100세 이상 장수노인의 식생활 경험 (Experiences of Dietary Life on Elderly Over 100 Years Old)

  • Purpose: The purpose of this study was to identify and describe phenomenological structures of the experiences of dietary life on elderly over 100 years old. Methods: The participants of this research included nine persons over the age of 100 years of age and ten family members who assisted in the dietary regime. Qualitative data were collected by individual in-depth interviews. Data were analyzed using Colaizzi's method of phenomenology. Results: The results of the research provide four categories and nine theme clusters. The categories included a rustic menu consisting of vegetables, grain-oriented traditional food, sensible dining table in harmony with nature, dietary life and emphasis on how to eat. The nine theme clusters were preference for fresh vegetable, preference of cooked potherb, boiled rice and cereal as main staple food, intake of soybeans, preference of native local foods, non-preference of unhealthy foods, select healthy and control food portion sizes for longevity, objection to light eating, and enjoying a meal. Conclusion: The findings of the study offer insight about the nutrition patterns among the people over 100 years of age.

소설 "토지"에 나타난 경상남도 향토 음식문화 (A Study on the Kyungsangnamdo Native Local Food Culture in the Novel "Toji")

  • This study was intended to outline the characteristics of the food culture in the area of Kyungsangnamdo and its modernization by interpretation and analysis of the novel Toji, which was set in Hadong, Jinjoo in the area of Kyungsangnamdo in the early 20th century. The characteristics of the Kyungsangnamdo area's native dish during the Japanese ruling era in the latter half of the Choson dynasty are as follows. In the first part of the novel, which spans from 1897 to 1908, vegetable and grain food development can be seen in the area of Hadong, the interior plains of Kyungsangnamdo, where there is a typical farming village in the mountains. The second part of the novel, which spans from 1911 through 1917, includes some mentions of the properties of Kyungsangnamdo area's native dishes through the lens of emigrated Koreans living on Gando island. Gando island is in China, and is where Seohee, the heroine, escapes from her homeland and remains for a period of years. There is a unique type of seafood in the Gando area using fresh marine products, exactly the same as in the Kyungsangnamdo area. The third part of the novel spans 1919 through 1929, after Seohee returns to her own country and regains her house. There is a noticeable description of food culture in the area of Jinjoo in Kyungsangnamdo through the description of Seohee focusing on the education of her children. The well-described features of Jinjoo are boiled rice with soup of beef leg bones and Jinjoo bibimbob, with vegetables and a variety of foods using cod. Cod are caught in large quantities in Kyunjgsangnamdo, and cities in the area grow to medium size as the area became traffic-based. The fourth part of the novel spans from 1929 through 1938, and includes very detailed descriptions of characters and background locations. Salted fish combined with the wild ingredients of Mt. Jiri feature prominently in the Kyungsangnamdo's area descriptions. The fifth part spans from 1940 through 1945, and as the Japanese colonization era ends, the foods described in Kyungsangnamdo seem to develop the usage of soybean paste. With abundant fish and shellfish Kyungsangnamdo, the dishes that evolve to use soybean paste include mussel soybean paste soup, picked bean leaves in soybean paste, chaitgook - cold soup from soybean paste, and seolchigook used with seaweed and sea laver.

영주향토음식 콘텐츠개발을 위한 주성분분석 및 문화유산 (소수서원, 부석사) 자원의 활용 연구 (Utilization Research of Cultural Heritage Resources (Sosuseowon & Buseoksa) and Primary Components Analysis for Development of Yeongju Local Food Content)

