질소시비수준과 시비방법이 율무의 생육과 수량에 미치는 영향 (Effects of Nitrogen Levels and Treatments on Agronomic Characteristics and Yield in Job's Tears(Coix lacryma-Jobi L.))

  • 질소시비수준과 추비방법이 율무의 생육과 종실수량에 미치는 영향을 구명하고자 애원종을 공시하여 시험한 결과를 요약하면 다음과 같다. 1. 시비량과, 추비 횟수가 증가할수록 초장, 엽수, 주당경수, 정립비율, 1$\ell$중, 100립중, 10a당 종실중의 수량형질은 질소 14kg / 10a의 적은 량을 기비로 40%, 1차 추비로 30%, 2차 추비로 20%, 그리고 3차로 10%를 시용했거나 180kg / 10a의 많은 량을 전량기비로 시용했을 때 모두 높게 나타났다. 3. 분산분석에서도 시비량간, 시비방법간, 시비량과 시비방법간의 교호작용에서도 유의차를 나타내었다.

한국의 전통적 기능성 식품의 이용에 대한 역사적 고찰 (The Historical Study of Korean Traditional Funtional Food)

  • Natural substances, exploited in our daily life, have been applied to drugs to treat diseases and developed to functional foods by appropriate preparations, and these foods give beneficial effects on physical activities. In this paper, the utilization of traditional functional foods was studied with refer ring to old ancient writings published in the front-end of Chosun dynasty. The utilized vegetables were march mallow, turnip, radish, Chinese cabbage, lettuce, spinach, cucumber winter buds, flesh of a cabbage, eggplant, taro, burdock, Parsley, watershield plant, crown daisy, bamboo shoots, garlic, scallion, onion, acorn, bark of a tree, white goosefoot leaf, leaf of bean, pine mushroom, bracken. yam, mugwort, tea, ginseng, peppermint, fruit of the Maximowiczia chinensis, smartweed and pepper. The utilized fruits were chestnut, Chinese date, pine nuts, walnut, gingko nut, citrus. crab apple, pear, peach, grape, pomegranate, plum, Chinese quince, fig and watermelon. The utilized cereal were rice, barley, bean, buckweat and Job's-tears. The utilized sweetenings and seasonings were honey, wheat-gluten, sugar, oil, salt, soy sauce and vinegar. Our ancestors had a balanced diet using the various foods, and especially had a fundamental concept of "Foods have the efficacy of a remedy".edy".uot;.

FUNCTIONAL PROPERTIES OF SAENGSIK (SUBSTITUTE MEAL) FORMULATED WITH UNCOOKED CEREALS FERMENTED BY LACTIC ACID BACTERIA

  • The objective of this study was to improve the qualities of Saengsik (substitute meal formulated with uncooked cereal powder) such as functionality, safety and sensory preference by using Lactic Acid Bacteria (LAB). The optimum formulation of fermented Saengsik (substitute meal) was verified as $40\%$ of fermented brown rice, $13\%$ of fermented job tears, $5\%$ of yellow soybean, $5\%$ of waxy rice, $5\%$ of sorghum, $3\%$ of Seumok bean, $1\%$ of sesame, $3\%$ of barley, $2\%$ of red bean, $5\%$ of prosomillet, $2\%$ of foxtail millet, $9%$ of black rice, $3\%$ of buckwheat, $1\%$ of chestnut, $2\%$ of pumpkin, $3\%$ of peanut. Fermented Saengsik decreased significantly serum glucose in STZ-induced diabetic rats. However, serum lipid levels were not affected by fermented Saengsik. In rats fed with high-fat diet, serum triglyceride level was slightly decreased and the contents of liver triglyceride were significantly decreased by supplementation of fermented Saengsik.

