The dietary habits of middle-aged obese, overweight and normal subjects were evaluated for the purpose of providing the background information of the degenerative disease control. A survey was conducted with 293 subjects (121 males and 172 females) between the ages 40-64 and they were divided into three groups of normal (BMI 18.5-22.9), overweight (BMI 23-24.9) and obese ($BMI\geq25$) based on the criteria of Korean Obesity Association (2000). The mean age of the subjects was $52.0\pm7.3(male)\;and\;51.9\pm6.9$ (female). Socioeconomic levels of subjects belong to the mid-upper class, since 71.9% of the males and 39.5% of the females received above a college education. More than 40% (44.6%) of males and 22.1% of females were obese, and educational background did not affect the obesity rate in males, whereas in females those who received lower education had a higher rate of obesity (p < 0.001). The subjects had a similar degree of drinking to the national average value. but had a lower degree of smoking. The obese group had the higher rate of drinking (p < 0.01) and smoking (p < 0.01). The annual increase in weight, more than 4 kg, was 8.8% for normal group and 30.9% for obese group. However, there were no differences in the mean annual increase in weight among the three groups. In females there were greater tendencies of weight changes in obese group (p < 0.05). About 44.9% of subjects responded that they were exercising regularly, and the obese group appeared to put into practice less than the other groups and to use more strenuous exercise. There was the greater rate of skipping dinner in the obese female group (p < 0.05). The unbalanced dietary pattern was found more with normal group than the other groups (p < 0.01). The food consumption frequency by food groups was not different among the groups. The obese group consumed less frequently meats, vegetables and fruits and had higher frequency in fish, legumes and their products, instant or fast food. In all subjects the higher rate of obesity was found with males than females and with those of heavier smoking and drinking, and in females the higher rate of obesity was found with lower education levels, skipping meals and having an unbalanced diet. In middle-aged subjects of this study with higher educational and socioeconomic background factors contributing to the effects of obesity may include smoking, drinking, educational background, skipping meals or unbalanced dietary pattern. The predictable characteristics for the development of obesity can be defined as sudden fluctuation of weights, exercise regularity and intakes of vegetables and fruits.
Two kinds of soy pastes with different colors (reddish brown and yellowish white) were dehydrated by freeze drying in powder form. Hygroscopic behaviors of powdered soy pastes were investigated under the conditions of various water acitivities (0.11-0.88) and three different temperatures (25,40 and $50^{\circ}C$), and presented a kinetic and thermodynamic interpretatons in the view point of qualities and storage stability. Moisture absorption isotherms of powdered soy pastes were of type II according with BET classification and can be described by the Henderson's empirical equation. The safe storage moisture levels calculated by the Laurie's equation were ranging from 5.5 to 3.98% dry basis with oaring temperatures. The moisture absorption process for powdered soy paste followed the Ist order kinetic in the difference of equilibrium moisture content and arbitrary moisture content and the initial step was characterized by very fast absorption of moisture. The change of, dispersion capacity and color difference for powdered soy paste were extremely dependent upon water activity under the storage and the maximum stability was found at safe storage moisture levels. Also, the variation of thermodynamic parameters with moisture content was significant at safe storage moisture content levels and suggested d the considerable correspondence to storage stability of powdered soy paste.

This study was conducted to find biochemical status, dietary habits and dietary behaviors according to the degree of obesity among obese children, and to provide baseline data for nutrition education. The number of subjects was 64 obese children(Mildly obesed : MI 19, Moderately obese : Mo 30, Severely obese : SI 15) participated in '98 Summer Nutrition Camp'. The results of this study were as follows. 1. Weight and body fat rate was increased according to obesity degree(p<0.05). Total cholesterol and TG also was increased according to obesity degree but it was statistically significant. 2. In dietary habits, it wasn't statistically significant but MI tended to eat fast and to eat the snacks before sleeping. MO tended to skip the breakfast. SI tended to eat more snacks and dinner and they tended to overeat. 3. In cognition of self-weight, most obese children(93.7%) worried about their weight but 73.4% of obese children thought that it was possible for losing weight. There were no difference by the obesity degree. 4. In dietary behaviors, there were no statistically significant difference but MI and SI than MO tended to had worse dietary behaviors. 5. In life styles, SI than the others have tendency to have more regular exercise but they had more indoor activities than outdoor activities. 6. In foods intake frequency, SI than MI and MO ate instant foods more frequently and MI than the others ate hot and salty foods more frequently(p<0.05). With these result, MI and SI than MO tended to have undesirable dietary habits and behaviors. Many obese children worried about the weight but they had positive thought about losing weight. SI tended to do regularly exercise but they had more indoor activities than outdoor activities. Therefore, only with this study, it is difficult to say that there is the clear difference by the obesity degree. Because, in this study, we can have some difference among these groups, we should study more about these difference for effective, systemic and practical nutrition education in the future.
