A Study on the Survey of the Meals outside Home in Seoul (서울 거주자를 대상으로 한 외식에 관한 조사연구)

  • An investigation was conducted on Seoulites' meals outside home by age group and sex, and the resultant findings are as follows: 1. To effectively conduct this survey were taken 201 teen males, 242 teen females, 202 young males, 232 young females, 219 men and 195 women. 2. For the kinds of meals they have outside home, breakfast forms 0.7%, lunch 35.7%, supper 22.2%, and snacks 14.4%. 3. Men subjects "lunch out everyday" by 39.9%, young males by 30.7%, and young females by 29%. 4. The reason why they lunch out indicates "convenient" by 37.4%, "carrying a lunch box is inconvenient" by 21.2%, "hard to prepare the lunch box" by 12.9%. 5. Regarding the favorite food taken for lunch, almost all the men prefer Korean food by 73.9% 6. Ra Myun and noodle occupy the highest Percentage of young females by 79.3% ; Chinese food the highest percentage of women by 27.7%, but the lowest percentage come from Japanese food by 1.1%. 7. The preference of kinds of food when having a meal outside home is ascribed to "prefer"by 50~75.7%, the highest percentage of all. 9. The price they pay for lunch outside home amounts to less than 900 wons in teens and young males 1, 000~2, 000 wons in men and women. The price of a meal outside home per capita a day, when taken by family unit, averages to 3, 694 wons. For the number of meals outside home, "more than once a month" forms 41.7%. 9. On the mooted points raised when having a meal outside home, "unsanitary' forms 36.7%, "expensive in prices" 26.1%, "lack of nutritution" 10.6%. 10. Teen males, when viewed from food preference for lunch outside home, take Ra Myun, Ddokbokki, Chinese noodle, while teen females, Ddokbokki, bread, Chinese noodle: young males, Sundubu Baekban, Bibim Bab, Ra Myun, Yokge Jang; young females, Sundubu Baekban, pork cutlet, Bibin Bab: men, Solnone Tang, Daenjang Chikae, Baekban, Kalbi Jongsik Bibim Bab : women, Bulkogi Jongsik, Neang Moyn, and Chinese noodle. 11. When seen from the nutrition of meals taken outside home, the prices of noodle and boiled rice range from 600 to 1, 000 wons, while their energy ranges from 407 to 745 kcal, Protein from 14.2 to 30.3g. On the other hand, the Price of western food averages to 1, 900~2, 500 wons, while its energy ranges from 1, 061 to 1, 129 kcal, proteio from 45.9 to 72.9g. Species Identification and Labeling Compliance Monitoring of Commercial Shrimp Products Sold in Online Markets of South Korea (국내 온라인 유통 새우 제품의 종판별 및 표시사항 모니터링 연구)

  • This study investigated species identification and labeling compliance of 48 shrimp products sold in the Korean online markets. Species identification was conducted using the standard DNA barcoding method, using the cytochrome c oxidase subunit I gene. The obtained sequences were compared with those deposited in the NCBI GenBank and BOLD Systems databases. Additionally, phylogenetic analysis was performed to further verify the identified shrimp species. Consequently, 16 shrimp species were identified, including Penaeus vannamei, Pandalus borealis, Palaemon gravieri, Leptochela gracilis, Penaeus monodon, Pleoticus muelleri, Metapenaeopsis dalei, Euphausia pacifica, Lebbeus groenlandicus, Trachypenaeus curvirostris, Argis lar, Metanephrops thomsoni, Metapenaeopsis barbata, Alpheus japonicus, Penaeus chinensis, and Mierspenaeopsis hardwickii. The most prevalent species was Penaeus vannamei, found in 45.8% of the analyzed products. A significant mislabeling rate of 72.9% was found; however, upon excluding generic names such as shrimp, the mislabeling rate reduced to 10.4%. The mislabeling rate was higher in highly-processed products (89.3%) compared with that in minimally-processed products (50%). No correlation was found between the country of origin and mislabeling rate. The results of this study provide crucial data for future monitoring of shrimp products and improving the labeling of shrimp species in Korea.

  • In this study, polyvinyl alcohol film of japan and china products were measured by FT-IR spectrophotometer, ASTM D882-02(tensile strength) and KS M3048-2001 test method(Thermal Gravitational Analysis). The Chinese product became help in prime cost curtailment. It was confirmed as the result polyvinyl alcohol film which analyzes the Chinese product and the Japanese product. And the result stability which tries to measure the stability against heat was superior.