  • This study was applied to the PCA (Primary Components Analysis) for the sixteen table setting at the 2017 Yeongju local food contest. In this contest, we have developed a seonbibansang and a temple one-dish meal. As a result of the correlation analysis, the applicability and composition were 0.7980, harmony and taste were 0.7747 and easiness and composition were 0.7435. In the Primary Component $Y_1$, all the variables $X_1{\cdots}X_{10}$ mean that the quality of the food had positive values greater than zero. The second Primary Component $Y_2$ has a large positive value while $X_4$, $X_5$, $X_6$, $X_7$, $X_9$ have negative values. $Y_2$ is a value representing the sanitation variable, and can be considered a traditional and characteristic table setting natural to the native food in Yeongju. In addition, we developed an-hyangbansang and seonmyoaecheong food content by applying PCA factors (the elements of harmony, ease and sanitation). Table setting of an-hyangbansang provided energy 61.5%, protein 20.0% and fat 18.5% and seonmyoaecheong provided energy 62.7%, protein 15.4% and fat 22.2%. This satisfied the necessary amount of caloric nutrient intake that could be provided in a meal. Especially through story-telling, a modern interpretation - or rebranding - of local and traditional foods could make these traditional food products familiar to consumers currently. The developed table setting is felt to be conductive to the possible commercialization and introduction of traditional food into the mainstream commercial food service industry.

부산향토음식 아귀찜의 표준조리방법 및 영양성분에 관한 연구 (The Recipe Standardization and Nutrient Analysis of Aguyjjim (Local Foods in Busan))

  • 본 연구는 부산 향토음식인 아귀찜의 표준조리방법과 영양성분분석을 행하였으며 그 결과는 다음과 같다. 1. $\ulcorner$자산어보$\lrcorner$에 아귀의 형태 및 식이방법에 대하여 적고 있으나 조리법은 기록되어 있지 않다. 예전에는 거름이나 사료용으로 쓰였으나 아귀찜의 붐이 형성된 80년대부터 고단백 식품으로 인정되면서 고급어종으로 부상되었다. 2. 표준조리방법은 요리서 및 부산아귀찜 전문점의 레시피에 근거하여 식재료의 종류 및 양,조리방법을 3차례의 실험조리 및 관능검사를 거쳐서 수정.보안하여 확정하였다. 3. 표준조리방법으고 조리된 부산아귀찜의 특징은 생아귀, 콩나물, 해물조미료, 맛국물, 전분, 미세한 고춧가루 등의 식재료와 볶음.찜이 병행되는 조리법, 화력의 강약 조절 등으로 독특한 감칠맛과 담백한 맛을 가지고 있다. 4. 아귀찜 100 g당 에너지는 89 kcal, 단백질 10.7 g, 지질 1.3 g, 당질 3.0 g, 식이섬유 2.5 g, 칼슘 167 mg, 철분 1.3 mg 이었다. 또 1인분(370 g)당 에너지는 329 kcal, 단백질 40 g, 지질 4.8 g, 당질 11.1 g, 식이섬유 9.6 g, 칼슘 167 mg, 철 4.8 mg으로 단백질, 철분함량이 높았다. 아미노산 조성에서는 감칠맛 성분을 가진 glutamic acid, aspartic acid 등의 산성 아미노산의 할량이 높았으며 맛에 영향을 주는 유리아미노산은 asparagine, glutamic acid, taurine의 함량이 높았다. 구성지방산으로는 oleic acid, linoleic acid, palmitic acid의 순서로 함량이 많았다. 아귀찜은 단백질과 불포화지방산의 함량이 높은 아귀와 콩나물 등 20여 종의 식품이 이용된 전통.향토음식으로 식이섬유의 양은 많고 열량은 낮아 저열량식 이고 다이어트식이며 또한 영양균형식이다. 이러한 맥락에서 아귀찝은 많은 전통.향토음식이 가지고 있는 생활습관질환의 예방에 호능이 있는 것으로 사료된다. 각 지역의 전통 향토음식의 발전은 우리음식문화발전의 기틀이 되고 있지만 점차 전통음식이 사라져가고 있는 이 때 부산의 전통향토음식인 아귀찝의 표준조리방법을 제공함과 동시에 일반영양소, 아미노산, 지방산 조성을 분석하여 그 자료를 제시하였다. 이 과학적.영양적 자료가 가정을 비롯한 전문점, 단체 급식시설에서 널리 활용되어 전통향토음식의 보급 및 우리음식의 전통성.향토성의 전수가 확대되길 기대하며 우리음식의 세계화에도 도움이 되길 바란다.

