Organoleptic Properties of Cow Milk, Yoghurt, Kefir, and Soy Milk When Combined with Broccoli Oil: A Preliminary Study

  • Broccoli sprouts are an excellent source of health-promoting phytochemicals, such as glucosinolates, phenols, and vitamins. In this investigation, oil extracted from broccoli was adjusted to various concentrations (control, 1%, 2%, 3%, 4%, and 5%, respectively) and added directly to dairy products (cow milk, yoghurt, and kefir) and non-dairy products (soy milk), and their organoleptic properties assessed. The results showed that when the amount of broccoli oil was increased, the organoleptic properties (texture, color, and flavor) and overall acceptability tended to decrease. Cow milk, yoghurt, kefir, and soymilk supple-mented with 1% broccoli oil showed the best organoleptic properties when compared to the control group. The fermented products such as yoghurt and kefir with added broccoli oil showed good organoleptic properties. Overall, the results of this study provide evidence for the use of broccoli oil in dairy and non-dairy products. Further research will be required to assess the various physiological active functions of broccoli oil.

  • Sasang Constitutional Medicine (SCM) suggests the concept of health condition which is owned of different properties by each Sasang Constitution. But SCM theory has concentrate to explaining different symptoms that distinguish health condition, not much concerned with practical methods like face features, pulse diagnosis, skin surface properties and voice features. Physical properties of practical diagnosis methods from literature finding have been researched. As a result, complexion and face moisture were described to be physical properties related to health State. In scope of pulse diagnosis, depth, rate, contour, width and pressure are related. Skin surfaces' elasticity, moisture, fraction properties were also suggested as factors of health State of Sasang Constitution. We assume that this study would contribute further studies for objectifying and quantifying diagnosis methods to evaluate health state grades of Sasang Constitution.

  • The study of health promoting and disease preventing compounds in food or by themselves, so called nutraceuticals or functional foods, has become a major field of research in food science. Natural flavor compounds are usually present in food, essential oils, spices, and herbs. These compounds can produce aroma, not only by themselves, but also in combination with other compounds. Today, however, greater interest is being paid to the health promoting properties of natural flavor substances rather than their flavoring properties. In fact, a number of naturally occurring flavor compounds that possess health promoting and disease preventing properties have been extensively studied and identified. The beneficial properties of natural volatile flavor compounds as well as non-volatile substances in spices and herbs discussed in this review include antioxidant, anticarcinogenic, anti-inflammatory, and immune enhancing activities.

Measuring Inventory of Korean Housing Quality Related to Mental Health through Foreign Literature Reviews (국외 문헌고찰을 기초로 정신건강의 측면에서 본 한국주거의 질 측정요소에 관한 연구)

  • This study is to organize the frame of measuring inventory for housing quality related to mental health in foreign literature reviews. In the first step, many housing quality contents or items are extracted from empirical studies, including housing environment quality and mental health. In the next step, extracted contents and items are classified by space scope (house and neighborhood unit) and WHO housing properties (safety & security, health & sanitation, efficiency/convenience, comfort/amenity). Almost all housing properties follow the WHO standard, but some properties, sustainability and economic characteristics, do not follow the standard. These reflect on current Korean housing environment. They are energy saving and environment friendly effort, property value and economic burden, identity expression, and school district. So they need to be added to the Korean housing quality measurement related to mental health.

Psychometric Properties of the Korean Translation of the Attention-Deficit/Hyperactivity Disorder Stigma Questionnaire

  • Objectives: This study evaluated the psychometric properties of the Korean version of the attention-deficit/hyperactivity disorder (ADHD) Stigma Questionnaire (ASQ) and the effect of the source of information about mental health on ADHD stigma. Methods: The Korean translation of the ASQ was prepared, and 673 participants, 20-64 years of age, completed the questionnaire using an online panel survey in South Korea. The participants also completed questionnaires detailing sociodemographic variables and the source of their mental health knowledge. Cronbach's alpha coefficient was used to explore the internal consistency of the ASQ. Factor analysis using Varimax rotation was conducted to investigate the structure of the ASQ. Results: The 26-item ASQ demonstrated excellent internal consistency (Cronbach's alpha=0.940). Factor analysis supported a three-factor structure, including Concerns with Public Attitudes, Negative Self-Image, and Disclosure Concerns. There were no significant differences in the total ASQ scores according to sociodemographic characteristics. Participants who reported the internet as their major source of information about mental health showed higher ASQ scores compared to those who used other sources for mental health information. Conclusion: The Korean translation of the ASQ has acceptable psychometric properties among Korean adults. Inaccurate information from the internet could increase the stigma toward ADHD.

