편리성 및 저장성이 증진된 구형과립 요구르트 제조 (Production of spherical granule type yogurt with improving convenience and preservation)

  • Probiotics로 알려진 유산균을 다량 포함하고 있으며 우유가 가지고 있는 영양성분을 함유한 액상형 요구르트를 사용하여, 저장성은 높지만 편리성이 낮은 분말형 요구르트의 단점을 개선한, 유동성 및 용해성이 우수한 구형과립 요구르트를 제조하였다. 구형과립 요구르트의 유동층코팅기 최적 제조조건은 반응표면분석방법(RSM design)을 이용하여 설정하였으며, feeding rate(FR) 0.54 mL/min, atomization air pressure(AP) 2.64 bar, product temperature(PT) $58.18^{\circ}C$의 유동층코팅기 운영조건하에서 최대회수율은 79.42%로 예측되었다. 유동층코팅기의 버텀스프레이 방식으로 제조된 구형과립 요구르트는 6-7 log CFU/g의 많은 유산균을 가지고 있었으며, 특히 상대습도 75% 및 저장온도 $25^{\circ}C$ 조건하에서 4개월 동안 유산균수의 감소가 아주 미미하여, 저장성 및 편리성이 증진된 새로운 형태의 유산균 제품 개발에 대한 가능성을 보여주었다.

국내산과 수입산 석류의 화학적 성분과 기능적 특성 (Chemical compositions and functional characteristics of Korean and imported pomegranate (Punica granatum L.))

  • 본 연구는 고흥산과 수입산 석류의 화학적 성분분석 및 생리활성 기능을 분석하여 기능성 물질의 소재 개발과 착즙 후 버려지는 부산물 활용 방안에 기여하고자 하였다. 석류 과즙 중 주요 유기산은 citric acid, malic acid가 확인되었으며 주요 유리당으로는 fructose, glucose가 확인되었다. 석류의 폴리페놀 함량은 고흥산 과피에서 149.91 mg/g으로 가장 높았고 가장 낮은 함량을 보인 과즙보다는 약 100배 정도 높게 함유되어 있었다. 석류의 부위별 ellagic acid 함량을 분석한 결과 고흥산 과피에서 14.22 mg/g으로 미국산에 비해 두 배 이상 높게 나타났으며, 고흥산과 미국산 모두 과즙이나 씨 보다는 과피에서 ellagic acid 함량이 월등히 높게 나타났다. 석류 부위별 추출물은 농도 의존적으로 항산화 활성이 증가하였으며, 고흥산과 미국산 모두 과피, 씨, 과즙 순으로 높은 활성도를 나타냈다. 고흥산과 미국산 부위별 추출물의 전립선암 세포증식 억제능을 분석한 결과 산지에 관계없이 과피, 과즙, 씨 순으로 암세포 성장억제능이 높게 나타났으며 특히 과즙과 씨에서는 고흥산이 미국산에 비해서 암세포 성장억제능이 더 우수하였으며 과피 추출물에서는 미국산이 더 우수하였다.

환경영향평가서에 나타난 육상생태분야의 평가에 대한 문제점과 개선방안 (Problems and Amelioration Measures of the Assessment on Terrestrial Ecosystem Field in Environmental Impact Statement)

  • This study was carried out to find the problems of assessment on terrestrial ecosystem part in environmental impact analysis(EIA) and to suggest the proper amelioration measures by analyzing 19 environmental impact statements(EIS) published during the period from 1991 to 1994. The results obtained from this study were as follows. Field survey for the investigation of fauna and flora in project areas should be conducted at least 3 times a year and name of investigator should be written on the EIS clearly. Increase or decrease in degree of green naturality and productivity cannot be an absolute criteria for expressing the amount of changes in ecosystem. Evaluation for the ecosystems and their composition in project area is more important than presenting merely the increase or decrease in degree of green naturality and productivity. Alleviation measures in 19 EISs analyzed in this study were summarized into 6 types: They are establishment of landscape plan, transplanting of useful trees preservation of big tree and protected species, restoration and preservation of existent vegetation, establishment of soil conservation measures and diminution of the impact on animal. However, they were somewhat insufficient because they wouldn't suggest the alleviation measures in detail. The more positive counter-proposals are needed to decrease the impact of the project on terrestrial ecosystem.

