Factors Affecting Online Hotel Selection Behavior of Domestic Tourists: An Empirical Study from Vietnam

  • The purpose of this study was to offer a new conceptual framework based on a combination of the TPB model, the TAM model, and two additional constructs consisting of eWOM and pricing value called the E-P-TAM-TPB model, and to assess the model's implications on hotel selection behavior. This study empirically examines the E-P-TAM-TPB model to evaluate and validate domestic tourists' online hotel booking intentions by using the partial least squares structural equation modeling (PLS-SEM) approach. The data was collected from 355 domestic tourists who booked the room via the hotel website. The major findings of this study indicated that the E-P-TAM-TPB model has a positive significant influence on online hotel selection behavior. The results revealed that all proposed hypotheses were declared supported. Future studies should build on the framework by incorporating potential moderators to better understand how different groups of customers behave online in different segments of the hospitality industry. Managers must not only develop an easy booking process but also provide price value information to attract or impress clients. Tourists can compare room rates with other hotel websites and OTAs.

  • This study is intended to present the direction for the wholesome development and support of the hotel casino industry in korea through the menu analysis of hotel casino restaurant. Miller's menu analysis was made of a lower food cost percentage in consideration of the quantity sold of each menu item and food cost percentage. As a result, it was shown that the proportion belonging to the upper category in the menu items intended for research in korean casino restaurant, it raises a problem in the menu management of korean casino restaurants.

호텔기업 종사원의 변혁적 리더십이 직무만족과 조직 동일시에 미치는 영향에 관한 연구 (The Effects of Transformational Leadership on Employees Job Satisfaction & Organizational Identification in Korean Hotel Industry)

  • 본 연구는 변혁적 리더십의 구성요소들이 호텔 종사원의 직무만족과 조직동일시에 미치는 영향력을 분석하고 또한 인구통계학적 특성과 호텔이 가지고 있는 특징이 조절변수로서 변혁적 리더십에 어떠한 영향을 미치는지를 파악하여 우리나라 호텔산업의 경영자 및 호텔 종사원들에게 조금이나마 도움이 되고자 하였다. 본 연구의 주요 분석 결과로는 첫째, 변혁적 리더십부문과 호텔 종사원의 직무만족부문 요인분석결과 변혁적 리더십부문에서는 총 18개의 변수들이 배려형 리더십 요인과 비전형 리더십 요인의 2개의 요인으로 추출되었으며, 호텔 종사원의 직무만족부문에서는 총 31개의 변수들이 '후생복지정책과 근무환경요인'.'능력의 발휘와 직무안정성 요인','동료관계와 직무수행 요인','회사정책적 요인' 등의 4개 요인으로 추출되었다. 둘째, 호텔기업에서 상사의 변혁적 리더십유형은 종사원의 직무만족과 조직동일시에 유의적인 영향을 미치는 가에 대하여 단계별 회귀분석을 실시한 결과 변혁적 리더십유형 중 호텔 종사원의 직무만족에 유의한영향을 미치는 것으로 나타난 것은 '비전형 리더십'요인이었고, 조직동일시에 유의한 영향을 미치는 것으로 나타난 것은'비전형 리더십' 요인과 '배려형 리더십'요인 모두인 것으로 나타났다. 셋째, 변혁적 리더십유형과 인구통계학적 특성 및 인반적인 특성간 유의적인 차이를 알아보기 위하여 일원분산분석과 t-검증을 실시한 결과 소득수준과 현 직급, 근무년수, 호텔경영형태, 이직경험에서 통계적으로 유의적인 차이가 있는 것으로 나타났다.

호텔광고 태도와 브랜드이미지가 고객의 구매의도에 미치는 영향 (Effects of Hotel Advertising Attitude and Brand Image toward Customers' Purchase Intention)