  • Cancer is a global health challenge with high morbidity and mortality rates. However, conventional cancer treatment methods often have severe side effects and limited success rates. In the last decade, extensive research has been conducted to develop safe, and efficient alternative treatments that do not have the limitations of existing anticancer medicines. Plant-derived compounds have shown promise in cancer treatment for their anti-carcinogenic and anti-proliferative properties. Rosmarinic acid (RA) and carnosic acid (CA) are potent polyphenolic compounds found in rosemary (Rosmarinus officinalis) extract. They have been extensively studied for their biological properties, which include anti-diabetic, anti-inflammatory, antioxidant, and anticancer activities. In addition, RA and CA have demonstrated effective anti-proliferative properties against various cancers, making them promising targets for extensive research to develop candidate or leading compounds for cancer treatment. This review discusses and summarizes the anti-tumor effect of RA and CA against various cancers and highlights the involved biochemical and mechanistic pathways.

Health Education Curriculum Constructs and Dimensional Properties for Korean Middle School Students in Multidimensional Scaling Analysis (다차원척도법을 이용한 중학교 보건교육 교과영역 구축 및 속성 분석)

  • Background: School is a primary health education setting for adolescents and the continuous support should be provided to renew school health education curriculum correspondent to cultural changes in Korean society. Objectives: This study was conducted to identify the principals and teachers' health education needs for their students and to analyze their conceptual map for health education curriculum at school. Methods: The sample size of the preliminary study was 321 of the teachers in elementary, middle, and high school, and that of the main study was 355 middle school principals and teachers over the country. The self-administered mailing survey was conducted to collect the available health education topics in the preliminary study, to identify the factor structure of the health education topics and to analyze the conceptual properties on health education with exploratory factor analysis and multidimensional scaling analysis in SPSS 12.0. Results: A total of 21 health education topics were collected from the preliminary survey and 31 topics were, comprehensively, generated for the main survey. In exploratory factor analysis, seven factors were generated in 1.0 or greater Eigen value standard. The seven factors were 'life health promotion,' 'disease prevention and drug control,' 'bulling and aggression prevention,' 'injury and sexual harassment prevention,' human-efficacy and regulation,' 'health protection for adolescence,' and 'alcohol and tobacco control.' The educational need scores were the highest in 'human-efficacy and regulation' and 'injury and sexual harassment prevention.' The two-dimensional cooperates were generated for the 31 health education topics and the two dimensional properties which divided the conceptual space were 'health-safety' for one and 'public/environmental-individual/personal' for the other. That is, middle school principals and teachers primarily, understand the health education curriculum in the sense of 'health vs. safety' and 'public/environmental vs individual/personal.' Conclusions: Health education curriculum and textbook should be developed based on teachers' needs and conditions for health education in school fields. The field-based health education programs or textbook would make more possible problem-solving health education for youth in real school fields.

Chronic Exposure to Arsenic and the Effects on Human Health (비소 만성 노출의 건강영향에 대한 고찰)

  • Background: Arsenic is a metalloid of public health significance due to its unique material properties and toxicity and the widespread pollution in the environment. Arsenic exists as inorganic arsenic and organic arsenic with distinct chemical properties. Its toxicity varies depending on the properties. Objectives: Although the carcinogenicity of arsenic has been identified, the various diseases that occur after acute and chronic exposure to arsenic are not yet clearly known. Methods: Research on the effects of chronic exposure to arsenic on human health was searched and the results were summarized. Results: It has been found that cancer occurs due to exposure to high concentrations of arsenic in areas with elevated exposure to arsenic, but research results have recently been presented on health effects caused by chronic exposure to low concentrations of arsenic. Cancers have also been identified to be related to inorganic arsenic, including skin cancer, lung cancer, and bladder cancer. Significant relationships with neurological diseases, cardiovascular diseases, and diabetes mellitus have been suggested as well. Conclusions: Our results suggest that it is necessary to evaluate the health impact on residents around abandoned metal mines and industrial complexes in South Korea.

  • Mozzarella cheese is recently the most consumed cheese in USA, European, South Korea, etc., and also a various different-type Mozzarella cheese could have great market appeal. However, many consumers would be more concerned about the nutritional aspects and physicochemical properties of Mozzarella cheese. Hence, ultrafiltration (UF) as a best tool of solving those concerns has been recognized. The objective of this review's paper would be suggested that the ultrafiltration (UF) techniques could be directly applied for manufacturing various different-type Mozzarella cheese with high physicochemical properties on fulfilling the consumers' various needs and desires for health.

  • Building materials have a great impact on the health of a building's occupants. Thus, it is imperative that their health-related properties be taken into during the course of construction project. Unfortunately, no current database system exists that can provide information on the health performance of building materials at each stage of construction project management, from planning and design to building and maintenance. therefore, an inordinate amount of time and effort is required to choose the right health-friendly materials(DBHM). To solve this problem, this study aims at building a database management system for health-friendly building materials. It analyzes the health-related properties and performance of various materials, and proposes a database structure and operation algorithm. The system proposed in this study is expected to contribute to the objective evaluation of health-friendly building materials through the accumulation of relevant data.
