방한 일본인 개별 자유 여행객의 한국 음식의 적응 과정 - 문화적 신념 요인들을 중심으로 - (The Adaptation Process of Korean Food for Japanese Independent Tourists (FIT) - Focus on the Cultural Belief -)

  • The objective of this study was to investigate the phasic characteristics of the adjustment process to Korean food with an analysis of Japanese independent tourist culture social resistance factors. To collect data for empirical study, a survey was distributed to 284 Japanese tourists through Korean travel agencies. Logistic regression analysis was carried out in order to determine media and cultural beliefs affecting the diffusion process of Korean food. The results showed that cultural beliefs had no significant effects on the diffusion process of most Korean food. However, people who valued similarities between the two countries-South Korea and Japan-demonstrated a significant effect on performance and identification group. Therefore, cultural beliefs did not influence the diffusion of Korean food, although there are surely cultural beliefs and subjective factors affecting their reform decisions.

일제 강점기의 수탈과 한국인의 식량·영양 상태 (Japanese extortion and the Korean food and nutritional status during Japanese occupation in Korea)

  • The loss of Korean sovereignty by Japan in 1910 was an unforgettable national humiliation of Korea who maintained the sovereignty for 5000 years. The process of Korea annexation into Japan was reviewed and its consequences to the food and nutritional status of Koreans were analyzed by using the records in Korea as well as in overseas. The records of the colonial Government-General of Joseon shows superficial figures distorting the actual life of Koreans at that time. Japan extorted 45% of rice and 44% of soybeans produced in Korea in 1933, and imported poor quality long-grain rice (Indica type) to replace partly the extorted rice. The food and nutritional situation of Koreans was miserable, and hunger and malnutrition were prevalent in the country for the 36 years. The height of Koreans became smaller than Japanese, who was called as 'little people (Oein)' in Korea historically.

서울.경기지역 일식 체인전문점에 대한 인지도와 선호도 (Customer's perception and preference for Japanese Chain Restaurants in Seoul & Kyunggi Province)

  • The objectives of this study were, 1) to investigate the perception and preference for Japanese chain restaurants due to demographics and consumption behaviors, and 2) to research improvements for Japanese chain restaurants according to the customers' dissatisfaction. Frequency analysis and one-way ANOVA were used to analyze the data. Three hundred questionnaires were distributed and 254 were returned(84.66%). The customers' perception and preference about Japanese chain restaurants were significantly related with each other. The differences of perception and preference due to demographics and consumption behaviors were significant. The most dissatisfied selection attributes were price, number of Korean dishes, number of branch offices, and advertisements, in order. From examining the progressive circmnstances of Korean food-service industry and the social trends toward a preference for healthy, special ethnic food and dishes for diet control and high protein-low fat, it is apparent that food-service businesses related to Japanese food have the potential for success. The results of this study should provide valuable information for administrators and managers in the hospitality industry.

방한 일본 관광객의 한국전통음식 메뉴품질 만족도에 관한 연구 (A Study on the Satisfaction for the Menu Quality of Korean Traditional Food of Japanese Tourists)

  • This study was peformed by questionnaire to investigate satisfaction for the menu qualify of Korean traditional food of Japanese tourists. The subjects of this study consisted of 280 Japanese tourists using the Gyeongju and Busan hotel. The results were summarized as follows: 63.9% of the subjects responded that frequency of visiting was 1-2 times a year and 42.1% responded that motivation of visiting was for tour and understanding of korea. Companion with friend scored high as 40.4%, and intention of revisiting was high on 'normal'. On overall satisfaction on korean traditional foods, 'satisfy' scored high as 43.2%. 61.1% of the subjects responded that the taste was the most important factor of food. On frequency of eating, 'over 8 times' scored high as 27.9%, and on motivation of eating, 'with visiting Korea' scored high as 48.2%. On satisfaction for the menu quality of korean traditional food, the highest item was 'taste(3.82 point)' and 'nutrition(3.82 point)', and but 'Japanese mark on menu(2.47 point)', 'Japanese mark on ingredient(2.61 point)' scored low. Overall satisfaction for korean traditional food had an effect on intention of revisiting, and therefore, improving the quality of the traditional food and the strategy for the classification of desires are earnestly requested.