서울지역 여자 노인의 영양실태와 식생활 형태 - 노인대학을 중심으로 - (Nutritional State and Dietary Behavior of the Free-Living Elderly Women)

  • The issue of health and nutritional wellbeing becomes one of the utmost concerns for the welfare of the elderly in a society of increased aging populations. This study was conducted to assess nutritional state and to identify possible dietary factors that might influence health and nutritional state of the free living elderly women. Two hundred sixty two elderly women, aged 60-90 who are actively participating in a continuing education program for the elderly in Seoul area, were interviewed using a dietary habit questionnaire and a 24-hour recall. Anthropometric measurements such as heights, weights, body mass index, and tricep skinfolds and dental status were significantly different between the two age groups, <75 and ${\geq}$ 75 years of age. Sixty eight percent of the subjects were using nutritional supplements regularly, in the descending order of vitamin-mineral supplements(40%), botanicals(27.6%), tonic drinks(16%), and health foods(13.2%). For hot beverages, our study subjects drank coffee (33.6%) and green tea (17.9%) frequently, followed by doongulae, job's tears, citron and kyulmyung tea. With regard to micronutrients, vitamin C intake was found to be lower in the group aged over 75 compared to that below 75 (p<0.05). Calcium intake was significantly higher among the elderly with good dental status followed by the groups with gingivitis, denture, and missed teeth with poor chewing abilities (p<0.05). The amount of personal spending money was found to be a significant contributing factor (p<0.05) to the energy and nutrient intake in an individual. The results of the present study can be applied to the identification of the possible factors that might intervene the aging process, to the planning of the nutrition education program, and to the development of health food products for the promotion of health and nutrition of the elderly women.

식품소재 물 추출물이 쥐 혈청과 피부의 Testosterone 및 Dihydrotestosteron 함량에 미치는 영향 (Effects of Food Material Water Extracts on Content of Testosterone and Dihydrotestosteron in Serum and Skin of Rat)

  • 율무, 옥수수, 메밀, 표고버섯, 당귀, 감초 및 대추의 물추출 혼합물(13 : 50 : 15 : 2 : 5 : 5 : 5, v/v) 이 쥐 혈청과 피부의 testosterone(T) 및 dihydrotestosterone(DHT) 함량과 간독성 및 생화학적 및 조직학적 변화에 미치는 영향을 조사하기 위하여 1일 9 mL/kg-BW 씩 음용수에 섞어 SD(Sprague-Dawley)계의 흰쥐에 5주 동안 투여하였으며, 5-a -reductase의 저해제로 알려진 propecia와 비교하였다. GOT, GPT, ALP 및 ${\gamma}$-GTP의 활성도와 total cholesterol 및 total lipid 함량은 무처리, propecia 및 식품소재추출물 투여군 간의 뚜렷한 차이를 보이지 않아 간 손상이 유발되지 않았다. 간의 조직학적 소견에서도 식품소재 추출물의 독 작용은 없는 것으로 판단되었다. 또, 식품소재추출물의 투여로 모낭수가 대조군에 비해 많았다. 혈청 및 피부의 T+DHT 함량은 식품소재추출물 투여군이 대조군에 비하여 유의적으로 감소하여 5-a-reductase의 활성이 저해되는 것으로 나타났다. 그러나 식품소재추출물과 propecia와의 유의적인 차이는 보이지 않았다.

"임원십육지"의 곡물 조리가공(밥.죽)에 관한 문헌 비교 연구(I) (A Comparative Study on the Literature of the Cooking Product of Grain(Rice, Gruel) in Imwonshibyukji(I))

