Korean Food Culture of Cookbooks Related to Korean Food Issued in the U.S. - From the 1930s to the Early 1970s - (미국내 발간된 한국음식관련 요리책에 나타난 한국음식과 음식문화 - 1930년대부터 1970년대 초까지 -)

  • This study reviewed Korean food recipes and food culture included in English cookbooks issued in the United States from the 1930s to the early 1970s. In the 1930s cookbook, many types of soup were introduced to Korean food under the influence of the Tangban culture in the Joseon dynasty and a brief description of 'Sinseollo' culture. The 1940s cookbooks, introduced Korean table settings, food culture, and cooking methods depending on the use of chopsticks. In the 1950s cookbooks, Korean foods were selected to suit a Western table setting, and detailed explanations were included along with 'cheopsu' means the number of dishes served in Korean food. More diverse Korean food was introduced within its culture and origins in the 1960s cookbooks. The 1970s cookbooks explained, the characteristics of Korean culinary specialties that differentiated from oriental food. This study of Korean food and culture from Cookbooks issued in the United States from the 1930s to 1970s, where Eastern and Western multiculturalism coexist, can be used as baseline data to understand the identity of modern Korean food culture and the direction of the globalization of Korean food.

Age-period-cohort Analysis of Healthy Lifestyle Behaviors Using the National Health and Nutrition Survey in Japan

  • Objectives: This study conducted an age-period-cohort (APC) analysis of trends in healthy lifestyle behaviors in Japan. Methods: We used National Health and Nutrition Survey data on salt intake and prevalence of smoking, drinking, and physical activity between 1995 and 2018 in Japan. Age groups were defined from 20 years to 69 years old in 10-year increments. Cohorts were defined for each age group of each year with a 1-year shift, and cohorts born in 1926-1935 (first cohort) until 1989-1998 (last cohort) were examined. We conducted a Bayesian APC analysis, calculating estimated values for each behavior by age group, period, and cohort. Results: Estimated salt intake decreased from cohorts born in the 1930s to the 1960s, but increased thereafter in both genders, and the magnitude of increase was larger for men. Estimated smoking prevalence increased in the cohorts starting from the 1930s for men and the 1940s for women, and then decreased starting in the cohorts born in the 1970s for both genders. Although estimated drinking prevalence decreased starting in the cohorts born in approximately 1960 for men, for women it increased until the cohorts born in approximately 1970. Estimated physical activity prevalence decreased starting in the cohorts born in the 1940s in both genders, but the magnitude of decrease was larger for women. Conclusions: Trends in cohort effects differed by gender, which might be related to changes in the social environment for women. Improvements in dietary and exercise habits are required in more recently born cohorts of both genders.

  • In this paper we discuss the corelation be-tween feminism and fashion and examine its influnce on mordern fashion. And we also try to infer what the fashion design will be like in the future by understanding the value of modern fashion from a new viewpoint. The Early Feminism which advocated the similarity between man and women held the thought that women could be equal to men only when they behaved in the same way as men did, In 1970s when the pendulum of the Early Feminism movement reached its highest point a manish look began to flourish. The manish look introduced the items once employed only for men such as trench costs tidy tailored suits shirts and ties to women clothes. It has taken root deeply in women's life and is still employed in various ways by many designers. From the late 1970s the pendulum of feminism movement began to swing toward the Essentialist Feminism which emphasized the differences between men and women. It focused not on the negative image of women seen from male-oriented viewpoints but on their positive image and stressed women's sexual characteristic to make distinction between two genders. in fashion the Essentialist Feminism played a role in bringing about a sexy look which stressed the erotic silhouette of woman's body. The latest feminism is the socio-cultural one. It sees the distinction between men and women as sexual discrimination and introduces the androgynous human which carries the characteristic of two sexes. it leads to ambiguity of sex roles and at the same time serves to make androgynous social atmosphere by admitting the coexistence of two genders. The androgynous idea in fashion is expressed as a new trend which crosses men and women's own beauty while keeping their own identity intact. As we have briefly reviewed feminism in fashion has been presented in various ways with regard to expressing the nature of men and women. And it has continuously indicated the ultimate message of the salvation of mankind such as the respect for humanity and recovery of humanism.