한·일 일부지역 여대생의 식습관과 식품기호도 비교 (Comparisons of Korean and Japanese College Students' Eating Habits and Food Preferences)

  • 본 연구는 한국과 일본의 일부지역 여대생들을 대상으로 식습관과 식품기호도를 조사 비교함으로써 우리나라 여대생들의 식생활 실태를 대외적 차원에서 파악하고자 하였으며 결과를 요약하면 다음과 같다. 한국여대생은 일본여대생에 비해 체중에는 차이가 없었으나 신장이 더 커서 BMI는 더 적었다. 한국여대생은 일본여대생보다 밥식과 된장국 섭취횟수는 많았으나 아침 결식과 외식 횟수는 2배 이상 높았고 패스트푸드, 인스턴트식품, 냉동식품의 섭취 횟수가 높아 식습관이 바람직하지 못하였으며 활동 정도도 낮았다. 양국 대학생들은 모두 생선류보다는 육류와 우유 및 유제품에 대한 기호도가 높아 식생활의 서구화 경향을 보였고 채소류보다는 과일류에 대한 기호도가 높아 단맛에 대한 기호를 나타내었다. 한국여대생은 일본여대생과 비교하여 육류에 대한 기호도에는 차이가 없었으나 곡류, 생선류, 콩 및 콩제품, 채소류, 김을 제외한 해조류에 대한 기호도가 낮았으며 반면에 우유와 요구르트에 대한 기호도는 높았다. 결론적으로 한국여대생은 일본여대생에 비해 아침 결식, 외식, 패스트푸드, 인스턴트식품, 냉동식품의 섭취 횟수가 높아 바람직하지 못한 식습관을 지니고 있었고 식품기호도에서도 섭취를 권장하는 생선류, 콩 및 콩제품, 채소류, 해조류에 대한 기호도가 낮아 전반적으로 바람직하지 못한 식생활실태를 보였으며 더욱이 활동 정도까지 낮아 일본여대생보다 장차 식생활과 관련한 질병 유발 가능성을 더 많이 내포하고 있었다. 따라서 여대생 자신의 건강과 미래의 가정과 사회를 이끌 그들의 위치를 고려하여 우리나라 여대생들이 이러한 자신들의 실태를 자각하고 식습관을 바르게 교정하여 바람직한 식생활을 할 수 있도록 이와 관련한 교육이 절실히 요구된다.

『조선(朝鮮)の특산(特産)』으로 보는 일제강점기 식품 특산물 현황 분석 (Analysis of Regional Food Specialities Status in Korea during the Japanese colonial period through 『Specialities of Joseon (朝鮮の特産)』)

  • This study examined the status of food specialties in Korea during the Japanese colonial period through 『Specialities of Joseon (朝鮮の特産)』. The book recorded a total of 164 areas and 317 specialties, focusing on five railway lines and branch lines on the Gyeongbu, Honam, Gyeongui, Gyeongwon, and Hamgyeong. Among the specialities, 211 species were included, excluding overlapping ones. The food specialties accounted for 100 kinds in 159 regions or 47.4 percent of the specialties. There were 47 food specialties in 47 areas of the Gyeongbu Line, 21 food specialties in 20 areas of the Honam Line, 32 food specialties in 40 areas of the Gyeongui Line, 26 food specialties in 15 areas of the Gyeongwon Line, and 33 food specialties in 42 areas of the Hamgyeong Line. Among the specialties, the amount of fish and their workpiece was overwhelmingly the largest. Next came processed goods of fruits, grains, and vegetables. In modern factories, corn, tomatoes, blueberries, and sardines were made of processed goods. Factories have been constructed for glass noodles, sugar, and soju. Specialities and processed goods produced in each region were brought to Japan during the Japanese colonial period.