  • 본 연구에서는 호텔기업의 호텔광고 태도와 브랜드이미지가 고객의 구매의도, 재구매의도, 계속구매의도 등에 미치는 영향을 실증분석을 통하여 규명하고자 하였다. 본 연구의 자료수집에 있어서는 2015년 4월 1일부터 2015년 4월 30일까지 서울시내에 위치한 5성급 호텔인 L호텔, I호텔, W호텔, S호텔, H호텔 고객들을 대상으로 설문조사가 이루어졌으며, 총 306부의 설문지를 유효표본을 분석에 이용하였다. 실증분석 결과, 호텔광고에 대한 태도 요인, 즉, '느낌 및 설득적 태도'는 구매의도, 재구매의도, 구매계속의도에 있어서 각각 1%, 5%, 1%수준에서 유의한 영향을 미치는 것으로 분석되었으며, '명성 및 유용적 태도'에 있어서는 구매의도, 재구매의도에는 각각 1%, 5%수준에서 유의한 영향을 미치는 것으로 나타났으나 구매계속의사에는 영향을 미치지 않는 것으로 나타났다. 한편, 호텔의 브랜드이미지인 '정서적 브랜드 이미지'와 '물리적 브랜드 이미지'가 구매의도에 미치는 영향을 분석한 결과, '정서적 브랜드 이미지'와 '물리적 브랜드 이미지' 요인 모두 구매의도, 재구매의도, 구매계속의도에 각각 1% 수준에서 유의한 영향을 미치는 것으로 나타났다. 본 연구의 시사점은 호텔기업은 각 호텔의 특성을 잘 전달할 수 있는 설득력 있고 유용한 호텔광고를 만들어야 하며, 타 호텔과 구별되는 서비스 및 새로운 호텔상품 기획 등을 통한 차별화 마케팅이 필요하다.

관공호텔 조리직무의 분업과 통합에 따른 문제점과 개선방안에 관한 연구 (A Study on Effective Management & Administration System for Deluxe Hotel Kitchen in Seoul Area.)

  • Despite prologed business stagnation of both international and domestic economy, hotel business as well as tourist industry has continuously been keeping growing, owing to increase of surplus income and world flowing population. During recent 4 years, growth rate of yearly mean in domestic hotels reached 9.9% and especially that of the superior class hotels 15.2%. In the composition of domestic tourist hotel's revenue, the earnings of guest rooms form 37.4%, on the other hand those of food & beverage 39.9%. This result is that our hotel business is concentrated on its interest in FOOD & BEVERAGE of which productivity per unit dimension can be increased to an unlimited extent and extent and superior class hotels strengthened in F&B are increasing in comparison with European or American hotels which are focused on guest rooms in their management. For value added rate of F&B is low as compared with increase of their earnings, they are interested in the management techniques which focus on rising the rate. As for the cost of Food & Beverage, personnel expenditure forms 36.5% and the direct materials 31.5%. Therefore how to manage personnel and materials costs which compose as much as 68% of total revenue will greatly affect net profit. We can say that an effective management technique in cost of Food & Beverage is one of the most important know-hows in hotel management. Especially management know-how for the Kitchen Department where the most of foods come out makes a great effects on various expenses, productivity and it is the achievement from hotel management. For the most of the hotel's top managers, they don't seriously take the fact that KITCHEN SYSTEM affects greatly total expenditure. This study starts from the point of recognizing the question of fundamental cause affecting tow largest cost elements incurred in Food & Beverage and trying to present an effective kitchen system. To settle the questions raised, I compared and analyzed productivity and cost of food & beverage and unit kitchen centered around superior class hotels in Seoul, which vary in Kitchen Systems. In order to attain the aforementioned study effectively purpose of this study, I compared Room-Service and Coffee-Shop Menu, flow of basic food in the kitchen, extent and result of division of labor and integration in the kitchen, scale of outlet kitchen, productivity, the turnover rate of food in store, food cost rate one another which all vary in Kitchen Systems. All these elements are compared and analyzed each other being divided into two main groups such as①. Main Production kitchen and Banquet Kitchen, and ②. coffee-shop kitchen and Room-service Kitchen. Therefore this study is to point out the problems in managing kitchens of superior class hotels which are different in systems. An effort was made to find out the better Kitchen System for superior deluxe hotels. I emphasize the followings on the proper scale of division of labor and integration of unit kitchen and a disposition plan for outlet kitchens of restaurant. First, KITCHEN SYSTEM as a sub-system of Hotel Management System is composed of sub-systems of outlet unit kitchen. Basic food materials are cooked and served for the guests while support kitchen and out restaurant kitchen interact organically each other. So Kitchen should be considered as a system composed of integrated sub-systems. Second, support and banquet kitchens should be integrated to be managed. And these unit kitchens have to be designed to be placed in the back of banquet rooms area. Third, coffee-shop kitchen and room-service kitchen should be integrated to be managed. Fourth, several unit business kitchens should be place on the same floor. Fifth, main production kitchens ought to be located near the loading duck, food store and large refrigerator. Sixth, considering the limits of supervision, duties should be adjusted as 12-20 cooks in two shifts a day for a sub-kitchen, and 18-30 cooks in three shifts a day so that labor division can be made. Last, I would like to two points for direction and task of future study. Firstly, I compare the effective income and increasing costs each other, which are incurred by increasing the use rate of the second processing materials for foods perched outside and through the results. I can find out the better points of the processing production and circulation system, and then I study this effects made on hotel kitchen system. Secondly, I can point out that more efficient kitchen system shall be established through comparing and analyzing the matter of amount of indirect costs and flow of food in different kitchen systems.