진달래꽃 추출물의 항산화 효과 및 인체 KB cell에 대한 세포독성 (Antioxidative Activity and Cytotoxicity on Human KB cell of Extracts from Rhododendron mucronulatum Turcz. Flower)

  • 진달래꽃 추출물의 항산화 효과와 인체 비인두암 세포인 KB cell에 대한 세포독성을 조사하였다. 또한 총 폴리페놀과 총 플라보노이드 함량을 측정하고 항산화성과의 상관성을 검토하였다. 진달래꽃 메탄올 추출물을 용매 분획하여 항산화 활성을 측정한 결과, 에칠아세테이트 분획의 활성이 가장 높게 나타났다. 에칠아세테이트 분획을 silica gel column chromatography로 부분 정제하여 항산화 실험을 한결과 fraction 2와 3은 40 ppm 농도에서 90% 이상의 활성을 나타내었다. 인체 비인두암 세포주인 KB cell의 성장 저해율은 $100{\mu}g/mL$ 농도에서 클로로포름 분획이 81.2%, 헥산분획이 74.6% 였다. 총 폴리페놀과 총 플라보노이드 함량을 측정한 결과, 에칠아세테이트 분획에는 총 폴리페놀 32.70%, 총 플라보노이드 20.30% 함유하고 있었다. 총 폴리페놀 및 총 플라보노이드 함량과 항산화성과의 상관관계는 총 폴리페놀에 대하여는 $r^2=0.8869$, 총 플라보노이드에 대하여는 $r^2=0.8469$로 상관성이 인정되었다.

무용동작(舞踊動作) 치료(治療)가 폐경기 여성(女性)의 부안(不安), 우울(憂鬱) 및 삶의 질(質)에 미치는 효과(效果) (The Effect of Dance Movement Therapy on Anxiety, Depression, and the Quality of Life in Climacteric Women)

  • Objectives: The aim of this study is to find out the effects of dance movement therapy(DMT) on anxiety, depression, and life quality by applying DMT program to climacteric women. Methods: The subjects of the research are climacteric women between the ages of 45 and 55 who located in the city of oo in Chollabukdo. The program was conducted with the subjects of a total of 27 women less than one year after menopause, 14 in the experiment group and 13 in the comparison group, 90 minutes a session, once a week, for 15 weeks. Results: The results show that the points of anxiety and depression decreased significantly in the experiment group which participated in the DMT program (p<0.05). The points of life increased significantly in physical & mental wellbeing, competence, and stability (p<0.05). Vitality points increased, but not significantly. Conclusions: This means that DMT decreases anxiety and depression of climacteric women, has positive effects on life quality related to health, and can help increase physical, mental, and emotional wellbeing of climacteric women.

프로바이오틱스 혼합물의 in vitro에서의 안전성 및 탄수화물 소화 저해 효능 평가 (In vitro safety and efficacy of probiotics mixture on carbohydrate digestion inhibition)

  • 본 연구는 probiotics mixture(Lactobacillus acidophilus PBS066(DSM 24936), Lactiplantibacillus plantarum PBS067(DSM 24937), Limosilactobacillus reuteri PBS072(DSM 25175))의 안전성 및 탄수화물 소화 효소 저해 효과를 in vitro로 평가하는 것을 목적으로 한다. 모든 균주는 유럽식품안전처(EFSA) 지침에서 권장하는 항생제 내성 프로필을 충족시켰으며, 모든 균주는 용혈 활성 및 세포 독성을 나타내지 않았다. Probiotics mixture, L. plantarum PBS067 그리고 L. reuteri PBS072는 α-amylase 활성을 억제하는 것으로 나타났으며, probiotics mixture와 이의 균주 3종 모두 α-glucosidase 활성을 억제하는 것으로 나타났다. 이로써 본 연구에 사용한 probiotics mixture 및 이의 단일 균주 3종의 안전성과 탄수화물 소화 억제 효과를 확인하였으며, 따라서 probiotics mixture 이의 단일 균주 3종은 섭취하여도 안전하며 섭취 시 체내 탄수화물 대사를 잠재적으로 조절하는 것을 확인하였다.

