In the process of growth and development, plants not only absorb essential nutritional elements, but also absorb radioactive and non-essential elements from the environment, and their distribution varies in different parts of the plant. In this study, neutron activation analysis and gamma spectrometry were performed on stems, roots, and leaves of vegetables. The results indicate that the accumulation of radionuclides and multi-elements depends on the plant type and plant parts. Activity concentrations of 226Ra and 232Th in plants were accumulated in the following order: Roots > Stems > Leaves. The highest concentrations of 40K and 210Pb were observed in the stems and leaves of plants, respectively. Essential nutrient requirements of plants are in the following order: K > Ca > Mg > Fe > Zn > Mn. Among the nonessential metals, the concentration of Na in the vegetable sample was much greater than those of the other elements. The K/Na ratio in the plant depends on the type of plant and the translocation within the plant.
Two promising varieties of forage sorghum viz. HD-15 and J. Sel-10 were identified for their higher forage yield (350-400 quintals per hectare) compared to traditional/existing variety, HC-136 at Indian Grassland and Fodder Research Institute, Jhansi. Silage of these three forage sorghum varieties viz., HD-15, J.Sel-10 and HC-136 were prepared in three concrete silos for their nutritional evaluation in sheep. Twelve adult Muzaffarnagari Ewes, divided into three equal groups of 4 each, were offered a particular variety of sorghum silage ad libitum over a period of 30 days followed by a 6 day metabolism trial and a collection of rumen liquor and blood samples. The HD-15 variety of forage sorghum silage contained higher crude protein (CP) than both the J.Sel-10 and HC-136. Average daily dry matter (DM) intake (% of live weight) differed significantly (p<0.05) in sheep that were fed the different varieties of silage, with the maximum amount in HD-15 (2.55) followed by J.Sel-10 (2.49) and HC-136 (1.84). The average apparent digestibility of all the nutrients was low in the sheep that were fed the HC-136 variety of sorghum silage when compared to both HD-15 and J.Sel-10. However, digestibility of organic matter (p<0.05) and crude protein (p<0.01) was significantly low in the HC-136 variety. The average daily nitrogen retention was-0.19, 2.15 and 0.42 g in HC-136, HD-15 and J.Sel-10, respectively which differed significantly (p<0.01). The average digestible crude protein and total digestible nutrient (TDN) contents (%) of the silage varieties were higher in HD-15 (3.14 and 55.3) than HC-136 (0.25 and 58.6) and J.Sel-10 (1.58 and 55.3) varieties. On comparing to the maintenance requirements (ICAR, 1985) for dry matter, crude protein and total digestible nutrients, both the improved varieties (HD-15 and J.Sel-10) almost met the requirements except crude protein, which met only 73.3% of the requirement by J.Sel-10, while the HC-136 variety was unable to meet the requirements. The average rumen pH and total volatile fatty acids concentrations were comparable among the groups. However, concentrations of nitrogen metabolites were higher in the animals fed the HD-15 variety of silage. Varieties of sorghum silage also did not have any influence on the concentration of the blood metabolites. It was concluded that the HD-15 variety of sorghum silage was nutritionally superior to both J.Sel-10 and HC-136 silage.

This article evaluated levels of Estimated Average Requirements (EARs), Reference Nutrient Intakes (RNIs), and Acceptable Macronutrient Distribution Ranges (AMDRs) of protein using the recently revised Dietary Reference Intakes (DRIs) for Koreans (2020). Dietary protein requirements are based on amounts sufficient to satisfy physiological demands to accomplish nitrogen equilibrium. The same principle was applied to estimate EARs and RNIs, for adults in DRIs conducted in 2015 and 2020 in Koreans. EAR was estimated to be 0.73 g/kg body weight/day, according to data (0.66 g/kg body weight/day) obtained using the nitrogen balance method and adjusted by efficiency of protein use (90%). RNI was calculated as EAR increased by an amount equal to twice the standard deviation of an age group so as to cover 97.5% of the group and was found to be 0.91 g/kg body weight/day. For weaned infants, children, and adolescents, growth requirement was added to estimate EAR. In particular, growth requirement was adjusted by efficiency of protein use in the revised EAR, which led to higher EARs for weaned infants, children, and adolescents of both genders as compared with 2015 DRIs. The AMDR for protein was set at 7%-20% of energy intake, which was the same as 2015 DRIs. Current, average protein intake by the Korean population is almost twice times the EAR, which suggests it might be better to increase the minimal margin for AMDR. However, it was not adjusted in this revision due to lack of evidence.