호텔.외식 조리 종사원의 직무 만족이 이직 의도에 미치는 영향 - 대구 지역 조리 종사원을 대상으로 - (A Study on Job Satisfaction and Turnover Intention of Cuisine Employees in the Hotel and Food Service Industry - Focusing on the Cuisine Employees in the Daegu City -)

  • 본 연구는 선행 연구의 고찰을 통하여 호텔과 외식업체에 종사하는 조리 종사원의 직무 만족과 이직 의도의 구성차원과 측정방법을 이론적으로 정립하고 실증적으로 연구하여, 조리 종사원의 직무 만족과 이직 의도의 관계규명을 통하여 조리 종사원의 합리적이고 효율적인 인사 관리에 관한 시사점을 제시하고자 한다. 실증분석은 대구 지역 호텔과 레스토랑에 근무하는 조리 종사원을 대상으로 하였으며, SPSS/WIN 12.0을 이용하여 254부의 설문 중 239부를 분석에 사용되었다. 그 결과, 호텔과 외식업체 조리직 종사원의 직무 만족은 이직 의도를 감소시키는 것으로 나타났다. 이러한 결과를 바탕으로 경영자는 비용을 감소시키고 경영 성과를 제고하기 위하여 직무 만족을 향상시킬 수 있는 방안을 모색하여야 하며, 종사원의 직무 만족이 경영 성과에 직 간접적으로 영향을 미치며 이직 의도를 감소시킴으로 인하여 양호한 팀웍을 형성할 수 있음을 인식하여야 할 것이다.

  • Today the design is recognized as indispensible part in business activities and it is demanded as one of the management strategies. since the ultimate goal of a hotel lines in the pursuit of profit, it is important that the design of a hotel faithfuly reflects the demands of management at the time of its construction planning. Furthermore, hotel planning undergoes a complicated design phases on a large scale, thus, utilization of a design process that accomodates retional approaches scientific and structural design activities, which will further reduce errors in design steps and pave a way for effective attainment of the target. Especially the management and designers review and confirm the design in relation to the strategic manegiable objective sat the early basic stage. The baseline set here will serve as a direction for the detailed design. In this context, this thesis formulates a reference baseline in dividing the space in view of the overall profitability and is based upon a survey conducted on the correlation between the operation of food and beverage section and the space. First, downtown hotels now take on the role of a public facility to a great extent and the number of Koreans who visit the autxiliary facilities of hotel increases. Second, recently revenue from a food and beverage section is in downtown and the trend is especially obrious at western restaurant, buffet and bar. This necessitates the reevaluation of the business space allocation. Third, sales promotion plan includes diversification, dessection and scaling down of the food and beverage section areas, Fourth, a proper number of seats must be determined in regard to the average area of one seat shown in the survey. Fifth, dense seat arrangement would entail a curtailment rather than a hike in revenue. Sixth, the installation of private dining room is on the rise and in particular, in Japanese and Chinese restaurants. Seventh, business space with declined revenue tends to induce the integration of similar businesses.

