한국의 친환경적 목장형 유가공의 현황과 발전과제 (Current Status and Prospect of Environmental friendly Farmstead Milk Processing in Korea)

  • This study was conducted to research the status, history and prospects of farm scale milk processing and to develop a management strategy for small scale milk process plant in Korea. Also it aims to provide ways to apply it so as to vitalize the farm made milk products market practically. This study was also treats the practical development of dairy farm school programs through the farm scale milk processing. Farm-scale milk plant (FMP) should be some of the ideas to develop small scale and using the resources according to the local features, limited expanding in regional market, produce by consumers order amounts, management policy will be transferred organic dairy farm. A few policy suggestions to put FMP system of financial support would not from beginner, it is better to settled FMP system by government or co-operation group in practical support programs were proposed. What the state needs to do through direct involvement were to put efforts at demand expansion on FMP system products, to certificate and safety the farm made milk products marketing system settings, to build more variation chance of the milk products. What was more important, however, was support policy, to create the network of FMP market and to develop of training program contents for each FMP operation unit. The ideal FMP model for the development of Dairy Farming proposed in this research will be applied as a relevant reference in managing and realizing environmental friendly and sustainable dairy industry at the national level.

유기낙농가 사육환경 중 미생물 및 항생제 내성 분석 (Analysis of Microorganisms and Antibiotic Resistance in Organic Dairy Farm)

  • Recently, antimicrobial resistance of microorganisms has been a major concern of its relation to food safety and national health, therefore, customer's needs to organic animal food is still increasing. In this study, we reviewed the usage of antimicrobials in animal farms and antimicrobial resistance of microorganisms isolated from organic dairy farm environments. The isolates from dairy farms were Acinetobacter sp., A. lwoffi, A. johnsonii, A. towneri, Aerococcus viridans, Aeromonas media, A. veronii, Bacillus pseudofirmus, B. pumilus, B. licheniformis, Corynebacterium glutamicum, Escherichia coli, Enterococcus faecium, Lysinibacillus fusiformis, Paenibacillus illinoisensis, Staphylococcus epidermidis, S. hominis, Streptococcus equinus, S. lutetiensis, and Saccharomyces cerevisiae. Indicator microorganisms isolated from organic dairy farms were tested for susceptibility to 20 types of antimicrobials. E. coli (ATCC 25922) isolated from dairy farm fence showed resistance to 8 types of antimicrobials, such as oxacillin, penicillin, vancomycin, etc., and E. faecium isolated from feces showed resistance to 9 types of antimicrobials, such as cephalothin, oxacillin, streptomycin, etc., respectively. However, these results showed less antimicrobial resistance compare with customary dairy farm.

Milk Quality and Antimicrobial Resistance against Mastitis Pathogens after Changing from a Conventional to an Experimentally Organic Dairy Farm

  • The present study was to investigate the effect of the transition from conventional to organic dairy farming on the antimicrobial resistant pattern of pathogens in milk. A farm with tie-stall management, with an average herd size of 20 milking cows, was selected based on the owner' willingness to accept, for at least 6 months, the highly restricted protocol developed in this study. Comparisons of bacterial isolates and antimicrobial susceptibilities before changing to an organic farm system (BEFORE) and for 6 months after (AFTER) operating the experimental organic farm system were performed by Fisher's Exact Chi-square tests. Significant levels were defined at p<0.05. During the AFTER period, average frequency of antibiotic treatment was decreased from more than 3 cases/month to less than 1 case/month during which the antibiotic use was authorized only by the veterinarian. In total, 92 and 70 quarter milk samples from 24 and 18 cows during BEFORE and AFTER, respectively, were included in the study. Overall, isolates ranged from a non-resistant level for cephazolin to a very high resistant level to streptomycin (64.71% to 95.45%). Percentages of antimicrobial resistant isolates during BEFORE were significantly higher than during AFTER for ampicillin (43.48% and 5.88%, respectively) and streptomycin (95.45% and 64.71%, respectively). In conclusion, percentages of antimicrobial resistant isolates were decreased after 6 months of operating as an organic farm system.

Diagnosis of Subclinical Mastitis-Causing Pathogens Using MALDI-TOF Mass Spectrometry in a Certified Organic Dairy Farm in Korea