The aim of this study was to evaluate the load of nutrient from paddy fields. Water management practices that can reduce eutrophication and meet water quality requirements will also be addressed. Continuous monitoring from May to September in 2002 and 2003 was conducted for water quantification and qualification at the intensive paddy fields in Icheon, Gyunggi province of Korea. Water balance and concentration variation of nitrogen and phosphorus in the water were independently compared for water quality assessment at each rice cultivation period. Rice land preparation and transplanting periods usually marked the highest water demand when compared to other periods of cultivation. Overall, a greater net irrigation ratio was observed during the transplanting period in 2002 (92.3%) and 2003 (87.2%). The measured total N loads of precipitation, irrigation, drainage, and percolation during the rice cultivation period were 9.9, 41.6, 22.1, and $5.5kg\;ha^{-1}$ for 2002 and 15.8, 55.4, 17.3, and $7.5kg\;ha^{-1}$ for 2003, respectively. The measured total P loads of precipitation, irrigation, drainage, and percolation during the rice cultivation period were 2.1, 13.0, 3.6, and $1.8kg\;ha^{-1}$ for 2002 and 1.6, 15.0, 5.0, and $1.2kg\;ha^{-1}$ for 2003, respectively. Daily nutrient load followed the pattern of surface drainage water, but this pattern was changed by rainfall events. The nutrient load in drainage water depends on rainfall and surface drainage water amount from the paddy fields. Interestingly, the load of total N and total P output was smaller than the input load due to the natural infiltration that Occurred during the rice cultivation period. It is concluded that the paddy fields have a beneficial effect on the ecosystem and can reduce eutrophication in the water.

Purpose: This study examined the nutrient intake and dietary habits based on breakfast consumption in Korean adolescents. Methods: The data of the 2013 ~ 2015 Korea National Health and Nutrition Examination Survey (KNHANES) were used in this study. The analysis included 1,281 adolescents aged 12 to 18 years. The subjects were divided into two groups (EBF: eating breakfast, n = 911; SBF: skipping breakfast, n = 370). Results: The EBF group was significantly younger than the SBF group. In addition, the EBF group had a significantly lower frequency of skipping dinner than the SBF group. The EBF group consumed significantly higher levels of most nutrients except for vitamin A than the SBF group. The percent of nutrient intake under the EAR (estimated average requirements) in the EBF group were also significantly lower than that in the SBF group. Moreover, the NAR (nutrient adequacy ratio) and MAR (mean adequacy ratio) of the EBF group were significantly higher than those of the SBP group. The intake of cereal, sugars and sweeteners, vegetables, and eggs in the EBF group was significantly higher than that in the SBF group. Conclusion: The habit of skipping breakfast in adolescents leads to a decrease in the total nutrient intake and imbalanced dietary habits. Breakfast consumption in adolescence is very important. Therefore, more studies will be needed to develop nutrition education systematically in Korean adolescents.
Purpose: This study was conducted to examine coffee consumption behaviors, dietary habits, and nutrient intakes by coffee intake amount among university students. Methods: Questionnaires were distributed to 300 university students randomly selected in Gongju. Dietary survey was administered during two weekdays by the food record method. Results: Subjects were divided into three groups: NCG (non-coffee group), LCG (low coffee group, 1~2 cups/d), and HCG (high coffee group, 3 cups/d) by coffee intake amount and subjects' distribution. Coffee intake frequency was significantly greater in the HCG compared to the LCG (p < 0.001). The HCG was more likely to intake dripped coffee with or without milk and/or sugar than the LCG (p < 0.05). More than 80% of coffee drinkers chose their favorite coffee or accompanying snacks regardless of energy content. More than 75% of coffee takers did not eat accompanying snacks instead of meals, and the HCG ate them more frequently than LCG (p < 0.05). Breakfast skipping rate was high while vegetable and fruit intakes were very low in most subjects. Subjects who drank carbonated drinks, sweet beverages, or alcohol were significantly greater in number in the LCG and HCG than in the NCG (p < 0.01). Energy intakes from coffee were $0.88{\pm}5.62kcal/d$ and $7.07{\pm}16.93kcal/d$ for the LCG and HCG. For total subjects, daily mean dietary energy intake was low at less than 72% of estimated energy requirement. Levels of vitamin C and calcium were lower than the estimated average requirements while that of vitamin D was low (24~34% of adequate intake). There was no difference in nutrient intakes by coffee intake amount, except protein, vitamin A, and niacin. Conclusion: Coffee intake amount did not affect dietary nutrient intakes. Dietary habits were poor, and most nutrient intakes were lower than recommend levels. High intakes of coffee seemed to be related with high consumption of sweet beverages and alcohol. Therefore, it is necessary to improve nutritional intakes and encourage proper water intake habits, including coffee intake, for improved nutritional status of subjects.
