A food exchange system for diabetes is a useful tool for meal planning and nutritional education. The first edition of the Korean food exchange lists was developed in 1988 and the second edition was revised in 1995. With recent changes in the food marketplace and eating patterns of Koreans, the third edition of food exchange lists was revised in 2010 by the Korean Diabetes Association, the Korean Nutrition Society, the Korean Society of Community Nutrition, the Korean Dietetic Association and the Korean Association of Diabetes Dietetic Educators through a joint research effort. The third edition is based on nutritional recommendations for people with diabetes and focuses on adding foods to implement personalized nutrition therapy considering individual preferences in diverse dietary environment. Foods were selected based on scientific evidence including the 2007 Korea National Health and Nutrition Examination Survey data analysis and survey responses from 53 diabetes dietetic educators. While a few foods were deleted, a number of foods were added, with 313 food items in food group lists and 339 food items in the appendix. Consistent with previous editions, the third edition of the food exchange lists included six food categories (grains, meat, vegetables, fats and oils, milk, and fruits). The milk group was subdivided into whole milk group and low fat milk. The standard nutrient content in one exchange from each food group was almost the same as the previous edition. Korea Food & Drug Administration's FANTASY (Food And Nutrient daTA SYstem) database was used to obtain nutrient values for each individual food and to determine the serving size most appropriate for matching reference nutrients values by each food group. The revised food exchange lists were subjected to a public hearing by experts. The third edition of the food exchange lists will be a helpful tool for educating people with diabetes to select the kinds and amounts of foods for glycemic control, which will eventually lead to preventing complications while maintaining the pleasure of eating.
BACKGROUND/OBJECTIVES: This study examined the association of depressive symptoms, stress perception, and suicidal ideation with overall dietary quality using the newly developed Korean healthy eating index (KHEI). SUBJECTS/METHODS: This study included 9,607 adults (3,939 men and 5,668 women, ≥ 19 years) who participated in the 6th Korea National Health and Nutrition Examination Survey 2013 and 2015. The KHEI scores were calculated using the food frequency questionnaire data. Survey logistic regression analyses were performed to analyze the association between psychiatric distress and dietary quality. RESULTS: The percentage of subjects with experience of depressive mood, higher stress perception, and suicidal ideation was 8.2%, 25.0%, and 3.7% in men and 15.4%, 27.3%, and 6.0% in women, respectively. The mean KHEI score was 61.5 ± 0.29 in men and 64.8 ± 0.24 in women (P < 0.001). The present study found a difference in the adherence to specific dietary components of the KHEI between sexes. Men experiencing depressive symptoms were less likely to eat meat, fish, eggs, and beans, while depressed women showed lower vegetable intake. Both men and women with suicidal ideation showed a lower intake of vegetables. The men with stress had a lower breakfast eating score than those without stress (7.21 vs. 6.77, P = 0.016). The multivariate-adjusted odds ratios for depressive symptoms, stress perception, and the suicidal idea in women with the highest quartile of KHEI scores compared to the lowest quartile was 0.69 (95% confidence interval, 0.51-0.92), 0.73 (0.58-0.82), and 0.52 (0.33-0.82), respectively and significant dose-response associations were observed (P for trends < 0.05 for all). On the other hand, these associations were not observed in men after adjusting for the confounding variables (P for trends > 0.05 for all). CONCLUSIONS: Poor adherence to dietary recommendations is associated with psychological distress, especially in women.
Purpose: The aim of the study was to assess the prevalence of preschooler obesity/overweight and to identify associated factors. Methods: This study was a cross-sectional study. Data for 591 preschoolers, 432 fathers and 538 mothers from the Korea National Health and Nutrition Examination Survey 2013-2014 were included. Obesity/overweight was defined by 2007 Korean National Growth Charts. T-test, Rao-Scott ${\chi}^2$, multivariate logistic regression was used for the analysis. Results: Prevalence rates for preschooler obesity/overweight were 14.9% (obesity, 5.4%; overweight, 9.5%). The preschoolers with atopic dermatitis or allergic rhinitis or asthma (OR=2.78, 95% CI [1.27-6.09], p=.011) and eating more thiamine per day (OR=1.01, 95% CI [1.00-1.02], p=.001) showed higher obesity/overweight development. The only parental factor affecting preschooler obesity/overweight was parental body mass index (father, OR=1.18, 95% CI [1.09-1.28], p<.001; mother, OR=1.09, 95% CI [1.04-1.15], p<.001). Conclusion: Interventions on preventing preschooler obesity should be introduced much earlier for children with risk factors. Results from this study can be used as preliminary data to develop effective strategies to prevent obesity in Korean preschoolers.