  • We identified mastitis-causing pathogens using matrix-assisted laser desorption/ionization time-of-flight (MALDI-TOF) in an organic dairy farm and evaluated the effects of antimicrobial restriction on antimicrobial susceptibility. A total of 43 Holstein cows without any clinical sign of mastitis were used in this study, and 172 quarter milk samples were cultured on blood agar plates for 24 hours at 37℃. Subsequently, bacterial species were identified and antimicrobial susceptibility tests were performed. The subclinical mastitis infection rates in the cows and quarters were 58.1% (25/43) and 25.6% (44/172), respectively. In the species identification, Staphylococcus aureus (40.9%) was the most prominent isolate, followed by S. chromogenes (22.7%), S. epidermis (18.2%), S. simulans (11.4%), S. haemolyticus (2.3%), S. muscae (2.3%), and S. xylosus (2.3%). In the antimicrobial susceptibility test, all isolates were 100% susceptible to 24 of 28 antibiotics, except for benzylpenicillin, cefalotin, cefpodoxime, and trimethoprim/sulfamethoxazole. The resistance rates of S. aureus, S. chromogenes, and S. muscae isolates to trimethoprim/sulfamethoxazole were 27.8%, 10%, and 100%, respectively, and the resistance rates of S. epidermis and S. xylosus to benzylpenicillin were 50% and 100%, respectively. S. chromogenes, S. epidermis, S. simulans, S. haemolyticus, and S. xylosus were resistant to cefalotin and cefpodoxime. In conclusion, restrictions on antimicrobial use for organic dairy farm certification have resulted in a high Staphylococcus spp. infection rate. Therefore, our study indicates the importance of mastitis management strategies implemented by farmers together with veterinary practitioners, even if mastitis does not appear clinically in organic dairy farms.

Use of welfare outcome information in three types of dairy farm inspection reports

  • Objective: The aim of this study was to examine the use of outcome-based observations within Assured Dairy Farm scheme (ADF), Soil Association Organic Standards (SA), and cross compliance (CC) farm assessment reports. Methods: A total of 449 ADF reports, 37 SA reports and 26 CC reports were analyzed and their objective comments categorized as either resource-based or outcome-based. Results: A mean of 61.0% of ADF questions were responded to with comments, in comparison to 25.0% of SA and, 21.0% of CC report questions. The SA and CC reports had significantly more outcome-based comments than the ADF (p<0.001). The assessors' tendency of choosing resource-based approach was revealed in the questionnaire results. Conclusion: Generally, the comments were comprehensive and contained professional judgements. Large numbers of comments provided in the ADF reports were mostly compliant and resource-based evidence, which serves as proof of assessment rather than aiding the certifying process. The inclusion of specific welfare outcome measures in the SA inspection likely increased the use of outcome-based comments in the reports, irrespective of whether the farm achieved compliance with a given standards. The CC scheme, on the other hand, focused on providing outcome-based evidence to justify noncompliant decisions.

국내 유기낙농(시유) 농가의 사양관리에 관한 실태조사 (A Survey on Feeding Management in Domestic Organic Dairy Farms)

  • 본 연구는 국내 유기축산물(시유) 생산농가에 대한 사양관리 실태 및 생산수준에 관한 조사 연구를 통해 애로사항을 파악하고 개선방안을 모색하고자 수행하였다. 2010년 말 현재 전체 낙농가 6,347호 중 유기축산물(시유) 인증 농가수는 35호로 0.57%였다. 유기축산물 인증농가 35호 중 11농가에 대한 조사결과, 호당 평균 총사육두수는 142두로 그 중 평균 착유우 69두, 건유우 13두, 육성우 및 송아지 60두였다. 성우 대비 후보축의 비율은 42.4%를 차지하고 있었다. 조사농가의 평균 산유량은 분포는 20kg 미만이 14.3%, 25~30kg 미만이 57.1%, 30kg 이상 28.6%로 분포되어 있었다. 조사농가의 유성분 및 유질분포를 보면, 유지율은 3.3%로 전국 평균 유지율 3.95%보다 많이 낮았다. 평균 세균수는 5,775개/ml로 1A 등급, 체세포수는 192,500개/ml로 1등급에 해당되어 유질등급은 우수한 것으로 나타났다. 유기축산물(시유) 생산이 농가소득에 도움이 되는지에 대한 조사결과, 도움이 된다는 응답이 90%로 나타났으나 실제적인 경영자료를 분석한 연구가 추가적으로 수행되어야 할 필요가 있다고 생각된다. 일반 우유 생산에서 유기축산물(시유)로 전환한 이유는 친환경적 목장경영을 위해서라고 응답한 비율이 54.5%로 가장 높았다. 일반 낙농에 비해 유기낙농의 어려운 점으로는 유기사료 공급의 어려움이라고 대답한 비율이 45.5%로 가장 높았다. 실제적으로 유기 조사료 자가 생산 이용률은 43.0%였고, 구입하여 이용하는 비율은 57.0%로 나타나 유기 조사료 자급에 대한 비율을 더 높이는 것이 유기낙농 발전을 위해 해결해야 할 과제임을 알 수 있다. 평균 조농비율은 38.6:61.4로 조사료 급여비율이 매우 낮음을 알 수 있었다. 향후 유기축산물(시유) 확대를 위해서는 유기사료의 안정적인 공급이 우선되어야 할 과제라 생각된다.