In fermentation characteristics, R2 was suitable for fast start and fermentation, while UCD530 was tool suitable far complete fermentation at 25$^{\circ}C$. T73 and AC- strains produced much more total acid compared to other strains and it was concerned with producing large amount of succinic acid and acetic acid. OC-2, UCD530, Beaujolais, and BC strains revealed low fermentation efficiency (below 62.0%), but EC1118, RC212, T73 and BM45 strains showed opposit result (above 70.0%). D254 and Wadenswil 27 seemed to have excellent cohesive ability because these two yeast strains made somewhat hard precipitation at the bottom after complete fermentation. T73 and CEG gave higher amounts of acetic acid (above 630 mg/L), while UCD530, W-3 and Beaujolais recorded low concentration (below 200 mg/L). In sulfur dioxide tolerance, preferable culturing temperature and times were 25$^{\circ}C$ and 72 hr respectively. The strains R2, BM45 and L2056 revealed high sulfur dioxide tolerance (above 30mg/L), white 71B, Wadenswil 27 and Beaujolais showed the opposite result (below 5mg/L)
BACKGROUND: This study was carried out to establish pre-harvest residue limits (PHRLs) of indoxacarb and pymetrozine in broccoli under greenhouse conditions, based on dissipation patterns and biological half-lives of pesticides during 10 days after application. METHODS AND RESULTS: The field studies were conducted in two different greenhouse, located in Chungju-si (Field 1) and Gunsan-si (Field 2). Samples were collected at 0, 1, 2, 3, 5, 7 and 10 days after spraying pesticide suspension. The analytical methods for indoxacarb and pymetrozine using HPLC-DAD were validated by recoveries ranging of 94.3-105.4% and 81.8-96.0%, respectively, and MLOQ (Method Limit of Quantification) of 0.05 mg/kg. Biological half-lives of indoxacarb and pymetrozine were 2.9 and 3.2-3.8 days in broccoli, respectively. The lower 95% confidence intervals of dissipation rate constant of indoxacarb were determined as 0.1508 (Field 1) and 0.2017 (Field 2), whereas those of pymetrozine were calculated as 0.1489 (Field 1) and 0.1577 (Field 2). CONCLUSION: The significant differences were not observed between the dissipation rates of indoxacarb and pymetrozine in broccoli. The major factor affecting residue dissipation was the dilution effect by fast growth. The PHRLs for 10 days prior to harvest were recommended as 30.06 (Field 1) and 18.07 (Field 2) mg/kg for indoxacarb, and 4.84 (Field 1) and 4.43 (Field 2) mg/kg for pymetrozine, respectively.
Quality stability of roasted lavers during heat treatment and storage was investigated measuring the changes in pigments including chlorophyll a, carotenoids and biliproteins, fatty acids and free amino acids as the major quality factors. In roasting of fried lavers, carotenoids were found to lie more stable than chlorophyll a, and biliproteins were most heat labile. The overall heat stability of the pigments depended upon heating time and temperature. Chlorophyll a and carotenoids were retained more than $90\%$ in the casts of roasting for 90 min. at $60^{\circ}C;\;60min.\;at\;80^{\circ}C;\;10\;min.\;at\;100^{\circ}C;\;or\;5min.\;at\;150^{\circ}C$ while biliproteins remained about $70\%$. The lipids of dried lavers including polyunsaturated fatty acids appeared rather heat stable when compared to the stability of pigments under the same conditions of roasting. Spray of sesame oil or seasoning solutions on the surface of lavers after roasting seemed desirable for stabilizing pigments and free amino acids during storage particularly at low water activity. And that was also benefit for the protection of polyenoic fatty acids from rapid progress of oxidation during storage. Free amino acids were reduced fast during roasting, especially most of threonine and glycine while glutamic acid was rapidly lost during the storage.
