Carotenoid Pigments of Bivalves 1. Comparison of Carotenoid Pigments from Muscle of Mussel and Blue mussel (이매패의 Carotenoid 색소성분 1. 홍합과 진주담치 근육의 Carotenoid 색소성분의 비교)

  • Carotenoid pigments from muscle of mussel, Mytilus coruscus, and blue mussel edulis, were separated by thin layer and column chromatography. The isolated carotenoids were identified by comparative test with reference carotenoids, reduction with sodium borohydride, isomerization with iodine and absorption spectrophotometry. The carotenoid content in the muscle of mussel were 0.4mg% in male and 2.7mg% in female, and the carotenoids were composed of 23.4%, 33.4% mytiloxanthin, 26.3%, 22.5% 3, 4, 3'-trihydroxy-7', $8'-didehydro-{\beta}-carotene$, 24.8%, 22.8% pectenoxanthin, 14.0%, 9.9% pectenolone and 5.1%, 6.1% diatoxanthin in male and female, respectively. While, the carotenoid contents in the muscle of blue mussel were 1.1mg% in male and 3.2mg% in female, and the carotenoids were composed of 33.8%, 35.6% mytiloxanthin, 28.4%, 44.7% pectenoxanthin, 18.1%, 5.0% diatoxanthin, 9.7%, 8.7% pectenolone and 5.5%, 3.1%, 3, 4, 3'-trihydroxy-7', $8'-didehydro-{\beta}-carotene$ in male and female, respectively.

Study on Biochemical Pollutant Markers for Diagnosis of Marine Pollution X. Changes in Oxygen Radicals and Their Scavenger Enzymes of the Mussel (Mytilus coruscus) in the South Sea (해양오염의 진단을 위한 생화학적 오염지표에 관한 연구 X. 남해산 홍합 (Mytilus coruscus)의 산소 라디칼 및 제거효소의 변화)

  • This study was designed as a part of efforts to investigate the biochemical pollutant markers for diagnosis of marine pollutions by changes in oxygen radicals and their scavenger enzymes of the mussel (Mytilus coruscus) in South Sea of Korea. Protein contents in muscle of cultured mussel in South Sea were remarkably lower (4-14%, respectively) than those of wild mussel in Pohang of East Sea. Superoxide radical activities in muscle of cultured in South Sea were significantly higher 82∼138% than those of wild mussel in Pohang. Hydroxyl radical formations in muscle of cultured mussels in South Sea were significantly 9∼25% higher than those of wild mussels in Pohang. Superoxide dismutase (SOD) activities in muscle of cultured mussels in South Sea were significantly 16∼28% lower than those of wild mussels in Pohang. It is believed that significantly decrease of protein contents in muscle, remarkable increases of superoxide radical and hydroxyl radical in muscle of cultured mussels of South Sea may be used as a biochemical pollutant markers for diagnosis of marine pollutions. These results suggest that near-coastal water as well as neritic water of the south sea might be affected by pollutant.

  • Two species of the poecilostome copepod were recovered in the mantle cavity of the blue mussel, Mytilus galloprovincialis taken from the Yongsan River estuary, Korea. Both species, Pseudomyicola spinosus (Myicolidae) and Modiolicola bifidus (Sabelliphilidae), are new to the Korea fauna.

Effect of Water Temperature, Rearing Density, Salinity, and Food Organisms on The Growth and Survival Rate in Early Juvenile Hard Shelled Mussel, Mytilus coruscus (수온, 사육밀도, 염분 및 먹이생물에 따른 참담치(Mytilus coruscus) 초기 부착치패의 성장과 생존)

  • For the effective seedling production of the hard shelled mussel, Mytilus coruscus, this study assessed the effects of the dietary value of live food, density, water temperature and salinity on growth and survival rate of the larvae. The optimal survival rate and growth rate were examined under differing conditions of water temperature, salinity, and rearing density for 30 days. The three groups were provided different feeding organisms, such as Isochrysis galbana and Teleaulax suecica. The mixtures were provided at a rate of $5{\times}10^4cell\;mL^{-1}$. The best growth was observed in the group with conditions $21^{\circ}C$ water temperature ($16.2{\pm}9.1{\mu}m$), 33 psu of salinity ($16.82{\pm}3.9{\mu}m$), $2500individual\;m^{-2}$ ($17.2{\pm}5.9{\mu}m$), and fed with $5{\times}10^4cell\;mL^{-1}$ of I. galbana and T. suecica mixture ($16.0{\pm}7.3{\mu}m$). The highest survival rate was found in the group at conditions $18^{\circ}C$ water temperature (66.4%), 33 psu of salinity (24.4%), $2500individual\;m^{-2}$ (65.8%), and fed with $5{\times}10^4cell\;mL^{-1}$ of I. galbana and T. suecica mixture (58.8%). We therefore conclude that the suitable culture conditions for the stable production of hard shelled mussel artificial seedlings was at 18 to $21^{\circ}C$ of temperature, 30 to 33 psu of salinity, 2500 to $5000individual\;m^{-2}$ of rearing density, and feeding supplement of $5{\times}10^4cell\;mL^{-1}$ of I. galbana and T. suecica mixture under semi running water system.