독일의 유기축산에 의한 젖소사육 현황과 무리나라의 발전 방향 (Milk Production of Dairy Cattle from Organic Farming in Germany and Development Trends in Korea)

  • 환경오염, 자연파괴와 자연순환원리에 의한 가축사육이 되지 않는 원인에 따른 광우병, 구제역 발생으로 현대축산에 대한 비판 이 제기되고 있다. 동물약품의 발달에도 불구하고 위험한 전염병은 사라지지 않고 있고 방제가 어려워지고 있다 독일에서는 20여년 전부터 이와 같은 현대축산의 문제점을 해소하기 위하여 환경과 조화를 이루는 유기축산이 연구되고 있으며 정부에서도 기업농 형태의 농장체계를 소규모 유기농 체제로 개편하고 있는 실정이다. 독일의 경우 1950년부터 1990년까지 산유량은 152% 증가한데 비하여 번식장애는 233%, 질병 발생은 200-300% 증가한 것으로 보고되었다. 이러한 원인은 사육환경의 불량, 부적절한 사료공급, 가축 병 발생증가에 원인이 있는 것으로 지적되고 있다. 유기축산에 의한 젖소사육의 중요한 기준은 지역 및 농장에서의 물질순환 구조로 자가사료 생산에 의한 토양-식물-가축의 통합된 순환농법을 이루는 것이다. 따라서 우리나라 축산물의 품질향상과 질병방지와 지속적인 저투입 축산을 위한 한국형 유기축산에 의한 젖소사육의 모델 설정이 요구된다 또한 국제적인 유기식품 규격인 Codex 규정과 부합하는 우리나라의 유기축산 모델설정이 필요하다

Receiver Operating Characteristic Analysis for Prediction of Postpartum Metabolic Diseases in Dairy Cows in an Organic Farm in Korea

  • Postpartum diseases should be predicted to prevent productivity loss before calving especially in organic dairy farms. This study was aimed to investigate the incidence of postpartum metabolic diseases in an organic dairy farm in Korea, to confirm the association between diseases and prepartum blood biochemical parameters, and to evaluate the accuracy of these parameters with a receiver operating characteristic (ROC) analysis for identifying vulnerable cows. Data were collected from 58 Holstein cows (16 primiparous and 42 multiparous) having calved for 2 years on an organic farm. During a transition period from 4 weeks prepartum to 4 weeks postpartum, blood biochemistry was performed through blood collection every 2 weeks with a physical examination. Thirty-one (53.4%) cows (9 primiparous and 22 multiparous) were diagnosed with at least one postpartum disease. Each incidence was 27.6% for subclinical ketosis, 22.4% for subclinical hypocalcemia, 12.1% for retained placenta, 10.3% for displaced abomasum and 5.2% for clinical ketosis. Between at least one disease and no disease, there were significant differences in the prepartum levels of parameters like body condition score (BCS), non-esterified fatty acid (NEFA), total bilirubin (T-bil), direct bilirubin (D-bil) and NEFA to total cholesterol (T-chol) ratio (p < 0.05). The ROC analysis of each of these prepartum parameters had the area under the curve (AUC) <0.7. However, the ROC analysis with logistic regression including all these parameters revealed a higher AUC (0.769), sensitivity (71.0%), and specificity (77.8%). The ROC analysis with logistic regression including the prepartum BCS, NEFA, T-bil, D-bil, and NEFA to T-chol ratio can be used to identify cows that are vulnerable to postpartum diseases with moderate accuracy.

젖소 액상분뇨에 화학제재를 첨가 시 질소 함량에 미치는 영향 (Effects of Chemical Additives on Nitrogen Contents in Dairy Slurry)

  • To determine changes in nitrogen contents and optimal rates as N fertilizer, we investigated nitrogen characteristics in the slurry in the respond to the application of 0, 0.5, and 1 g of ferrous sulfate or alum /25g of dairy slurry. Additions of ferrous sulfate or alum increase total nitrogen, inorganic nitrogen, available nitrogen, and predicted available nitrogen contents in dairy slurry, resulting in reduction in pH. The best results were found in the treatment with 0.5 g of ferrous sulfate or alum /25 g of dairy slurry. In conclusion, the use of ferrous sulfate or alum as on-farm amendment to dairy slurry should be represented an alternative to improve N in dairy slurry.

네덜란드 지속 낙농 모델 De Marke (De Marke, Dutch Model for Sustainable Dairy Farming)

  • The Netherlands produce more than 11 million tonnes of milk per year, and approximately 60% of the milk is exported. Dutch milk production is five times higher than that of Korea, even though Korea comprises a land area three times greater than the Netherlands. Upscaling and intensification have characterized the Dutch way of dairy farming since 1960, and adverse effects of the intensification of dairy farming became evident from the late 1970s and early 1980s onwards. The transition toward a more sustainable farming system is a central element of the Dutch agenda for the reconstruction of the livestock production sector. The environmental problems in Dutch dairy farming in the 1980s have led to the establishment of the experimental dairy farm "De Marke" which aims at improving the utilization of fertilizers and feeds, through minimizing nutrient requirements, maximizing the use of nutrients in organic manure and homegrown feeds, and through the targeted use of fertilizers and feeds. 85 cows at "De Marke" produce 720 tonnes of milk per year, using 55 ha of pasture in a sustainable manner. That means, 150,000 ha of pasture are required to produce 2 million tonnes of milk, which the current milk production of Korea. It is urgent to provide sufficient pasture for sustainable milk production in Korea, and primarily the transition to pasture of surplus rice paddies, resulting from of a decrease in rice consumption, should be considered.
