Quality Characteristics of Pork Jerky Added with Capsicum annuum L. and Prunus mume Sieb. et Zucc. Extract (파프리카와 매실 추출액을 첨가한 돈육포의 품질 특성)

  • This study was conducted to evaluate the quality characteristics of pork jerky added with the extracts of paprika (Capsicum annuum L.) and Japanese apricot (Prunus mume Sieb. et Zucc.). Color stability, lipid oxidation, texture, and consumer acceptability of the pork jerky were also compared before and after storage of 70 days. The pork jerky added with 0.5% paprika extract and 3.5% Japanese apricot extract had the highest score for overall acceptability. The redness (a-value) of the pork jerky added with the natural extracts had a similar level as the one with nitrite. The extracts of paprika and Japanese apricot were also effective in inhibiting the lipid oxidation of the pork jerky during storage. In texture measurement, the total shear force of the natural extracts-treated sample was lower than that of control (the natural extracts-untreated samples). All sensory properties of the pork jerky were significantly (p<0.05) improved by the addition of the natural extracts. The results of this study indicated that the extracts of paprika and Japanese apricot could be used as natural agents for retarding color and lipid oxidations.

  • Twenty-five species of pests had occurred at orchards of Japanese Apricot, Prunus mume Siebold & Zucc., in Hadong and Jinju (Gyeongsangnam-do province) from 2005 to 2007. Rhopalosiphum rufiabdominale (Sasaki), Singapora shinshana M., Tetranychus viennensis Zacher, and Synanthedon hector B. occurred as major pests and Anthonomus persicae sp. nov., Grapholita molesta (Busk), Spodoptera litura F., and Myzus persicae (Sulzer) as a sporadic pests. The population of S. shinshana had increased continuously during the season, from late April to late October. The population of T. viennensis occurred early May, reached the highest peak in late June to early July, and then declined with worsening consequences of nutritional conditions in the apricot leaves. A. persicae was observed to occur before breaking flower-bud of apricot and emerged adults were found in April to early May.

The Antitumor Effect in Sarcoma-180 Tumor Cell of Mice Administered with Japanese Apricot, Garlic or Ginger Doenjang (매실, 마늘 및 생강첨가 된장을 투여한 쥐의 Sarcoma-180 종양세포에서 항암효과)

  • The study was carried out to measure the antitumor effect of traditional doenjang (Korean soybean paste) added with Japanese apricot, garlic or ginger. Four kinds of traditional doenjang inhibited significantly the tumor growth in mice injected sarcoma-I80 cells. Especially, traditional doenjang added with ginger (Gi-TD) showed an inhibition of tumor cell activity of 97% by the administration of 1.0 mg/kg methanol extracts. Among Balb/c mouse administered doenjang extracts, the liver weight of mice fed Gi-TD was heavier than that of the group not administered doenjang. However, no difference was found between the control and doenjang administrated groups in weights of body, spleen, kidney and heart. The activity of natural killer (NK) cells was relatively high in mice administrated with the four kinds of doenjang. Particularly, mice administrated with the Gi-TD methanol extracts showed a strong activity of 82.9%. The activity of glutathione S-transferase (GST) in mice administrated with the 4 kinds of doenjang was higher than that of the group not administered with doenjang. In particular, the GST activity was the strongest in the group administrated with Gi-TD. The results suggest that Gi-TD has a strong growth inhibition activity against sarcoma-180 tumor cells.

Development of a Plum (Japanese Apricot) Seed Remover for Multipurpose Plum Flesh Processing

  • Purpose: Japanese Apricot, a type of plum, has various medicinal and economical applications. Plums are quite popular worldwide, but their deseeding remains a serious impediment to their processing. Therefore, a plum (Japanese Apricot) seed remover (PSR) was developed that can use various types of cutters according to the purpose of the plum processing, and its performance was evaluated. Methods: The proposed PSR, which allows multipurpose cutters, namely, zero-, two-, and four-blade cutters, to be installed, was first designed and manufactured. To identify appropriate parameters related to the cutting pressure, plums were harvested from three regions during three harvesting periods, and their geometrical and mechanical properties were measured. After application of the parameters related to the cutting pressure, a performance test was carried out on both fresh and frozen plums by identifying the ratios of the flesh recovery, seed recovery, seed breakage, deseeding efficiency, and machine efficiency. Results: The results show that, using the proper calculation of the processing parameters, 100% deseeding efficiency was facilitated regardless of the type of cutter used. However, in the case of a four-blade cutter, there are significant differences in the flesh recovery ratio according to the plum setting angle. Between the fresh and frozen plums, all cutters showed a significantly better flesh recovery ratio for the case of fresh plums. Conclusions: This machine will advance the plum processing technology, and eventually help the plum industry flourish.

