김치의 숙성중(熟成中) Riboflavin과 Ascorbic Acid의 함량변화(含量變化))

  • For the convenience of transportation and improvement of the utility of raw chinese cabbage during harvest season, the condition of pretreatment for the raw chinese cabbage with pickle has been examined by preserving for one to ten days. The changes in the content of riboflavin and ascorbic acid in kimchi (pickled-seasoned chinese cabbage), which was manufactured by using the pickled cabbage as a main raw material, along with ginger, garlic, red pepper powder, rad-dish and fermented shrimp as seasonings, during ripening were investigated with specially referred to palatability. The yield of the pickled cabbage compared to the raw cabbage after treating with pickle was 62 to 65% in volume and 15 to 42% in weight. After 10 days of pickling of the chinese cabbage, one-third of total ascorbic acid was diminished but no change in riboflavin content was observed. During ripening of kimchi, riboflavin content in kimchi processed with the pickled cabbage has not been changed compared to the content in convention- ally made kimchi, however, slight decrease in ascorbic acid content in the kimchi processed with the pickled cabbage was as certained. The result of organoleptic test showed that the kimchi processed with the pickled cabbage became inferior to the conventionally made kimchi with the days of ripening.