"The Changes In Cultural Characteristics of Dress and Adronments in Korea"(From 1920 to 1990) (한국복식문화 특성의 변천에 관한 연구-1920년부터 1990년까지-)

  • The purpose of this study was to clarify the cultural characteristic of dress and adornments by examining articles on dress adornments and related items in Korean newspaper over periods historically and objectively by means of content analysis. This study attempted to at-tain a macro-cultural view by analysing to at-tain a macro-cultural view by analysing closely the cultural characteristics of dress and adornments as a micro-cultural system through culturally based model suggested by hamilton. The two-hundreds and eighty articles on dress and adornments were selected from newspapers(most by form Chosun Ilbo and partly from Maeil Shinbo) pulished between 1920 and 1990. The results were as follows: 1. The culture of dress and adornment received much attention during the 1930's and 1960's and little during 1950's. 2. Various cultural characteristics of dress and adornments appeared on and after 1960's: reporting more foreign news items showing foreign-oriented and future-oriented features showing cultural relativism. In the 1920's and 1970's the contents of news items on dress and adornments show the most common- mass- oriented character. Foreign-oriented cultural tendencies in cloth-ing were increasing during from 1960's to 1970's but the tendencies were turned to rather tradition-oriented features on and after 1980's compare with 1960's-1970's. Advisory critical articles on dress and adornments were small in number and insignificant but compare with other periods these received much atten-tion during the 1920's and 1980's. 3. Ideological components received much at-tention on and after 1920's to 1990. Techo-nological components received much attention during 1920's and little during 1960's. The social structural components received a little attention on and after 1920's-1940's and 1990. 4. News items on women's dress and adornments received much attention from the 1920's to 1960's and news items on both men's and women's dress and adorments were in-creasing and received much attention on and after the 1970's. 5. The pragmatic cultures were mostly re-lated to techonological components and evaluative-normative culture were mostly re-lated to ideological and social structural components. In the light of these results dress and adorments as a cultural sub-system comprise a dynamic inteacting system that articulated directly with the macro-cultural system.

  • The purpose of this study was to identify the change and characteristics of 20th Korean women's make-up the result of the study as follows: In the period 1920's 1. The drastic social changes such as civilzation and revolution together with the in troduction of western culture affected make-up and clothes. New women and high school girls wore the modified costume make-up hair style But general public women keep to traditional skin care style and white skin colour was popular. 2. In recent year after 1960's economic de-velopment the women's social status were pormoted after 1970's various colour em-phasize lip eye there by resulting in remark-able modification in the Korean women's apperance. In those days there was the large cosmetic producst of vavious colour 3. The result of this study indicated that the value of recognize the importance of total fashion is the harmonization of clothes and make-up 4. It was also suggested Korean beauty in the future should be achieved in accordance with tradition and modern sense.

Women′s Work in Kwangju from the Middle of 1950′s to the End of 1990′s (광주 여성의 생산활동 : 1950년대 중반부터 1990년 말을 중심으로)

  • The purpose of this study is both to describe and to explain the shapes and the changes of Kwangju women's productive activities from the middle of 1950's to the end of 1990's. Productive activities in this study include wage labors as well as economic activities in informal labor sector and domestic labor. Three factors - economic structure, the family, and women's consciousness - are drawn to explain women's work in Kwangju. The period from the middle of 1950's to the end of 1990's has been divided into 5 stages and the characteristics of women's work at each stage are as follows : Kwangju women during 1950's worked hard and contributed to the family economy not only inside but also outside the family : during the second stage from 1960's to 1970's, they accomplished not only the traditional women's role but also industrial wage worker : the third period of the first half of 1980's was the time for the development of social consciousness : the fourth period from the end of 1980's to the beginning of 1990's was the time when women tried to solve their problems by themselves: during the last period from the middle of 1990's to the end of 1990's. Kwangiu women wanted to establish their identities in the independent area from their families.