Comparisons of Water Quality Improvement Activities of Indigenous Freshwater Bivalve Unio douglasiae in Two Different Trophic Agricultural Reservoirs (서로 다른 영양조건의 농업용 저수지에서 말조개의 수질개선능 비교)

  • A indigenous freshwater bivalve Unio douglasiae was introduced to compare the differences in the efficacy of algal bloom control and the appearances of mussel-mediated adverse effects between two different reservoirs such as mesotrophic (Shingu r.) and hypertrophic (Seokmun r.). We constructed the study mesocosm in the shore of each reservoir, stocked the mussel at density of $30indiv./m^3$ for 7 days, and measured daily the phytoplankton density and water quality. In mesotrophic reservoir, even though approximately 38% of suspended solids and chlorophyll-a was reduced by stocked bivalves for the first 3 days, algal density, ammonia and soluble reactive phosphorus gradually increased with increasing mussel death. In hypertrophic reservoir, mussels strongly inhibited suspended solids and chlorophyll-a by the termination of study with no increase of mussel death and nutrient, especially ammonia concentration. In both reservoirs, a strong selectivity showed mussels preferred to diatom rather than cyanobacteria and green algae without algal density and nutrient level. Our results indicate that an introduction of freshwater bivalve U. douglasiae is more strategic to improve water quality of hypertrophic than mesotrophic reservoir, but many preliminary studies on the treatment method and the selection of target water system are required.

Processing and Quality of Individually Quick Frozen Half-shelled Roasted Sea Mussel Mytilus edulis (개체동결 한쪽껍질 진주담치(Mytilus edulis)의 제조 및 품질특성)

  • To develop a value-added individually quick frozen (IQF) intermediate product from cultured sea mussel Mytilus edulis, we prepared IQF half-shelled roasted sea mussels (HRM) and IQF half-shelled boiled sea mussels (HBM). The processing conditions and quality metrics of the mussels were examined. The HRM and HBM were produced by washing and removing the byssus of raw sea mussels, followed by electric roasting or boiling. The roasted or boiled sea mussels were half-shelled, lightly washed with 3% saline water, rapidly frozen for 2 hours at -35℃, glazed, and packaged with a plastic film bag. The HRM and HBM had volatile basic nitrogen contents of 11.5 and 12.6 mg/100 g, and amino nitrogen contents of 607.9 and 534.2 mg/100 g, respectively. The HRM and HBM had hardness values of 4.31 and 2.99 kg/㎠, shearing force values of 992.2 and 507.7 g, free drip values of 8.9% and 10.2%, and expressible drip values of 7.0% and 8.1%, respectively. The free amino acid contents of the HRM and HBM were 763.1 and 560.7 mg/100 g, respectively. These results demonstrate that HRM have superior qualities compared to HBM and can serve as high-end shellfish when cooked.

Changes in Contents of Some Taste Compounds of Dried Mussel and Baby Clam during Storage (건조 홍합 및 바지락의 저장 중 핵산관련물질 및 유기염류의 변화)

  • Some taste compounds such as nucleotide and their related compounds, trimethylamine oxide (TMAO), trimethylamine (TMA) and total creatinine of sea mussel and baby clam during drying at 40, 50 and 60^{\circ}C$ and storage at low temperature$(4^{\circ}C)$ and room temperature$(20^{\circ}C)$ were investigated. Six kinds of nucleotide and their related compounds such as adenine triphosphate (ATP), adenine diphosphate (ADP), adenine monophosphate (AMP), inosine, adenosine and hypoxanthine were analyzed. The contents od adenosine in raw sample was high in sea mussel and baby clam. The contents of ATP, ADP and AMP decreased, while those of inosine and hypoxanthine increased during drying and storage periods. The contents of TMAO, TMA and total creatinine were low in sea mussel and baby clam. TMAO and total creatinine decreased but TMA increased during drying and storage periods. The rate of change was high in room temperature storage and for long storage periods than that of low temperature storage and for short storage periods.

  • Paralytic shellfish poison threatens public health most seriously from April to early May every year and gives adverse effects on export of these products. Major shellfish products exported were canned oyster, Crassostrea gigas and blue mussel, Mytilus edulis. Toxicities of canned shellfishes with toxin of low levels were mostly inactivated during the processing; in contrast, residual toxicity was of great concern with canned products from highly toxic shellfishes. This study was to provide basic data to establish food safety measure by evaluating the changes of toxicity during 2 year storage of canned products with toxic blue mussel and oyster. Any significant difference was not observed between two samples. Boiled can and smoked can showed inactivation of toxicity to some extent, whereas acidified can did not show reduction of toxicity even after 2 year storage. In case the initial toxicity of shellfish was high long term storage could not inactivate the toxicity of the canned product.

  • Changes of paralytic shellfish toxin components and specific toxicity in blue mussel, Mytilus edu/is and oyster, Crassostrea gigas during canning process were investigated by high performance liquid chromatography (HPLC). The $mole\%$ of the frozen shucked blue mussel were in order of $27.5\;mole\%$ of gonyautoxin 1, $23.0\;mole\%$ of gonyautoxin 8 (C1) and $23.0\;mole\%$ of epi-gonyautoxin 8 (C2), while those of the frozen shucked oyster were in order of $29\;mole\%$ of C1, $22\;mole\%$ of C2, $16.7\;mole\%$ of gonyautoxin 2. Both samples had minor amounts of saxitoxin and neosaxitoxin. On the other hand, in case of specific toxicity, the major toxins were consisted of gonyautoxin $1\~4$ in both sample. The toxicity of gonyautoxin $1\~4$ were 88 and $84\%$ in blue mussel and oyster, respectively. According to the experimental results, C1, C2 and gonyautoxin 4 were very sensitive to heat treatment, while gonyautoxin 2 and saxitoxin were pretty heat resistant than any other toxin components.