This study examined Korean employees' meal structure characterized by mealtime, meal places, and companions. The data from 19,692 time diaries, recorded by 9,846 employees aged 19-64 years for two days in the 2014 Korean Time Use Survey, were analyzed for working days and non-working days. Approximately two-thirds of Korean employees ate meals three times a day on both working and non-working days. The breakfast and lunch-times on working days were distributed within two hours, but the dinner time on working days and all three meals on non-working days were dispersed across a three-hour range. Male employees spent three minutes on meal preparation on working days, whereas females spent 30 minutes. On working days, 88% of breakfasts and 67% of dinners were eaten at home. For lunches, 46% were eaten at restaurants, and 42% were at workplaces. The breakfast on working days showed the highest percentage of eating alone (40%) and the dinner on non-working days appeared highest in the percentage of eating with families (69%). The characteristics of Korean employees' meal structure appeared different on working days and non-working days. Such characteristics should be considered in the process of planning nutrition policies and programs for employees.
Objectives: This study aimed to investigate the importance and performance levels of sustainable dietary education across the health, environment, and society domains as perceived by nutrition teachers and evaluate the needs and priorities for sustainable dietary education. Methods: An online survey was conducted for 151 nutrition teachers in Jeollanam-do. The survey included 20 questions across the health, environment, and society domains. The data were analyzed using a paired-sample t-test, the importance-performance analysis (IPA), the Borich needs assessment, and The locus for focus model. Results: Overall, the average importance levels of the 20 items of sustainable dietary education were significantly higher than their average performance levels (4.44 vs. 3.68). The examination of each educational domain revealed that although the importance of education in the health domain was recognized and actively practiced by the nutrition teachers, the performance was comparatively lower in the environment and society domains. The Borich needs assessment and the locus for focus model identified education on biodiversity conservation, plant-based protein, and the use of local food as the top-priority group in the environment domain along with fair and ethical food, food security, regional food culture, food policy and trade, and family dining culture as the second-priority group in the society domain. Conclusion: The results of this study underscore the need to support the nutrition teachers' perception and practice of sustainable dietary education in the environment and society domains. We believe that the educational needs and priorities proposed in this study will be considered in the future development and modification of sustainable dietary education programs.

The purpose of this study was to investigate the relationship between Kimchi intake and the prevalence of metabolic syndrome in Korean adults (over 19 years old), using data from the Korean National Health & Nutrition Examination Survey (KNHANES), 2007~2012. A total of 30,630 participants were analyzed in this study. Metabolic syndrome was diagnosed using the NCEP ATP III criteria standards. Out of the 30,630 participants, 8,230 (23.45%) had meatabolic syndrome. When the subjects were grouped by their Kimchi intake, those who consumed a sufficient amount (36.0~82.125 g) showed a lower prevalence of metabolic syndrome (P<0.001). However, multiple logistic regression analysis results after adjusting for sex and age, exercise status, smoking status, drinking status, energy intake, income level, occupation, area, frequency of eating-out, showed that the Kimchi intake did not significantly affect the odds ratio of metabolic syndrome. High sodium contents of Kimchi was the major cause of various cardiovascular diseases, and was associated with the hypertension risk factors of the metabolic syndrome. However, in this study, the Kimchi intake, even after adjusting sodium intake, did not have negative influence on the development of metabolic syndrome.