농가맛집의 현황과 지역사회발전을 위한 활성화방안 (Current Situation in Farm Restaurants and Improved Strategies for Rural Development)

  • Green tourism has recently focused on an alternative plan for activating a rural economy and coping with an income inequality between urban and rural areas. The Rural Development Administration has supported farm restaurants with the aim of increasing the income of farmers, determined unique native local foods and developed programs based on the experience rural life since 2007. Farm restaurants, which are the new type of local food restaurants, have unique food and various experiencing programs that reflect their own regional characteristics. We would like to understand how the farm restaurants have been developed and what types of characteristics they have based on the currently operating farm restaurants. The management situations and value of farm restaurants as tourist attractions were investigated as well in the tools for rural development.

향토 음식 상품화 연구 - 보성 지역 중심으로 - (Studies on Commercialization of Korean Native Foods - Focused on Boseong Area -)

  • 보성 중심으로 향토 음식 상품화 주제로 연구하였으며, 연구의 목적은 보성의 향토 음식이 산재되어 있으나, 지방색을 살린 지역의 전통 조리법에 따른 코스 음식 개발로 지역 농특산물 부가가치를 향상시키는데 그 목적이 있다. 통계기법은 표본의 인구통계학적 특성, 농가 맛집 빈도 분석, 상차림 빈도 분석, 사업에 관한 빈도 분석을 하였다. 조사는 2009년 6월부터 8월 말까지 보성에 소재한 향토 음식 전문가 27명을 대상으로 실시되었다. 조사 방법은 응답자가 직접 기입하는 자기 기입형 설문지법을 이용하였다. 배포된 총 27부의 설문지 중에서 27부가 회수되었으며, 27매가 최종 분석에 사용되었다. 분석 결과 보성의 4계절 상차림 메뉴를 개발하였다.

'아귀찜'의 등장과 확산 (Appearance and Diffusion of Aguijjim (아귀찜))

  • This study was conducted to track the appearance of Aguijjim and its popularity on the national level. Furthermore, changes in the monkfish recipe and how they impacted the consumption of monkfish were investigated. It is assumed that monkfish was consumed by Japanese in Korea during the Japanese colonial era. After liberation, people cooked the fish as soup. In the 1960s, Aguijjim was invented in Masan. There is great controversy regarding how the dish was born. It has been asserted that it was created by one specific person, that refugees with insufficient food developed, and that it is just an advancement of Bugeojjim. Aguijjim restaurants began to appear in Seoul in the 1970s, and in the 1990s streets full of Aguijjim restaurants formed. Moreover, popular music and literature referenced Aguijjim in the late 1990s. As Aguijjim has developed and the formation of Aguijjim street have combined, the consumption of monkfish has increased drastically, leading to its import. As cooking methods have transformed, the fish with the unpleasant look which was thrown out in the past, have dramatically gained public interest. 'Masan Aguijjim' became an independent brand that represents a local food that has also been nationalized in a short amount of time.

한국의 지역적 특성을 고려한 STS 모듈 및 그 평가 방법의 개발 (Development of STS Modules Reflecting Korean local Concerns and Their Evaluation Tools)

  • 본 연구는 한국이라는 지역적 상황에서 고유하게 제기되는 과학-기술-사회 문제들 중 네 가지 과학-기술-사회 관련 문제를 주제로 한 한국의 지역적 관심을 고려한 STS 모듈과 그 모듈이 학교 현장에서 유용하게 쓰일 수 있도록 하기 위한 적절한 과정 평가 방법을 개발하는 것을 그 목적으로 하는 STS 교재 개발 연구이다. 본 연구에서 개발된 모듈은 모듈 1. 보신식품, 정말 먹어야 하나요?, 모듈 2. 외래종과 토착종의 생존경쟁, 모듈 3. 시화호의 교훈, 모듈 4. 음식물쓰레기, 돈이라면 버리시겠습니까? 등 네 가지이다. 각 모듈들마다 고유한 방법으로 학생 활동 과정을 평가할 수 있는 과정평가 방법을 준거형과 서술형의 두 가지 형식으로 새로 개발하여 도입하였는데, 이는 과학 수행평가 방법에 관한 아이디어가 절실히 필요한 일선 과학교사들에게 평가 방법의 아이디어 뱅크 역할도 겸할 수 있다.