Quality Characteristics and Antioxidative Activity of Garlic Pickles Prepared with Persimmon Vinegar and Maesil (Japanese Apricot) Juice (감식초와 매실액을 첨가한 마늘 피클의 품질 특성 및 항산화성)

  • The quality characteristics and antioxidative activity of garlic pickles prepared with persimmon vinegar with or without Maesil (Japanese apricot) juice were investigated. Heat treated garlic cloves ($110^{\circ}C$, 5 min and then rapidly cooling) were salted with NaCl and $CaCl_2$, and then soaked in pickling solution, and stored at $20^{\circ}C$. The pH of the garlic pickles initially ranged from 2.36~3.24, after which the pH slightly increased to 3.22~4.13 during storage, while the acidity was decreased to 1~1.97. Throughout the entire storage periods, the acidity of the garlic pickle containing persimmon vinegar and Maesil was the highest (1.97%). The hardness of the control sample (non heated garlic) decreased during storage, whereas the hardness of all the heat treated groups did not change after 21 days of storage. Moreover, the chewiness of the persimmon vinegar+Maesil group was the highest among the groups. The Hunter color L value of garlic pickles decreased during storage, while the b value (yellowness) increased for all groups except the two persimmon groups. The $IC_{50}$ of the DPPH radical scavanging activity of garlic pickles at 5 day of storage was 85.98~97.81 mg/mL. However, the antioxidative activity of garlic pickles gradually increased with longer storage times. The persimmon vinegar+Maesil group showed the highest antioxidative activity. Results from the sensory evaluation showed that scores of flavor, taste and over-all preference were higher for the persimmon vinegar+Maesil group than the other groups (p<0.05).

  • Occurrences of Rhopalosipnum rufiabdominalis damage in the leaves of Japanese apricots were observed in Hadong, Gyeongnam Province, a major producing area. R. rufiabdominalis occurred from early May to mid October, with the peak occurrence of damaged leaves in mid May. To find proper timing of chemical control against R. rufiabdominalis, acetamiprid WP was sprayed weekly from 3 April, before budbreak, to 8 May in 2007. The best time for control R. rufiabdominalis was on 17 April 2007, at which the leaves were still tender and developing up to 3 to 5 leaves.

  • Koryo(918-1352) made a certain progress in her culture and agriculture except the latter part of the era when the development in social economy were retarded due to military dictatorship and Mongol invasion. Despite of these external conditions, cultivations and kinds of horticulture foods were expanded With the help Of many king's agriculture first policy and the advancement in cultivating method . Among the horticulture foods, fruits such as peach, plum, Japanese apricot, apricot, cherry, pear, persimmon, pomegranate, crab apple, Jujube, grape, Chinese quince, walnut, orange, yuzu, chestnut, ginkgo nut(silvernut), pine nut, nutmeg nut, and fiat were crowed, and vegetables such as Chinese cabbage, turnip, radish, garlic, welsh onion, gynmigit, scallion, taro, malva, cucumber, white gourd, bottle gourd, water melon, eggplant, Japanese ginger, ginger and litchi were cultivated, while semi, water shieled and bamboo sprouts were taken in natural. Fruits were taken in natural or through dry, and particularly grapes were used to make wine, Flowers of Japanese apricots, some fruit trees, and chrysanthemum were also made into wine. Certain fruits were used as medicine owing to its medicinal nature. Eco-friendly Materials Selection and Control timing to Eurytoma maslovskii in Japanese Apricot (매실 복숭아씨살이좀벌에 대한 유기농업자재 선정 및 방제적기)

  • The mortality was tested to organic control materials to the E. maslovskii adults by the dipping method in laboratory. As the result, in 2014, the extracts of Neem I was not shown control effect by 10.2% control efficacy to E. maslovskii adults in laboratory. The extract of Sophora flavescens roots was shown 84.7% mortality. And other 5 materials were shown 100% insecticidal activity to the adults in laboratory. I n 2015, Plant extract+pyrolignous acid Matrine 0.45% and Plant extract Matrine 0.5+paraffin oil 8% were shown 100% and 94.6% control efficacy, respectively. In the Japanese apricot orchards, the fruit damage rate was low on spray at 21th April in Daap, Gwangyang city, and 8th May Hwangjeon, Suncheon city in Jeonnam province in 2014. The fruit damage rate differed from spray timing and materials, but it was considered that the control of E. maslovskii should be in late April to early May. Otherwise, in 2015, the fruit damage was significantly low in late April spray in Daap, but no significant was in between one spray at 21th, 27th April and 2 spray that days. Meanwhile, the control effect was better 2 times spray of the days in Hwangjeon, Suncheon city in Jeonnam province. Therefore, in organic Japanese apricot, the use of insecticidal materials recommended to control over twice spay in from meddle to late April.

The Quality Assessment of Doenjang Added with Japanese apricot, Garlic and Ginger, and Samjang (부재료(매실, 마늘, 생강) 첨가된장 및 쌈장의 품질평가)

  • The study was carried out to evaluate the sensory characteristics and physiological effect of Korean soybean Paste (doenjang) added with Japanese apricot, garlic and ginger, and samjang. Garlic doenjang was shown to have a good taste, odor and color, but ginger doenjang was worse in the taste, odor and color than control doenjang in sensory evaluation. Japanese apricot doenjang and garlic doenjang had high scavenging activity against 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical, of which the IC$\_$50/ values were 93 and 94$\mu\textrm{g}$/$m\ell$, respectively. Five kinds of doenjang revealed antimutagenic activity against N-methyl-N’-nitro-N-nitrosoguanidine (MNNG), and especially, samjang showed 83% inhibition at the concentration of 5mg/plate. Samjang exhibited a strong antimutagenic activity(79%) against aflatoxin B$_1$,(AFB$_1$) in Salmonella typhimurium TA100. Ginger-, garlic- and Japanese apricot doenjangs also had high inhibitory effects against AFB$_1$. and the inhibition rates were 75, 55 and 51%, respectively. In SOS chromotest. samjang showed the highest antimutagenicity against MNNG, with 64% inhibition rate. These results demonstrated that samjang has strong a antimutagenic effect against MNNG and AFB$_1$.