Predictive growth model of putrefactive bacteria of surimi-based imitation crab in the modified surimi-based imitation crab (MIC) broth was investigated. The growth curves of putrefactive bacteria were obtained by measuring cell number in MIC broth under different conditions (Initial cell number, $1.0{\times}10^2,\;1.0{\times}10^3$ and $1.0{\times}10^4$ colony forming unit (CFU)/mL; temperature, $15^{\circ}C,\;20^{\circ}C\;and\;25^{\circ}C$) and applied them to Gompertz model. The microbial growth indicators, maximum specific growth rate constant (k), lag time (LT) and generation time (GT), were calculated from Gompertz model. Maximum specific growth rate (k) of putrefactive bacteria was become fast with rising temperature and fastest at $25^{\circ}C$. LT and GT were become short with rising temperature and shortest at $25^{\circ}C$. There were not significant differences in k, LT and GT by initial cell number (p>0.05). Polynomial model, $k=-0.2160+0.0241T-0.0199A_0$, and square root model, $\sqrt{k}=0.02669$ (T-3.5689), were developed to express the combination effects of temperature and initial cell number, The relative coefficient of experimental k and predicted k of polynomial model was 0.87 from response surface model. The relative coefficient of experimental k and predicted k of square root model was 0.88. From above results, we found that the growth of putrefactive bacteria was mainly affected by temperature and the square root model was more credible than the polynomial model for the prediction of the growth of putrefactive bacteria.

The purpose of this study was to identify the service encounter blueprint by types of restaurants in order to manage moment of truth when customers who visit a restaurant encounter services. The service encounter blueprint gives an overall picture of the service provision to visualize an entire service process and its integrated structure. The blueprint is used for service process analysis technique. The random samples of 15 customers were observed by types of restaurants and the records were collected for three-days' observation. Interviews were performed by 3 managers, 3 service encounter employees, 3 cashiers, 3 cooks and 10 customers by types of restaurants. After drawing the first service blueprint, it was revised by the interview with the 3 managers and 6 service encounter employees. In this paper, restaurant service processes are reviewed and analyzed. By use of service blueprint, the processes are analyzed to find a fail point, customer wait, employee decision. As a result of making a blueprint of service encounter by types of restaurant, blueprints of fine-dining restaurants and family restaurants were similar, while fast-food restaurants showed a little difference. In particular, difference was indicated in a point where interaction of service encounter occurred. Difference was indicated depending on types of restaurants. Therefore, the efforts to improve this problem were needed. The blueprint is a map or flowchart (called a process chart in manufacturing) of all transactions constituting the service delivery process. The results showed that service encounter blueprint can be used to improve the service process in the restaurant's encounter.

The reaching time to the freezing point was to be fast in the order of 2% agar gel, 5% agar gel, 20% gelatin gel, pork, respectively. The freezing time and the passing time through the zone of the maximum ice crystal formation had linear relationship with the coolant temperature. The average diameter d$_{p}$ of ice crystal in a soybean protein gel and the moving of freezing front were represented an inverse proportion, and the moving velocity of freezing front was shown as 3.4$\times$10$^{-6}$$\textrm{cm}^2$/sec from predicted theoretical formula. This value was very close to experimental results. The storage temperature did not give any influences for the growth of ice crystal in inside soybean protein gels during freezing conservation. The relationship between freezing condition and structure of freezing front was as follows : (moving velocity of freezing front) : (mass transfer rate of water at freezing point)$\times$(surface area of freezing front).
This study was conducted to investigate the body weight status (by WLI: Weight-Length Index) and dietary habits and to assess the nutritional status among preschool children in the Daegu area. Dietary habits including dietary attitude and behavior were investigated using questionnaire answered by mothers of 680 subjects aged 4 to 6 years old (508 completed). Also, dietary intake survey using 24-hour recall method was performed by mothers of the children. According to WLI, the underweight, normal, overweight and obesity level of subjects were 9.1, 62.0, 19.5, and 9.4%, respectively. As well, the number of girls was higher than boys in underweight, overweight, and obese group. There were significantly different on overeating, eating fast, and preferring eating-out by body weight status, and overweight group got higher score than underweight or normal-weight group (p < 0.01, p < 0.001). As well, there was significantly different on not moving around during mealtime by body weight status, and underweight group have lower score than obese group (p < 0.001). From the 24-hour recall survey, it was found that intakes of all the nutrients were higher than the %KDRI except energy, calcium and folate. The energy intake of underweight group of 4~5-year old (1338.2 kcal) and 6-year old was lower than Koreans %DRI for those age group. Folate and dietary fiber intakes of obese group were significantly lower than underweight (p < 0.01, p < 0.05). For 4~5-year old, vitamin $B_6$ intakes of obese group were significantly higher than obese group (p < 0.05). For 6-year old, obese group showed that intake of vitamin $B_1$ was significantly higher than the other three groups, and intake of vitamin $B_1$ of overweight group was significantly higher than the other three groups. Taken together, these results indicate that there were significant differences in the nutrient intake level and dietary habits of preschool children by body weight status in Daegu area. Therefore, parents (family) and caregivers should be aware of the prevalence of obesity and nutritional status of preschool children, and start nutrition education as soon as possible.
