Transfer rates of pathogenic bacteria during pork processing

  • We examined the rates of pathogenic bacterial cross-contamination from gloves to meat and from meat to gloves during pork processing under meat-handling scenarios in transfer rate experiments of inoculated pathogens. The inoculated pork contained ~5-6 Log10 CFU/g pathogenic bacteria like Escherichia coli (E. coli), Staphylococcus aureus (S. aureus), Listeria monocytogenes (L. monocytogenes), and Salmonella enterica subsp. enterica (Sal. enteritidis). On cotton gloves, after cutting the pork, the cutting board, knife, and cotton gloves showed 3.07-3.50, 3.29-3.92 and 4.48-4.86 Log10 CFU/g bacteria. However, when using polyethylene gloves, fewer bacteria (3.12-3.75, 3.20-3.33, and 3.07-3.97 Log10 CFU/g, respectively) were transferred. When four pathogens (6 Log10 CFU/g) were inoculated onto the gloves, polyethylene gloves showed a lower transition rate (cutting board 2.47-3.40, knife 2.01-3.98, and polyethylene glove 2.40-2.98 Log10 CFU/g) than cotton gloves. For cotton gloves, these values were 3.46-3.96, 3.37-4.06, and 3.55-4.00 Log10 CFU/g, respectively. Use of cotton gloves, polyethylene gloves, knives and cutting boards for up to 10 hours in a meat butchering environment has not exceeded HACCP regulations. However, after 10 h of use, 3.09, 3.27, and 2.94 Log10 CFU/g of plate count bacteria were detected on the cotton gloves, cutting board, and knives but polyethylene gloves showed no bacterial count. Our results reveal the transfer efficiency of pathogenic bacteria and that gloved hands may act as a transfer route of pathogenic bacteria between meat and hands. The best hand hygiene was achieved when wearing polyethylene gloves. Thus, use of polyethylene rather than cotton gloves reduces cross-contamination during meat processing.

Analysis of Foodborne Pathogens in Brassica campestris var. narinosa microgreen from Harvesting and Processing Steps (어린잎채소의 생산 및 가공 공정 중 식중독 미생물 분석)

  • This study was performed to assess the microbiological quality of Brassica campestris var. narinosa microgreen from harvesting and processing steps. The samples were analyzed for total viable cell counts (TVC), coliforms, Enterobacteriaceae, Escherichia coli, Salmonella spp., Listeria monocytogenes, Vibrio parahaemolyticus, Bacillus cereus, and Staphylococcus aureus. The total viable counts of microgreen (whole leaves) and environment samples from harvesting steps were higher than 6.8 log CFU/g and the contamination level of coliforms in the samples were 3.2 log CFU/g and 3.5 log CFU/g of microgreen and soil, respectively. In case of microgreen samples collected from processing steps, the contamination level of TVC and coliforms were higher in raw materials than samples obtained from later stages of processing, i.e. washing, drain, and final products. The contamination levels of B. cereus in raw materials and environments decreased approximately 1.4 log CFU/g in final products. S. aureus was detected in soil samples but Salmonella spp., Listeria monocytogenes, Vibrio parahaemolyticus and pathogenic E. coli was not detected. In order to identify the sources of contamination for microgreen, the genetic similarity of B. cereus isolates obtained from harvesting and processing steps were compared using the repetitive-sequence-based polymerase chain reaction method. B. cereus isolates obtained from harvesting environments and microgreen were clustered with a similarity greater than 95%. In case of B. cereus isolates obtained from microgreen and environmental samples at processing steps showed low genetic similarity.

Microbiological Hazard Analysis and Verification of Critical Control Point (CCP) in a Fresh-Cut Produce Processing Plant -Case Study of a Fresh-Cut Leaf Processing Plant- (신선편이 농산물 가공업체의 미생물학적 위해 요소 분석 및 중점 관리 지점(CCP)의 검증 -신선편이 엽채류 가공업체를 대상으로-)

  • The objectives of this study were to analyze environmental microbial contamination levels by sampling the surfaces of processing lines and equipment and to verify CCPs of the HACCP plan in a fresh-cut produce processing plant The level of airborne microorganisms in the processing plant was $10^1$ log CFU/plate/15min. Total plate counts and coliform groups of the processing facilities were 1~2 log CFU/100 $cm^2$. No E. coli or S. aureus were detected in the processing plant. However, total plate counts on the cutting board for raw materials and on the spin-dryer were $4.20{\pm}2.12$ log CFU/$cm^2$ and $4.57{\pm}0.92$ log CFU/$cm^2$, respectively. These levels were higher than the safe microbial level, and therefore, the chance of cross-contamination during processing was increased. According to the results of microbiological analyses, total aerobic bacteria and coliform groups of the samples were increased after the second washing and spin-drying steps, due to cross-contamination from the spin-dryer. Thus, an effective method that can be used for microbial control during the washing and drying steps is needed for microbial control in fresh-cut produce processing plants. The results of a verification study also suggest that modification of the HACCP plan is needed along with additional CPs, which were identified as a second washing, spin drying, and the cold storage of final products.

A Log Analysis System with REST Web Services for Desktop Grids and its Application to Resource Group-based Task Scheduling

  • It is important that desktop grids should be able to aggressively deal with the dynamic properties that arise from the volatility and heterogeneity of resources. Therefore, it is required that task scheduling be able to positively consider the execution behavior that is characterized by an individual resource. In this paper, we implement a log analysis system with REST web services, which can analyze the execution behavior by utilizing the actual log data of desktop grid systems. To verify the log analysis system, we conducted simulations and showed that the resource group-based task scheduling, based on the analysis of the execution behavior, offers a faster turnaround time than the existing one even if few resources are used.