국내 자생 식물추출물의 DPPH radical 소거활성 및 항균성 스크리닝 (Screening of DPPH radical scavenging and antimicrobial activity of extracts from local some native plants)

  • 항산화 및 항균활성을 가진 천연물을 활용해 합성보존료를 대체하고자 하는 연구가 활발한 가운데 국내 자생 식물 중 135종을 대상으로 DPPH radical 소거활성을 측정하였다. 이중 항산화 활성이 10%대로 낮게 나타난 식물 8종에 대해 항균효과를 조사하였다. 식물 추출물의 DPPH radical 소거활성은 0.41~94.84%로 다양하였으며, 가장 효과가 좋은 식물은 꽃향유와 우엉으로 각각 94.84, 80.55%를 나타내었다. 우엉은 잎의 경우 26.87, 뿌리 19.29%의 활성을 나타내 동일 식물이라도 추출부위에 따라 활성의 차이가 있을 것으로 보인다. 선이질풀과 비쭈기나무는 각각 그람양성균인 B. subtilis, 그람음성균인 E. coli 및 Candida속인 C. albicans에 대해 2.2~10.8 mm 수준의 항균활성을 나타내었다. 각 식물에 대한 다양한 추출법을 적용하여 기능성을 확인하고 이들 항산화성 물질에 대한 추가 연구가 진행되어야 할 것으로 사료된다.

결혼이주여성의 가정생활문화 이해 및 적응에 관한 사례 연구 -서울지역 어린이집 어머니를 대상으로- (The Case Study on Understanding and Adjustment about the Family Living Culture in Marriage Emigration Females - Focused on Mothers in a Day- Care Center in Seoul -)

  • The purpose of this study was to investigate how marriage migration females understand and adjust to the culture of family life in Korea. The study was the conducted by extensively interviewing one member from each of a total of 16 women's multicultural families at a daycare center area in Seoul between June 16, 2010 and July 28, 2010. The results can be summarized as follows: All interviewees were marriage migration females, in the range 20 to 50 years of age, and with middle educational backgrounds. They all had middle-level incomes. Through the content analysis of the informants' responses, three major factors were found to influence the understanding and adjustment of to the culture of family living: personal factors, familial support, and sociocultural support systems. Among the personal factors, the intimacy of the married couples was trouble major factor. An issue that tended to arise was that Korean husbands' traditional culture in terms of their way of thinking was often different from that of the wife's culture. However, husbands supported their wives' outside activities and friendships in order to help them adjust to the culture of family living. The husbands made an effort to understand their wives' original culture and national food, often visiting restaurants that served their wives' national cuisine. In terms of familial support, the most important factors affecting marriage migration females were orienting the education of children to the mother's native language, cooking their national foods, and visiting the mother's nation with the children. Marriage migration females had the following requires: The teacher in the daycare center needed to be interested in children from multicultural families and encourage self-pride in the marriage migration females' children. In terms of sociocultural support systems, marriage migration females are conscious of the indisposition and lack of consideration in Korean life. However, the Korean government and local provinces are concentrating attention on education for marriage migration females in terms of language, because learning the language can help these women to become accustomed to the rituals of Korean life. Marriage migration females make an effort to understand and adjust to Korean family living culture that involves the food culture for ceremonial occasions, folk plays, and places of historic interest. A matter of importance is Korean people's effort to understand and adjust to multicultural family with their distinctive cultures. Welfare policy related to multicultural families involves adopting supportive laws and actions.
