The coffee industry has grown very fast ever since international coffee brands were launched in the 1990's. Recently, consumers have begun to focus on coffee produced ethically. This phenomenon is due to ethical-consumption consciousness, which consists of three factors, emotional value, social value and function value. Most studies on this topic have focused on consumers who purchase fair-trade coffee. Thus, this study is novel in its focus on baristas who sell fairtrade coffee in their shops as well as differences from former studies. The three factors of ethical-consumption consciousness of baristas affected the sale of fair-trade coffee, except for the function value. Therefore, the sale of fair-trade coffee could be influenced by ethical-consumption consciousness of baristas. This study shows that education of baristas can promote the sale of fair-trade coffee. However, there are limitations as it only researched coffee brands ranked in the top 5, so further studies will be required in the future.
The purpose of this study was to investigate changes in dietary life, lifestyle factors, and stress status of Chinese students who came to study abroad to South Korea. A total of 143 Chinese students were recruited from Seoul Women's University and Wonkwang University in 2013. We used SPSS 20 for statistical analyses in this study. The mean length of residence was 2.9 years for Chinese students. Most subjects aged 20~29 years immigrated to South Korea to obtain an academic degree (bachelor, master, or doctorate). We found a significant decrease in the frequency of eating fruits and vegetables among Chinese students in South Korea after migration. Further, there was a significant increase in fast food consumption and frequency of late-night snacking and eating out. In addition, their preferred beverage changed from soft drink or tea to coffee after migration. Stress level significantly (P<0.05) increased in male students compared to female students. The high stress group watched more TV when eating compared to the low stress group. In addition, there were more students who perceived their health status as bad in the high stress group. Overall results give us useful information for targeting the most vulnerable subjects and planning nutrition intervention programs.
The purposes of study were to survey the status of nutrition education in school and investigate the perception of nutrition teacher candidates concerning the direction and ideal method for nutrition education. A questionnaire was distributed to 554 nutrition teacher candidates from August to October, 2006. A total of 468 usable data were collected (84.5% response rate). The statistical data analysis was completed by using SPSS for Windows (ver. 10.0) for descriptive analysis, ANOVA and $X^2$-test. About 52% of respondents had nutrition education teaching experience. Half of the respondents indicated that the necessity for nutrition education stemmed from their own need for such education. The main problem in students' dietary life was 'the increasing intake of processed foods, instant foods and fast foods (4.23 out of Likert 5 point scale)' and the major nutritional problem was 'high calorie intake with low essential nutrients (3.96 out of Likert 5 point scale)'. Over half the respondents (53.4%) recommended that nutrition education be oriented towards behavioral change rather than knowledge delivery. Social learning theory was preferred mostly as an theory apt to nutrition education (60.3%) and the most effective means of education was referred to organizing the regular class for nutrition education (50.5%). The 'playing such as songs or game' was reported as both effective and realizable method in nutrition education.
The methodology for justification and optimization of the countermeasures related with contamination management of milk was designed based on the cost and benefit analysis. The application results were discussed for the deposition on August 15, when pasture is fully developed in Korean agricultural conditions. A dynamic food chain model DYNACON was used to estimate the time-dependent radioactivity of milk after the deposition. The considered countermeasures are (1) the ban of milk consumption (2) the substitution of clean fodder, which are effective in reducing the ingestion dose as well as simple and easy to carry out in the first year after the deposition. The total costs of the countermeasures were quantitatively estimated in terms of cost equivalent of doses and monetary costs. It is obvious that a fast reaction after the deposition is an important factor in cost effectiveness of the countermeasures. In most cases, the substitution of clean fodder was more effective countermeasure than the ban of consumption. A fast reaction after the deposition made longer justifiable/optimal duration of the countermeasure.
Taekukkwon was practiced far health previously. The experimental group consisted of undergraduate and graduate students practising in the above disciplines at Myong Ji University. The group consisted of three female and three male students and the aim of this research was to measure the brain wave change for opened and closed eyes. The result of this research are as follows. Firstly, when students were subjected to basic open eye brain wave tests, beta-waves displayed for all regions of the brain. In the frontal region fast beta-waves were displayed and in the central region alpha-waves were displayed. Secondly, in the closed eye brain wave tests, the control group displayed beta-waves in some regions and alpha waves in external and internal regions. For all students\` brain-wave patterns, the amplitude of the alpha-wave was low and the frequency was high. In some students theta-waves were displayed. Taekukkwon practice relaxes the mind and body and helps relieve social stress which shows that taichichuan practices is beneficial. Finally, characteristics of the subjects were mostly type A so the personalities of the subjects were fast and aggressive. This research shows a definite link between personality and personal relationships with beta-waves emissions. So, further research is required in the future to investigate this relationship. The subjects consumed too large amount of foods so it was necessary to change their dietary habits taking into consideration on total calories, fats, and protein. It was also necessary to carrying out nutrition education to the students in emphasizing appropriate attitudes in general health and dietary behavior.

$Ca^{++}$ content and histochemical changes during processing Mooks prepared with sea mustard (Undaria pinnatifida) and sea tangle (Laminaria japonica) were studied. $Ca^{++}$ content of sea mustard Mook during gelation in $CaCl_2$ solution was not only increased fast, but also decreased fast during soaking in distilled water as comparing with that of sea tangle Mook. Both solubilization of the seaweeds by 1 % $K_2HPO_4$ and filtration of solubilized seaweed were decreased the extruding amount of $Ca^{++}$ from Mooks during soaking. The cell walls in sea mustard were likely irregular and ling, but those in sea tangle were regular and round shape. alginic acid was mainly occurred around cell walls. The alginic acid was gradually solubilized depending on heating and alkali treatment. Thus, the fillament cells in sea tangle were cut finely during processing Mook, while those in sea mustard were remained tolerably.