  • The purpose of this study is to analyse the change of agricultural labor participation and decision-making involvement of rural women in Korea from 1960s to 1990s. For analysis of these changes, I used the data surveyed and collected by different researchers during those times. During last 40 years, rural society and the mode of agricultural production rapidly changed according to the development of Korean industry. Agricultural labor participation of rural women increased since the mid 1970s. Their agricultural labor expanded into full ranges of farming. Their decision-making involvement also expanded into all divisions of farming. However, they did not have decision making power as much as they contributed to farm labor The expansion of rural women's labor within the sphere of farm production has not substantially altered the decision-making power structure within the farm household.

An Anaysis on the Change of Fertility Rates According to Various Fertility Indices in Korea (우리나라의 각종 출산력지표에 의한 출산력 추이에 관한 분석)

  • With Economic Development Plan, the Korean National Family Plan Program was introduced in early 1960's. The program, which has been a way for constraining population increase, has obtained excellent results. In other word, it has had an important role in controlling the increase in population. The purpose of this study is to analyze the change of fertility rates since 1970 and the lever of completed fertility of Korean women since 1960. There are Age-specific Fertility Rate(ASFR), Total Fertility Rate(TFR), Gross Reproduction Rate(GRR) and Net Reproduction Rate(NRR) etc. in indices of period fertility. It is also possible to be seen the completed fertility rates by using Parity Progression Ratio. The data necessary for this study were obtained from Population & Housing Census Report from the year of 1960 to 1980 and Vital Statistics from 1980 to 1984, which conducted by Economic Planning Board, Republic of Korea. The summarized results of this study were as follows : 1. Age-specific Fertility Fertility Rate(ASFR) has been continuously decreasing till now. The ASFR for the women aged 25 to 29 was higher than those of any other groups and the ASFR for the women aged 20 to 24 was higher than that of the women aged 30 to 34 since the mid 1970's. 2. There are Total Fertility Rate(TFR), Gross Reproduction Rate(GRR) and Ney Reproduction Rate(NRR) etc. in reproduction rates. First of all, TFR and GRR have been declining except late of 1970's and TFR showed 2.23 per ever-married women, GRR was 1.05 in 1982. Next, the change of NRR could not be found without life table by year and only NRR for the time of census was to be found. In 1980, NRR showed 1.27 per ever-married women and the level was still out of reach at replacement level of population. 3. Specific Fertility Rate by Birth Order(SFRBO) showed to be declined continually since 1972. Especially the SFRBO of the third live birth was decreased from about 22 per 1,000 ever-married women in 1972 to 12 or so in 1982. 4. To know the level of completed fertility, the mean number of completed live births per ever-married women was calculated from 1960 to 1980. The number of completed live births was more than 5 per ever-married women by the year of 1975 but have been declining and resulted in 4.69 in 1980.

A discourse analysis for Korean women's leisure culture from 1960s to the present - Application of semantic network analysis (현대 한국 여성의 여가문화에 대한 담론 변화 연구 - 1960-2010년대 신문 기사의 의미연결망 분석을 중심으로 -)

  • This study investigates the social discourse for Korean women's leisure culture and analyzes the conflicts between the ideologies which affected to the women's leisure issues with the social and cultural context. For this purpose, this study analyzed a sum of 652,513 words of 4,614 news articles about Korean women's leisure by applying semantic network analysis. In the 1960s, both the enthusiasm for 'modernization' and 'good wife and wise mother' ideologies were simultaneously affected to women's leisure discourse. 'The good wife and wise mother' ideology have a stronger impact on women's leisure culture in the 1970s. In the 1980s, even though the Korean women had higher education background and advanced social status compared to the former periods, both 'good wife and wise mother' ideology and 'modern career women' ideology conflicted each other. The conflicts between the two ideologies were intensified in the 1990s and the women tended to sacrifice their leisure in the course of the ideological conflicts in the 2000s. In the 2010s, women who exhausted due to the intensified conflicts between the two ideologies showed preference for passive forms of leisure.