  • Imwonshibyukji was a copying manuscript written around 1825, the 27th year of king Soonjo of the Josun Dynasty. It was a massive home encyclopedia of total 52 books and 100 volumes. The unpublished 'Jeongjoji' of its 17-20th volumes analyzed the cooking methods on the steamed rice and gruel and studied the degree of their usefulness and medical values in the light of the cooking process science. The cooking method on the steamed rice was composed of 14 items, and the general introduction outlined 6 kinds of the rice. These were all quoted from Chinese literatures. The 11 items present the methods on the general production of the rice, 2 on the cooking process, and 1 on the preservation. The main material of the rice was rice, and others were naked barley, prosomillet, foxtail millet, glutinous millet, etc. , and the secondary materials were glutinous rice, small red bean, black soybean, potato, bamboo seed, jujube, taro, gaertner, chestnut powder, persimmon power, julib(Zizania caduciflora), mangcho(Erigeron canadensis), namchok(Nandina domestica), licorice root, nitrous, peach, palmicha(schizandra, jinseng, cheonmoondong(Asparagus), and honey are mixed), etc. The literatures quoted in the rice were all 33, in which 23 were Chinese (69.7%) and 10 were Korean (30.3%). In the case of gruel, the cooking methods on the general gruel were described in 41 items, and on the gruel for a medical treatment were in 48 items, in which there was not a cooking method on the gruel but only its medical values were presented. The materials used for the general gruel were approximately 60 kinds: rice, glutinous rice, munbean, job's tears, rye, soybean, black sesame seed, antler of cervidae, chicken, crucian carp, and various medical materials, etc. The gruel was mainly used for protection and medical treatment, and partly for food for hungry people. The literatures quoted in the gruel were total 57, in which 26 were Korean(45.6%), and 31 were Chinese (54.4%). It can be their characteristics that Almost all of the Chinese literatures on the methods of the steamed rice and gruel do not exist.

거골의 골연골 병변에 대한 관절경적 골연골 성형술 (Arthroscopic Osteochondroplasty of the Osteochonral Lesion of the Talus)

  • Purpose: To evaluate the clinical characteristics and the functional results of the osteochondral lesions of the talus (OLT) treated with arthroscopic osteochondroplasty. Materials and Methods: The study was based on 25 cases (25 feet) of osteochondral lesion of talus that were treated with arthroscopic osteochondroplasty from May 1997 to June 2005 with at least 1 year follow-up. Follow-up period was average 21.8 months. The average age was 37.2 years old. Male patients were 22 while female were 3. Postoperative evaluation was performed with American Orthopedic Foot and Ankle Society (AOFAS) Functional score, patient satisfaction and complications. Results: Ninety-two percent of patients had trauma history. Seventy-two percent of the lesions were located at the medial dome. As for the cartilage classification, 56% were fibrillation/fissure lesions while 44% were flap tears. Visual analogue scale (VAS) pain score improved from 6.8 points to 2.2 points, and AOFAS score improved from 71.3 points to 87.3 points. Eighty-eight percent of the patients were satisfied with the surgery and average period of returning to previous job was 6.5 weeks. Conclusion: We concluded that the arthroscopic osteochondroplasty is a viable surgical option for the osteochondral lesion of the talus.

Arthroscopic Treatment of Partial-thickness Rotator Cuff Tear

  • Forty-nine partial thickness rotator cuff tears underwent arthroscopic debridement or repair, and were followed up for a minimum of two years. Follow-up evaluations of the results were completed using a detailed functional questionnaire which was comprised of a rating of the UCLA shoulder scale and return to the previous sports activity and job. The average age of the 49 study patients was 46.5 years(range, 14 to 67 years). The patients were divided into four groups on the basis of the onset of the patient's symptoms. Thirty-five patients(72%) had partial tearing only on the articular surface, six(12%) on the bursal surface, and eight(16%) on both surfaces. Group I consisted of 21 patients with an average age of 56.7. Partial tearing in group I was attributed to the impingement syndrome. In group II, partial tearing of the rotator cuff was related to the anterior instability of the shoulder. This group included 9 patients with an average age of 27.9. In group III, all of the 8 patients were overhead athletes with an average age of 21.8. In this group, no isolated instances of significant trauma were related to the development of the shoulder pain. In group IV, 11 patients noted that a significant traumatic event preceded the onset of their pain. The average age of the patients was 34.9. Overall, 82% of the patients demonstrated satisfactory results and 18% revealed unsatisfactory results. The worst UCLA score and rate of return to the prior activity was noted in group III. In conclusion, partial thickness rotator cuff tear can be caused by subacromial impingement, instability, repetitive microtrauma, and macrotrauma. Arthroscopic debridement of partial tear of the rotator cuff provides a favorable outcome except in overhead athletes.

