Properties of Alcohol Fermentation from Barley Treated with Non-steam and Steam (비열 및 열처리에 따른 보리의 알코올발효 특성)

  • This study was designed to investigate quality characteristics of alcohol fermentation from 5 barldy cultivars teated with non-steam and steam. In alcohol fermentation treated with non-steam, alcohol concentration reached to 1.7% for naked berley, 2.9% for naked waxy barley and 4.3% for Hinchalssalbori. However, no fermentation was occurred with baney and waxy barley. When the barley cultivars were steamed, alcohol concentrations showed to be higher than those not steamed. In sugar concentration from non-steam, both barley and waxy barley showed to have approximately $9.0\;^{\circ}Brix$ and naked barley, naked waxy barley and Hinchalssalbori showed to have approximately $5.0\;^{\circ}Brix$. When the burley cultivars were steamed, sugar concentration was decreased as alcohol concentration was increased Interestingly, sugar concentrations in barley cultivars were fast dropped more than 50% following alcohol fermentation except naked barley k alcohol fermentation treated with non-steam, total acidity of Hinchalssalbori was 0.51%, but the others showed more than 0.80%. So except for Hinchalssalbori, it was possible that acidification occurred during the fermentation. In total acidity from steam, all samples showed less than 0.3%. In flee sugar from non-steam, total free sugar contents of barley and waxy barley were approximately 4,000.0mg% and contents of naked barley naked waxy barley and Hinchalssalbori were each approximately 300.0 mg%. Free sugar from steam was increased as sugar concentration increased. In conclusion, barley cultivars were evaluated to be not suitable at alcohol fermentation treated with non-steam.

A Survey on Nutrient Intake of University Students by Alcohol Intake (알코올 섭취에 따른 남녀 대학생의 영양소 섭취 실태에 관한 조사)

  • This study was carried to investigate the effects of alcohol intake on the dietary behaviors and nutrient intakes of students in university and was observed characteristics of alcohol drinking, smoking, dietary behaviors, and nutrient intakes of students. The mean of alcohol consumption was 25.7$\pm$21.7g/day and 47.5$\pm$25.8g/day, most high of high alcohol group in the male student than other groups. Smoking were high by increasing of alcohol intake. Most students had dietary problems as skipping meals, eating snack after dinner, high frequency of eating fast and instant food, and eating meals at watching TV or video. The dietary behavior problems in the high alcohol groups showed higher in the female students than the male students. Nutritional knowledge scores was no significantly different by sex and alcohol intake. The intakes of calorie, protein, phosphorous, iron, and niacin in the male students was significantly higher than those of female students. Except for calcium, vitamin $B_2$ and vitamin C, nutrients were satisfied to the level of Recommended Dietary Allowances(RDA). Nutrient intakes was not affected by alcohol intake. But intakes of calorie, protein, phosphorous, and iron were affected by sex and vitamin C intake was affected by sex and alcohol intake.

Comparison of Elementary Students' Health Behaviors by Geographical Regions (우리나라 초등학생들의 지역별 건강생활실천 비교)

  • Background: Health promotion services should be provided based on clients' health promotion needs. To provide health promotion services for elementary students in Korea, health promotion needs by geographical regions should be analyzed. Purpose: To analyze elementary students' health behaviors by regions. Method: Elementary students of 4018 from large cities, 1636 from medium sized cities, 328 from rural areas were included. Data collection was done using items from National Health and Nutrition Survey and was collected by mail from schools. For data analysis, Chi-square test and multiple logistic regression were utilized. Result: From comparison of health behaviors, there were no significant differences between large cities and medium sized cities. However, there were significant differences between urban students and rural students in terms of fast food intake, breakfast, soft drink intake, sleeping hours, tooth brush, and obesity. Conclusion: Health promotion services, especially correcting unhealthy eating behaviors for rural elementary students should be focused.

  • During the 20th century, humankind went through the most significant changes in history, from industrial and agricultural revolutions to the invention of the personal computers and the internet, and changes continue to come at an even faster rate. One of notable change is emerging multicultural societies. People tended to live in a monocultural society and new cultures were infused in controlled and confined manners, however, people now live and eat in a continuously changing multicultural society Multicultural societies are emerged from the translocation of people (immigration) and, in a larger sense, globalization. Immigrants are faced with various and different cultures from their own, resulting in excitements and agonies in finding balance among many cultures. People who have not translocated themselves must also deal with various imported foreign cultures from fastfood restaurants to food beliefs. This lecture will use Korean Americans as an example to discuss how immigrants navigate different cultures and environments and how acculturation, the process of adaptation, affects their diet and health. In addition, how globalization has changed people's eatery will be briefly discussed. Understanding impacts of living and eating in a multicultural society is meaningful and useful to find effective approaches to promote healthy lifestyles to people in this fast changing times.

A Clinical Case Study on the Changes of Body Composition and Blood Chemistry after Modified Fasting Therapy in a Patient with Obesity (절식요법을 시행한 비만 환자의 체성분 및 혈액학적 변화 증례보고 1례)

  • This study was performed to report the effectiveness of modified fasting therapy using very-low-calorie-diet on a patient with obesity. The patient was diagnosed as severe obesity and participated in a 14-day fast with the Signature, a liquor which is made from fermented medical herbs and carbohydrates (intake <600 kcal/day) accompanying 7 prefasting relief days, and 16 days with stepwise reintroduction of food. The fasting patient also received intensive oriental medical treatments such as acupuncture, moxibustion, cupping therapy and was encouraged to take more than two hours' of walking exercise a day. We have evaluated the efficacy of treatments by measuring the changes of body composition and blood chemistry according to each period of fasting therapy. After treatment, Body Fat Mass of the patient was decreased more than Muscle Mass and the level of AST, ALT was decreased to normal range. These results suggest that the modified fasting therapy was effective on the patient with obesity.

