This study was conducted to investigate the productivity of Hanwoo steers by feeding self-product organic rice straw and concentrates(conventional, T1 and organic T2). Sixteen Hanwoo steers(8 months on the average) were randomly assigned to two treatment groups. Feeding trail was carried out in 2 treatment(8 heads/ treatment) by Hanwoo steers for 600 days form 8 to 28 months in age. The range of average daily gains of T1 and T2 were 0.76 to 0.77kg in the growing stage, 0.93 to 0.90kg in the first fattening stage, 0.99 to 0.84kg in the middle fattening stage, and 0.59 to 0.64kg in the latter fattening, respectively, and the gains for overall period was higher in T1 than in T2. Concentrates and total digestive nutrients(TDN)(T1) intakes per unit of kg gains were higher than T2 without significant difference. In carcass characteristics, the carcass weight in T1 were higher about 5% than in T2. According to the above results, it may be concluded that dry matter(DM) intakes, crude protein(CP) and TDN contents of feedstuff between treatments was no significant difference. but marbling in T2 score was higher than in T1 about 20%. There were no significant differences rib-eye area, back fat thickness and fat color(p>0.05).
This experiment was conducted to investigate the effect of dietary supplementation of the black soldier fly (bsf) larvae on growth performance, carcass rate, and fatty acid profile of chicken meat in broiler chicks. Four hundred eighty 1-d-old broilers (Ross 308) were distributed into 3 treatments with 4 pens at 30 birds per replicate. Treatments were corn-soybean meal based broiler diet (control) and the basal diet replaced with bsf at the level of 3 and 6% respectively. Viability was not different significantly. Body weight gain was higher in control than other treatments. Feed intake was not statistically different of treatments. Feed conversion ratio was lower in control than other treatments. Relative weight of breast meat was significantly increased in all treated groups than in control. But, another relative weights of chicken meat cuts (thigh, wing, neck, back) were not significantly different among the groups. In conclusion, it could be suggested that dietary supplementation of black soldier flylarvae could beneficially improved the performance on broiler.
The objective of this study was to investigate the effect of supplementing clay minerals and organic chromium in feed on broiler chicken under heat stress (HS). A total of 90 one-day-old broiler chicken (Arbor Acres) with an initial body weight of 45.0 ± 0.2 g were assigned to five treatment groups (six replications, three birds each cage): 1) NC group, basal diet under room temperature environment; 2) PC group, basal diet under high temperature (HT) environment; 3) ILT group, basal diet + 1% illite + HT; 4) ZLT group, basal diet + 1% zeolite + HT; 5) OC group, basal diet + 400 ppb/kg organic chromium + HT. The ILT and ZLT groups had significantly higher body weight than the PC group in 4 weeks. Apparent total tract digestibility of gross energy was increased in the ILT, ZLT, and OC groups compared to the PC group. The NC group had lower foot-pad dermatitis score than other groups. Escherichia coli population in the cecum and feces was decreased in the ZLT group than in the PC group. Lactobacillus in cecum and feces was significantly increased in the ZLT group than in the PC group. Regarding blood profiles, blood cortisol was decreased in the NC and ILT groups compared to the PC group. Water holding capacity and pH were increased in the ZLT group than the PC group. In conclusion, according to the results of growth performance, nutrients digestibility, bacteria counts, and meat characteristics, supplementation of the ZLT in broiler diet can alleviate HS.

Objective: We aimed to evaluate the color and oxidative stability of beef gluteus medius (GM) from cattle raised in organic and non-organic production systems. Methods: The GM samples (n = 10) were obtained from organic (ORG; n = 5) or nonorganic (NORG; n = 5) beef samples, sliced into 2.54-cm steaks, packaged in aerobic conditions, and stored for nine days at 4℃. ORG and NORG steaks were compared regarding myoglobin concentration, pH, instrumental color, delta E (ΔE), metmyoglobin reducing activity (MRA), and lipid oxidation on days 0, 5, and 9. Results: Feeding system did not influence (p>0.05) the myoglobin concentration. ORG steaks exhibited greater (p<0.05) meat pH, yellowness, and MRA, whereas NORG steaks exhibited greater (p<0.05) redness, chroma, R630/580, delta E, and lipid oxidation. ORG and NORG steaks exhibited similar (p>0.05) lightness and hue angle. During storage, ORG and NORG exhibited an increase in muscle pH, hue angle, and lipid oxidation; and a decrease (p<0.05) in redness, yellowness, chroma, and color stability (R630/580). Both samples exhibited a stable (p>0.05) pattern for lightness and MRA. Conclusion: Therefore, the production system can affect beef color and lipid stability during storage.
This study investigated the effectiveness of using pathogens and aqueous acids to reduce the Aspergillus ochraceus and Rhodotorula mucilaginosa contamination in livestock production environments. For this study, 1 mL of each bacterial suspension (107-108 spores/mL) was inoculated on a knife surface, dried at 37℃, and used under each treatment condition. First, to investigate the effect of organic acids, acetic, lactic, and citric acids were used. Subsequently, to select the appropriate concentration, they were prepared at concentrations of 0.5, 1, 2, 3, 4, and 5%, respectively. Accordingly, to further maximize the effect of organic acid treatment, we combined the treatment with ultraviolet light. The two strains showed a significant difference (P<0.05) compared to the initial strain, with a greater than 90% decrease in the concentrations of all organic acids. Consequently, acetic and lactic acids decreased by approximately 5 and 2 log colony forming unit (CFU)/cm2, respectively, when treated with ultraviolet light (360 mJ/cm2); however, citric acid decreased by less than 1 log CFU/cm2. However, when manufactured with 4% acetic acid, a severe malodor was emitted, making it difficult for workers to use it in a production environment. Accordingly, the optimal treatment conditions for organic acid and ultraviolet light for application were selected as follows: immersion in a 4% lactic acid solution for 1 minute and then, sterilization with ultraviolet light at 360 mJ/cm2. Finally, when a pork meat sample was cut with a knife that was finally washed with lactic acid and treated with ultraviolet light, the low level of inoculum transferred from the cleaned knife to the surface of the sample was not detected. In conclusion, using this established method can prevent cross-contamination of the surface of the meat during processing.

