Physicochemical Characteristics of Traditional Kochujang Prepared with Various Raw Materials (담금원료에 따른 전통식 고추장의 숙성 중 이화학적 특성 변화)

  • Physicochemical characteristics of kochujang prepared with various raw materials, were investigated during 90 days of fermentation to obtain information for the industrial production of traditional kochujang. Reducing sugar contents of kochujang increased until 60 days but slightly decreased thereafter, showing highest value for malt added group. Ethanol contents increased after 45 days and were highest in Chinese matrimony vine group, followed by purple sweet potato and malt added groups. Amino nitrogen contents increased until the 45 to 60 days of fermentation, but ammonia nitrogen contents did not change significantly during fermentation. Amino and ammonia nitrogen contents were higher in soy sauce and Chinese matrimony vine added groups. Water activities decreased slightly during fermentation and purple sweet potato added group was lowest among the groups. Consistency of kochujang decreased until the middle of the aging but after that it increased. Consistency of purple sweet potato and Chinese matrimony vine added groups were remarkably higher than that of the others. The color values tended to decrease slightly during fermentation. Purple sweet potato kochujang was low in the lightness, redness and yellowness. Results of sensory evaluation showed garlic and malt added kochujang were more acceptable than purple sweet potato added kochujang due to more desirable taste and color.

Influence of the Mixtured Application of Food Waste Compost and Pig Manure Compost on Hot Pepper(Capsicum annuum L.) Yield and Growth (음식물 퇴비와 돈분퇴비의 혼합 시용에 따른 고추의 생육과 수량에 미치는 영향)

  • 본 연구는 음식물찌꺼기의 재활용 방법의 일환으로 음식물 퇴비와 돈분 퇴비를 혼합, 고추 작물에 적용하여 생육 및 품질면에서 합리적인 시용량을 검증하고 토양 이화학적 특성변화 및 고추 생육과 수량에 미치는 영향을 평가하기 위해 실시하였다. 퇴비의 처리는 관행구(2ton/10a의 돈분 퇴비)와 음식물 퇴비 및 돈분 퇴비의 혼합구인 0.5t:1.5t, 1.0t:1.0t, 1.5t:0.5t, 2.0t:0ton/10a의 4개 처리구등 총 5개 처리구를 난괴법 3반복으로 수행하였다. 돈분 퇴비와 음식물 퇴비의 이화학적 특성을 분석한 결과 음식물 퇴비는 유기물이 기준량에 2배정도 높았으며, NaCl은 공정규격인 1%를 약 2.5배정도 초과하였다. 음식물 퇴비의 시용량 증가에 따라 토양 pH는 처리구별 특별한 변화는 없었으며, EC는 전체적으로 증가하였다. 생육기간 중 대조구와 음식물 퇴비의 처리구간 생육차이가 약간 나타났으며, 그로 인해 고추의 수량에 영향을 미친 것으로 판단된다. 음식물 퇴비 처리구에서 1ton/10a이상 일 때 시용량이 증가할수록 수확량 및 고추 개수에 있어서 감소 경향을 보였지만 수량 차이는 크지 않았다. 또한 capsaicin 함량에서도 음식물 퇴비 처리구간에 큰 차이는 보이지 않았다. 음식물 퇴비의 시용량에 따라 고추에 흡수되는 양분 흡수량은 큰 차이를 보이지 않았다. 결론적으로 음식물 퇴비를 시용한 고추 재배 시험에서 토양의 유기물 함량 증가, 물리성 개량, 토양 pH 완충력 증대 등의 효과를 보였다. 그러나 음식물 퇴비를 50%이상 돈분 퇴비와 혼합 시용시 고추의 수량이나 품질의 저하 및 토양의 염류집적의 우려가 나타났으나, 50%이하로 혼합 시용시 큰 무리는 없었다. 현재 적정 혼합비율을 구명하기 위한 연구가 진행중이다.

Changes in the Microflora and Enzyme Activities of Kochujang Prepared with Different Koji during Fermentation (고오지 종류에 따른 식혜 고추장의 숙성중 미생물 및 효소 역가의 변화)

  • Kochujangs(fermented hot pepper-soybean paste) were prepared either using traditional meju (koji for kochujang) or controlled meju fermented by pure isolates (P-1, P-2), which were screened from traditional meju collected at Sunchang area. The isolates were characterized for their superiority on amylase and protease activities, and overall flavor of the culture on cooked soybean. Bacterial cell counts were not different in all treatments of kochujang during fermentation. The mold counts of each treatment dropped to undetectable level after 40 and 60 days of fermentation, respectively. Heat treatment($60^{\circ}C$, 15 min) before fermentation stopped gas formation and had no effect on bacterial cell count, but the growth of yeast was depressed. Total accumulative volume of gas produced during kochujang fermentation was depended on load of yeast in kochujang and the kochujang using P-2 koji produced least amount of gas among all treatments. The amylase and protease activities of kochujang were not significantly different among traditional and controlled kochujangs.