  • 급변하는 사회적 ${\cdot}$ 경제적 변화에 대응하고 다양한 고객의 욕구에 부응하기 위해 기업은 고객만족경영에 총력을 기울이고 있다. 국내의 외식산업은 주 5일 근무제의 확산, 국민소득 수준의 향상, 식생활의 서구화 등으로 발달하면서 시장규모가 점차 커지고 있다. 그중 외식시장을 주도하고 발전시켜온 서비스업종의 하나로 패스트푸드업종을 들 수 있다. 이러한 업종의 경쟁력 향상을 위해서는 고객만족과 재방문을 유도하기 위한 고객의 서비스품질 만족도를 지속적으로 향상시키고, 차별화를 강화하는 연구가 필요할 것으로 사료된다. 따라서 본 연구는 고객의 패스트푸드점 이용에 대한 서비스품질 만족도와 서비스품질 수준, 재방문 의도를 측정하고, 서비스품질을 측정할 수 있는 요인 속성들을 통하여 서비스품질 만족도, 서비스품질 수준, 재방문 의도에 미치는 영향을 실증분석을 통하여 파악하고자 하며, 이를 통하여 패스트푸드점의 서비스품질 경영 전략 수립에 초석을 제공하는데 목적이있다.

Effect of PE Film Mulching and Planting Density on Growth and Tuber Yield in Yacon(Polymina sonchifolia POEPP) (재식밀도와 비닐피복이 야콘의 생육 및 수량에 미치는 영향)

  • Yacon(Polymina sonchifolia POEPP), an indigenous Andean natural resource food plant, was imported as a new root crop from New Zealand in 1986. However the chemical composition and planting system of it have not been research in Korea. The experimental results for the optimum planting densities and mulching effect are as follows. Height of the main stem of yacon was grown linear from July to October, is showed more fast growth as density increased, and showed highest in 70 ${\times}$ 55cm density. The tiller was bubed 3 month after planting but there was no significant difference among mulching, non-mulching condition and planting density. The fresh weight of root of mulching condition was heavier than that in non-mulching condition and 70 ${\times}$ 40cm mulching condition. In mulching treatment, number of roots in dense planting were more than that in sparse planting. The effect of mulching was not shown significantly in root diameter and root length.

  • As the demand for the fresh non-thermal food is increased, it is required to develop the fast and perfect sterilization method. The conventional sterilization method using ultraviolet lamp has some disadvantages such as imperfect sterilization and longer process time. In this research, IPL(Intense Pulsed Light) sterilization system is introduced to overcome the drawbacks of the conventional system, and suitable power supply architecture for the system is discussed. Since the IPL sterilization system uses Zenon lamps which requires the 600~2,100[V] for the lightning and 16~30[kV] for the trigger, the converter for the system should be able to generate the high voltage and to discharge the large amount of energy instantaneously. In this research a new power system architecture which has a modified forward converter topology with two switches for generating high voltage and a capacitor bank to control the energy for the lightning by switching is introduced.

Numerical Simulation for River Safety of Saemangeum Basin according to Master Plan (새만금 종합개발계획에 따른 새만금 유역 치수 안전성 수치모의)

  • The Saemangeum master plan includes dredging and waterproofing materials, construction projects that can change the hydraulic characteristics of the Saemangeum and Mangyeong and Dongjin River basins. In this study, the river safety of 2030 when the Saemangeum master plan was completed for 100 year frequency, 500 year frequency and 100 year frequency applied RCP 8.5 scenario was examined using Delft3D. As a result of the analysis, it was confirmed that there was no overflowing point at the 100 year frequency, but the difference between the flood level and the river bank elevation was relatively small at the curved and river joint part. At the 100-year frequency with the 500-year frequency and the RCP 8.5 scenario, the possibility of overflowing at several locations was confirmed. The possibility of river bed loss due to fast velocity appears in the upstream part of Mankyung River and it is necessary to monitor the safety of hydraulic structures continuously. In addition, it is expected that the expansion of the area showing the characteristics of the lake due to dredging will affect the sediment mechanism and water quality, so detailed and diverse studies will be needed.

Study on Tongseol in "Hwangjenaegyeong(黃帝內經)" ($\ll$황제내경(黄帝内经)$\gg$ "통설(洞泄)" 약탐(略探))

  • According to the original texts in "Hwangjenaegyeong(黃帝內經)", it's considered that the Chinese character Tong(洞) in the word of Tongseol(洞泄) should be understood as fast[疾] or rapid[速],and the main symptom of Tongseol should be diarrhea of indigested food soon after a meal. Through comparing Tongseol with Dongpung(迵風) in Historical Records, we can draw the conclusions as following. Firstly, the ancient physicians attached great importance to the role of wind in the pathogenesis of diarrhea. Secondly, perhaps the ancient physicians had these ideas of "wind is rapid" and "strong wind can bring shaken" as well as "wind is related to the liver closely" already in the early Western Han Dynasty. Thirdly, the rich materials about the relationship between wind and diarrhea in "Hwangjenaegyeong(黃帝內經)" should be considered as the successor to the excellent thinking of their predecessors.