Purpose: This study investigated fruit and vegetable intake and associated socio-demographic and dietary factors, and compared the nutritional intake according to the fruit and vegetable intake level among Korean adolescents. Methods: This study was conducted on 1,676 adolescents who participated in the 2016-2019 Korea National Health and Nutrition Examination Survey. The subjects were classified into four groups based on the fruit and vegetable intake recommendations in 2020 Dietary Reference Intakes for Koreans: Application (KDRIs Application): sufficient fruit intake (SF) group, sufficient vegetables intake (SV) group, sufficient fruit and vegetables intake (SFV) group, and not sufficient fruit and vegetable intake (NS) group The nutrient intake per day in each group was compared.. Logistic regression analysis was performed to examine the factors influencing fruit and vegetables intake. Results: In the sample of adolescents surveyed, only 1.40% met the recommended daily intake of fruits and vegetables, while 79.54% fell below the established threshold for adequate consumption. Female adolescents, those with fathers holding university degrees or above, and those who ate breakfast at least three times a week were likelier to have adequate fruit intake. Male adolescents and those from higher-income households were likelier to consume vegetables. Females, those who ate out daily, those from lower-income households, and those who understood food labels were likelier to have adequate fruit and vegetable intake. The daily nutrient intake and intake-to-requirement ratio significantly differed according to the fruit and vegetable intake groups. The NS and SF group had lower ratios for calcium and iron, while the NS group had the lowest vitamin A and C intake. By contrast, the SFV group met almost all daily nutrient requirements, except for calcium and vitamin A. Conclusion: This study highlights the need for nutrition education programs to encourage adolescents to consume adequate amounts of fruits and vegetables.

The population aged 95 years and older in Seoul approximately increased to five-fold over the past 10 years, while nationwide rates increased to three-fold. In order to examine the dietary habit and nutritional status of oldest-old population living in Seoul, we recruited 87 subjects (25 males and 62 females) aged 95 years and older. The prevalence of underweight (BMI < 18.5 $kg/m^2$) and obesity (BMI ${\geq}25kg/m^2$) were 18.2% and 18.2% in males, and 20.8% and 9.4% in females, respectively. In self-assessment of health, only 25.3% answered to be unhealthy. More males exercised regularly and reported a wide range of activities than females. The average of %Kcal from carbohydrate, protein and fat (C : P : F) was 64.9 : 13.8 : 21.2 in males and 68.1 : 14.2 : 17.7 in females. The average daily energy intake was 1,307 kcal in males and 1,304 kcal in females. More than 75% of subjects were taking under estimated average requirements (EAR) for vitamin $B_1$, $B_2$ & C and Ca. The average of mean adequacy ratio (MAR) was 0.66 in males and 0.70 in females, and 28.8% of males and 12.9% of females were in MAR < 0.50. Based on MAR, 32.0% of males and 14.5% females were classified as normal and 16.0% of males and 25.8% of females were classified as malnourished. Our subjects were taking more animal food, especially milk and its products, compared to those living, in rural areas. However, a significant proportion did not meet the EAR for vitamin $B_1$, $B_2$ & C and Ca.