  • 6종의 찰곡류, 즉 찰벼(한강 및 올찰), 찰보리, 차조, 찰수수, 찰옥수수 및 율무에서 전분을 분리하여 그들의 몇가지 이화학적 특성에 관하여 분석 비교하였다. 1. 광학현미경으로 살펴본 전분입자의 크기는 $4.2{\sim}19.0{\mu}$의 범위로서 올찰 4.2, 한강 4.3. 찰보리 14.8, 율무 12.0. 차조 9.6, 찰수수 19.0, 찰옥수수 $13.0{\mu}$이었다. 2. X-선 회절에 의한 결정구조는 A-type이었다. 3. Blue value는 $0.02{\sim}0.08$의 범위였다. 4. Amylopectin분자의 1 segment당 D-glucose 평균 중합도는 $21{\sim}23$이었다. 5. 팽화력은 $180{\sim}280$의 범위로서 차조, 찰보리가 낮은 편이고, 율무, 찰수수, 올찰, 한강 등은 높은 편이다.

율무 박피(薄皮) 다수성(多收性) 선발(選拔) 계통(系統)의 생육(生育) 및 종실특성(種實特性) (Growth and Grain Characteristics of Thin-Shelled High-Yielding Lines of Job's-tears (Coix lacryma-jobi L.))

  • 율무 지방(地方) 수집선발(蒐集選拔) 계통중(係統中)에서 종실(種實)의 껍질이 얇고 수양성(收量性)이 높아 유망시 되고 있는 수원(水原) 3호(號) 및 수원(水原) 6호(號)와 현재(現在) 많이 보급(普及)되어 있는 품종인 김제종(金堤種)을 공시(供試)하여 이들의 생육(生育)및 종실특성(種實特性)을 조사(調査) 비교(比較)한 결과(結果)는 다음과 같다. 1. 경장(莖長)과 출수기(出穗期)는 품종간(品種間) 큰 차이(差異)가 없었으며, 주당경수(株當莖數)는 수원(水原) 3호(號)가 김제종(金題種)보다 1개 정도(程度) 많았으나 유의성(有意性)은 인정(認定)되지 않았다. 2. 주당립수(株當粒數)는 수원(水原) 3호(號)가 769개, 수원(水原) 5호(號)가 715개로 금제종(金堤種)보다 l8%, l0% 정도(程度)많았고 정현비율(精玄比率)이 31%및 15%정도(程度) 높았으며, 현곡(玄穀) 천립중(千粒重)은 수원(水原) 3호(號), 수원(水原) 6호(號)가 각각 14 g , 12 g정도(程度)가 가볍고 10a당(當) 현곡수양(玄穀收量)은 김제종(金堤種) 175kg /10a 보다 수원(水原) 3호(號), 수원(水原) 6호(號)가 각각 42% 및 34% 증수(增 收되)었다. 3. 수원(水原) 3호(號) 및 수원(水原) 5호(號)는 김제종(金堤種)에 비하여 과피가 얇고, 과피경도가 각각 36% 및 29%가 낮아 도정시간(時間)이 약 12% 및 7% 절감(節減)될 수 있었다 4. 종실(種實)의 운백질(雲白質) 함양(含量)은 수원(水原) 3호(號), 6호(號)가 김제종(金堤種) 보다 약 1% 정도(程度) 더 높았으며 전분함양(殿含粉量)은 수원(水原) 3호(號)가 55.9%로 가장 높았고 수원(水原) 5호(號)는 51.7%로 가장 낮게 나타났다. 아미노산 조성(組成)에서는 김제종(金堤種)과 수원(水原) 6호(號)가 비슷한 경향(傾向)을 보였고 수원(水原) 3호(號)는 김제종(金堤種)보다 대체로 낮은 경향(傾向)을 보였다.