This study was conducted not only to evaluate the feed value for forests and organically produced-agricultural byproducts, but also to determine effects of different hilly pasture types on feed intake, nutrient digestibility and nitrogen retention in Korean black goats. Forty black goats were employed in the feeding trial and they were separated into four treatments (forages grown in chemical fertilizer, organic forages, native plants and browses) with 10 goats for each treatment. Furthermore, 12 goats, for nutrient digestibility trial, were allotted to few treatments of three goats per treatment with a randomized complete block design. Total body weight gain and average daily gain were significantly (p<0.05) decreased in the order of forages grown in chemical fertilizer, organic forages, native plants and browses throughout the trial. Dry matter intake (DM), digestible DMI, DM digestibility and nitrogen retention were highest in forages treatment grown in chemical fertilizer (p<0.05). From the above results, Organic Korean black goats fed forest byproducts as forage source and domestic organically produced-agricultural byproducts as supplemental diets were somewhat lowered in their performance. However, it showed high stability in the sustainable farming of organic Korean black goats. As the result, the consumption of organic Korean black goats might be more desirable for medicinal use rather than fur meat as a table food. The way to increase the low performance of organic Korean black goats for supplemental diets might be the additional supply of lacking nutrients for supplemental diets

The meat consumption produces a lot of bone waste everyday. Dumping bone waste without treatment results into environmental hazards. Conventional treatment by pyrolysis is slow, inefficient and produces hazardous by-products. In the work, an investigation of bone waste incinerated using thermal plasma technology is presented. A high temperature arc plasma torch operated at 33 kW was employed for the experiments. Bone waste was incinerated to remove the infectious organic matter and to vitrify the inorganic matter using plasma torch. Bone waste was reduced its 2/3 weight after the treatment. The process was highly efficient, economical, convenient, and fuel free. This method could be used as an alternative method for disposal of bone waste, small infectious animals, hazardous hospital waste, etc.

The Louisiana crawfish industry comprises the largest concentration of crustacean aquaculture in the United States. Processing plants throughout the culture region annually generate as much as 80 million pounds of peeling waste during recovery of the 15% (by weight) edible tail meat. A commercial oil extraction process for recovery of carotenoid astaxanthin from crawfish waste has been developed. Crawfish pigment in its various forms finds applications as a source of red intensifying agents for use in aquaculture and poultry industries. Crawfish shell, separated in the initial pigment extraction step, is an excellent source of chitin. Applicable physicochemical procedures for isolation of chitin from crawfish shell and its conversion to chitosan have been developed. Crawfish chitosan has been demonstrated to be both an effective coagulant and ligand-exchange column material , respectively, for recovery of valuable organic compounds from seafood processing wastewater.
Listeria monocytogenes is a representative foodborne pathogen and causes listeriosis. Enterococcus faecium CJNU 2524 was confirmed to produce a bacteriocin with anti-listerial activity. To establish optimal culture conditions for the production of the bacteriocin from E. faecium CJNU 2524, different media (MRS and BHI broth) and temperatures (25℃, 30℃, and 37℃) were investigated. The results showed that the optimal culture conditions were MRS broth and 25℃ or 30℃ temperatures. The crude bacteriocin was stable in a broad range of pH conditions (2.0-10.0), temperatures (60℃-100℃), and organic solvents (methanol, ethanol, acetone, acetonitrile, and chloroform). The bacteriocin activity was abolished when treated with protease but not α-amylase or lipase, indicating the proteinaceous nature of the bacteriocin. Finally, the bacteriocin showed a bactericidal mode of action against L. monocytogenes. Therefore, it can be a biopreservative candidate for controlling L. monocytogenes in dairy and meat products.
Recently, there has been a growing demand for natural preservatives because of increased consumer interest in health. In this study, we produced Lactobacillus rhamnosus cell-free supernatant (LCFS) and evaluated and compared its antimicrobial activity with existing natural preservatives against pathogenic microorganisms and in chicken breast meat contaminated with Escherichia coli and Staphylococcus aureus. Lactobacillus rhamnosus cell-free supernatant possessed 30 units of lysozyme activity and contained 18,835 mg/L of lactic acid, 2,051 mg/L of citric acid and 5,060 mg/L of acetic acid. Additionally, LCFS inhibited the growth of fourteen pathogenic bacteria, S. aureus, Bacillus cereus, Listeria monocytogenes, Vibrio parahaemolyticus, Listeria innocua, S. epidermidis, L. ivanovii, E. coli, Pseudomonas aeruginosa, Shigella sonnei, Shi. flexneri, Proteus vulgaris, Pseudomonas fluorescens, and Klebsiella pneumoniae. The antibacterial activity of LCFS was stronger than that of egg white lysozyme (EWL), Durafresh (DF) and grapefruit seed extract (GSE). Additionally, LCFS maintained its antimicrobial activity after heat treatment at $50^{\circ}C{\sim}95^{\circ}C$ and at pH values of 3~9. Moreover, LCFS inhibited the growth of E. coli and S. aureus in chicken breast meat. In conclusion, it is expected that LCFS, which contains both lysozyme and three organic acids, will be useful as a good natural preservative in the food industry.