Microbiological and Sensory Characteristics of Electron Beam Irradiated Squid Jeotkal and Its Ingredients (전자선 조사 양념 오징어 젓갈 및 부재료의 미생물학적 및 관능적 특성)

  • A seasoned squid Jeotkal, Korean traditional fermented seafood, and its ingredients for manufacturing, including red hot pepper powder, ground garlic, sesame seeds, were irradiated with 0, 0.5, 1, 2, and 5 kGy by electron beam and stored at $4^{\circ}C$ for 4 weeks to determine the changes in microbiological and sensory characteristics. The initial contamination of squid Jeotkal such as total aerobic bacteria, yeast & mold, and coliform bacteria were at the levels of 2.88, 3.04, and 4.20 log CFU/g, respectively. However, electron beam irradiation with does at 5 kGy reduced the total aerobic bacteria to about 1 log CFU/g. Yeast & mold and coliform bacteria were reduced to 1-2 log CFU/g after 2 kGy of irradiation and reached to undetected level when the sample was irradiated at 5 kGy and following storage at $4^{\circ}C$ for 4 weeks. Sensory characteristics showed that electron beam irradiation of up to 5 kGy did not adversely affect overall acceptability of squid Jeotkal and its ingredients during cold storage. Therefore, electron beam irradiation is one of the possible means to improve storage stability of seasoned squid jeotkal, which has limited alternative sterilization methods due to the temperature characteristics of the products.

Effect of Traditional and Improved Kochujang Koji on the Quality Improvement of Traditional Kochujang (전통(傳統)고추장의 품질개량(品質改良)에 있어서 재래식(在來式) 및 개량식(改良式) 고추장 메주의 효과(效果))

  • In order to reproduce and improve the Korean traditional Kochujang(fermented hot pepper-soybean paste), traditional and improved Kochujang Koji were prepared according to the standard method investigated in Chunrabookdo area and combined the raw materials of Kochujang by the traditional habit. Amino nitrogen contents were higher in improved Kochujang than in traditional one, those were in the range from 83 to 106 mg% immediately after brewing and 191 to 313 mg% at the end stage of brewing. Water soluble and ammonia nitrogen contents were most high in the improved Kochujang which was mixed with sodium chloride and brewed soysauce as seasoning. The content of reducing sugar of traditional Kochujang was higher than that of improved one during the brewing. Ethyl alcohol contents of all Kochujang samples were 0.04% at the early stage of brewing and that reached above 2.5% after $40{\sim}50$ days brewing.

Preparation and Physicochemical Characteristics of Abalone Meat Aged in Kochujang (고추장 숙성 전복의 제조 및 이화학적 특성)

  • The physicochemical characteristics of abalone meat aged in Kochujang at $20^{\circ}C$ were studied. Moisture contents of Kochujang, which contained raw, roasted, and steamed abalone, increased to 14.9, 10.7, and 7.8%, respectively, compared to control at day 1. The moisture contents of all products were equilibrated at 53.5% approximately after 2 weeks. Hunter's L, a, and b values increased in all products. Total microbial counts were 5.74, 5.70, and 5.83 log CFU/g in the products and increased to 0.28, 0.30, 0.11 log CFU/g, respectively, after 28 days storage at $20^{\circ}C$. After 8 days, the pH in the steamed abalone meat decreased gradually from 5.48 to 5.16 and the titratable acidity was the highest at day 14. Volatile base nitrogens of raw, roast, and steamed abalone were 1.4, 0.9, and 2.7 mg%, but the values in the Kochujang products were 14.0, 13.8, and 11.6 mg% at day 1, and 15.5, 13.3 and 11.3 mg% at day 8, respectively. Quality of the product prepared with steamed abalone was the most acceptable by sensory evaluation.