An in vitro and a feeding trial were conducted to investigate the effect of xylanase supplementation on the feeding value of growing pig diets containing high proportions of Chinese double-low rapeseed meals (DLRM). Seven diets were formulated to meet NRC (1998) nutrient requirements. Diet 1 based on corn-soybean meal was used as positive control 1, and diet 2, a practical diet which incorporated a conventional level of Chinese DLRM (60 g/kg diet), as positive control 2. Diet 3 contained a higher level of DLRM (100 g/kg diet) as the negative control. Diet 3 plus xylanase at 0.10, 0.25, 0.50 and 0.70 g/kg diet created diets 4, 5, 6 and 7, respectively. The seven diets were incubated in triplicate with the in vitro two-stage enzyme incubation method to predict responses of diets to xylanase in terms of digestibility of dry matter (DM), crude protein (CP) and neutral detergent fibre (NDF). In vitro, the negative control had the lowest CP and NDF digestibility. Both DM and CP digestibility were increased (p<0.05) owing to xylanase supplementation either at 0.50 or 0.70 g/kg diet, and NDF digestibility was improved following xylanase addition at all of the test levels. There was a high linear correlation ($r^2>90$, p<0.05) between the activity concentration of the enzyme when transformed into its logarithmic value and in vitro digestibility coefficients of DM, CP or NDF. In the feeding trial, 112 crossbred pigs were randomly assigned to seven dietary treatments with 16 replicate pens of one pig each. An obvious dose effect on growth rate was observed ($r^2=0.79$, p<0.05) within the inclusion levels of xylanase. Compared with the negative control, xylanase addition at 0.70 g/kg diet resulted in significantly increased ADG (878 g/d vs. 828 g/d, p<0.05), and a tendency towards improved growth rate (868 g/d vs. 828 g/d, p = 0.10) was also observed following the inclusion of xylanase at 0.50 g/kg diet. It would appear that the nutrient utilization of corn and Chinese DLRM diets by pigs could be enhanced by an appropriate amount of xylanase addition. The in vitro and in vivo results suggested that the in vitro incubation method is feasible for predicting responses of pigs to exogenous enzymes and identifying those preparations that possess potential for improvement of the nutritive values of feedstuffs.
It is known that Korean pregnant women take iron supplements at a higher than the recommended level. This study was designed to provide data on current iron intake levels both from food sources and supplement to better guide iron supplement use during pregnancy. We also explored associations of iron supplement intake levels with various sociocultural factors and pregnancy outcomes. Dietary intakes of 510 pregnant women were assessed by a validated 102-item food frequency questionnaire, and information on types and amounts of nutritional supplement intakes were also attained. While dietary intake levels of most nutrients exceeded the KDRIs (Korea Dietary Reference Intakes: EAR: Estimated Average Requirements), folate fell short of the KDRIs. A total of 428 women (83.9%) reported to take iron supplement. The pregnant women were divided into the three groups (group I: Fe supplement intake ${\le}$ EAR, group II: EAR < Fe supplement intake ${\le}$ 3 times of EAR, group III: 3 times of EAR < Fe supplement intake). The mean dietary intake of iron was 24% of the total iron intake for pregnant women. Iron intake from food was not significantly different among I, II, and III. In case of iron intake from supplements, the most frequent dose (34.1%) was 90-100 mg/day, and the mean iron supplement intake was 362% of the EAR. The study findings showed that those with higher levels of iron supplements had better meal quality measured by NAR (Nutrient Adequacy Ratio) and INQ (Index of Nutrient Quality). In addition iron supplement intake levels were significantly related to age (20s: 66.5 ${\pm}$ 38.6 mg/day, 30s: 77.3 ${\pm}$ 47.8 mg/day, p < 0.0116) and experience of childbirth (1st pregnancy: 70.9 ${\pm}$ 41.2 mg/day, 2nd pregnancy: 64.5 ${\pm}$ 39.5 mg/day, ${\ge}$ 3rd pregnancy: 94.4 ${\pm}$ 63.8 mg/day, p < 0.005). However, no significant difference was found between iron supplement intake levels and various pregnancy outcomes including birth weight, birth height, gestational age, weight gain during pregnancy, and jaundice. It is worrisome that iron intake by supplement use greatly exceeded the EAR, suggesting the need of appropriate guidelines for iron supplement intake during pregnancy. Thus iron overdose from supplements in pregnancy should be considered as a serious condition.