Survey on Running Smoking , No - Smoking Area in Restaurants in Seoul (서울지역 음식점의 흡연 , 금연구역 설치현황 조사)

  • Running smoking, no-smoking area in restaurants(n=546) in 25 districts in Seoul area was surveyed and evaluated. No-smoking restaurants were evaluated as A(2.0 points). Restaurants running no-smoking area with guidance to the customers were evaluated as B(1.7 points), and those without guidance as C(1.4 points). In case of the distinction of smoking or no-smoking area are not clear, it was evaluated as D(1.1 points). Restaurants which are not running no-smoking area were scored E(0.8 points). Western style restaurants scored average of 1.55points, which was significantly higher than that of Korean, Chinese or Japanese style ones(average of 1.24~1.27 points). The highest mean score for restaurant 1.625 points in Songpa-gu(district).

  • To analyze the mode of inheritance of this gene in Fb strain, carried out cross experiment between Fb and several Japanese and Chinese origin strains. The results of crossing experiments, feeding ratio in F1 hybrids were nearly the mid of parents, F2 and backcrossed hybrids(BF1) were approximately intermediate between Fb and other strains. Hence, the feeding habit of cabbage leaves on Fb strain is assume to be incomplete dominance.

Analysis of Korean Translations of Foreign Picture Books for Young Children (영·유아용 외국그림책의 그림, 글 및 문화적 내용에 대한 번역 내용 분석 연구)

  • Of the 2,593 children picture books published in Korea between 2001 and 2003, 46% were Korean in origin, while 53.9% were Korean translations of books originally in English, Japanese, French, or German. This study compared 45 of the translations with the originals. Of these, 49.2% had contents not included in the originals, and 31.1 % had omitted contents. More over, 7.6% of the Korean versions were different in punctuation codes and signs, and 6.7% were different from originals in length of sentences. Most of the books were on general or global issues rather than culture-bound. However, among the English books, there were more than 20 cases different from Korean culture in person's names, external appearance, food, and/or clothing.

  • This paper summarizes the ergonomic risk assessment of hotel chef. The cooking operations were observed in order to determine sources of ergonomic stress and make recommendations to reduce the risk of work-related musculoskeletal disorders in Korean, Japanese, and western style cooking. We used interviews, document analysis, video analysis, and risk assessment to identify and quantify ergonomic risk factors. The results indicate that the cooking operations have some ergonomic problems. These findings identified in this study can be used to reduce the risk of work-related musculoskeletal disorders in food service areas.

  • In Yoshimasu Todo (吉益東洞)'s book, the doctors' commitment is said to attack the poison of illness and this can be realized only by using the poison of medicine. From this point of view, he had denied the preceding medicine books, since there was no distinction between the food that raise the body and the poison that attack the poison of illness in the preceding medicine books. In addition, Every medicine has the respective results and one medicine treats one disease, otherwise, in the preceding medicine books, one medicine deals with more than one illness and also they have denied that the characters of medicines are cold or hot because they couldn't be proven by tasting or seeing.

  • The lecturer pointed the agriculture in change brought about population bomb and economic development, and he appealed the scientists of soil and fertilizer to make proposals for establishing their constructive attitudes toward the situations of agriculture. The points emphasised by the lecturer for the improvement of future food situation were: fox example the elucidation of the ancient agricultural technology of Korea which is a important attempt for development of agricultural technology of Korea and Japan, and soil improvement with special attention to the efficiencies of phosphate, silicate, cations and trace elements. He showed some Japanese examples of natural pollution as both of a sufferer and an assailant of agriculture which are resulted from the high economic development, and some methods of solution, for example active application of legumes capable for fixing atmospheric nitrogen to wasted soils. He also pointed the need of lower consumption of energy and resources, and new understanding of wild plant species for the future agriculture. Some methods of other fields of sciences were emphasised for developing the soil and fertilizer researches.

  • Bovine spongiform encephalopathy (BSE) has become an important concern in food safety. Until now, 36 cases of BSE have been detected in Japan. Control programs have led to a decrease in the annual numbers, and Japan has now been categorized as a "controlled risk" country by the World Animal Health Organization (OIE). In spite of a worldwide decrease in the number of BSE cases, sporadic occurrences of atypical BSE cases have been reported. In Japan, 2 atypical BSE cases were confirmed. A Japanese L-type-BSE (BSE/JP24) has exhibited transmissibility to bovinized transgenic mice (TgBoPrP) it has a shorter incubation period than that of classical BSE. Although the origin of atypical BSE is obscure, risk analysis of newly emerged BSE prions of cattle and humans is required.