외국인 소비자의 한식 선호도와 관능적 특성에 대한 인식 - 출신국가별 비교를 중심으로 - (Preference and Perception of Korean Foods of Foreign Consumers by Nationality)

  • To establish a globalization strategy for Korean food, it is important to ascertain foreign consumer's taste preferences and to evaluate their sensory perceptions of Korean food. In concert with previous studies, the most preferred food were Bulgogi and Galbi. However, respondents showed somewhat different preferences for other foods. Chinese and other Asian participants preferred Galbitang and Samgyetang, while Japanese participants preferred Pajeon, Galbitang and Japchae, and Western participants preferred Galbitang, Mandu and Bibimbap. The most preferred condiment was hot pepper paste (the representative condiment of Korea) and the least preferred one was ginger. Hot pepper paste was preferred most by Japanese participants, while Chinese participants tended not to prefer ginger and other Asian participants excepting those from China and Japan disliked vinegar most. Foreign consumers tended to consider Korean food as sweet, salty and very hot. Chinese participants considered Korean food to be 'plain' and 'light and washy' in taste, while Japanese participants considered Korean food to be 'greasy' and 'thick and sticky'. Chinese participants considered typical servings to be inadequate, while Japanese participants considered the servings as excessive.

한국 음식과 일본 음식의 조미료 사용법 비교 (The Differences Between Korean and Japanese Ways of Seasonings)

  • In this paper, the differences between Korean and Japanese ways of seasonings are studied. The main results are summarized as follows: (1) Shouyu and Miso which are Japanese equivalents of soy sauce and bean paste of Korean foods are used in variety of different seasonings with some other ingredients while Korean counter parts are used only to add salty tastes. (2) Shouyu and Miso lose their flavors after considerable time of heating, while Korean soy sauce and bean pastes increase their tastes after heating. (3) Mirin adds sweety taste and glaze and Sake makes food soft or hard according to the moment of being added during cooking. (4) In Korean foods soy sauce, bean paste and red pepper paste are on the basis of tastes, Dashi is used in almost every Japanese food. (5) Seasoned vegetables of Korean food are prepared only with spices of green onion, garlic and sesame oil while seasoned fishes or vegetables are mixed with Shoyu or salt and vinegar in Japanese food. (6) In making Zorim, Korean traditional sauces are added from the beginning of heating. But in making Nimono, sugar, salt, vinegar, Shoyu and artificial taste are added in order during heating. (7) In grilling, main food for grilling in Korea is meat, which is prepared with a variety of spices such as soy sauce or/and red pepper pastes, garlic, green onion, sesame oil, sesame powder, pepper and sugar while mainly fishes are grilled with salt, occasionally with Shoyu or Miso in Japanese food. (8) Pan frying fishes are taken with soy sauce with vinegar in Korea but Tepura are eaten with Tentsuyu in Japan.

Study on the Measurement of Management Performance based on BSC: Examining Japanese Food Manufacturers

  • Purpose - This study attempts to measure the management performance of a food manufacturer using the BSC as one of the main business management techniques used to achieve the vision of a corporation. Research design, data, methodology - The measurement of business performance of a Japanese food manufacturer was conducted from four perspectives of BSC. Matsui (2005) developed the 'Cross-analysis chart'. Results - First, there were many cases where a minor wastage of raw materials was related to increasing costs. Second, the food manufacturer should try to recover the investment cost through significantly increasing the rate of the facility's operations. Third, reducing personnel expenses could be an important issue in labor-intensive manufacturing. Fourth, customer management was very important in the food manufacturing business. Finally, the food manufacturer should actively consider proposals influencing the food culture to secure high profits in the future. Conclusions - There were many limitations in applying these results to Korean food manufacturers, as this study applied to and analyzed the results in the context of the Japanese food manufacturer.

한국에 체류 중인 일본인과 중국인의 비빔밥 인지도 및 해외시장 진출 가능성 연구 (A Study on the recognition and marketability of the Bibimbap - Focusing on Japanese and Chinese staying in Korea)

  • Korean food globalization has been recently launched as a tool of civil ambassador, and the trend of Korean food has grown among international visitors of Chinese and Japanese. The purposes of this study were to identify the awareness level about Bibimbap of Chinese and Japanese consumers and to investigate its marketability. The survey questionnaires were distributed to 403 Chinese and Japanese visitors who have experienced Bibimbap. The results identified 3 factors of quality, sensory characteristics, and nutrition value, and Japanese consumers appeared to have higher perception than Chinese consumers about Bibimbap. A significant difference between Japanese and Chinese consumers existed in nutritional value and marketability of Bibimbap, and Japanese highly evaluated the nutritional value of Bibimbap in particular. The findings of this study provided valuable information for the development of Bibimbap and marketing strategies to globalize Bibimbap.