Purpose : The purpose of this study was to investigate related factors contributing to subjective health state in elderly people with focus on comparison of gender differences. Method : From the database of the Korean National Health and Nutrition Examination Survey(KNHNES) the year 2012 and 2013, the researchers selected 2,924 old adults aged over 65. Data were analyzed with SPSS 18.0 program. Result : Results indicated that education, occupation, restriction of activity, stress, drinking status were significant variables of subjective health state both men and women. But, age, DM, MI, arthritis, smoking status were significant variables of subjective health state of men. And insurance, suicide, HTN, walking exercise were significant variables of subjective health state of women. Conclusion : The development of health and quality of life for elderly people considers different approaches to the genders.

A survey of 113 children, aged 4 to 6 years, of the San Cheon a day care center, located in the upland, over populated, poor area of Seoul City, was conducted from July 28 to September 6, 1982, to investigate the dietary and nutritional status, and prevalence of parasitic inpection. House size was 10.1 Pyung; number of households per house, 3.1; number of family member per household, 4.8; and number of family members living together per room, 3.7; on the average. Only 49% of households possess own houses and the others live in the rented houses. About 40% of mothers were engaged income-producing activities within or outside of the home. Mean values of height, weight, arm circumference, girth of chest, and girth of head ranged from 98.4 to 102.2% of KIST mean. However, 13% of the subjects were assessed as undernutrition for 'weight for height'. Mean value of hemoglobin was $12.9{\pm}2.9\;g/dl$ and mean hematocrit value was $35.2{\pm}5.5%$; 17.9% of the subjects were proven to be anemic according to the criteria of the WHO. The positive prevalence of parasitic inpection was 3.3%, significantly lower than that observed in any other area, probably because of community parasitic control project. Intakes of energy and nutrients except thiamin and ascorbic acid were far below RDAs. Carbohydrates for energy provided 71. 2 to 73.8% of total energy intake; protein accounted 11.3 to 12.2%; fat provided 14.5 to 16.6%. Energy intake was divided among breakfast, lunch, evening meal and snack, on the average, in a percentage of 22.0; 23.4; 24.4; 30.2. There was significant correlation between pattern of food consumption and nutrient intakes. The nutrient intakes and quality of foods were highly correlated to the maternal factors, especially mother's educational level. The study suggested that development of nutrition guides for mother and children would be needed to improve nutritional status of those young children.

This study aimed to determine foodservice and hygiene management statuses at welfare facilities catering to disabled persons by facility type to provide basic data for foodservice management guidelines. An online survey was distributed to workers at 1,984 welfare facilities for disabled persons in Korea, and 531 facilities responded, which represented a response rate of 26.8%. The survey requested general information about the facilities, facility users, meals, hygiene, and management. Statistical analyses were performed, and frequency analysis and the chi-square test were used to investigate responses by facility type. The survey results revealed that daycare centers were most common and accounted for 27.4% of responses. Residential facilities for the severely disabled and sheltered workshops accounted for 16.9% and 16.4%, respectively, and residential facilities by disability type accounted for 13.0%. The presence of dietitians at welfare facilities varied by facility type. Welfare centers for the disabled (94.7%) had the highest percentage of dietitians, followed by residential facilities for the severely disabled (87.8%). On the other hand, sheltered workshops and daycare centers for disabled persons had the lowest percentages of dietitians (10.3% and 4.1%, respectively). This study highlights the variations that exist in foodservice management across different welfare facilities for disabled persons and emphasizes the challenges faced by those responsible for managing foodservices and maintaining hygiene, particularly in large facilities with no dietitians. Therefore, we recommend tailored meal management guidelines be developed for each type of welfare facility for disabled persons.
Purpose: This study was conducted to identify factors influencing depression in the elderly male in Korea. Methods: The initial data were collected from the $5^{th}$ Korea national health and nutrition examination survey (KNHANES-V). The data of 1,210 adults with the age over 65 years were finally analysed using t or ${\chi}^2$ test, stepwise multiple logistic regression. Research variables utilized in this study were 29 factors including demographic and health-related characteristics, physical and economic activities, and life habits. Results: Seven factors were found to be associated with depression in the elderly male including stress level, uncontrolled drinking experience, physical discomfort days in recent two weeks, the level of activities in daily life, diabetes mellitus, economic activity status, and sleeping hours. Conclusion: These results can be used in developing appropriate depression prevention program considering the characteristics of the elderly male.
