  • Internet explosion has revolutionized the way the industries, including that of the hospitality industry have conducted their businesses. With any new technology, there is a need to explore, define, develop and refine practices in its usage. The main purpose of this study was to examine how internet information influence employees job satisfaction and organizational performance. Employees were asked through surveys to evaluate four specific factors: format, accuracy, content and timeliness (FACT) in terms of their importance when making a restaurant choice. The findings of this study were as follows: internet information quality influenced business performance and employees job satisfaction.

  • The heart service of a receptionist who receives customers in the front line of a business has a great effect on the management of Company. Considering of this, this study offers a view that high job satisfaction of an employee who works eating-out businesses raises the quality of service and has a great influence upon satisfaction of customers. To support this view, the only original study were made. and for the management of human resources in the eating-industry, satisfaction factors, that have a great effect upon the characteristics of job satisfaction by vital statistics factors, are human relations, advancement, working surrounding. And we should recognize that among these, especially, human relations have d considerable effect on service offering degree and they are important variables for customers' satisfaction. In conclusion, service offers have a need to know how service products differed to customers are selected and appraised. Until now our recognition has been confined mainly to products themselves, but when service can exert its value much more. accordingly, under the recognition that job contentment has an effect on service offering and works as important variables for customers' satisfaction, employers should have incessant on job education of employees.

  • The study aims to investigate the direct effects of business management practices in terms of financial, marketing, human resources, and logistics operations practices on sales revenue and profitability growth of freight forwarding businesses. A quantitative research design and partial least square-structural equation modeling were used to examine the direct effects of the exogenous and endogenous variables. The study reveals that financial, marketing, and human resources practices have a positive and significant effect on sales revenue growth. Furthermore, marketing and logistics operations have a positive and significant effect on profitability growth in the context of freight forwarding in the Philippines, particularly in its country's capital. As the current study only examines the direct effects of business management practices, other researchers may also want to consider identifying other variables as mediation and moderation to test other indirect effects on the financial performance of the business. The findings of the study can significantly benefit the freight industry to consider addressing other challenges or make use of the paper to further develop their strategies and practices to improve their financial performance.

  • Tourism and hospitality have encountered significant changes in recent years as a result of the rapid development of information technology (IT). Customers now expect more expedient services and customized travel experiences, which has intensified competition among service providers. To meet these demands, businesses have adopted sophisticated IT applications such as ChatGPT, which enables real-time interaction with consumers and provides recommendations based on their preferences. This paper focuses on the AI support-prompt middleware system, which functions as a mediator between generative AI and human users, and discusses two operational rules associated with it. The first rule is the Information Processing Rule, which requires the middleware system to determine appropriate responses based on the context of the conversation using techniques for natural language processing. The second rule is the Information Presentation Rule, which requires the middleware system to choose an appropriate language style and conversational attitude based on the gravity of the topic or the conversational context. These rules are essential for guaranteeing that the middleware system can fathom user intent and respond appropriately in various conversational contexts. This study contributes to the planning and analysis of service design by deriving design rules for middleware systems to incorporate artificial intelligence into tourism services. By comprehending the operation of AI support-prompt middleware systems, service providers can design more effective and efficient AI-driven tourism services, thereby improving the customer experience and obtaining a market advantage.

A Study on the Relationship between Cooks' Job Inconsistency and Job Performance on Intention of Changing Jobs (외식업체 조리사의 일자리 불일치와 직무성과 간의 관계가 이직의도에 미치는 영향에 관한 연구)

  • This study sought to examine the effects of job inconsistency of cooks in the food service businesses on job performance, and the effects of such causation on intention of changing jobs. For job inconsistency, cooks produce limited menu products due to the segmentation of jobs in the same industry, and can hardly exercise their skills obtained through education. Thus, 275 samples of job inconsistency were made to undergo frequency analysis, factor analysis, reliability analysis, correlational analysis, and multiple regression analysis, using the SPSS 17.0 program. Hypothesis 1 was established as cooks' job inconsistency having a positive effect on job performance; thus, with regard to job performance factors, skill inconsistency (${\beta}$=-.432), and wage inconsistency (${\beta}$=-.250) had a negative effect on job performance, but education inconsistency (${\beta}$=-.048) did not have an effect. Hypothesis 2 was established as cooks' job performance having a significant effect on intention of changing jobs; thus, intention of changing jobs had a significant negative effect on job performance (${\beta}$=-.238). So if job performance was improved, the intention of changing jobs would be reduced. This study implies that: cooks who were engaging in the food service businesses experienced job inconsistency, and led themselves to having an intention to change jobs; in this process, individual cooks' job level inconsistency and their wage levels have an important effect on intention of changing jobs.

The Effects of Bakery Worker's Occupational Asthma and Rhinitis on Job Performance and Turnover Intention (베이커리 종사자의 직업성 천식 및 비염이 직무 성과와 이직 의도에 미치는 영향)

  • This study investigates the effects of occupational asthma and rhinitis on job performance in order to maintain the health of bakery workers and to increase manufacturing productivity. Hotel bakery workers, small bakery businesses, bakery franchises and bakeries in large discount stores, located in Seoul, Kyungki and Incheon were sampled for the study over the period of December 1 to 15, 2008. A total of 245 samples were used for the final analysis. To verify the hypothesis established for the study, we conducted frequency analysis, factorial analysis, reliability analysis, correlation analysis and regression analysis using SPSS 12.0, a statistical package, to derive a conclusion. As a result of this study, it turned out that occupational asthma and rhinitis in bakery workers does affect job performance as well as motivating the intention to quit job. It is recommended that in order to increase the job performance of bakery workers and reduce their desire to quit job, their work environment should be improved and that training about occupational asthma and rhinitis should be provided for the prevention and reduction of disease.