Effects of Sasa borealis silage on proximate composition, amino acid and fatty acid contents, and antioxidant activity in fresh meat of Korean native goat fed with total mixed ration

  • Jeju Sasa borealis (S. borealis) is indigenous to the Halla Mountain area of Jeju Island, Republic of Korea. However, its dominance has retarded the development of other plant species and lowered biodiversity in this region. The aim of this study was to determine whether S. borealis silage (SS) supplementation affects the chemical composition and antioxidant activity in the fresh meat of Korean native goats (Capra hircus coreanae). The experiment was conducted on 12 Korean native goats at the finisher stage. The feeding groups were the Control (total mixed ration, TMR) and the Treatment (80% TMR + 20% SS). The animals were adapted for two weeks and then subjected to a six-month breeding experiment. Meat samples were excised from the neck, loin, rib, front leg, and hind leg of the slaughtered animals. The meat derived from the treatment group contained more taurine and anserine than that derived from the control group. Both groups did not significantly differ in terms of ω-6/ω-3 fatty acid ratio. The loin and front leg of the treatment group contained significantly higher vitamin E levels than those of the control group. DPPH, ABTS, and FRAP analyses disclosed that the loin and front leg had significantly higher antioxidant activity (p<0.05) than the other parts. Moreover, the loin and front leg cuts of the treatment group had higher antioxidant activity than those of the control group. The present study demonstrated that S. borealis supplementation could effectively improve Korean native goat meat quality.

21세기 삶의 질 향상을 위한 건강증진방안 (The Health Promotion Programme and Quality of Life in the 21 Century)

  • The ultimate goal of national health promotion services is the improvement of quality of life and health longevity through the implementation of health promotion services. The approach strategy for national health promotion summariged as follows: 1) A model for health promotion should be developed by the level of government. 2) Roles and functions between central government and autonomous local governments should be defined to carry out the health promotion services effectively. 3) New manpower for health promotion such as health educator should be trained and activated at hospitals, health centers, industries, school, and related community agencies. 4) School health education should be strengthened in order to teach: various health subject(smoking & alcohol, drug abuse, accident and safe, nutrition, environmental pollution and preservation, population & family planning, personnel hygiene, physical growth, stress, sex education, communicable disease, physical exercise etc) students through appointing health teachers at school base. 5) Health promotion services in industries should be activated using manpower such as health educator, exercise instructor, dietist and counsellor, 6) Health promotion services for the elderly should be activated. 7) Health screening services in the medical insurance and his/her family should be activated for health promotion services. 8) Health education material development center for health promotion should be established and the materials should be made to distribute to related groups, agencies and institutions (health conte.5, hospitals, schools, pharmacies, industries etc). 9) The pilot health promotion center in each automous local governments(large cities, provinces, Guns and Gu level) should be established and operated for community people. 10) The mass media such as TV, radio, newspapers and magazines should be used effectively. 11) Periodic evaluation of health promotion services should be carried out in order to help effective and successful planning for community health promotion in the future.

로하스에 따른 소비자 집단의 패션상품 구매 및 만족도 (Purchases and Satisfaction of Fashion Products Among LOHAS Consumer Segments)

  • This study investigates the factors of LOHAS (Lifestyles of Health and Sustainability), to segment consumer groups by LOHAS and identify the differences of LOHAS groups in the purchase of LOHAS fashion products. A total of 398 people aged from 20s to 50s were surveyed in September, 2009. The data were analyzed with factorial analysis, ANOVA, LSD, Chi-square, Cronbach' ${\alpha}$, using the SPSS 12.0. The survey showed: 1) Seven LOHAS factors (environment preservation, family centered, pursuit of rural life, preference of environmentally friendly products, interest in health, pursuit of leisurely life, and soul & body balance), 2) LOHAS consumers were classified into five segments (health interest, well-being, LOHAS, unconcerned, and naturalist). The distribution of age level, education level, and the type of job were different among LOHAS groups; and 3) Experiences of purchasing LOHAS AS fashion products in the past and intention to purchase LOHAS fashion products in the future were different among LOHAS groups.

전통 한국 식이의 비교 영양학 (Comparative Nutrition of Traditional Korean Diet)

  • Rice is the primary main dish of Traditional Korean diet. Although there have been changes in food consumption and nutrient intake among Koreans, traditional dietary pattern is stil dominant among Koreans. Traditional Korean diet has emphasized breakfast, which is the most frequently missed meals in Korea today but important for daily work performance and health. Compared to diets of the U.S. and Greece, Korean diet is high in carbohydrate and low in fat and cholesterol due to low intake of meat. Koreans also consume large amount of plant food, which makes fiber content of diet to be high. However fruit and milk consumption tends to be low in Korea. Koreans use fermented food, including kimchi, very frequently as well as foods cooked and consumed at high temperature and over direct fire. Traditional cooking methods are time consuming which limits the usage among modern city dwellers with working women. Despite the strengths of traditional Korean diets in reducing risk factors of chronic diseases, preservation of the tradition in modern Korean society requires special attention and efforts to make them more adaptable to contemporary life styles.