  • 드론 비행 후 추출할 수 있는 Log 파일은 드론의 비행 정보를 확인할 수 있는 데이터이다. 이 데이터를 Log 분석기를 사용하여 그래프 형태로 시각화 하게 되면 비행 속도, 거리, 높이 등 다양한 비행데이터를 분석하기에 용이하다. 또한 Log 분석 자료에는 기체운용 중 발생하는 안전 이슈에 대한 기록도 포함되어 있어 드론의 사고 또는 고장유무를 판단할 때에 중요한 자료로서 활용된다. 그러므로 데이터분석 시에 안전 이슈 발생 시점과 연관지어 데이터를 분석하는 것이 보다 효과적이다. 그러나 상용 서비스에서는 분석데이터와 안전 이슈 데이터를 함께 보는 방법은 제공되지 않는다. 따라서 본 논문에서는 기존의 Log 분석 시스템에 안전 이슈 정보를 추가하여 볼 수 있는 방법을 제시하여 드론 운용자가 로그분석을 보다 효과적으로 할 수 있는 방법을 제안하고자 한다.

Efficacy of Chlorine for Reducing Bacterial Populations and Bacteriological Contamination on Carcass and Treatment Water at Different Stage of Poultry Processing (도계처리 단계별 도체와 처리수의 세균오염 및 염소처리 효과)

  • This study was carried out to assess the effect of the chlorine treatment into water for processing chicken products in each stage of slaughtering, with a special viewpoint related with reducing the viable number of microorganisms by which the water and the chicken body were contaminated. The mean bacterial number on chicken samples after picking process was log5.37$\pm$0.20~5.84$\pm$0.160CFU/$\textrm{cm}^2$. When assessed by standard plate count method, it was the higher one than any other processing stage in which eviscerating, pinning, packaging, and chilling was followed in order of the mean bacterial number. The coliform bacterial numbers on carcasses after sampling from different processing stages were log2.11$\pm$0.63~2.88$\pm$0.25MPN/$\textrm{cm}^2, which show almost similar numbers in each processing stage. But, after chilling process the number was decreased slightly. The bacterial counts in the water for scalding and chilling showed log3.43 $\pm$ 0.59~5.06$\pm$0.21 and log4.30$\pm$0.21~6.62$\pm$0.33CFU/$m\ell$, respectively. In the coliform counts for the water taken out from the 2nd chilling tank, the number was log1.97$\pm$0.35~2.91$\pm$0.22MPN/$m\ell$ which showed higher than those of the 1st and the 3rd chilling tank water. The effect of chlorination in reducing the bacterial numbers was accepted at the residual chlorine concentration of 1$m\ell$/$\ell$by showing the reduction from $10^8$ to $10^4$CFU level and the numbers were decreased less than 10CFU at the concentration of 5mg/$\ell$, when assessed by viable cell counts. In conclusion, these results suggested that chlorination In chilling water with final concentration of 5mg/$\ell$was strongly recommended to reduce the bacterial numbers on final chicken products.

A Log Management Service Model based on AOP for Efficient Development of Android Applications

  • In this paper, we propose a log management service model for efficient developments of android applications. The proposed model consists of two major parts which are the log collector and the log manager service. The log collector can capture the log information of a target application without modifications, because the collector is composed by aspect-oriented programming. The collected logs are transformed to chunk of data, and the chunk of data is sent to the log management service. The log management service is an android service component and an independent application in another process. So, the log management service can reduce the workload of logging in the target application. Through a case study, we show that the proposed log management service model can reduce the log processing time compared to other models without modifications of a target application.

  • In this paper, we introduce modulo ( 2$^n$-1) parallel-processing residue multipliers, using Op Amp circuits, and their technological application to designing binary multipliers. The limit of multiplying speed in computational processing is a serious harrier in the advances of VLSI technology. To solve this problem, we implement a class of modulo ( 2$^n$-1) parallel multipliers having superior time complexity to O( log$_2$( log$_2$( log$_2$$^n$))) by applying Op Amp circuits, while investigating their technological application to binary multipliers. Since they have excellent time & area complexity compared with previous parallel multipliers, and are applicable to designing binary multipliers of the same efficiency, such parallel multipliers possess high academic value.   • In For the past few years, query log data has been collected to find user's behavior in using the site. Many researches have studied on the usage of query logs to extract user's preference, recommend personalization, improve caching and pre-fetching of Web objects, build better adaptive user interfaces, and also to improve Web search for a search engine application. A query log contain data such as the client's IP address, time and date of request, the resources or page requested, status of request HTTP method used and the type of browser and operating system. A query log can offer valuable insight into web site usage. A proper compilation and interpretation of query log can provide a baseline of statistics that indicate the usage levels of website and can be used as tool to assist decision making in management activities. In this paper we want to discuss on the tasks performed of query logs in pre-processing of web usage mining. We will use query logs from an online newspaper company. The query logs will undergo pre-processing stage, in which the clickstream data is cleaned and partitioned into a set of user interactions which will represent the activities of each user during their visits to the site. The query logs will undergo essential task in pre-processing which are data cleaning and user identification.

  • The number of web service users has been increased rapidly as existing services are changed into the web-based internet applications. Therefore, it is necessary for us to use web log pre-processing technique to detect attacks on diverse web service transactions and it is also possible to extract web mining information. However, existing mechanisms did not provide efficient pre-processing procedures for a huge volume of web log data. In this paper, we proposed both a field based parsing and a high-speed log indexing mechanism based on the suggested B-tree Index Vector structure for performance enhancement. In experiments, the proposed mechanism provides an efficient web log pre-processing and search functions with a session classification. Therefore it is useful to enhance web attack detection function.