  • This study is about choice attribution of customers make in food and beverage events. The researcher provided practical plans to uplift food-related enterprises and activate management through surveys and positive analyses, targeting customers who use food services. First of all, all event plans must include customer demands, social changes, special qualities of the business, and market research. Second, low demand season must be customers will be induced to the events. Third, prediction for market variable and solutions must be thoroughly examined and plans should look into the future to maintain a long period of time. Fourth, sufficient communication between planners and employees should be made before the event starts, so that food and beverage businesses can gain trust and quality of event services.Fifth, immaterial service and visible goods/menus in business of food and beverage events must be closely matched. Sixth, menus introducing a variety of merchandise, quality of nutrition and health of the business should be developed. Also, events from countries(regions) should be hold to create a market of cultural exchange. Seventh, for hereafter event plans, feedbacks are needed concerning customers needs and demands through customer care, after the food and beverage events. Eight, faculty management for convenience, kindness, safety, and life preserver accommodations in parking areas must be made, as automobiles are necessaries for people in Mycar era. The ninth, off-line and on-line care through on-line business construction and production of homepage must be done, due to the fact that even the well-made events are bound to fail if they are not delivered to the customers.

  • This study aims to suggest useful information for tteokbokki franchise businesses to enter foreign markets by market testing and surveying preferences of foreign consumers with various kinds of tteokbokki. For this research, a survey was conducted from July 16 to August 20, 2012, targeting the people who live in Beijing, Tokyo, Singapore. The data was collected and analyzed using SPSS for Windows Version 18.0. The relationship between the general details of consumers and the results of the market test were analyzed using canonical correlation analysis. Research results and utilization plans are expected to use for improving the image of the country and ripple effects on exporting agricultural and fishery products, along with the effect of increasing spread of overseas personnel export and domestic Korean overseas supply of cultural content. Nurturing restaurant franchise business, creating jobs, and contributing to the increase in the income of the rural economy are also expected. Fermented tteokbokki franchise business should create new added value. The development of fermented tteokbokki will build a new culture of consumption, expand consumption, academic cooperation and joint technology development, and activate employment linked. Consequently, it is necessary to understand eating habits of local consumers from a variety of perspectives such as texture, taste, and colors of sauce when globalizing Korean food.

A Study on the Foodservice Quality of Japanese Restaurants using the Importance-Performance Analysis (IPA) (중요도-만족도 분석을 활용한 일식 레스토랑의 품질특성에 관한 연구)

  • Japanese restaurant owners seek to secure their competitive advantage by implementing a unique competition strategy that may overcome hostile environment. Brand power, aggressive expansion and the partnership strategy with other businesses may be suggested. The present study is to find out the competitive advantages of Japanese restaurants, to compare the importance and satisfaction by different customer factors of choices and then, to identify what kinds of factors affect customer satisfaction. Total 205 copies of questionnaire, out of 230 distributed, were used for analyses. Cronbarch's alpha coefficient of all 20 items was 0.911. In terms of importance, Cronbarch's alpha coefficients were 0.887(food), 0.796(menu), 0.851(employee), 0.815(service), and 0.730(physical environment). For satisfaction, the coefficients were 0.876(food), 0.860(menu), 0.880(employee), 0.851(service), 0.730(physical environment). In addition, the exploratory factor analysis showed an acceptable factor loading, supporting 20 items' validity. The result showed that customers' perceptions of the importance of Japanese restaurant service quality was higher than their level of satisfaction in general. In particular, IPA analysis revealed that food and service factors were well operated as located in the first quadrant. However, service factor located in the second quadrant was perceived to be important yet perceived as being satisfied poorly. So this study suggests that Japanese restaurant owners should concentrate on the attributes included in this quadrant to improve the quality of foodservice. Lastly, menu and physical environment factors were located in the third quadrant showing low level of importance and satisfaction. On the basic of the IPA analysis, Japanese restaurant owners should identify their strengths and weaknesses and draw up a plan to improve service quality and to maximize their profits.

The Relative Importance of Factors affecting School to Work Transition in Foodservice-related Majors (외식관련 전공자의 노동시장 이행 영향 요인에 대한 상대적 중요도 분석)

  • The purpose of this study is to measure the relative importance of the factors that affect school to work transition that food service-related majors and workers recognize. To this end, this study composed such factors into a second hierarchy level of individual background, educational background, and preparation effort to enter labor market. The study made us of the analytic hierarchy process(AHP), which calculates the importance of each factor through the relative evaluation of each factor in the hierarchy. The results of analysis are as follows. First, in the second hierarchy level, effort to enter the labor market exhibited the highest relative importance. In the case of four-year college students, educational background had the highest relative importance. Second, in case of third hierarchy level factors relating to personal background, gender had the highest relative importance. As for educational background, the type of college had the highest relative importance. As to the effort to enter labor market, overseas working experience while in college and job searching channels had high relative importance, while vocational training experience had the lowest relative importance. Third, the analysis result of complex weighted value showed that the type of college had the highest complex weighted value. In future studies, the type of businesses and business conditions in the food service industry should be subdivided for an analysis of influential factors, and, based on this, customized career guidance should be made for specific career paths of each student.