호텔연회 서비스종사원의 교육프로그램개발을 위한 연구 (Development of a Training Program for Hotel Banquet Service Employees)

  • 본 연구는 Dacum을 활용하여 현재 호텔연회 서비스종사원이 수행하는 업무를 체계적으로 분석하였다. 분석협조자인 호텔식음료전문가는 특급호텔 현직식음료매니저 6명으로 구성하였다. 연구기간은 2010년 5월에서 6월까지이며 집단조사, 개별서면조사, 개별면담조사를 실시하였다. 이를 통해 호텔연회 서비스종사원의 직무의 정의와 책무와 수행 작업을 도출하였다. 또한 호텔연회 서비스종사원에 필요한 수행 작업의 중요도, 난이도, 수행 빈도를 도출하 였다. 연구 결과를 살펴보면 호텔연회 서비스종사원의 직무영역에는 연회행사 전 업무, 연회행사 중 업무, 연회행사 후 업무, 연회장 안전관리, 고객응대 및 자기개발이 있는 것으로 나타났다. 호텔연회 서비스종사원의 수행 작업은 총 49개로 연회행사 전 업무에서 16개, 연회행사 중 업무에서 13개, 연회행사 후 업무에서 10개, 연회장 안전관리에서 4개, 고객응대 및 자기개발에서 6개가 있는 것으로 나타났다. 본 연구를 통해 도출된 시사점은 중요도와 수행 빈도가 높은 직무영역인 연회행사 전 업무, 연회행사 중 업무, 연회행사 후 업무에 대해 우선적인 교육이 이루어질 필요가 있다.

외식업체 조리 기술지원 및 경영 컨설팅을 통한 경영성과 향상에 관한 연구: 경기지역 레스토랑을 중심으로 (A Study on the Management Performance Improvement through Cooking Skills Support and Management Consulting for Restaurants: Focused on Restaurants in Gyeonggi Province)

  • The purpose of this study was to analyze the current status of 30 restaurants targeted for customized-visit consulting. For this process, experts visited restaurants and conducted consulting to improve the effectiveness of management for restaurants. A frequency analysis was used for general details, and a questionnaire survey was conducted to consult employees and customer groups. The analysis and consulting results were as follows: Firstly,menu need to be improved through restaurants' sanitary state and menu quality improvement. New menu should be developed through continuous training for restaurant operators, the relevant organizations, and cooking skill experts. Secondly, restaurants' cooking skill and knowledge should be secured by training of restaurant operators from the relevant organizations and experts to acquire cooking skills. In conclusion, restaurants' capability needs to be consolidated through persistent and cyclical process to maintain competitive menus and cooking skills. The results also showed that employee group's MOT, foods, menu, and facility education/training should be fortified. In order to reinvigorate the restaurant industry, marketers need to offer continuous education/training and consulting for employees to improve their satisfaction.

과업집단의 특성 및 욕구와 역할반응 사이의 관계에 대한 연구 - 호텔종업원의 개인성격을 중심으로 - (A Study on The Relationship between Task Group Functioning and Role Conflict - The Personality of The Hotel Employee -)

  • The purpose of this study is to analyze how the task group functioning and need styles have influence on role conflict and role ambiguity as the employee's personality engaged in the service industry such as a hotel. This study uses the hierarchical regression analysis method. Data were collected by the survey method from employees engaged in the service industry such as a hotel located Seoul, the Province of Gyeonggi, and the Province of Gangwon. The study result shows that to the employees in the type A and type X styles, the task group functioning and need styles are not significantly related to the role conflict. But to the employees in the type B style, the task group functioning and need styles are significantly related to the role conflict. And the result shows that to the employees in the type B style, the lower the faith in peers and management, the more the role conflict occur. On the other hand, the study result shows that to the employees in the type A styles, the task group functioning is significantly related to the role ambiguity. And to the employees in the type B style, the higher the faith in peers and management, the more the role ambiguity occur. On the contrary, to the employees in the type X style, need styles are significantly related to the role ambiguity. But to the employees in the type X style, the higher the need for achievement, the more the role ambiguity occur. On the other hand, the study result shows that to the employees in the type B styles, the task group functioning and need styles are significantly related to the role ambiguity. And to the employees in the type B style, the higher the need for achievement, the more the role ambiguity occur or the lower the confidence in peers and management, the more the role ambiguity occur. Although this study provides several managerial implications, this study has some limitations. Specifically data were collected from only the hotel industry in Seoul, the Province of Gyeonggi, and the Province of Gangwon. In spite of the limitations, the study results could be used valuably in case of the personnel managers which manage the employees under the conflict situations.