DAMGO, a ${\mu}-Opioid$ Agonist and Cholecystokinin-Octapeptide Have Dual Modulatory Effects on Capsaicin-Activated Current in Rat Dorsal Root Ganglion Neurons

  • Capsaicin, a pungent ingredient of hot pepper, elicits an intense burning pain when applied cutaneously and intradermally. Activation of capsaicin-gated channel in C-type dorsal root ganglion (DRG) neurons produces nonselective cationic currents. Although electrophysiological and biochemical properties of capsaicin-activated current $(I_{CAP})$ were studied, the regulatory mechanism and intracellular signaling pathway are still unclear. In the present study, we investigated the modulations of $I_{CAP}$ by DAMGO $({\mu}-opioid\;agonist)$ and cholecystokinin octapeptide (CCK-8). In 18 out of 86 cells, the amplitude of $I_{CAP}$ was significantly increased by DAMGO and completely reversed after washout, while $I_{CAP}$ was decreased by DAMGO in 25 cells. In 43 cells, DAMGO had no effect on $I_{CAP}$. Mean action potential duration was significantly different between 'increased-by-DAMGO' group and 'decreased-by-DAMGO' group. Mean amplitudes of $I_H$ were not significantly different between both groups. CCK-8 reversibly enhanced the amplitude of $I_{CAP}$ (5/13). DAMGO also increased $I_{CAP}$ amplitude significantly in the same cells. The amplitude of $I_{CAP}$ was increased in additive manner by combined applications of DAMGO and CCK-8 in these cells. These results suggest that DAMGO and CCK-8 can either increase or decrease $I_{CAP}$ presumably depending on the subtypes of DRG cells and classified by electrophysiological properties.

The Usage Status of Pesticides for Vegetables under Greenhouse Cultivation in the Southern Area of Korea (남부지역 시설채소 재배 농가의 농약 사용실태)

  • This study was undertaken to survey the pesticides used under the greenhouse cultivation of 9 vegetable crops including cucumber, tomato, strawberry, eggplant, hot pepper, paprika, lettuce, perilla leaves and green onion in the Southern area during the period of 2003-2004. The total number of farmers investigated was 202 which consisted of 124 conventional growers and 78 environment-friendly growers. The farmers were requested to record with respect to the crop's name, cultivation acreage, growing practices (conventional/environment-friendly), use purpose, pesticide kinds, usage quantity and application time of pesticides. The average usage quantity of pesticides for the 9 crops was 3.30 kg ai/ha in conventional growing and 0.47 kg ai/ha in environment-friendly growing. The average application time of pesticides was 11 times in conventional and 2 times in environment-friendly growing, with more than 90% cases as a foliar application. The number of active ingredients of pesticides was 34 in conventional and 10 in environment-friendly growing on the average per crop. The purpose of pesticide application was as a fungicide in 56% cases and as an insecticide in 43% cases.

Possibility of Organic Weed Control by False- and Stale-Seedbed in Upland Crop (가묘상(false seedbed)과 헛묘상(stale seedbed)을 이용한 유기재배 밭작물의 잡초관리 가능성)

  • This study was conducted to evaluate potential weed control in organic farming field using false seedbed and stale seedbed techniques. The experiment was conducted in open upland fields during spring and fall crop seasons. The false seedbed was prepared before 2-4 weeks of crop culture and was treated with shallow tillage or flame weeding before transplanting. The weed suppression rates of false seedbed treatment in the spring crop experiments for Chinese cabbage, soybean, hot pepper and corn were 65-73%, 50-55%, 9-55% and 8-33%, respectively. According to crop growth and yield in this experiment, the false seedbed technique has some potential weed control for Chinese cabbage, soybean and corn. The weed suppression rates of stale seedbed treatments in the fall crop experiments for Chinese cabbage, spinach and carrot were 18-39%, 40-77% and 37-38%, respectively. Weed control efficacy of the stale seedbed in this study was lower, when compared with false seedbed.

A Survey on Elementary School Childrens′ Awareness of and Preference for Kimchi (초등학생의 김치에 대한 의식과 선호 실태에 관한 연구)

  • The main purpose of this research is to provide a basic knowledge of Kimchi and to improve elementary school childrens' Kimchi intake. We researchers have done statistical analyses of 808 questionnaires completed by elementary school children and their mothers on their awareness of and preference for Kimchi. The results were as follows: About 80.2% of the children regarded Kimchi as one of our nutritious and traditional foods, and 83.8% of the subjects had an affirmative opinion of Kimchi intake. The most well known Kimchi is as follows: Baechu Kimchi, Kkaktugi, Nabak Kimchl, Chonggak Kimchi, Saaennip Kimchi and Buchu Kimchi. The children preferred the peculiar and refreshing taste of Kimchi. Their preference of Kimchi is in the following order: Baechu Kimchi, Skaktugi, Chonggak Kimchi, Nabak Kimchi and Oi Sobagi. And the children also preferred the stems of the cabbage. The children preferred properly fermented and freshly prepared Kimchi. Their favorite ingredients were red pepper powder, Korean radishes, pickled anchovies, sesame leaves, garlic and scallions. The children wanted Kimchi that is less hot and more sweet. The ingredients children wanted to add to Kimchi are pears, cuttlefish, oranges, apples and cucumbers.