Background: The Food and Drug Administration (FDA), the European Medicines Agency (EMA), and the Ministry of Food and Drug Safety (MFDS) have been implementing the expedited programs that promote the innovative approval of new medications to be used for serious diseases. The authors comprehensively investigated, analyzed, and compared the regulations and guidelines associated with the expedited programs. Methods: The expedited programs for innovative drug development and approval were searched from the homepages of FDA, EMA and MFDS. The detailed information on the regulations and guidelines associated with the programs was comprehensively extracted from various electronic repositories of each regulatory authority. The information on each program was analyzed, categorized, and compared from the points of benefits, applicability with scientific rationale, application procedure, and maintenance. Results: FDA's programs include Fast Track Designation, Breakthrough Therapy Designation, Priority Review Designation, and Accelerated Approval. EMA's regulation implements PRIority MEdicines (PRIME), Accelerated Assessment, Marketing Authorization under Exceptional Circumstances (MAEC), and Conditional Marketing Authorization (CMA). MFDS has a single Expedited Program. These programs are broadly categorized into those that 1) facilitate early and proactive communication with regulatory authorities, 2) shorten the review time after submitting a marketing application, and 3) temporarily approve a marketing authorization under certain conditions. Conclusion: Each expedited program requires a different level and amount of safety and efficacy evidence to be submitted to each regulatory authority. This article will likely provide the comprehensive information on which program provides scientific and regulatory advantages to be taken for innovative medication development.
This study aimed to analyze about the perception in obesity and body somatotype of university students in Korea and in China. This study provides the basic data of nutrition education for university student healthy weight program in China. The subjects were selected 240 university students of Korea and China. Two types of qualitative and quantitative questionnaires were used to analyze the attitude and body somatotype of subjects. The results of this study were as follows: The average BMI of Korean and Chinese male students was 22.3 and 22.5, respectively while the average BMI of Korean and Chinese female students was 19.8 and 19.7, respectively. In the past three years, the weight gain of Chinese students was higher than that of Korean students. Chinese students preferred the overweight body somatotype more compared to the Korean students. The overweight and obese students had more obvious insufficiency in body somatotype perception. The overweight and obese students had higher tendency to 'eat more meat', 'drink carbonated beverages', 'eat convenience food', 'take fast food' and 'drink alcohol' than the normal and low weight group. The major reasons for Korean students to control weight were 'appearance' and 'self confidence', while the major reasons for Chinese students were 'health' and 'employment'. From the results of associative group analysis (AGA), Chinese students had different semantic value of 'obese' than Korean students. Considering of the food transition status in China, it may be necessary to develop more suitable education programs for weight control for Chinese university students.
Rather than focusing on the general recognition of the area and extensive preference about its native cuisine, this study carried out more practical examination on the recognition of the native cuisine by presenting the more detailed introduction of the native cuisine in Hadong area. The findings of this study can be used as basic materials to devise measures for the instillation and advertisement of Hadong area's image, the development and maintenance of its native cuisine benefiting the activation of the local economy, and the reestablishment of Hadong area's native cuisine culture. First, the overall recognition of Hadong area's native cuisine was low and more consumption needs to be boosted by merchandising its foods through the strengthening of recognition. Second, correlation between this area's native cuisine was revealed and tables need to be set and menus need to be organized with this correlation in mind. Basic materials for suggestion sale were garnered. Third, given that most outside tourists visit Hadong by word mouth of all the information sources available, it is highly likely that positive word of mouth through satisfaction with native cuisine will raise the overall recognition of the area. Fourth, precise subdivision market and target market need to be specified. Though the factors like economic costs and the time required cannot be overlooked in strengthening recognition, consistent advertisement to the middle-aged people who are over 40 and live in Kyungsang-Do area will contribute to the fast rise in the recognition of Hadong area's native cuisine, leading to the possibility of economic development in the process.

Food adulteration is a serious consumer fraud and a matter of concern to food processors and regulatory agencies. A range of analytical methods have been investigated to facilitate the detection of adulterated or mis-labelled foods & food ingredients but most of these require sophisticated equipment, highly-qualified staff and are time-consuming. Regulatory authorities and the food industry require a screening technique which will facilitate fast and relatively inexpensive monitoring of food products with a high level of accuracy. Near infrared spectroscopy has been investigated for its potential in a number of authenticity issues including meat speciation (McElhinney, Downey & Fearn (1999) JNIRS, 7(3), 145-154; Downey, McElhinney & Fearn (2000). Appl. Spectrosc. 54(6), 894-899). This report describes further analysis of these spectral sets using a hierarchical approach and binary decisions solved using logistic regression. The sample set comprised 230 homogenized meat samples i. e. chicken (55), turkey (54), pork (55), beef (32) and lamb (34) purchased locally as whole cuts of meat over a 10-12 week period. NIR reflectance spectra were recorded over the wavelength range 400-2498nm at 2nm intervals on a NIR Systems 6500 scanning monochromator. The problem was defined as a series of binary decisions i. e. is the meat red or white\ulcorner is the red meat beef or lamb\ulcorner, is the white meat pork or poultry\ulcorner etc. Each of these decisions was made using an individual binary logistic model based on scores derived from principal component or partial least squares (PLS1 and PLS2) analysis. The results obtained were equal to or better than previous reports using factorial discriminant analysis, K-nearest neighbours and PLS2 regression. This new approach using a combination of exploratory and logistic analyses also appears to have advantages of transparency and the use of inherent structure in the spectral data. Additionally, it allows for the use of different data transforms and multivariate regression techniques at each decision step.
